01 Mix 170g Tesco plain flour, 1 tsp fast action yeast and ¼ tsp salt in a large bowl. Make a well in the centre and pour 1 lightly beaten medium egg and 250ml lukewarm milk.
02 Whisk the egg and milk together, gradually drawing in the flour, until all of it is incorporated and there is a smooth batter. Cover the bowl with cling film and leave to stand for about 1 hour, after which it will have thickened slightly.
03 Heat a large non-stick pan with a small amount of vegetable oil. Stir the batter and, using a teaspoon, drop about eight spoonfuls into the pan to make bite-sized pancakes.

- 1 Tesco Medium Free Range Egg, lightly beaten - A handful of Simplyfruit Pomegranate seeds

04 Cook for 1-2 minutes, until bubbles appear on the surface of the pancakes. Flip over and cook for another minute or until golden.
05 Carefully transfer the blinis to a plate and repeat with the remaining batter.
06 Mix 125g cream cheese with 1 tbsp creamed horseradish, a squeeze of lime juice and a little seasoning. Cut slices of smoked salmon into small pieces.
07 Top each blini with a spoonful of the cream cheese mixture and a piece of smoked salmon. Garnish with a small piece of fresh dill, a little lime zest and black pepper, and finish with another squeeze of lime juice. Sprinkle with pomegranate seeds to decorate.

From prepping and cooking to carving and serving, we’ve got the main event well and truly covered

1PREP
• For a whole turkey, estimate the size at about 450g per person, or plan for up to 600g if you want leftovers for lots of sandwiches or hearty soups.
• Remove from the fridge about an hour beforehand for a whole turkey or 30 minutes for smaller joints, and preheat the oven. If frozen, allow 12 hours per kg to thaw, covered in the fridge.
• Pat the turkey dry with paper towels before roasting to remove excess moisture. This will ensure the skin becomes perfectly crisp when cooked.
2COOK
105 mins. Your oven should be set to gas 5, 190°C, fan 170°C.
• To check your turkey is fully cooked through, insert a meat thermometer into the thickest parts of the leg and breast (avoiding the bone). You want it to read 75°C or above. You can also insert a skewer and look to make sure the juices run clear. If they’re pink or the temperature is
below 75°C, cook for 15 mins more, then retest to get it just right.
• Carving your turkey can be tricky, but with the three steps below, you’ll be doing it like a pro! Afterwards, why not serve on a large platter as a dramatic centrepiece teamed with fresh herbs, roasted garlic bulbs, pomegranate seeds or clementine slices?
• Weigh your turkey. For a whole bird that’s less than 5kg, allow 20 mins per kg, plus 80 mins. For 5-9kg birds, it’s 20 mins per kg, plus
• Don’t rush the resting. You can cook the turkey before all the other components go in the oven. This frees up oven space and ensures the meat is juicy. Cover the bird in foil, then a clean tea towel to keep it warm and tender for up to an hour.

Next, carve around the legs, loosening between the drumstick and thigh to easily detach them.
To start, make sure your knife is sharp and your chopping board is clean, then remove the wings.


Finally, use the backbone as a guide to remove the breast meat, before slicing to serve.

02 Pour over the vinegar and apple juice and add the star anise, cinnamon stick and cloves.
03 Bring to a simmer, cover with a lid and reduce to a medium-low heat, cooking for 20-25 mins while stirring occasionally. Stir in the cranberries 5-10 mins before the end and cook until softened.
04 Remove the lid and cook for another 10-12 mins until the liquid has reduced. Spoon into a warmed serving dish and remove the whole spices before serving.

- 250g Tesco Mascarpone Cheese
- 230g (minimum 70%) Dark Chocolate, 200g broken into pieces, 30g grated
- 1 tbsp Tesco Finest Colombian Instant Coffee
- 5 Large Tesco Free Range Eggs, whites and yolks separated
- 125g Tesco Light Brown Soft Sugar
- 200ml Tesco Fresh Cream
- For dusting, Tesco Icing Sugar
For the syrup:
- 6 tbsp Tesco Finest Fino Sherry
- 1 tbsp Tesco Finest Colombian Instant Coffee
- 50g Tesco Light Brown Soft Sugar

01 Preheat the oven to 200°C, fan 180°C, gas 6. Line a 25-30cm roasting tin with non-stick baking paper so it comes about 3cm higher than the sides of the tin. Cut diagonal slits about 4cm into each corner so the paper fits snugly.
02 Heat the chocolate pieces, coffee and 7 tbsp water in a heatproof bowl, set over a pan of just-simmering water, stirring until the chocolate has melted and the mixture is smooth. Set aside to cool slightly.
03 Meanwhile, put the egg yolks in a large bowl with the brown sugar and beat with an electric whisk on high for 2-3 mins or until the mixture is thick, pale and leaves a thick ribbon trail when the beaters are lifted. Gently fold in the chocolate mix until combined.
04 Put the egg whites in a large bowl and whisk with clean beaters until stiff. Fold a third of the whites into the chocolate-yolk mix until combined, then gently fold in the remainder. Pour into the prepared tin, shaking gently to clean.
05 Bake for 15-20 mins until risen and set in the middle (test with a skewer; it should have a few crumbs on it when pulled out), with a crust on top. Remove and leave to cool in the tin.
06 Gently heat the syrup ingredients in a pan, stirring until the sugar is dissolved. Increase the heat and simmer for 3-4 mins until syrupy. Set aside to cool. Whisk 3 tbsp syrup with the mascarpone and cream until smooth and just holding its shape. Set aside.
07 Put a large piece of non-stick baking paper on your work surface and dust well with icing sugar. Turn the cooled sponge out onto the paper so the lining paper is on top, then carefully peel off the lining and discard.
08 Brush the sponge all over with the remaining syrup, reserving 1 tbsp. Spread with three-quarters of the sherry cream, leaving a 2cm border all the way around. Sprinkle over most of the grated chocolate. Score a line along one of the short sides of the sponge with a knife, 1cm in from the edge. Roll up the sponge tightly, starting from the scored edge, using the paper to lift it as you roll it up.
09 Carefully transfer the roulade onto a serving plate or board with the seam on the bottom. Dollop the remaining sherry cream along the top and sprinkle with the remaining grated chocolate. Drizzle over the reserved syrup and dust with icing sugar (optional).

01 Preheat the oven to 190°C, fan 170°C, gas 5. Line a large baking tray with baking paper.
02 Unroll the pastry and cut out 20 x 5cm stars using a cookie cutter. Place on the lined baking tray and brush each star with the egg to glaze.

03 Bake on the middle shelf of the oven for 10-15 mins until golden, crisp and risen. Transfer to a wire rack and cool.
04 Top each star with a slice of brie and cranberry sauce and garnish with thyme leaves and orange zest. Serve straight away.
