eflecting back on what may have been the most challenging year in my twenty year real estate career, I can say it has been a roller coaster year of emotions, and challenges but most of all change. Change is often described as “make someone or something different, alter or modify, replace with something else”. The COVID crisis certainly made me think differently about a lot of things. The importance of family, our friends, our local businesses. It has made me rethink how my business was running. It created an opportunity to bring some change for the better to allow us to continue to grow and thrive in 2021. I thank my many loyal clients for their continued support this year. Together we were able to sell or find their new home. I am grateful for the many referrals brought to me by your family, friends and associates. We were proud to be able to service their new real estate needs as well. The professional services we provided this year were taken to a whole new level as the demands for virtual listing appointments, home showings and virtual home inspections took on a whole new meaning. Our latest changes include the re-branding of The Theresa Baird Team to become The Realty Group. Samantha brings a wealth of experience from working in our Keller Williams brokerage for the past 4 years in many roles. First of all, they’re delicious: creamy, savory, and luscious, often with a crackly-crispy top. And even better, casseroles are a great way to cut down on dishes to wash (at a time when you’re really tired of doing dishes), because they’re served in the same dish you cook them in. Easy casseroles were made for busy weeknights when you want a lot of flavor without a lot of fuss. It’s no wonder that casseroles often become family favourites. They’re the ultimate crowd pleasers, whether you’re setting out a game-day spread or planning your weeknight family dinners. BLT Casserole Plenty of bacon and a quick trip under the broiler adds salty, smoky crunch to this cheeky casserole version of the classic sandwich. Preparation time: 30 minutes. Total cook time: 1 1/2 hours. Serves 6.

INGREDIENTS • • • • • • • • • •

12 ounces crusty Italian or country-style bread cut into cubes (about 8 cups) 1 pound thick-cut bacon, cut crosswise into 1” pieces 3 large eggs 1 1/2 cups low-sodium chicken stock or broth 1/2 cup mayonnaise 1 tsp kosher salt 3⁄4 cup freshly ground black pepper 1 pint cherry or grape tomatoes, halved 1 head romaine, washed, dried very well, cut into 1” slices 2 tsp coarsely chopped chives (optional)

PREPARATION

Preheat oven to 350°F. Spread bread in a single layer on a rimmed baking sheet. Bake, tossing once, until dry to the touch and slightly toasted, about 10 minutes. Let cool slightly. Meanwhile, cook bacon in a large skillet over medium-high heat, stirring occasionally, until fat starts to render and bacon browns, about 15 minutes. Using a slotted spoon, transfer bacon to a small bowl, reserving 3 tablespoons of fat. Whisk eggs, stock, mayonnaise, salt, pepper, and 2 tablespoons of bacon fat in a large bowl. Add bread and gently toss to combine. Add bacon and tomatoes and stir to combine. Let sit until bread has absorbed most of the liquid about 15 minutes. Reduce oven temperature to 325°F. Add lettuce to bread mixture and stir to combine. Transfer mixture to a 13” x 9” baking dish and bake until top is golden brown, about 45 minutes. Brush surface with remaining 1 Tablespoon of bacon fat, turn broiler on, and continue baking until tops of bread are glistening and well toasted, 3-5 minutes more. Garnish with chives, if using, and serve immediately.

APPETITE As the holiday season approaches, our anticipation for the delights of the season begin to materialize. Even though this year will not have the same social gathering that marks the festive season, families and friends will still be making efforts to enjoy the culinary extravaganza of Christmas and New Year’s. Here are a few of the tasty samples that will be part of this season. 1. The Charcuterie board The ultimate charcuterie board, or cheese board, is just what you want to serve if you are having guests over. Comprised of a flavourful combination of cheeses, meats, fruits, nuts, breads, crackers, and condiments, there are limitless combinations for your guests to snack on. A charcuterie board also makes a beautiful centrepiece on your table, colourful and brimming with tasty treats. While there is a lot of variety to be found on cheese boards, they are fairly easy to put together and are a great addition to other traditional appetizers. So what exactly is a charcuterie board? A charcuterie board, which is pronounced shaar-KOO-tuh-ree, originated in France. It translates to “pork-butcher shop,” and was mostly a board of pork products. But nowadays, these boards are made up of a variety of cured meats and other ingredients like fruit, cheese, and flavour enhancers. They are meant to complement each other and create delicious pairings based on taste and texture. Everyone loves a good grazing board because there is usually something for everyone. The combinations that can be put together optimize flavour to create a really enjoyable and exciting assortment of foods. 2. Eggnog What would Christmas be without the traditional eggnog. Here’s one recipe for homemade eggnog from Lauren Allen as seen on her website: tastesbetterfromscratch.com. Start by whisking the egg yolk and sugar together in a small bowl. Then, in a saucepan over medium-high heat, combine cream, milk, salt, and nutmeg and stir the mixture until it just reaches a simmer. Next temper the eggs by adding small spoonfuls of the hot mixture to the egg mixture.


Stir each spoonful and once most of the hot mixture has been added, add the entire mixture back to the saucepan. Continue cooking and whisking for just another minute or two until it barely thickens. It will continue to thicken as it cools. Then remove it from the heat and add the vanilla. Refrigerate the eggnog mixture until chilled. We like to serve it with a some whipped cream and an extra little dash of cinnamon and nutmeg on top. If you would like to add alcohol to your eggnog, choose a drink with a high alcohol concentration to help counterbalance the sweetness of the eggnog. Common choices of alcohol to add to eggnog include brandy, rum, bourbon or whisky.

Tip the nuts onto a baking sheet or into a roasting tin and arrange them cut-side up. Roast for 30 mins. The cuts should open up and the shell will start to peel back. Leave the nuts in the tin to cool down to warm – they will be very hot inside. Put a board on top of the tin while they cool to trap the steam and make them easier to peel. Serve as they are for people to peel, or peel them yourself to use in a recipe. If you peel them, you may want to remove the inner, slightly fluffy, membrane as well. If the membrane is difficult to get off (it shouldn’t be if you steam them as they cool), you can soak the nuts in boiling water for a minute to loosen. Drain and peel. 4. Christmas Cake This is a speedy, easy Christmas Cake that requires no overnight fruit soaking. It’s a fruit cake that’s incredibly easy to make, with a rich, velvety texture that’s full flavoured and so moist it can be eaten plain. But no one turns away a slosh of custard! This is terrific made on the day, keeps for ages and it’s just as delicious made with or without alcohol. Go wild with the decorations - or keep it simple. This comes from Nagi on the website recipetineats.com. She writes that I’m fussy about Christmas Cake because (speaking frankly) there are too many not-so-great-ones out there.

3. Roasted Chestnuts Another festive snack featured in many a yultide song. This easy recipe comes from the website bbcgoodfood.com To make a batch of roast chesnuts for a festive Christmas treat to share with guests, try our easy method and make the most of these seasonal bites. Start with 16 or more chestnuts. then follow this step by step method. Heat the oven to 200C/180C fan/ gas 6. Put each chestnut flat-side down on a chopping board. Hold the chestnut carefully and, using a sharp knife, cut a long slit or a cross in the top. Make sure you cut


This is a speedy Christmas Cake that requires no overnight fruit soaking. It’s a fruit cake that’s incredibly easy to make, with a rich, velvety texture that’s full flavoured and so moist it can be eaten plain! (But no one turns away a slosh of custard!) Just as good made on the day - or weeks later. For the fruit use 300 g or raisins, 150 g of diced dried apricots, 75 g of mixed peel, 150 g glace cherries, 180 g of dates and 1 cup plus 2 tablespoons of apple juice. Cut the diced apricots and the cherries into thirds, dice the peel and the dates in fifths. Place the dried fruit and juice in a large microwavable container and microwave for 1 and a half minutes or until hot. Stir to coat all the fruit in liquid and then set aside for one hour to soak up and cool. For the cake you will need 8 tablespoons for butter (unsalted), 1 and a half cups of brown sugar, 3 tablespoons of molasses or golden syrup, half a teaspoon of salt. Also needed will be half a teaspoon of allspice and cinnamon, half a nutmeg, 3 eggs, half a teaspoon of baking powder, 1 and two thirds cup of all purpose flour and three quarters of a cup of chopped walnuts. Preheat the oven to 320 degrees F and grease and line a 8” round cake pan with baking paper (parchment paper. Use an electric beater and beat the butter and sugar until smooth and creamy (about 1 minute). Add oil and molasses and beat until combined. Add the salt, spices and baking powder and beat, then add the eggs, one at a time, beating until they are incorporated. Stir in the flour. While this is mostly incorporated, stir in the fruit mix, including all the liquid) along with the walnuts. Pour the mix into the cake pan, cover with foil and bake for 2 and

a half hours. Then remove the foil and continue to bake for an additional 45 minutes. A skewer inserted into the middle should come out clean with no batter on it. Remove from the oven and let cool for 20 minutes before transferring to a cooling rack. Cool completely before serving. The cake should be moist and full flavoured and can be eaten plain. There are many ideas for decoration including using white marzipan or fondant as well as a dusting of icing sugar. Traditionally custard is poured on the cake as seen in the photo on the previous page.

A Special Christmas Cocktail Cranberry Pomegranate Margarita Compliments of Cheyanne on www.nospoonnecessary.com Tangy, tart and naturally sweet, this Cranberry Pomegranate Margarita is easy on the eyes and smooth to sip! Easy to prepare and garnished with simple, DIY sugared cranberries, this cocktail is the perfect Christmas cocktail. INGREDIENTS ¾ Cup Tequila * 1/3 Cup Orange liqueur (such as Cointreau or Triple Sec) ½ Cup Pomegranate Juice ½ Cup Cranberry Juice (make sure it’s a brand that is 100% juice) ¼ Cup Fresh Lime Juice 1 ounce Agave Nectar optional Club Soda to taste (optional) Sugared Cranberries: (yield 3/4 Cups) 3/4 cup Sugar divided 3 ounces Fresh Cranberries Garnish: Ice Cubes, Lime Wedges, Pomegranate Arils, Salt & Sugared Rim, Fresh Rosemary Sprigs INSTRUCTIONS Make the sugared cranberries: Combine ¼ cup of sugar and ¼ cup of water in a medium saucepan over medium heat. Bring to a simmer, and stir until the sugar is dissolved, about 2 minutes. Remove from heat, and add in the cranberries. Stir until well coated. Allow to sit for 10 minutes*, then using a slotted spoon, transfer the cranberries to a wire rack*. Set aside and allow them to dry for at least 1 hour. Once dry, add the remaining 1/2 cup of sugar to a large plate. Roll the cranberries in sugar until well coated. Allow to dry again, for at least another hour. For the cocktail: In a cocktail shaker, or Mason jar, add the tequila through lime juice. Fill with ice and shake until thoroughly chilled, about 15 seconds. Taste and adjust with optional agave and club soda. Serve: Strain margarita over ice filled glass rimmed with sugar and salt*. Garnish with sugared cranberries and other optional garnishes if using. Enjoy! *Yield about 3 cups
