SPRING HAS SPRUNG WITH THESE POPULAR UPCOMING EVENTS THE ENTERTAINMENT COMMITTEE

As we head into the start of Spring our golf days grow longer, the weather gets warmer, and our entertainment calendar remains as robust as ever. While Tavistock continues with our renovations for the betterment of our membership, the Entertainment Committee continues to bring social events for the entire family.

April kicks off with our Complimentary Wine Tasting. Join us on Wednesday, April 5th. Come taste great wines with friends and make a reservation to stay for dinner. The wine is also available to purchase through the Club at a great value. Easter Sunday is April 9th and always a special event at Tavistock. Our annual Spring Opening will be held this year on Saturday, April 29th with a little twist. We’re going to celebrate with a casual cocktail party featuring a DJ, heavy hors d’oeuvres and stations, as well as an OPEN BAR for the course of the party. This event is open to all members so come out and enjoy the fun!

We jump into May with our popular Derby Day on Saturday, May 6th. This celebration has become an annual tradition at TCC, so make sure to get those hats out, root on your favorite horse, and enjoy our specialty cocktails. Get ready for a new event, a Champagne Dinner on Thursday, May 18th. This unique evening will feature a variety of champagnes from Veuve Clicquot and Moet and a special dinner prepared by Chef Kelly. Come out to enjoy this special opportunity to experience the world’s finest bubblies.

On behalf of the Club and the Entertainment Committee, we would like to extend our appreciation for your patience as we have navigated through Phase II of our Long-Range Master Plan. We have tried to provide you with new events, along with the traditional, and your support has been nothing short of AMAZING! It is you, our membership, who make Tavistock Country Club the social envy of every other club in the Delaware Valley, and for that we THANK YOU.

A Letter From the Green Committee GREEN COMMITTEE

Dear Members,

As we approach the start of the golf season I’d like to provide an update on behalf of our Greens Department, led by our Golf Course Superintendent Vic Frederico, and the Green Committee. As usual during the winter months, the Greens Department has been very busy. I mentioned in my last note one of their main priorities was to clean up the golf course: specifically, removal of underbrush throughout the property, trimming of trees, removal of diseased and damaged trees, and sodding of cart-worn areas. I’m sure you’ll notice the excellent work they did!

Our new Golf Course Architect Jaeger Kovich has been making diligent progress on the new Master Plan. He will be rolling it out six holes at a time for review to the Board and Green Committee starting this month. The goal is to be able to present the final plan to the membership by the end of this summer.

If you’ve been out on the course this year, you’ve likely noticed some changes to our 15th hole. We removed two dying oaks at the top of the hill and did substantial clearing to the left of the hole. The newly exposed landforms are spectacular! The hope is balls hit left will not only have a chance to be found, but also have an opportunity to get back in play, aiding in pace of play. In addition, this clearing will provide necessary sunlight and airflow to one of the most challenging areas of turf on the course. The area between 14 and 15 also received its first major clean-up in several years and the results look fantastic.

Vic and his team were able to complete the area between 6 and 14. You’ll notice it’s been completely sodded and multiple drainage ditches were dug. As like 15, this will be another area where you’re now likely to find your ball and have a recovery shot. Kudos to Vic and his team for another amazing project!

One area Vic’s team was not able to address is the creek to the right of number 5. This has been a problem area for decades and the erosion is only getting worse. The plan was to begin clearing the underbrush to the right of the cart-path, remove several unstable trees next to the cart-path, and clean out the creek itself. Unfortunately the weather did not cooperate, and given the area is perhaps the wettest on the property we were unable to get the necessary equipment there. Other than removal of fallen trees that are visible, there will be no tree removal to the right of the creek. We will also be working with a civil engineering firm this year to help guide us on solutions to deal with erosion and movement of the creek.

Please do not hesitate to reach out if you have any questions. I hope to see you around the Club!

All the Best,

Chef’s Corner

FROM THE TCC KITCHEN

This month we present a little sweet and a little savory!

Old-Fashioned Buttermilk Pie

A custardy pie with a sweet taste. This is an old traditional southern dessert surprisingly though originating from the United Kingdom.

Chow Chow Garnish

A favorite at the Club! Chef serves this condiment mostly in the summer with BBQ dishes.

Ingredients

2 lbs. chopped green cabbage (around 10 cups)

2 large green tomatoes seeded & diced

1 jumbo Vidalia onion diced

1 large green bell pepper seeded & diced

1 large red bell pepper seeded & diced

1-1/2 Tablespoons of salt

1 Tablespoon of mustard seeds

2 teaspoons of celery seed

1-1/2 cups apple cider vinegar

1-1/2 cups white distilled vinegar

3 cups granulated sugar

1 Tablespoon prepared mustard

2 teaspoons red pepper flakes adjust to taste

Prep Time: 10 minutes

Cook Time: 50 minutes

Total Time: 1 hour

Servings: 8

Ingredients

3 eggs

1- 1/2 cups sugar

1/2 cup butter melted & cooled

3 tablespoons flour

1 cup buttermilk

1 Tablespoon lemon juice

1 teaspoon vanilla extract

1/8 teaspoon ground nutmeg

Pinch of salt

19-inch pie crust, unbaked

Instructions

1. In a large bowl, whisk together eggs and sugar.

2. Whisk in remaining ingredients until smooth.

3. Pour into prepared pie crust.

4. Bake at 400 for 10 minutes.

5. Reduce heat to 350 degrees and continue to bake for 40 to 45 minutes.

1 teaspoon turmeric

1 teaspoon allspice

1/2 teaspoon ground ginger

2 cloves of garlic minced

Instructions

1. In a large non-reactive mixing bowl, mix together the cabbage, tomato, onion, bell peppers and salt. Mix well, then cover and chill for 8 hours or overnight. Drain liquid.

2. In a large non-reactive pot, toast the mustard and celery seeds over medium-high heat about 1 minute or until fragrant, moving pot constantly. Add both vinegars, sugar, mustard, red pepper flakes, allspice, turmeric, and ginger. Bring to a boil, then lower the heat and simmer for 10 minutes.

3. Add the drained cabbage mixture and minced garlic to the pot. Mix well. Increase the heat and bring to a boil for 5 minutes then lower the heat to medium-low and simmer for 20-25 minutes or until slightly thickened, to allow flavors to fully bloom and the juice to reduce. (Cabbage should still have a slight crunch)

4. Remove from the heat and allow to cool to room temperature in the pot, uncovered. Pack in sterilized jars. May store chilled for up to one month.

A Reminder to Members for Responsibility of their Guests and Children’s Behavior

Our Club has a reputation for being gracious and friendly. We are a family Club and as members of a big family, each should strive to respect the rights and privileges of the other. These rules, therefore, are not an attempt to instruct our members and their families in matters of customary and respectable conduct, but to point out certain expectations of everyone in our Club environment that otherwise might be overlooked. Always be aware that members in our Club are judged by their attitude and cooperation with the rules.

Employee Spotlight COMMUNICATIONS DEPARTMENT

What do you like about your current position?

I love how social both of my positions are! I can not only talk to our members whenever I am here, but I really get to know them. It warms my heart when someone walks into the dining room or answers the phone, and they recognize me and ask how I am. It doesn’t feel so much like work when we’re chatting about a book I’m currently reading or plans for an upcoming break!

How long have you worked at Tavistock?

I started at the beginning of May 2022.

Where did you work prior to Tavistock?

Before I started here, I worked weekends at American Eagle in the Cherry Hill Mall, and weekdays I would

babysit. I got a lot of my work ethic from being with the same two little boys every day after school!

What are some things you like to do when you’re not working?

When I am not working, I like to perform. I participate in my schools drama department and was the lead two years in a row! I am actively going on auditions or filming self-tapes. I also travel a lot with my family. However, I always miss being home and spending my free time with my dogs and cats!

Do you like roller coasters?

I absolutely love roller coasters. As much as they can scare me sometimes, I always push myself for that adrenaline.
