WE ARE IN THE HEART OF WINTER! THE ENTERTAINMENT COMMITTEE

February in New Jersey can be cold, snowy, and grey, but the events at Tavistock are hopping! On Saturday, February 4th, the front of Tavistock will be transformed into an Après Ski Lodge. Just like a ski resort, it will be an after-ski-like party from 5:00 -9:00 PM with a large heated tent decked out with soft seating, fur blankets and even a chair lift for photo opportunities. For $50 per person, plus tax & gratuity. It includes heavy hors d’oeuvres, an open bar, a martini bar, and a hot chocolate bar. After-ski attire is encouraged for this adult only party.

Super Bowl Sunday on February 12th presents the opportunity to place those catering orders for your home parties! Valentine’s Day at Tavistock on Tuesday, February 14th will have a special a la carte dinner menu by Chef Kelly and music by our very own Doug Knight. A romantic dinner not to be missed!

On Wednesday, March 1st Tavistock will be hosting Jimmy Quaile, an expert on The Beatles and their music. This fascinating presentation will entice even the casual music fan and Beatles enthusiast. Dinner and a presentation

are included in the price. $50.00 per person inclusive.

Irish eyes will be smiling, Guinness flowing, the Malarky Brothers jamming and the green a’shinning on Friday March 10th, when Tavistock celebrates Saint Patrick’s Day with our traditional Irish Night: make your dinner reservations to join in the fun; as always Chef Kelly has a special Irish menu planned. Or stop by for an Irish beverage or two and enjoy the music.

Not a fan of Guinness, save the date on Friday, March 31st for the TCC Fine Wine Dinner featuring Northern Italian Wines. Chef Kelly has a spectacular dinner menu paired with a different wine for each course. It’s a gastronomic treat that’s sure to please.

Don’t forget March Madness at Tavistock. Games start on March 16th. Beer specials will be offered at the bars during the games.

Course Care Reminders

GREENS DEPARTMENT

Over the past few weeks, we have prepared the golf course for winter play, and here are a few reminders for the course over the next few months. All of the course accessories, including all of the tee markers, have been removed for winter refurbishing. Please tee off from different spots of your choice over the next few months! Most of the men’s (yellow tee marker) par 3 tees, as well as a few select black tees, will be covered for the winter to help with recovery. We started this practice a few years back, and it helped our areas with the most divots a lot going into the golfing season. Please use this as an opportunity to tee off from a teeing area that you would not normally use. It’s a great opportunity to see the course from a different perspective! We have also added two separate pin locations to each green, as per our normal practice for the winter. Please keep in mind that there WILL BE NO EZLOCATOR PIN SHEETS through the winter. We will start the daily pin sheets at the beginning of the golfing season, most likely around April 1st of 2022. Also, please rotate the flag to the other hole on each green after your play. Rotating the flag will help disperse the wear and traffic on the greens throughout the winter. Finally, periodically throughout the winter we will utilize temporary pins on a few of the greens, or all the greens depending on the circumstances. During the freeze and thaw cycle, it is sometimes necessary to close a green, so we do not hurt the root zone of our greens.

PLEASE DO NO WALK ON A GREEN WHEN IT IS CLOSED!

When walking to the next holes tee, from a temporary green it is VERY important that you walk around the green. Thanks for following all our winter rules....and please do not forget to fix your ball marks throughout.

How long have you worked at Tavistock?

I started work at Tavistock in the beginning of November 2022.

What is your current position?

My current position is Pastry Chef. I am responsible for preparing a wide variety of desserts, pastries and other sweet goods. I am looking forward to creating some new and exciting desserts for the membership.

Where did you work prior to Tavistock?

Prior to working at Tavistock, I spent 20 years working at various kitchens with the last 7 years at Talula’s Garden in Philadelphia.

What is your favorite part about working at Tavistock?

My favorite part is definitely the team that I am surrounded by. Since my first day, everyone has been so welcoming and friendly. In my 20 years in this industry, I have never been at a place like Tavistock where everyone has been in the organization for such a long time. Also, I am very grateful for Chef Kelly giving me the opportunity to develop my own pastry dishes.

Are there any proud moments in your short time here at TCC?

I would have to say all the positive feedback I received from Chef Kelly and staff after the Thanksgiving buffet. I had just started, and it was nice to hear that “I went above and beyond”.

What is something that most people don’t know about you?

I love to play golf. My husband loves to golf also. We learned to play many years ago when we lived in Las Vegas. Vegas had many different courses for us to play some where we could play at night!

What do you like to do outside of work?

Besides golf, I love to travel. I have been to Rome and Barcelona. I was so excited to explore all the restaurants and experience the local cuisine that each city offered. I also enjoy cooking pastas and soups at home.

Is there anything about you or your family that you would like to share?

I grew up in Queens and Long Island. For school, I went to the Culinary Institute of America in Hyde Park. Currently I live with my husband Darrell in Mantua and we have been together for about 19 years (married for 7). We have a daughter named Lillian who is 3 years old.

RED VELVET COOKIE BARS

Red Velvet Cookie Bars

Ingredients:

8 ounces -soft unsalted butter

3 1/2 cups- brown sugar

3 -eggs

2 Tbsp -vanilla extract

3 1/2 cups -Flour

3 Tbsp - cocoa powder

1 Tbsp -baking powder

1/2 tsp - salt

Red food coloring - as needed

Cream Cheese Frosting

Ingredients:

6 ounces - cream cheese

3 Tbsp - soft unsalted butter

4-5 cups - powdered sugar

Pinch of salt

Instructions:

- Preheat oven to 325

- Cream butter and sugar with paddle till combined

-Add eggs and vanilla one by one until incorporated.

-Add dry ingredients till combined

- Add red food coloring till desired color

- Transfer batter to a sprayed/ parchment lined pan. 9 x 13 or 10 x 10 pan

- Let batter rest in fridge in pan for 2 hours

- Poke holes in batter with fork and bake for about 30 min.

- While cake is in oven. Make frosting- mix all together with paddle till smooth.

- Once bar is cool: remove from pan and frost.

- Cut and enjoy or can refrigerate and save for up to 3 days.

GAP Corner

THE GOLF ASSOCIATION OF PHILADELPHIA

The GAP Architect Series: peek inside their minds, play their masterpieces. This tournament programming, which debuted in 2021, honors some of the world’s most notable golf course architects. It gives GAP members a chance to experience some of their finest work. Donald Ross is this year’s honoree. The schedule is as follows: St. Davids Golf Club (May 8); Union League Golf Club at Torresdale (June 5); Country Club of York (July 17); Riverton Country Club (Aug. 28) and LuLu Country Club Club (Sept. 25).

The GAP Architect Series includes lunch and golf. Bradford Becken, president of the Donald Ross Society, will serve as a featured speaker during dinner at the LuLu event. Cost to participate in the GAP Architect Series, which includes entry into all five events, is $1,250 per person. Male and female members of GAP Member Clubs are eligible. The GAP Architect Series is limited to the first 100 registrants. A participant can substitute if he/she is unable to attend one of the events.
