Everyone likes to be acknowledged for a job well done. The restaurant business here on the Island is a tough, highly competitive industry and I think if you know anyone in this particular business you will agree that to earn a “job well done” these people work long, hard hours and put more effort into their jobs than just about any other profession out there. So it is with great pleasure that Taste magazine would like to recognize a group of local restaurants that have been serving up great cuisine for over twenty-five years. I have seen a lot of restaurants come and go in my twentyfour years here, so to these Island institutions that have thrived for twenty five or more years, I say congratulations! Inside this issue on pages 40-44, check out these long-standing restaurants and find out how they got started, what keeps them in the game, and to what they attribute their success. I thought I would do a little research on the success rate of restaurants and was somewhat surprised on what I found. The national average for success or failure, depending on how you would like to view it, is that over 77% of new restaurants make it the first year, but after three years, 60% of those restaurants ultimately fail. With these statistics, the longevity of our local restaurants is even more amazing. One of the common themes of all of these outstanding restaurants is they are all locally owned and operated. The owners know how to treat their customer’s, they know what they like, how they like it, and then they deliver it. More often than not, you will see the owner at his place of business. Another key to success is the consistency and stability of the staffs at these restaurants. Most of the employees have been at their respective positions for years and play a major role in customer satisfaction. When I go out to eat, which is quite often, it is always rewarding to have familiar faces taking care of you. Being a small island, that is one of the biggest perks to dining out. The owners, managers, bartenders and servers all go above and beyond in making your visit as pleasurable as possible. When dining out this winter, relax, take your time and enjoy the experience as much as these professionals enjoy serving you!

Tucked in a quiet corner of Port Royal Plaza with an austere exterior, a surprise awaits visitors to Okko — Hilton Head’s newest Asian restaurant. Whether you’re in the mood for Japanese, Thai, Hibachi or Sushi Bar — Okko will satisfy your craving for all tastes Asian. The first glance of Okko’s interior makes you feel like you’ve departed the laid-back island environment you’ve come to anticipate in many of Hilton Head’s eating establishments and been transported to an upscale eatery that would be commonplace in a bustling cosmopolitan city. Natural elements such as wood, granite and stone juxtapose modern glass block, tile and chrome in a harmonious fashion. The restaurant’s striking focal 8

point is a 37 foot-long clear glass wall extending from floor to ceiling that showcases 1800 bottles of international wine offered by Okko that includes 70 unique selections of Saki. Sushi lovers can relish in a diverse number of custom creations and daily specials at a private bar with dedicated sushi chefs. One menu highlight includes customer favorite Taco Tara — pepper tuna, pepper white tuna, spicy crabmeat and avocado topped with special crunch and balsamic vinegar.

Okko’s dynamic bar features a black granite top with subtly glowing blue light beneath washing over small black square glass tiles with gold accents. The area’s back wall is roughcut stone blocks in natural tan with green light beaming from the counter top to underneath the shelves displaying the bar’s liquid delights. But modern and sleek doesn’t exclude comfort. Tables for two in the bar area feature cozy seating with brown velvet cushioned chairs more suited to a living room than a modern restaurant provide a romantic venue for couples enjoying a special evening out. In contrast to the bar, the Hibachi dining area is open and bright. Dimensional wood paneling warms up the interior lit primarily by exterior


sunlight provided by floor to ceiling clear glass windows. With six cooking stations seating up to ten diners each, the Hibachi experience offers the opportunity to meet new people. Locals and visitors mix around the u-shaped table while the Hibachi chef offers a traditional, entertaining and interactive dining experience, cooking the meal with surprising theatrics inches from your plate. Children might actually put away their electronic devices to enjoy the animated show that includes egg tossing, utensil juggling and fire-shooting onion volcanoes. Hibachi can be enjoyed at lunch or dinner with the dinner menu containing additional ingredient selections including: calamari, tuna steak, sea bass, halibut, lobster and many delectable combinations. Okko’s menu contains an extensive number of special rolls — 40 to be precise — with intriguing names like: Angry Bird Roll, Big Mac Roll, Rock ‘n’ Roll, and Spider Man Roll. One of Okko’s chef creations is the Transformer Roll — spicy scallop, carb stick, and masago inside with salmon, eel and assorted tobiko on top grilled with eel and spicy sauces. Thai cuisine lovers won’t be disappointed with Okko’s offerings of specialties that include four varieties of Thai Curry, traditional Pad Thai with chicken, pork, beef or shrimp and a panko crusted sea bass with your choice of ginger-garlic or basil sauce. Okko is open for lunch from 11:30 a.m. to 3 p.m. on weekdays with a dedicated menu that offers Sushi, Roll combinations, Hibachi, Thai, Chinese and Lunch Box selections. If you like Happy Hour, you can

celebrate it twice daily at Okko. Early Happy Hour is from 4 to 7 p.m. and Late Night Happy Hour is from 9:30 p.m. until closing, which is 11:30 p.m. Sunday through Thursday and midnight on Friday and Saturday. Both Happy Hours feature special price drinks and the Late Night also has a special bar menu with half-portion plates. For a more private experience, your group can reserve two private dining areas with one room seating up to eight and the second hosting ten. If you find Okko’s appearance and

cuisine impressive, you shouldn’t be surprised to learn that it was created by the hand of Hilton Head’s experienced Asian restaurateur, Wei Zhu, the proprietor of Asian Bistro on the Island’s south end and Yummy House, a Chinese buffet with a north end location. Zhu opened Okko in midJune this year desiring to offer an upscale Asian restaurant featuring Japanese, Thai and Hibachi to North end residents and he’s pleased with the positive feedback he’s received thus far. One recent visitor from Manhattan, recently wrote on TripAdvisor: “Dining at Okko is a simply amazing experience. The decor is contemporary and looks like it just came out of a big time restaurant in New York City. The food is to die for! A friend and I shared the Angry Dragon Roll and the Transformer Roll and I have never been so impressed with the presentation and taste of my sushi. The fish was so fresh and watching the sushi chefs work on our food gave us the chance to see just how artistic sushi making is. The staff is all smiles and very friendly.” Obviously, these types of experiences are exactly what Zhu was aiming for and he is thrilled. “We’ve had a lot of return customers. People are coming back. This is good,” Zhu said with a smile. CRANE’S TAVERN

More than a century ago, Irish immigrant Frank Crane founded Crane’s Tavern in Philadelphia with a tradition of “serving food and drink of great quality with caring and friendly service.” In 1999 those values arrived on Hilton Head Island when Frank’s grandson and great-granddaughter opened Crane’s Tavern. Since then Hank and his daughter Beth Anne have been faithfully sharing their family’s values and honing what it takes to create a memorable dining experience. “Crane's is an establishment where 12

comfort is central,” said Beth Anne Crane. “We have a reputation for straightforward quality.” The experience in comfort begins with welcoming feel of the tavern nestled in the trees off New Orleans Road. Crane said it was created with her family’s heritage in mind from their previous Taverns along the East Coast. The traditional décor begins with pine floors covered with large area rugs, wood paneled walls, tables with white linen cloths and napkins and antique pewter mugs and pitchers resting in the window sills. Personal family photos, memorabilia from the family’s businesses and historic photos from Philadelphia adorn the walls making the customer feel like they’ve entered the Crane’s living room. A warm and friendly family atmosphere is also important to the Cranes, which begins with the way they interact with their staff and then extends to the customers. This philosophy has earned them a loyal staff, which is a rarity in the industry, as

everlasting key employees have been serving Crane's customers for more than ten years of service including Dianne Flowers (manager and server), Joe Webb (bar manager), Sean Cavanaugh (chef), Jerri Roth (server), Tobey Brown (bartender) and Richard Williamson (asst. manager/host). “With Dianne, when someone walks through our front door, not only will she know their name, she’ll know their birthdates, their children’s birthdates, she’ll know where their children are and more. People really appreciate that. It sets her aside from other people in the industry. It’s about the customer. They (the employees) are about creating an experience,” Crane said. She added that she feels all Crane’s employees are top notch. “There is a family style atmosphere. They care about what they do, the product and the customers,” Crane said. Crane’s comfort is obvious throughout their menu. With Steakhouse in the name, Crane’s has


“staked” their reputation on delivering “only the best USDA Prime Grade Beef available.” And customers overwhelmingly agree as Crane said that their Prime Rib is the number one menu item, which is slow roasted all day, deliciously seasoned with a special rub that adds flavor to an already moist and tender cut of beef. Beef lovers can choose from three portion sizes of Prime Rib: 12 oz., 16 oz, and 22 oz. and two sizes of Rib Eye and Filet Mignon. A Sirloin Strip is available in 14 oz. Lobster Tail or a Jumbo Lump Crab Cake can be added as well as sautéed mushrooms, blue cheese sauce or Crane’s special Jack Daniel’s and mushroom demi-glace. All of these selections are served with a choice of potato and vegetable. “Obviously the steaks are the attraction across the board, but menu offerings other than the steaks create choices to please almost anyone,” Crane said, adding that their diverse menu includes fresh local seafood, Lowcountry fare, poultry and pasta. One of the region’s culinary capstones — shrimp — is the foundation of Crane’s version of Lowcountry Shrimp, which includes soft white cheddar grits with creamy corn, bacon and scallions — a delicious “Song of the South.” But Crane’s also has the ability to

display uniqueness as seen in the customer’s favorite appetizer of shaved beef with blue cheese and onions rolled and baked in phyllo. “The Tavern Roll is a unique item that has been on the menu since we opened. We call it the Gourmet Philadelphia Cheesesteak,” Crane said. “So the menu has some modern flare, but it stays very true to straightforward quality.” Complementing Crane’s culinary choices is their extensive international wine selection with more than 500 choices earning it Wine Spectator’s Award of Excellence. Diners can choose from the finest vintages from California, France, Spain, Italy, Australia and more with bottle pricing starting at around $20. Early dining at Crane’s is also a great choice for those looking for fine dining on a budget. Crane’s Early Dining menu from 5 to 6 p.m. daily offers a choice of five entreés, salad

and a glass of house wine for $16.95 or a Prime Rib dinner for $20.95. Children have a special menu with nine selections that include three pasta dishes, chicken fingers, cheeseburgers and a kid’s Prime Rib. Beer lovers will be delighted with the offerings of several Belgian ales as well as domestic craft beers complementing the draft beer selections and a full bar. Customers to the bar can also enjoy a special menu that includes salads, sandwiches and the “Best Ever Burger.” Crane’s faithful followers have much to look forward to when cooler temperatures arrive at the Island leaving residents craving comfort food to warm them up and satisfy their appetites for heartier fare. Diners seated at the bar in December and January from 5 to 6 p.m. can enjoy half price burgers daily. “We have a great number of regulars, who also create the personality of the place, and they consider Crane's ‘their place,’" Crane said. “Anyway, like I was sayin’, shrimp is the fruit of the sea. You can barbecue it, boil it, broil it, bake it, sauté it. Dey’s uh, shrimp-kabobs, shrimp creole, shrimp gumbo. Pan fried, deep fried, stir-fried. There’s pineapple shrimp, lemon shrimp, coconut shrimp...” Bubba Blue had plenty to say about his favorite food in the 1994 blockbuster movie, “Forrest Gump.” For those looking to expand their culinary horizons and experiment with new tastes, Chamber Restaurant Week is a chance to enjoy incredible deals on dozens of delicious dishes. Taking place January 26 through February 2, more than 60 of Hilton Head Island’s finest dining establishments will offer special “prix fixe” menus throughout the weeklong culinary celebration. These value-priced threeand four-course meals generally include a choice of appetizer and/or soup and salad, entrée and dessert. Now in its fourth year, Chamber Restaurant Week was created by the Hilton Head Island-Bluffton Chamber of 18

Commerce to boost restaurant business during the typically slow winter months. “We modeled it after Restaurant Weeks done in larger cities,” notes Chamber spokeswoman, Charlie Clark. “It’s not a new concept, but it was one that had never been done on Hilton Head Island. We thought it would be very popular. We were surprised, quite frankly, with how wildly popular it became.” “It’s such a community favorite,” she adds. “We have visitors who actually plan their trips around Chamber Restaurant Week to take advantage of the great deals at so many different restaurants around the Lowcountry.” Open for only six months prior to the 2012 event, Ela’s Blu Water Grille in Shelter Cove Harbour served more than 400 dinners from its Three-Course Tasting Menu to the curious checking out Hilton Head’s newest waterfront restaurant. Specializing in “seafood, steak and style,” Ela’s offered a choice of fried green tomatoes, Gorgonzola garlic

Pleased with the turnout, owner Earl Nightingale plans to offer half-size portions of menu favorites this year at the same $28 per plate. Family-owned and operated, the value-pricing of Chamber Restaurant Week is in keeping with the restaurant’s year-round goal of “getting a bottle of wine on every table,” with only a $10 to $20 markup above cost. The popularity of Chamber Restaurant Week allows many establishments to not only showcase signature specialties, but try out new recipes, as well. Others offer special wine selections in conjunction with the prix fixe menu or extend the deals for more than a single week. Such is the case at Alexander’s, The Old Oyster Factory and Red Fish, all active participants since the inaugural Chamber Restaurant Week in 2009. “It’s just a nice little push for what is


typically a slower time,” explains Katie Manley, Marketing Director. Although the menus and pricing have not been set for the upcoming event, Wiener Schnitzel was a crowd-pleaser on Alexander’s Four-Course Menu in 2012. Red Fish did well with petit portions of its popular seared jumbo scallops and grilled sea bass, in addition to introducing some new appetizers and desserts. Not surprisingly, seafood was a big hit at The Old Oyster Factory, with the crab cake dinner a top pick on the threecourse Chamber Restaurant Week menu, which also included soup or salad, dessert and a glass of house wine, for $24.99. Named a “Top 50 Italian Restaurant” in the United States by Open Table diners, Michael Anthony’s Cucina Italiana in Orleans Plaza has also participated in the annual event since its inception. “What is really does is it gives people, especially local people, the opportunity to sample what we do and what others do at more of a value-oriented price point,” says owner Tony Fazzini. “It’s probably one of the busiest weeks of the year that we have, actually.” Last year’s Three-Course Prix Fixe Menu showcased smaller portions of the restaurant’s acclaimed classic Italian cuisine with a choice of antipasti, entrée and pasticceria della casa for a mere $29. Fazzini expects to keep the exact same presentation with different dishes in 2013. On the other side of the world, so to speak, the Big Bamboo Café in Coligny Plaza is the place “Where the South Pacific meets the Carolina Coast.” Known for its eclectic 1940s décor, live entertainment and casual, All-American menu of seafood, steaks and ribs, owner Tristan O’Grady plans to showcase Chef Karl Lammert’s highend culinary talents with all-inclusive dinners throughout the week. Sample the area’s very best soups as local chefs compete at the annual Lowcountry Soup Challenge - Sunday, January 27, 2013, at the The Westin Resort and Spa. The Westin’s ballroom gives the festival a chance to spread the competing 20 chefs out a little more than their old confines at The Mall at Shelter Cove. Don’t miss this delicious event! It’s a great opportunity for local restaurants to showcase the creative talent of their chefs, while allowing everyone to taste the area’s best soups. Past entries that have warmed the bellies of island residents and tourists lucky enough to find out about this event include Butternut Squash with Candied Pecan Dust, Vidalia Onion and Shrimp Bisque, Alligator Sweet Potato Chowder, She Crab with Sherry, and Granny Smith Got Drunk in Key West! (yes, that’s a soup!) For a flat fee, guests can sample all the soup they crave, with drinks and a variety of breads. Proceeds from the VIM Soup challenge assist in providing free medical and dental care for individuals living or working on Hilton Head and Daufuskie Islands, who could otherwise not afford it. More than 31,000 patients were treated at the clinic last year, according to Linda Bloom, VIM Director of Development and Public Relations. “Typically, the Soup Challenge will raise between $15,000 and $20,000 for the clinic,” said Bloom. “We look at every way we can to raise money to help those in need.” A team of judges will determine the best soups, while attendees get their own say, voting in the People’s Choice category, awarded last year to Chef Joseph Sullivan for his sumptuous “Chicken Portobello with Pesto Soup,” also winner of the Volunteers’ Choice award. 24

In the judged category last year, first place went to Chef Ken Ballard, owner of Hilton Head Island’s Kenny B’s Cajun Seafood Hut, for “Cuzin Cooter’s ‘ChootEm’ Gator, Fried Turkey and Swamp Critter Stew,” presented with special effects - including Bayou swamp mist and Cajun-style music. Second place was awarded to Frankie Bones Restaurant for their “Monte Cristo Chowder.” Third Place was awarded to Raul Cortes, representing Captain Woody’s Restaurant, for his “Cortes He Crab Soup.” Best Presentation was awarded by the VIM Volunteers to The Westin Resort and Spa for their “Fried Chicken and Black Pepper Waffle Pimento Cheese.” Other participants at last year’s event included Alexander’s, Skull Creek Boathouse, Bomboras Grille, Carrabbas, Chart House, Street Meet, Hugo’s, Hudson’s, Market Street Cafe, Marley’s, Mulberry Street Trattoria, and Trattoria Divina. “This year we will again be offering for sale our cookbook, 15 Years of the Lowcountry Soup Challenge,” Bloom added. The book includes more than 250 soup, sandwich, and bread recipes. In addition, attendees will receive a printed cookbook with all of the event’s soup recipes. What a great gift! “This event truly is an island favorite and a delicious Sunday lunch on a cold January day,” Bloom said. “We hope the whole community will come out and sample what these restaurants have to offer, for a great cause.” The Lowcountry Soup Challenge runs from 12 noon to 3 p.m. Jan. 27, 2013 at The Westin Hilton Head Island Resort & Spa. Tapas Restaurant The Island's Fabulous Taste of Paradise. In 1992, a 7.3 magnitude earthquake shook Southern California early one June morning. The tremblor was enough to rattle Ardis Matthews and her husband, Max, into travelling across the country “to fabulous places, none of which were exactly right.” But, as it turns out so many times in life, the road less traveled, led to the most adventure. When the Matthews were in Charleston “we were sitting in a bar being friendly,” laughs Ardis. “We were talking to a nice couple from Hilton Head about our trip to Savannah. They said Hilton Head was right on the way, just make a left and go over a bridge.” The Matthews fell in love with the Island immediately. “It reminded us of our old home in California.” After trading one paradise for another, and replacing surprise earthquakes with preemptive hurricane warnings, Ardis had to find out what to do with herself. Ardis is perpetually jovial and enthusiastic. She is enthusiastic about

anything. Anything. Every new experience is “exciting”, “cool” or “fabulous”. Every past experience, even if it was less than grand, has one little slice of humor, wisdom or combination of the two. She is sweet, sassy and indefatigable. She doesn’t fear change, she embraces it. “This is all learning by doing,” she says of her extensive menu. “Except that I did have a fabulous […there’s that word again, ‘fabulous’…] opportunity to take cooking classes with some of the greatest chefs of the

1980’s in California.” Wolfgang Puck, Bert Greene and Julia Childs among them. “It was mostly fun. And the main thing I learned from these classes was, ‘I can do this.’” To Ardis, the best cooking she comes up with is “looking around that kitchen and reinventing the same ingredients over and over and over again. I’m not classically trained, I just makes what tastes good. And fortunately it seems to taste good to other people too.” Besides food that tastes good, the good food changes all the time. “There are certain items I would never take off the menu. I like the classics, but then I like totally wacky new flavors.” Ardis reflects and then starts laughing again, “And then I like the stuff in between! I don’t know! I like food! Anything but beets!” You can’t help but smile in her presence.

This is not just another wine and food festival. It has been in the making for 28 years and gotten bigger and more renowned every spring. What began as a parking lot party down at South Beach Marina, is now acres of tents filled with food, demonstrations, competitions, people, and of course wine. Named to the Southeast Tourism Society's Top 20 Events for March 2013, the Hilton Head Island Wine & Food Festival has shown it is an event to attend and contend with. The fact that it is in its 28th year should give you some sense of its success. Many events comprise the festival that start in January and culminate with the signature event on March 9th. 30

Festivities kick off on Friday, January 25th at the Uncork the Festival party where guests can bring a bottle of their favorite wine to share with the judges that will do the tasting of entered wines at the International Wine Competition on the 26th and 27th. Cabernet, Chardonnay, Merlot, Pinot Grigio, Pinot Noir, Reisling, Rose', Sauvignon Blanc, Syrah, Zinfandel, Sparkling Wine... you name it and they will be represented in this enormous competition that draws vineyards from all over the continent. “What sets our festival apart from the others is that it is not just a big tasting from wine distributors. We actually serve some of the wines that

were in our competition and judged. In addition, we are one of the only festivals that incorporates an international judging component into our wine competition,” explained Jan Gourley, event director. Visitors for the festival can arrive early and enjoy the newly planned Lunch & Learn series where wine educators will talk about pairings and how the wine is made. common thread of fine gourmet food prepared by celebrated chefs and paired with great wine. The 2013 dinners will be priced from $75 and up. Some of the 2012 dinners included a five course spread from seafood to souffle' at Black Marlin, a sommelier competition at Charlie's L'Etoile Verte so each course had two pairings, and a four course Tuscan-themed dinner at Michael Anthony's. The Grand Tasting & Silent Auction will be on Friday, March 8 at Sea Pines Country Club, advance discount tickets are available for $80. This event features high end, award winning wines as well as gourmet treats. Wine representatives and distributors will

be pouring, selling, and answering questions at this upscale tasting. Everything leads up to and is in anticipation of the actual Wine & Food Festival on March 9th between noon and 3 p.m. $39.99 for advance discount tickets or $50 at the gate. You will receive a souvenir wine glass which will be used to swish any of the 800 to 1,000 plus wines represented by some 300 plus vineyards and distributors. The music is a great mix of Cajun and Dixieland. In addition to great food and atmosphere, with the southern hospitality you'd expect, it’s one of the few places you can order gator bites. Owner and Chef Ken Ballard found the time to sit with Taste to tell us how and why he got into the business, and what he is passionate about. As a young child, he fondly

remembers his grandmother taking him to the big downtown holiday brunches, with the ice carvings and tallow sculptures. “I love art, but I could never paint or draw, and this is what drew me into culinary art,” Ken said. After graduating from college, Ken took a job as an entry level chef in a large luxury hotel, Four Seasons. “Within a year there, I learned to ice carve, make


gingerbread villages, and prepare meals for 5,000 people.” He added, “This was where I met my wife and partner, Lavern.” “My training was under some very good chefs and I learned from my experiences. My most memorable experience was assisting at a dinner for President Reagan.” Ken remembers how President Reagan was rushed through the kitchen, but he took the time to thank everyone. “I cooked for other presidents, many famous musicians and actors, and a gazillion sports celebs; however, that meeting of President Reagan will always be my favorite.” Ken said that he would advise any young culinary student or graduate to spend at least two years at the bottom floor of a 700 plus room hotel. “It’s the best training you could get, you will learn it all,” he added. From there, Ken became an executive chef with Hilton, and that experience led him to the New Orleans convention center, and Louisiana Superdome, where sit down dinners for 10,000 people were a common occurrence. “I knew the time would come to raise our family, and that’s when we relocated to Hilton Head in 1999, to open my own restaurant.” Ken spent the summer of 1999 assisting Steamer Seafood with their move to Coligny Plaza, before opening his restaurant, Kenny B's, in 1999. It is understandable that with Ken’s love for art, what he says he likes best about being a chef is creating food and coming up with the best presentation. “My favorite meal I prepare at the restaurant is for our Sunday brunch – I start at 3:30 a.m., just me in the kitchen, with usually a lifetime movie on the television for background, cooking up lots of goodies in preparation for an 8 o’clock opening.” “My favorite dish to prepare and to eat,” Ken said, “is the Gumbo – in fact I even named my 10 year-old bulldog Gumbo. Think of it, all of Louisiana in a bowl, kind of sums it up.” Another favorite is frying turkeys for Thanksgiving. “I actually look forward to about a 48 hour straight shift to pull off frying 140 plus packages for Thanksgiving, our busiest day of the year. “But Lavern and I still make it to the black Friday specials the following morning - Go figure!!!” At home, Ken likes to cook anything outside on the grill. “I like to do anything with my wife Lavern and two high school boys, Logan and Zach. We love to take the dogs on early morning walks on the beach. I’m in my 5th season of coaching football with the Hilton Head Middle School Stingrays, and enjoy watching my own two boys play for the High School Seahawks. I enjoy watching some of the other players, and realize how fast they all grow up. You hope that you may have made a difference in their lives along the way. They come and they go on Hilton Head and I’m not talking about the tourists. Some are loud, some are quiet. Some are dressy, some casual. There are traditional ones, modern, southern, Mexican, Italian… you name it. Few are old while many are young. In a world where youth is beauty, in the restaurant business, by contrast, old age is the envy of all. With over 200 restaurants on the 40

Island, we wanted to explore and celebrate the keys to excellence and longevity in such a volatile industry. In delving into the histories of many of the restaurants that have been in business 25 years or more, we learned that they all share one key to their success – “the locals”. Each one of the restaurants in this article boasts a local backing which sustains them year after year, on season and off.

Hudson’s Seafood House on the Docks

The longest standing restaurant on the Island is Hudson’s Seafood House on the Docks. It opened as an oyster packing house in 1912 and the Hudson family turned it into a restaurant in 1967 which, Andrew Carmines expressed, was a natural transition with the increase in visitors to the Island. Current owners, Brian


and Gloria Carmines, purchased the restaurant in 1975 and it has been an Island and family tradition since then as locals and visitors continue to come back year after year. “We have a tradition of the freshest local seafood on the Island as well as great service,” said Andrew. With their sweeping views of Skull Creek and shrimp boats out back, it’s easy to see why Hudson’s has been going gangbusters for so long. www.hudsonsonthedocks.com.

San Miguel’s

Our first Mexican restaurant, San Miguel’s originally opened in 1977 in a little building off of Pope Avenue before moving to its current location on Shelter Cove Harbour in 1987. Maryanne and Scott Laskowitz purchased the restaurant in 1990 from the original owner who was a chef from California and wanted to bring his great California/Mexican cuisine here. Maryanne considers their success as a product of many things. “We

make sure to have good, fresh, high quality ingredients in all of our food,” said Maryanne. She also notes the draw of the outside bar on the water and gives kudos to her staff who take pride in their food and customer service. “San Miguel’s is a fun place to relax, have some good food and drinks and listen to music.” www.sanmiguels.com.

Alexander’s

Alexander’s, located on a lazy lagoon in Palmetto Dunes, was also opened in 1977 and is owned by Ric Peterson and Franz Auer. Its peaceful setting is complimented by the unique collection of antique Harley Davidsons which adorn the floors and ceiling. Known for their fresh seafood and extensive wine list, the restaurant was purchased by its current owners in 1996. Katie Manley, marketing director for Alexander’s, notes that their key to success comes in the form of “location and excellent food and service.” She

added, “Our business is a mix of tourists and locals depending on the time of year, but we are fortunate that we get a lot of repeat business from both.” www.alexandersrestaurant.com.

Captain Woody’s

Started in 1982 in its scenic location at Palmetto Bay Marina, Captain Woody’s has become a favorite local’s hangout for good food and a good time. According to owners Russell Anderson and Shannon Wright, their ads all say 'Where the Locals Go'. “We pride ourselves on the fact that we have been in business for 30 years and all that time have catered to the locals. We strive on giving back to them in the off season by offering different specials to show our thanks." Russell and Shannon are also thankful for the influx of tourists that are also a huge boon to business. “A lot of vacationers see our ads and stop in wanting to be a local for a day. They want to see where the locals hang out

and learn the ropes from them.” Russell and Shannon took over the Woody’s at Palmetto Bay Marina in 1999 and opened another Captain Woody’s in Bluffton in 2009. Charlie’s L’Etoile Verte

Also opened in 1982 and known for their fabulous seafood is Charlie’s L’Etoile Verte. After spending time in France and French Senegal and studying under a French Chef in Savannah, Charlie Golson had a dream of owning his own restaurant where his family could all work together. His vision came to fruition when he bought Charlie’s and since then he has spent 30 years becoming a household name for locals and generations of families and their friends who vacation here. Charlie, his son, Palmer and daughter, Margaret, attribute their

success to “lots of hard work by lots of family members”. “We push ourselves and there is always more to do,” said Charlie. He added, “Fortunately the kids let me go home at about 5 every day.” www.charliesgreenstar.com.

Reilley’s

I would venture that there are few people on Hilton Head Island and few steady visitors that do not know the name or have never eaten at Reilley’s. I know it’s the first place my father always wants to go when he visits. Reilley’s was started on the south end in December of 1982. Tom Reilley had been working on the Island for five years selling food. With the knowledge that he had four children to support, he approached two of his customers, Peter Kenneweg and Serge Pratt, regarding lending him money to open a restaurant. It is now a family business as Tom and Diane have brought in their children and spouses, Keith Reilley, James and Erin Reilly

Booth, and Brendan and Jill Reilley as partners. Tom opened his other Reilley’s restuarant on the north end in 1986 with his Crazy Crab partners but now shares ownership with his children as well as his brother David and wife, Laura. “We are family owned and operated and our long time customers are just an extension of our family. Our primary focus has always been on the Islanders,” said Tom. “We are also fortunate enough that the tourists find us and like us.” www.reilleyshiltonhead.com.

Crazy Crab

Tom Reilley’s restaurant success story continued when in 1984 he teamed up with brother David, Peter Kenneweg, Wally Seinsheimer, and Eric Spector and bought Boiler’s Restaurant on Highway 278 and turned it into The Crazy Crab. The concept for The Crazy Crab, which overlooks Jarvis Creek, came from looking at seafood restaurants in


Charleston and consulting a restaurant designer. They brought The Crazy Crab to Harbour Town in 1986 and brought in managing partner, Chuck Larson to run the operation. Tom sees their longevity and popularity as multifaceted: “We offer a unique, family restaurant at reasonable prices with a varied menu, good service, and great vistas.” www.thecrazycrab.com.

Truffles Café

The Hilton Head Island dining experience is not complete without a meal at Truffles Café. The first Truffles to open was in Sea Pines Center in July, 1983. Charles and Joe Fraser were building the shopping center and approached the Beall family to start a restaurant in their new plaza. The original concept was a collaborative effort between Kreis, Sandy, and Price Beall. The next 29 years have been a happy history for the Bealls as they have expanded with their Belfair location in 2000 and Pope Avenue Truffles in 2007. According to Price, “Truffles is a success because of the amazing people that we work with and also a wonderful community that supports us all year long.” He notes that their customer base is a nice mix. “We are fortunate to have a great local following along with many visiting guests.” www.trufflescafe.com.

Callahan’s Sports Bar & Deluxe Grill

Callahan’s Sports Bar & Deluxe Grill opened its doors in 1987 to a mostly local following. According to owner Vic Neely, “People equate us to sports.” Callahan’s has become the perfect fix for those who want a cold beer and a burger followed by a good game of pool. Vic attributes their success to “real people and real food.” He used to come down every spring for The Heritage Golf Tournament with a group from work and they would eat big and fancy meals every night. Vic recalls asking his waitress once where to go for a casual meal and she sent him to Callahan’s. It must have been a good meal, because Vic bought the restaurant/bar 9 years ago and continued the tradition. Vic also owns Plantation Café’ and Deli which opened on the south end near Coligny Plaza in 1974. “We have good quality food, friendly service, and a casual atmosphere and we take care of the locals. We just have a lot of fun,” Vic explained. The Salty Dog Café

Currently celebrating its 25th year is the Salty Dog Café in Sea Pines. The evolution of the Salty Dog has truly been a wonder to watch as it could be critiqued as a masterpiece in marketing. As the brainchild of Bob Gossett, The Salty Dog started out with their signature circular outside bar on the docks at South Beach Marina serving shrimp sandwiches to local fishermen. Yarborough, the Dog (as it is known to locals) is now a “destination” and one that did not happen overnight. Mark boasts that they are lucky to have support from both the tourists and the locals: “You can’t exist without both.” The Salty Dog has grown to accommodate its customers. “We sell a good product at the right price and our location doesn’t hurt,” said Mark. Somewhere over the past 25 years, The Dog has started or acquired three different restaurants, pizza and ice cream stands, an outdoor grill, and their now famous Salty Dog T-shirt shop. I’m not sure if there are any tourists who leave the Island with a Salty Dog T or scarf for their canine friends at home, but if there are any they are in the minority. www.saltydog.com.

Stellini Italian Restaurant

Stellini Italian Restaurant came on the scene in 1987 and Joe Pesce bought it two years later. “I moved to

the Island thinking of semi-retirement and I went to visit my daughter and son-in-law who worked at Stellini and I ended up buying it,” said Joe. Daughter and hubby, Elise and Kyle Parlagreco, now run the show. “Our success is based on our stability -- the steady quality of the food and service. We are only on our 2nd set of chefs in 23 years!”, said Joe. “We treat everyone like family.” Joe notes with pride that they have a steady customer base seeing new faces during the tourist months but they welcome familiar faces all year long. The Harbour Town Grill & The Quarterdeck

Last but not least are our Sea Pines stalwarts. The development of Sea Pines put Hilton Head on the map many moons ago and two of its establishments have withstood the test

of time. The Harbour Town Grill overlooks the 9th hole of the Harbour Town Golf Course and is known for its steaks while the Quarterdeck boasts one of the most amazing views on the Island encompassing water, marina, and our famous candy striped lighthouse. “The Quarterdeck represents all of Sea Pines and Hilton Head,” said Jeff Kruse, Director of Food and Beverage for Sea Pines. “What has kept these two places going is the quality of staff and a new ownership that is committed to developing and updating everything that is 50 years old.” www.seapines.com. Just Close your Eyes and Listen Hilton Head Symphony Orchestra

When you think about the fact that our small Island has its very own symphony orchestra you realize that we really do have it all. Taste had the opportunity to speak with Mary Briggs, President and CEO of the Hilton Head Symphony Orchestra, to learn the story behind the music and the musicians. Taste: Tell us how the orchestra came to be. Mary: Back in 1983 a group of local amateur and retired musicians got together because they wanted to make music. In the 1990’s the orchestra turned professional and they have grown larger and more diverse over time. Taste: Is your entire orchestra made up of locals? Mary: No. There are just not enough musicians for our bigger concerts. We draw from Savannah, Charleston, Atlanta, Augusta, Columbia, and North Carolina. Each concert has guest artists

and usually a guest soloist. Taste: Tell us about your “guests”? Mary: We work with artistic managers from all over to find the right musicians. We are all about ethnic diversity and promoting young artists. The audience loves to hear and see the young musicians. For Vivaldi, coming up on February 11th, we are bringing in Sphinx performers (African American and Latino youths) and every year we bring back the winner of our International Piano Competition to play in a concert. Last year we had a 15 year old play. Young talent is becoming our brand. Taste: Who is your audience and what is a typical season like? Mary: We have nine concerts that run from October to May and then we have our Annual Symphony Under the Stars and the International Piano Competition. Our Music director and conductor plans each season with an eye toward

variety and I budget it out. Because our concerts are on Mondays, we get mostly the 55 and up range audience. This year we have added three Sunday matinees to appeal to the younger generation and seniors. Taste: Tell us about your new Maestro. Mary: John Morris Russell came to us from the Cincinnati Pops and he is fabulous - exciting and energetic. He has led orchestras from all over the United States and Canada and his resume for awards and recognitions is lenghty. We are so lucky. Listening to a live orchestra is an amazing experience that no recording can do justice. When Louis Braille instituted his concept of raised dots to teach the blind how to read, the lives of people who could not see were changed forever. So too, is the breakthrough into society for those who find friends and educators inside the doors of the Literacy Volunteers of the Lowcountry (LVL). When you think of people in our community that have low literacy, you probably think of immigrants that do not speak English. While this is true in some cases, the reality is that the students of LVL are from near and far and a number of them grew up in the Lowcountry and did not complete their education because they came from families that did not value education. In fact, studies show that children of parents without a high school education are twice as likely to drop out of school and the education level of a parent is the most important indicator of a child’s success. With that in mind, it is easy to see that LVL’s role in providing literacy 48

instruction reaches far beyond the individual who is tutored and can impact generations. LVL’s goals are lofty and they all aim to help make the members of our community more productive workers, parents, and citizens. LVL offers many different classes from Adult Basic Education to English classes. According to Dodi Eschenbach, Associate Director of Development at LVL, “We have begun to see demand for more than ‘literacy’ which means reading, writing, speaking, and computing. Our GED and citizenship classes have grown more and more popular and we celebrate these students’ successes every day.” One of LVL’s biggest fund raisers is their Cooks & Books event which is a melding of authors and chefs on March 3rd from 11 a.m. to 2 p.m. at the Westin Hilton Head Island Resort & Spa. The Westin and Chrysler-Jeep-Dodge-Ram are presenting sponsors. Your entry ticket includes unlimited tastings from top local chefs, access to a number of

When Kim Mix moved to Hilton Head in 1978, there was one flashing light, a swing bridge, and two lanes coming onto the island. Kim’s family has always been in the restaurant and catering business in Augusta, Georgia, so it’s always been in her blood. “I’ve worked at a number of locations on the island over the years, and frankly I enjoy making people happy.” She was the first female bartender at the Crow’s Nest, the bar at the top of the former Hilton Head Inn, where people who came to consider buying real estate in the early island days stayed. Other places you may recognize Kim from are the Calibogue Café, San Miguels, and the Old Post Office! Kim loves working at A Lowcountry BackYard, and being able to dress in jeans and a BackYard t-shirt. Of course, she looks great in anything! “I really enjoy the hours and the people I work with,” she said. “The best part of the

job is that the restaurant is family owned, family run, and everyone I work with is like extended family. If you’re not happy with what you do, you should do everything you can to make a change,” she said. Kim’s favorite items on the menu are fried green tomatoes, the Calibogue Catch, crab cakes, and shrimp and grits. Simple, fresh food, made from scratch, is the name of the game at this quaint restaurant, known for its creative take on southern cuisine. “To be successful at my job, I have to be organized, be nice, and not sweat the small stuff,” Kim confided. “I realize that some people come in after a long day of traveling, or being on the beach with young children, and they might be hungry, stressed, and a little on edge. I’ve even been yelled at! It’s a challenge I enjoy - to help people relax and enjoy their experience here. That’s what makes me feel successful!”

When she’s not working, Kim likes to spend as much time as possible with her best friend, and husband, Jeff Mix. “We like to chill on the beach, and maybe think about walking, jogging, and playing tennis or golf,” she laughed. If she could have any job in the world, Kim said with a smile, that she’d like to own and work with her husband at their own tiki bar and grill, somewhere in the Caribbean. “But for now, I'm right where I want to be at this time in my life.” Drop by and see Kim Mix and owners Dave and Raina Peck. Celebrity chef, television personality, and cookbook author Sallie Ann Robinson is a sixth-generation native of Daufuskie Island, South Carolina. She is renowned for her culinary expertise, entertaining presentations, and knowledge of Gullah culture. For more than a decade, Robinson has maintained a notable presence on national television and in popular magazines. Included in her numerous television appearances is the December 2008 pilot for Georgia Public Broadcasting's Dixie Divas in the Kitchen. She has made guest appearances on the Food Network, the QVC Show, the 700 Club, and CN8's Your Morning Show. Born on Daufuskie Island, Sallie Ann Robinson was among the students taught by Pat Conroy when the famous author came there in 1969 as part of the South Carolina school system's "teacher integration." Robinson said that growing up on Daufuskie gave her respect for the world beyond it. “We had so little and went through so much, but through it all we were and still are proud people who appreciate the kind of living that is buried within our soul,” Sallie reminisced. “Hard work was a part of our good times— just like Pops used to say, "nuttin’ gets done when ya lyin’ in bed." As soon as she could put wood into the woodstove, Robinson was given the opportunity to cook. “I was the oldest at home, and our parents were gone a lot so they could provide for us,” Robinson said. Meals were something that had to be prepared and ready by the time they returned home from a busy day. With the kids at home alone to do the chores around the house, certain duties were left to the oldest. “Cooking was one of my responsibilities, and not burning down the house was another.” “All my life,” Robinson said, “I’ve known food and meals to be a time to connect - a chance for sharing tastes with one another, an opportunity for breaking bread to the best of times long gone and the best yet to come, and an important time to exchange memories with each other.” And there's something special everyone can get when they explore another culture's cooking and can recognize it as a piece of 56

that culture's history. Sallie Ann Robinson has grown in her own right into an accomplished chef and the author of several celebrated cookbooks. Her culinary expertise has helped to preserve the food dishes for which her native island is famous, and has made her an authentic and much sought-after representative of Gullah culture. “We ate a lot of seafood year round, so those are many of my favorite dishes featured in my cookbooks.” Sallie's Seafood Spaghetti is delicious, and her most famous is probably Smuttered Shrimp and Grits, or Shrimp ‘n’ Grits, Gullah-style.

Smuttered Shrimp and Grits From author Sallie Ann Robinson’s Cooking the Gullah Way, Morning, Noon and Night 2 cups Jim Dandy Quick Grits, prepared according to package instructions 1 cup vegetable oil 1 pound Wild Georgia Shrimp, peeled and deveined 1 teaspoon each of salt, ground black pepper, paprika, garlic powder 1 cup flour, preferably White Lilly self-rising flour 1 medium onion, chopped 1/2 green bell pepper, chopped 1/2 red bell pepper, chopped 1 stalk celery, chopped 1 cup hot water 3 strips bacon, cooked crisp and crumbled Heat the vegetable oil in a heavy-bottomed, preferably cast iron skillet, over medium-high heat. Sprinkle shrimp with salt, pepper, paprika and garlic powder, then toss. Place flour in a large plastic bag with a zip lock, add seasoned shrimp, zip, then shake the shrimp to coat. Test oil temperature by dropping in a dab of the flour. If it sizzles, add shrimp to the hot skillet and cook the shrimp until browned on both sides. Remove and set aside. Drain oil. Add the onion, bell peppers, celery and water to the pan, turn heat to medium, and simmer vegetables until tender. Add the shrimp and simmer 10-15 minutes until the gravy thickens and browns. Serve shrimp over the prepared grits and crumble the bacon on top. (Serves 6)


17th Annual Hilton Head Island Gullah Celebration The Hilton Head Island Gullah Celebration showcases the rich cultural heritage of the Gullah people and their history on the Island. Established in 1996, the Gullah Celebration is an annual event held on Hilton Head during the month of February. It is hosted by the Native Island Business and Community Affairs Association, Inc. Gullah is more than simply the language and name of a people. It encompasses the essence of struggle, spirituality, perseverance and tradition. The annual Celebration was designed to create economic development opportunities for minority business owners, to develop the cultural tourism market, and to increase tourism in February on Hilton Head Island, historically the slowest month of the year. Celebration programming includes a variety of events designed to attract local residents, regional, national, and international travelers. The events held the second and third weekends include mostly cultural events that attract out-ofstate travelers during the peak travel times in the month of February. Each event during the Celebration incorporates a facet of the Gullah culture. Visitors can experience the food and music, receive historical information, and take a journey through the culture via the visual arts. The Taste of Gullah, sponsored in part by the Arts Center of Coastal Carolina, offers classic Gullah favorites and cultural entertainment. The Arts, Crafts, and Food Expo features cultural demonstrations, such as sewing sweet grass baskets and weaving fishnet. A local chapter of The Hilton Head Island-Bluffton Chapter of the South Carolina Restaurant and Lodging Association recently formed, seeking to create a unified marketing, lobbying, and outreach effort for food-service and lodging professionals on Hilton Head Island and in Bluffton. Hospitality officials have been working to form a chapter for two years. President John Munro said “The chapter, called the Hilton Head Island-Bluffton Restaurant and Lodging Association, is separate from the retooled Hilton Head Hospitality Association, which disbanded in 2011 after 25 years because of waning membership and lack of money.” That group is still intact as an all-volunteer group and focuses on organizing the Hilton Head Island Wine and Food Festival. "This local chapter will increase visibility, deliver added value to area businesses, and increase our local hospitality industry's lobbying power at the local, state, and national levels," said Munro. “Our mission is to promote, educate, and protect the lodging and food-service industry of our community through our local, state, and national associations,” Munro said. Dating back to 1950, the South Carolina Hospitality Association offers a wealth of benefits for food-service and 60

lodging operators. The Hilton Head Island Bluffton Restaurant and Lodging Association is an official local chapter of the South Carolina Hospitality Association as well as the National Restaurant Association and American Hotel and Lodging Association serving the Hilton Head Island and Bluffton Communities of South Carolina. “Quarterly meetings are opportune for networking with other local operators and suppliers to learn about things that can improve our business, happenings in the political world that relate to our business, and ways hoteliers and restaurateurs can help improve the Hilton Head Island and Bluffton Communities,” Munro said. Independent restaurants and lodging establishments that join the South Carolina Hospitality Association (SCHA) automatically join thousands in South Carolina and across the country that rely on the Hospitality and Restaurant Associations to help them save time and money and stay up to date on the latest news, research, and trends in the industry. Members also count on the Associations to advocate for favorable laws and regulations, to promote the industry, and to provide a network to meet their peers. SCHA has full time lobbyists representing the industry at the State

House in Columbia and with various regulatory agencies to make sure state laws and regulations do not place an undue burden on the industry and that lawmakers understand how they might impact the restaurant and lodging industry. Restaurant and lodging members also receive ongoing training and education by participating in workshops and seminars. Munro said the local chapter of the state hospitality association aims to fill a void for food-service and lodging professionals "searching for tools and resources needed to build a competitive advantage amidst our rapidly changing marketplace." Beth Anne Crane, an officer of the organization and restaurant owner of Crane’s Tavern on New Orleans Road said, “The new chapter plans to work with the University of South Carolina Beaufort, Technical College of the Lowcountry, and Beaufort County School District to develop a stronger hospitality-industry workforce through programs and scholarships with the South Carolina Tourism and Hospitality Education Foundation.” For more information, or to join this new organization, visit their website at www.schospitality.org.

SHRIMP OLE by Tapas Restaurant

INGREDIENTS

INSTRUCTIONS

2 lbs. Shrimp 4 Fresh Pablano Chilis, seeds removed coarsely chopped 3 Cloves minced garlic 8 Tomitillos - remove husk & cut into quarters 2 Avocados, cut into bite size pieces 1 Bunch cilantro chopped ¼ Cup Olive Oil 3 Tablespoons butter

Heat olive oil. Add chilis. Cook over medium high heat, about 5 minutes. Add tomitillos, salting to taste. Reduce heat to medium low. Stir occassionally for about 10 minutes. Transfer sauce to blender or Cuisinart and process until resonably smooth. Melt butter, add shrimp, salt and pepper to taste. Stir. Add garlic. Add sauce and cook until shrimp are transparent. Toss with cilantro, avocado and serve with rice. Serves 4.

If chicken is not fully cooked, lay on cookie sheet and finish in oven at 350° until done. Plate chicken and ladle sauce over chicken. Be sure to stir sauce vigorously first. Serves 4. 62

Is Fish Oil Right For You? BY CRAIG HYSELL

Can fish oil improve your quality of life? Well… that’s for you to decide. Perhaps this will help. Essential fatty acids are the nutrients your body needs which it cannot manufacture on its own. They are divided into two unsaturated groups, Omega-6’s and Omega-3’s. According to most studies, we would ideally like a 1:4 ratio of Omega6 to Omega-3. In Western diets such as ours, we have 10-20 times more Omega-6’s than Omega-3’s. Ouch! Diets high in Omega-6 fatty acids (which can be found in foods like meat, chicken, turkey, almonds, peanut butter, mayonnaise, margarine, soybeans, etc.) cause cardiovascular disease, cancer, autoimmune diseases and inflammation issues. Most Americans have a diet where the ratio of Omega-6’s to Omega-3’s is 20:1! Cutting back on our traditional fare could help lower this ratio, so could the right fish oil supplement. 70

So how do you pick the right one? A good fish oil supplement comes from either herring, sardines, anchovies, salmon (stay away from the farm raised!) or tuna. Sardines and anchovies are the most common. Why? Because they are smaller fish. Smaller fish have a lower risk of contamination from toxins. Next, look to see that the fish oil is pure, if it comes from fish parts or fish byproduct and you need to take 8-10 capsules per serving, and you burp up fish taste half the day, that’s the wrong fish oil. It is practically useless. Next, look for a total amount of EPA and DHA. This is the good stuff. The higher it is, the more pure it is. The fish oil we sell at my gym is a liquid instead of a pill, has an average EPA+DHA content of 2615mg (which is practically off the charts) per 1 teaspoon serving, and has an ingredient list that reads quite simply: “derived from sardines and anchovies, contains 0.1% rosemary extract”. You will pay more for

a quality fish oil, it will also taste better, you can take less of it (so it will last longer) and it will not be molecularly distilled which might remove the toxins, but will oxidize the oil and lead to rancidity. Fish oil has many benefits, but make sure you do your label research before purchasing your next brand. Fish oil is a hot supplement right now and there are many, many supplement manufacturers trying to cash in cheaply on the growing market. Apply the right knowledge and make the right decision for you. In the end, it’s the law of economics: you will get what you pay for. See ya out there.
