PUBLISHER’S NOTE Just when I think I’ve seen it all in my 32 years on this island, a year comes by like the one we’ve just experienced and completely shatters all of my expectations. And I mean that in the best possible way. We thought last year was a busy time on Hilton Head Island, but this year it was like opening the floodgates. In hindsight, the busy year our island has enjoyed should have been easy to see coming. With international vacations off the table and folks avoiding long-distance air travel, more and more people were seeking out nearby, domestic destinations like ours. So when it came time to choose one, of course they’d go with the one voted No. 1 Island in the U.S. by Conde Nast and Travel + Leisure. As a result, this year was a wild ride for Hilton Head Island with nearly record crowds and a massive influx of new residents. Being a long-time resident, it almost makes me nostalgic for the days when the season for visitors came in a 12-week wave as predictable as the tides, ebbing away toward the quiet shoulder season. I say almost, because as a member of the business community it’s encouraging to see so many of my neighbors reaping the benefits of this surge of interest. A rising tide lifts all ships, and this tide has been enormous. A busy island means a healthy bottom line for the establishments that I’m privileged to spotlight in every issue of Taste, but that hectic pace can be a double-edged sword. Just ask any realtor about how the flurry of activity has led to them running out of properties to sell. For the local restaurant industry, it has exacerbated a strain on the workforce that existed long before COVID. It has meant long hours and increased pressure for staff and management, both in front of the house and in the back. What’s inspiring, though, is how they haven’t skipped a beat. Our restaurants have continued to elevate the island’s culinary scene and provide an exceptional experience for each guest, no matter how many tables they’re turning. It’s been amazing to watch. But like the busy year we’ve had, that should have been obvious in hindsight. Our restaurants have earned their global reputation for excellence, and you’ll find some of the finest culinary professionals in the world right here on Hilton Head Island. Serving guests is what they do best, and if there happens to be a few million more of those guests, they’ll greet each of them with a smile.

LUCKY ROOSTER KITCHEN + BAR Creating an amazing dining experience for guests. By Barry Kaufman

It was a tall order to begin with, taking over Lucky Rooster from original chef and owner Clayton Rollison. Not only was Rollison such a visible symbol for the restaurant, it was largely his core vision that drove the restaurant’s approachable gourmet philosophy. Factor in one of the craziest summers in island history, with scores of tourists flooding the island amid pandemic uncertainty, and you can see the challenge new owner David Leffew was facing. You can also see how well he faced that challenge with every wave of accolade, every positive online review, every masterful dish that comes out of the kitchen and every way that Lucky Rooster is expanding and growing. “We knew the challenges going into it,” he said. “You had a brand that was successful, and… we had to come in and execute at that level. That was a challenge, but we knew the expectations, and we knew the mindset. We pushed the team and they executed.” That team played a massive role in seeing Lucky Rooster through the transition and what Leffew says was a “crazy summer.” They also played a huge role in taking Lucky Rooster in exciting new directions. Proving hugely popular early on, the new lunch and brunch menu took full advantage of Chef David Landrigan’s culinary expertise. 12

“He’s a classically French trained chef, and he’s really been able to create something amazing,” said Leffew. He points to intriguing items like the classic omelet on the brunch menu and the grilled fish banh mi, items that take that Lucky Rooster flavor profile and run with it. “It’s something you’re not going to find anywhere else on the island.” It’s a testament to the energy Leffew and his team have brought to Lucky Rooster that not only have they been able to give diners a seamless transition, they’ve been able to give them something new with an all-day menu. But that’s just part of the fun. “How we designed that brunch menu is by asking, ‘What do we want for brunch?’ When we’re on vacation or we’ve had a long night last night, what are we looking for?” he said. “We really wanted to put a menu together with great combinations that hit that sweet spot.” The experiment has clearly paid off. On an island that holds Sunday brunch sacred, giving diners a chance to experience it all week long has proven extraordinarily popular. As has letting the

lunch crowd enjoy a different spin on the restaurant’s signatures. “Chef and I are constantly in menu development. We are constantly looking for local vendors and farmers to bring us the freshest, best ingredients,” said Leffew. Being recently certified by the South Carolina Department of Agriculture’s Fresh on the Menu program, the team is just getting started. “As we go into this coming year, we’ll have that separate unique dinner menu where we can get a little more creative,” said Leffew. “We have the people in place, and everything is ready to rock and roll.” Another of the people in place is bar manager Monica Collins, who oversees a beverage program that continues to earn applause for its creative craft cocktails. If you’re a fan of what’s happening behind the bar at Lucky Rooster, we have more good news for you. “We are in the process of building a happy hour menu,” said Leffew. Starting off in the late afternoon, diners can pair their famous cocktail with an array of sharable items right at the bar. “We’re really excited to bring that out, and it’s a

good opportunity to have a great Lucky Rooster experience before the crowds really come in.” And they will come in, if this past crazy summer has been any indication. Posed with the challenge of continuing the restaurant’s legacy for quality while adding new dimensions, it was those crowds that let Leffew know he and his team were on the right track. “When I started seeing reviews and social media chatter beyond what I was seeing in the dining room, that was probably one of my biggest moments of excitement. And then when I saw people on vacation coming back 3-4 nights in a row, I knew we were on the right track,” he said. “People are always asking when we get to sit back and say we’ve done it. I don’t know that you ever do. You’re constantly improving every day. HAROLD’S DINER The Tastiest Tradition by Barry Kaufman

Hilton Head Island is a place of constant change, and always has been. Not only has our coastline changed dramatically over the centuries but our beaches change every day, the outline of our island shifting with the tides. Even looking at the span of the last few decades, we can see how the only constant on Hilton Head Island has been change. Restaurants and businesses have come and gone, local landmarks built and razed to be replaced by parks and green spaces or modernized to fit our upscale image. 16

There is, of course, one other constant. The low-slung building on the corner of Hwy. 278 and Singleton Beach Road, shaded by an enormous live oak, is and – for many of us - has always been Harold’s Diner. Launched in 1974, it has quietly watched in its ceaseless sameness as the island around it morphed and changed. Well, maybe quietly isn’t the right word. But consistent certainly is – consistently delicious, and consistently one of the most entertaining dining experiences on the island. Whether you ate there last week or ten years ago, the


experience was most likely the same. You entered, dazzling at the array of colorful ornamentation and memorabilia that line the walls. You wrote your name and your order down in explicit detail, knowing that failing to do so would earn you searing sarcastic (yet hilarious) comments from the staff. Heck, maybe you intentionally screwed up your order to enjoy some free entertainment. And then you dug into a burger that has rightfully earned its place as a Hilton Head Island rite of passage – stacked with toppings, bursting with flavor and prepared before your very eyes. If you were feeling ambitious (or just very hungry) you order the Big H Burger with its full pound of meaty goodness. Or you indulged in their breakfast, like the famed trash can omelet. And then you paid with cash, because the modern world of plastic convenience is about as welcome here as a Yankees fan. And in case that last line has you confused, know that Chuck Hyatt, who has been the face of Harold’s Diner for more than 20 years, is both a die-hard Red Sox fan and a man who does not suffer fools. “Oh I get plenty of New Yorkers who wear their Yankees hats in here intentionally. It takes a different kind of personality to go face to face with me on that,” he said. Hyatt’s oft-abrasive personality is an outsized part of the charm here. Forget to put your name on your ticket? Get ready for the whole restaurant to find out about it. Take too long ordering? Hope you have a thick skin. Yankees fan? Just seriously, keep that to yourself. “People want to experience that,” said Hyatt. “If you’re an introvert, you’re probably not going to come to the diner.” Running this gauntlet is worth it, however, to enjoy a no-frills burger that has stood the test of time. Any number of gourmands have come to the island looking to take Harold’s crown for the best burger. And many have failed. “It’s what we put in it, but it’s also because we don’t change it. We just stick to what we’re good at,” said Hyatt. “That’s why we haven’t changed anything. When you talk about portions, price and quality, I guarantee you you’re not going to find a better value.” On an island endlessly shifting in the tides, Harold’s is refreshingly static. But that doesn’t mean there isn’t room for incremental changes. Over the last few years, the booming popularity of outdoor dining has led to new picnic tables, plus a new face has emerged behind the scenes. Local Tom Enright

came on board two years ago, ready to hit the ground running and change absolutely nothing. “It’s steady as she goes,” said Enright. “The quality of the food, the atmosphere… It’s a fun, cool place. You get ribbed a little bit and I think people do enjoy that. We really do have a lot of fun doing that.” That said, regular visitors to Harold’s will notice a few new offerings on the menu, including pulled pork sandwiches, hot pastrami, and even Enright’s own recipe on the chili dog (“We had on one there, but decided to spice it up,” he said). Upfront, you’ll also notice a new face in Kari Vitaro joining the staff. So while there may be minor changes here and there, the overall experience at Harold’s Diner will be exactly the same on your next trip. On an island where everything changes twice daily, it’s good to know that some things never will. “I’ve been doing the same thing for 20 years and people still enjoy it,” said Hyatt. “If it ain’t broke, don’t fix it.” And what he’s been doing is slinging mouth-watering food with a side order of attitude. Like the sign says, eat here or we both starve.

When creating a nutrition plan, start with your goal. What is it you want to get out of making some changes to your food intake? Do you want to have more energy? To lose body fat? To gain lean muscle? If you can’t answer that question clearly, think of it this way: if this plan is wildly successful, what is different about your life? That should help you narrow down your primary goal. After you’ve clearly defined your goal, we get to the more challenging part. This second step requires brutal honesty with yourself. First, address where you are already doing a good job. What healthy options are you making right now? What habits do you have that are already in line with your goals? Then, take an honest look at the habits that are holding you back. Do you consistently skip the gym? Or maybe you choose an open bag of chips over an apple for your afternoon snack? Once you have a clear picture of your goal and the habits that will help you get there, you can build your plan around that. Here are several habits that I consistently see that need a jumpstart:

In the world of fitness and nutrition, there are very few things the experts agree on. Is cardio king? Or does strength training garner better results? Is fasting the way to longevity, or does eating every three hours keep your metabolism in check? The information age we live in often makes it hard to tell a fact from a fad, so where do you start when looking for a nutrition plan that meets your needs? Let’s start at the beginning: the only perfect nutrition plan is the one that is custom just to you. A thorough plan includes how much to eat, when, what food pairings are important, hydration, macros and micros, but most important of all it is based on your goals and your preferences. I’ll start with a confession: I hate tomatoes. I don’t include them in any recipe I make at home, and I pick them out of food when dining out. It’s just a preference; they are indeed a nutritional powerhouse but I don’t care for them. So I don’t eat them. Is there something in your current diet that you simply don’t care for? Is it because you’ve tried it and don’t like it? Or had a bad food experience at some point? If it’s not working for you, it’s working against you. So move on. Remember: the perfect plan is one that is made for you. 22

I need more veggies. Who gets at least 3-5 servings of veggies a day? Veggies are generally high in fiber, vitamins, minerals, and often low in sugar and sodium. They also tend to have a high water content and a high concentration of antioxidants. An easy way to increase your overall intake is to add a cup of spinach leaves to your favorite smoothie, or to add a cup of cut peppers and onions to an omelet. If you want to prep a bunch of veggies for the week, simply preheat your oven to 375, chop some broccoli, brussel sprouts, sweet potatoes, and carrots and place them in an even layer on a baking sheet. Drizzle with olive oil, salt, and pepper and bake until crispy. Veggies prepped this way reheat easily and travel easily as well. I need cleaner snacks. It’s so easy to just grab a bag of chips or that energy bar, but let’s consider why snacking matters so much when building your nutrition plan. Snacking matters because you will get hungry between meals, and you will have choices to make. Being prepared with snacks that are nutrient-full and energy-packed makes all the difference. When in doubt, keep it simple. Some smart and simple choices include: an apple with a handful of cashews, a tortilla with turkey and cheese, a cup of yogurt with a ½ cup of granola mixed in. Again, the best nutrition plan is the one that is custom fit around your goals and your lifestyle. Yes, your preferences matter! And your goals should be the foundation of your plan. WELCOME, Y’ALL THE HILTON HEAD ISLAND SEAFOOD FESTIVAL Setting a place at the table for foodies the world over. BY BARRY KAUFMAN

Not that anyone needs to be told this by now, but Hilton Head Island’s seafood is kind of in a class by itself. Sure, the chilly waters of the Chesapeake might be renowned for their oysters and the more hospitable climes of the Gulf of Mexico may have put shrimp on the culinary map, but there’s something about our local fare that just… hits differently. We admit to being biased, but it’s the salty sweetness of our oysters, the mouthwatering freshness of our shrimp, that sets us apart. We’ve known it for years, and thanks to the Hilton Head Island Seafood Festival, the world knows it. “To think it just started as a little gathering of friends and family,” said Festival Founder and Hudson’s Seafood on the Docks owner Andrew Carmines. “Now we’re starting to get national 28

recognition and all these celebrity chefs… I think it speaks to the quality of the event. If you go by the official count, this coming year’s Hilton Head Island Seafood Festival will mark its 15th iteration. After all, the festival was technically brought back to life after having once been a pillar of spring fest back in the 1980s. But if you ask Carmines, he’ll refer to it as the 20th iteration. Because it was 20 years ago that

he first launched his self-described little gathering. “My brother (David) had just passed away and my parents had started the foundation,” explained Carmines. “We did a gathering at the restaurant, just family and a few college friends of my brothers, with all of us donating money to cancer research and local charities.” This informal gathering grew and grew until it was time to formalize it, with the 2006 event heading outside of Hudson’s


to Shelter Cove Community Park. “The park kind of swallowed the event,” said Carmines. “It didn’t have enough inertia at the time.” It certainly found that inertia the next year and from there has flourished into a true destination event, one that attracts a hungry crowd from all over the world to sample the flavors that make our island unique. Boasting a lineup of celebrity chefs and a week full of event that show the dynamic culinary scene the Lowcountry now offers, the event has helped raise more than $1 million for non-profits and charitable organizations through the David M. Carmines Foundation. “It never would have crossed my mind we could get where we are,” said Carmines. “I’m looking forward to showing people that the island isn’t just the beach and golf, it’s more of a culinary destination. That’s huge for (our island’s restaurants)… that we can rub elbows on a national level. It kind of validates what we’re doing as restaurants in the area.” This year’s event is doubly exciting, not only because is it celebrating an anniversary, but because of pent-up demand following a year that saw the festival canceled over COVID concerns. “Having a year off from doing it made me realize how fulfilling it is. It was a big void in my year,” said Carmines. “I don’t think I realized how fulfilling it was helping out all these non-profits.” It was a big void for Carmines and his team, but it only served to whet the appetites of hungry visitors from all over. You’d better believe they will get their fill this February when the Hilton Head Island Seafood Festival returns for its 15th (or 20th, who’s counting) celebration.

As the weather finally cools off, the fun heats up at a variety of winter events hosted by the Island Recreation Center. A community-based, non-profit organization dedicated to improving the quality of life for people of all ages through public recreation programs, wellness activities and community events, the Island Rec. Center had to change and adapt much of its programing during the pandemic. Luckily, most of the popular seasonal happenings make a return this winter which, in turn, will benefit the Carmines Family Recreation Scholarship Fund ensuring that no child is denied recreational opportunities. Kick off the holiday season at the Winter Wonderland Festival on Friday, December 3 at Shelter Cove Community Park from 4-7 p.m. Planned family-friendly activities include carnival games, a rock-climbing wall and inflatable rides, a Golden Candy Cane Hunt, entertainment and treats for all ages. Even the Jolly Ol’ Elf himself is rumored to be making an appearance 40

The indelible impact that Gullah culture has had on the Lowcountry – and vice versa – informs their mouth-watering cuisine. BY BARRY KAUFMAN

Farm-to-table. Seasonal produce. Locally sourced. Sustainably harvested. These are the buzzwords that have circled around the American culinary scene in general, and the Southern culinary scene in particular, for the last decade and a half. Perhaps it’s a backlash against the mega restaurant chains, maybe it’s a growing appreciation for our own local environmental and economic impact. No matter the reason, we are becoming far more cognizant of where our food comes from and how it’s prepared. Which must be amusing to our Gullah neighbors, as all of those buzzwords describe the way they’ve been cooking for generations. “It’s a very straightforward, salt-andpepper kind of cuisine where the freshness speaks for itself,” said chef B.J. Dennis. “It’s basically pairing proteins with seasonal vegetables.” Raised in the Lowcountry around the okra, rice, shrimp, oysters and grits that filled the family cooking pot, Dennis has emerged as one of the most celebrated Gullah chefs in the area. His is a lifelong love affair with Gullah cuisine, one which made him a darling of Charleston’s highly competitive culinary scene and will soon lead to him guiding the food program at the International African American Museum. Ask him about what dishes make Gullah cuisine what it is, and be prepared for an education. Okra soup. Red rice. Oyster 48

rice. Gumbo. Steel peas and okra. Stewed shrimp. Soup bunch (greens and vegetables cooked together), smothered oysters and grits, fish head soup… Each is as simple as it is delicious, mingling together little more than the greens found in the fields and the bounty found in the sea. Sometimes it’s as simple as cooking up whatever you were able to catch that day. Sometimes it’s just pulling together what’s in season. The staples are whatever the Lowcountry provides. The key from there is not to mess with it too much. Elaborating on his view that Gullah cuisine is a “salt and pepper” type of cooking, Dennis mentions, “You do see bay leaf, basil and thyme sometimes. The cuisine isn’t that spicy, but you do see some hot peppers. Herbs and spices were really used more for medicinal purposes.” It’s easy to forget that the ingredients we take for granted were used to save lives and heal the sick long before they simply informed a flavor profile. But nothing about Gullah cuisine takes ingredients for granted. Each was produced by the sweat of the farmer’s brow and the strength of the fisherman’s back. And sometimes, they served as a cultural reminder of the Gullah’s roots in Africa. “Okra was such a staple before we were brought here enslaved. It was one of those dishes in western and central Africa that was huge,” said Dennis. “It was a mainstay for us culturally, and it does well in the heat of the south. That’s why you see it so much.” Having recently launched the food program at Lowcountry Fresh Market, Dennis will soon return to Charleston for his new role at the IAAM. His cookbook of Gullah recipes, tentatively titled “The Gullah Pot,” comes out next year.

The Fight Against Hunger BY ALLYSON JONES

“There is a misconception that people who struggle with hunger are unemployed. In fact, over 50% of households served by the Feeding America network of food banks are employed,” according to the Lowcountry Food Bank. “Even with a job, many people struggle to get by due to challenges like underemployment, low wages and the rising cost of living.” The USDA defines food security as “access by all people at all times to enough food for an active, healthy life.” The pandemic greatly increased food insecurity throughout South Carolina and across the nation. The local hospitality industry was especially hard hit. “In 2020, in the coastal counties of South Carolina that Lowcountry Food Banks serves, 12.6% of adults (185,580 people) are food insecure, which is 29% higher than in 2019. 18.2% of children (55,260 children) are food insecure, a 38% 54

increase over 2019.” Highlighted are just three of the hundreds of food banks, food rescue organizations and food pantries who work together to fight hunger throughout the year. All appreciate monetary and food donations, as well volunteers donating their time and talents to help feed neighbors in need.

Lowcountry Food Bank

Founded in 1983, Lowcountry Food Bank is a nonprofit 501(c)(3) organization fighting hunger by serving more than 200,000 food-insecure individuals in the 10 coastal counties of South Carolina – Horry, Williamsburg, Georgetown, Dorchester, Berkeley, Charleston, Colleton, Hampton, Jasper and Beaufort – through three distribution centers located in Charleston, Yemassee and Myrtle Beach. One of the most successful food banks in the country, the organization collects,

purchases, rescues and sorts donated food at its distribution centers to feed food-insecure individuals through nearly 300 community partner agencies, such as churches, on-site feeding programs at schools, senior programs, veteran’s groups and shelters, as well as stocking food pantries. Partners are provided with fresh fruits and vegetables, shelf-stable food, equipment, nutrition materials and food safety training. Lowcountry Food Bank also directly distributes food at mobile events in communities throughout coastal South Carolina to reach those who may not have access to a food pantry. Over the years, the organization has grown to include more than 75 employees and 5,000 volunteers, including dozens of drivers in a fleet of refrigerated box trucks and trailers, tractors and cargo vans who pick up food from nearly 70 retail partners several times a week and from


farmers during harvest season. Partner agencies then pick up the collected food at the distribution centers or it is delivered directly to them. To ensure program efficiency and the integrity of the food supply, Lowcountry Food Bank purchases items pre-approved or recommended by the USDA and/or MUSC health dietitians in large quantities well in advance. Second Helpings

“Many people in our local communities have to make a choice each day: skip a meal to purchase medicine or eat less to pay a bill. Despite working one or more jobs, they still can’t make ends meet.” One in seven residents – and one in five children – are unable to afford all the food they need, according to the Second Helpings website, and there is a high correlation between food insecurity and increased medical problems, including diabetes. Many regions in the Lowcountry are considered “food deserts,” where access to affordable, healthy food is limited or nonexistent because grocery stores are too far away. Without a car or access to public transportation, it is difficult to sustain a healthy diet. Meanwhile, an estimated 40% of food in this country is wasted with nearly all of it ending up in landfills. This is where Second Helpings steps in: rescuing food and preventing food waste in our community. Founded in 1991 by Guenther Hecht and his wife who witnessed food being thrown out at local grocery stores and started rescuing it, Second Helpings now operates a fleet of refrigerator trucks that rescues nearly three million pounds of perishable food annually directly from food donors and local farms and then delivers it directly to agency partners. It is the only volunteer-driven organization in Beaufort, Hampton and Jasper Counties authorized to rescue food and partners with the Lowcountry

Food Bank to ensure that all food received from them reaches the hungry in our communities. “We currently have 281 truck crew volunteers, and another 12 volunteers in program supporting roles,” explains Office Administrator Bruce Algar. “Our fleet consists of nine refrigerated box trucks making daily runs in our three-county area. We serve 38 active organizations in Beaufort County, four in Hampton and 11 in Jasper. Combined, these agencies give out the food we deliver to them to over 8,000 people every week, many taking food home to their families.” This nonprofit food rescue organization is unique in that it serves other nonprofit food pantries, soup kitchens, agencies and churches. Payment for food is not solicited or accepted from recipient agencies and Second Helpings does not receive any government funding, instead relying solely on the generosity of the public – foundations, churches, civic groups, and individuals – for financial support. According to its 2019 Report, for every $100 in private donations received, Second Helpings provides more than $1,250 worth of food to local agency partners while preventing 750 pounds of food waste from reaching our landfills. At least 80% of cash donated goes directly towards the food rescue operation. During the pandemic, Second Helpings was able to maintain its food pick-up and delivery routes without any significant disruption. “We accomplished this in several ways, but the key to our success was the willingness of many of our volunteers to continue with their scheduled routes, plus taking on additional routes for those more vulnerable volunteers who felt it prudent to stand down temporarily,” notes Algar. “We received many cash donations and grants designated for purchasing food to compensate for reduced food donations.” Want to help put an end to hunger? Sandalwood Food Pantry

“Hunger hurts and hunger pains deny dignity, deplete one of all energy and potential and, most sadly, it erodes the

family, the community and its stability, impairing the potential of people to achieve independence,” according to Sandalwood Community Food Pantry (SCFP) founder and managing director Rev. Dr. Nannette Pierson. With a mission “to nourish the bodies, minds and spirits of all who hunger,” this non-denominational, non-profit 501 (c) (3) organization was established in 2009 when Pierson decided to address the needs of children at Sandalwood Terrace on Hilton Head Island and provide “hope to many who stopped believing hope was possible.” Now SCFP helps over 700 local families make ends meet by distributing healthy whole foods and basic needs, educating families with classes on nutrition and food preparation and taking monthly blood pressure readings, in addition to providing love, dignity and spiritual guidance from their pantry located at Queen Chapel A.M.E. Church on Beach City Road. Groceries (produce, meat, bread, canned goods) and supplies (toiletries, school supplies and clothes on an as needed basis) are provided to qualifying individuals and families on Tuesdays and Fridays from 9:30-11:30 a.m. Food is received though multiple sources including Second Helpings, USDA government programs, individual and church donations. SCFP is also one of nearly 300 agencies who partner with the Lowcountry Food Bank to purchase food when donations run low. Grants and financial donations from individuals are utilized for operational costs including lease, equipment, and administrative expenses. The organization is currently looking to build Hilton Head Island’s first Amphibious Resilient Pantry to provide a secure structure for when the next hurricane hits so neighbors in need are safe by choice and not by chance.
