In the fall of 1989, my life changed forever when I secured a job on Hilton Head Island. You would have thought I’d won the lottery. I could escape the harsh winters of my native Kentucky, go to the beach whenever I felt like it, and enjoy fresh seafood right off the dock. It felt like I was about to take a permanent vacation.
Fueled by spring breaks I’d spent at Panama City Beach in my youth, my imagination ran wild with visions of what my new life by the ocean would entail. Beach bars where the sun was warm and the drinks were cold. Lively restaurants that opened right up to sea breezes, blurring the line between indoor and outdoor dining. Visitors and locals enjoying the warm summer days and sparkling nights. It was something I’d dreamed about for years, and it was about to be my reality.
And that reality turned out to be far better than I’d even imagined. But even then, I didn’t dare dream that Hilton Head Island would become the paradise it’s become today. Back then in 1989, there were probably a handful of restaurants that delivered on that vision of indoor and outdoor dining. Today, there are restaurants that offer every kind of experience you’d want. For a guy whose Hilton Head Island dream had included outdoor dining, there’s truly nothing that compares with what we have now.
Across the island, there are patios, decks, beer gardens and beachside venues that let you dine in the sun, with live music all around providing your summer soundtrack. When I got here 35 years ago, I was impressed. In 2025, I’m amazed. There are so many opportunities out there to enjoy world-class cuisine against a backdrop of the island’s scenic beauty. This summer, I hope you’ll get out there and take advantage of our sunshine and our cuisine. I know I will.

As it always has, Reilley’s Plaza continues to evolve. The first step in its latest transformation starts with Papi Tequila.

For long-time locals, Reilley’s Plaza has always existed as a way to show how far back you go. Those of us who have only been there a few years might refer to it as “tri-bar,” an unnecessarily shortened version of its old moniker, “The Triangle” (which is, itself, a shortening of the original name “The BarMuda Triangle”). Those of us with a few more years on the rock can recall hazy evenings at the old Brewpub, watching ducks swim in the pond out back. And if you have memories of the old Jump and Phil’s, well then you can definitely consider yourself a local.
The point is, this is a place that has constantly evolved throughout the decades. And yet, no matter what else has changed there has always been the constant in the plaza: Reilley’s Grill & Bar, and the Reilley family who have owned and operated it since long before most of us were here. From patriarch Tom Reilley’s earliest days, to the modern era of Coastal Restaurants and Bars (CRAB) under the leadership of Brendan Reilley, they have been a fixture.
And while we locals can claim this plaza as a favorite, it’s something else to the Reilley family. It’s a legacy. And it’s one whose next evolutionary leap begins with mouthwatering Mexican food and margaritas at Papi Tequila.
“This place is all about this lively energy and a lively vibe,” said Thomas Reilley, who is working alongside Brendan to realize their vision of a festive Mexican restaurant at the heart of a culinary entertainment destination. That energy is apparent from the colorful mural that lines the back wall, the bold colors of the redecorated dining room and the famous wraparound bar that stretches out into the courtyard.
At first glance, it’s clear. This is a place built for a good time.
“Everyone deserves to have a nice chill lunch,” said Thomas, adding with a laugh, “just not here.”
That lively energy formed the nucleus of what would become Papi Tequila. Already a deft hand with so many amazing restaurant concepts, from the upscale Lowcountry cuisine at Benny’s Coastal Kitchen to the relaxed family-friendly flair at
Crazy Crab, CRAB group has run the gamut. With Papi Tequila, they wanted something that would match the electric energy of Reilley’s Plaza.
Matching that electric energy is the finely honed culinary expertise of Chef Shaun Carter. Brought into the CRAB family to spearhead the menu at Benny’s, which allowed him to pair his deep bench of different techniques with his globally influenced training, Carter approached Papi Tequila differently. Here, he created a flavor-forward fiesta that keeps the party going with every bite.
“What we really wanted to create was a place with high-quality food that reflects classic Mexican flavors, at an affordable price point,” said Thomas.
That balance of quality and approachability weaves into a menu that dances from delicate ceviche with local shrimp to the blissfully savory gut bomb that is the Big Papi Chimichanga. And in between, you’ll find an old-world, new-school mix of tacos, bowls and sides that exude authenticity.
“We have a great menu, but one thing that was really important to us was to give everyone a chance to ‘be their own Papi,’” said Thomas. Diners will get exactly that chance with a build-your-own burrito option that puts you in control, with your choice of base, toppings, proteins, and sauce for a custom experience you create.
As tantalizing as the food is, there is a school of thought which holds that a Mexican restaurant is really only as good as its tequila. One look at the tequila wall, with its carefully curated mix of labels included rare and allocated offerings, tells you that Papi Tequila respects his namesake spirit.
“One of the unique features we offer is our margaritas and cocktails on draft,” said Thomas. “We’re not buying giant kegs of premix, either. These are hand crafted, small-batch cocktails with top shelf tequila like Don Julio, Tanteo or Lalo.”
And while the opening of Papi Tequila not only adds vibrant flair to Reilley’s Plaza, what it really represents is the first step in the family’s grander plans for the space that bears their name. Anchoring one end of the plaza, Papi Tequila will serve as the appetizer to a reinvention of the old “triangle.”
“The idea is that the whole plaza will become like a massive food hall. Papi’s was just the first part of it to open,” said Thomas. “You can bring your whole family to the plaza and eat at Papi’s or Reilley’s, or if your kid wants a burger they can go over to Uncle Billy’s Burger Joint. It’s part of a bigger picture that will eventually offer concepts like Italian and sushi.”
And the food is just part of it. Already, families are enjoying ping pong and cornhole in the plaza’s grand central courtyard. Plans are still in motion, but Thomas hinted at potential for even more outdoor fun like pickleball courts.
“There is a bigger picture to what we’re doing here,” said Thomas. “Papi Tequila is just the first part of it.”
If phase one of this grand design can bring this much lively energy and delicious food to an island institution, we can’t wait to see what the Reilley family has in store for the Triangle. And to think, someday you’ll be able to tell people you were there when it all started. Consider it an investment in your local cred.

Taken as a whole, Shelter Cove Harbor and Marina is a place that seems to have been coaxed from the shoreline with one purpose: to create memories. The golden sunsets over the water, the bursting vibrancy of azaleas all around, the giggling chatter of children attempting to scale Neptune’s trident, the laughter drifting off from returning charter boats, sparkling fire dancing in the night sky during Harbourfest’s summer Tuesday… it all weaves together into magic.
Since 1988, Scott’s Fish Market has occupied a prime spot in this open-air picture book of some of your favorite memories. Its gorgeous outdoor seating, stretching around a bend in the harbor for unimpeded view of the water’s tranquil beauty, has enchanted countless diners over the last 37 years. In fact, some were so enchanted they never left.
“There was a couple who came in a few years ago to look at a condo, and stopped in for happy hour. They still come here all the time and they told us we’re the reason they bought the condo here,” said Terry Ross, who has owned this iconic restaurant with her husband Frank for the last 10 years.
It’s an all-too familiar story for the couple. After all, they are living that same story – granted, rather than buying a condo, they
bought the restaurant. Frequent visitors to the island long before the purchase, they were that exact type of semi-regular who made Scott’s their base during their vacations.
“We’d been coming here for the previous 20-some years and we got to be good friends with (original owner) Scott Allen and the Staff,” said Frank. “These folks became part of our family.”
It definitely helped them that their new family knew the ropes at the venerable restaurant well, and had indeed played a crucial role in the 20-plus years of success it had already enjoyed.
Executive Chef Anthony Scott was just 14 years old when he was hired. Joining him in the kitchen are chefs who can combine to claim decades of experience at Scott’s.
The acclaimed cuisine bears this out, with favorites like the herb-crusted grouper, stuffed flounder and bacon-wrapped scallops playing a central role in countless unforgettable evenings. And everyone seems to have their favorite, whether they’re once-a-year regulars or once-a-week regulars.
“We didn’t know enough about the restaurant business (when we started), so we had to rely on Anthony and the group back there, and they have never done anything to make us secondguess that,” said Terry.
But then, when you have a place like Scott’s Fish Market, one whose adherents stake their entire vacation on that magic moment when they can sit down to enjoy their favorite dish or who simply can’t unwind after a long day without a visit to the outside bar for happy hour, you really don’t want to mess with perfection.
“We really try to take the concept that Scott had for the first 25 years and keep it going, tweaking a little bit to modern customer needs,” said Frank. “I think maintaining that consistency that Scott Allen had when he owned it is something we’re proud of.”
For two folks new to the restaurant business, Frank and Terry Ross were given one heck of a crash course. They first took over in May of 2016, just in time for Hurricane Matthew to come through. Having survived that, they embarked on their first ambitious project for the restaurant, a full remodel which was completed two months after the storm.
“We also reopened the outside bar 3 days prior to the covid shutdown,” said Frank. “Obviously we’re stubborn, and we persevere.”
But the trials of their tenure’s early years did have one bright silver lining. The staff that they had kept on, who they had continued to pay during the pandemic’s lockdown and who have since become family, solidified under the pressure.
“We’re family and we’ll bicker like family sometimes. But when… you get through something like that together, that’s a family,” said Terry. “That’s what makes it worth it.”
That tight-knit rapport shared by staff and owners definitely comes in handy during the summer season, when Scott’s Fish Market becomes a beehive of activity, turning up to 500 tables a night from a kitchen that might rank among the island’s smallest. It’s a breakneck ballet behind the scenes, but one that everyone involved executes flawlessly.
“For a while, it was like we were a fast food restaurant for three months and a real restaurant for nine months, but we’ve really gotten away from that,” said Frank. “What we’re really looking to do is increase the customer experience.”
“If someone picks our restaurant for their big night out, we want them to have the best experience,” agreed Terry. “We encourage everyone from our bartenders to our servers to see it that way: ‘If this was your only night out for the week, you’d want to be sure you had a great time.’”
It’s a philosophy that has driven Scott’s Fish Market since its inception. After all, it rests among the beautiful expanse of a place built for creating those great times. And your go-to will always find its home on the menu, ensuring you come back again and again to build more memories.

As the temperature rises and days grow longer, your body’s nutritional needs respondto the demands of summer. Whether hitting our beautiful beaches, taking in a round of golf, or simply enjoying the long sunny days, your body needs the right fuel to stay energized, hydrated, and healthy. Here’s how to adapt your nutrition habits for the warmest season of the year.
Increased heat and perspiration mean your body loses more fluids than usual. Dehydration can sneak up quickly, especially during physical activity or prolonged sun exposure.
Water is key: Aim for at least 8–10 glasses per day, and more if you’re active or sweating heavily.
Electrolytes matter: Often times water alone isn’t enough. Replenish sodium, potassium, and magnesium with foods like bananas, watermelon, coconut water, and leafy greens—or a low-sugar sports drink if you’re working out hard.
Eat your water: Many fruits and vegetables, such as cucumbers, strawberries, and oranges, have high water content and help keep you hydrated naturally. You can easily add these to a salad or smoothie.
Heavy meals can leave you sluggish in the heat. Instead, opt for lighter fare that keeps you nourished without weighing you down. Smaller, lighter meals will help keep your energy up. Choose lean proteins: Grilled chicken, fish, tofu, and legumes offer high-quality protein without excessive fat.

3. SUN PROTECTION FROM THE INSIDE OUT
Nutrition can support your skin’s defense against sun damage. Boost your antioxidants: Vitamins C and E, found in citrus fruits, nuts, seeds, and green veggies, help fight free radicals caused by sun exposure.
Load up on lycopene: This powerful antioxidant, found in tomatoes and watermelon, may help reduce skin’s sensitivity to UV rays. We should still use caution when out in the sun but this is an extra boost.

Hilton Head Island’s favorite annual summer series makes its triumphant return.

As this magazine’s title suggests, most of our focus is on the Lowcountry’s vast and vibrant culinary scene – its taste, if you will. But there is more that flavors our island than simply its food. As a melting pot in the truest sense, with residents and visitors flocking to our shores from all points of the globe, every sense is represented here. The taste from the restaurants you see represented in these pages, yes. But also the sound.
Ours is a beautiful tune, one never strictly tied down to one genre or school of thought. On any given night you could hear acoustic covers from any porch you pass, or you could hear true roots reggae. You could hear rap, swing, pop, punk, or even disco depending on how many places you wanted to visit. If variety is the spice of life, then our
music packs a rich a flavor as you could imagine. And much like the scene they represent, our musicians comprise a group that celebrates every sound.
“There are so many musical acts here, and I’d like to think we’re a large component of that,” said Mario Incorvaia, Chief Operating Officer with the Hilton Head Symphony Orchestra. “I’m excited about our place in the music community, and in the collaborations that have made these musicians members of the family.”
A staggeringly successful musical organization for an island our size, the Hilton Head Symphony Orchestra has brought some of the world’s elite musicians to play on our island, whether in their own concert series events, their annual Symphony Under the Stars or the famed Hilton Head International
Piano Competition. But like any island institution, they’re not afraid to step a toe over genre lines.
In 2021, they premiered their first fusion event, bringing the island the inaugural Jazz in the Park event, drawing acts from our own vibrant jazz scene as well as regional touring acts.
“The vibe is pretty cool. We get there in the late afternoons just to do sound check, because with jazz you want that chemistry between the artists and the sound engineers,” said Incorvaia. “That generates so much interest, we usually have a crowd before we even begin.”
Not that it’s hard to draw a crowd given that the park in Jazz in the Park is Lowcountry Celebration Park, a sprawling facility that has become the crown jewel of Coligny’s reinvention.
At the crossroads of Coligny, it has quickly become a favorite spot for locals and a busy hub for tourists. Add to that built-in appeal the partnerships that HHSO has enjoyed with Coligny in promoting the event and you have some serious word of mouth.
And these concerts arrive at the peak of tourist season, running alternating Tuesday nights from June 24 through September 2. The final acts were still being planned as Taste of Hilton Head was going to press, but what Incorvaia was able to reveal shows that the fifth iteration of Jazz in the Park could be its biggest yet.
Returning this year will be Martin Lesch, not only a gifted musician but a person Incorvaia calls “and icon in the community.” He will be joined by another fixture of the island’s jazz scene, John Brackett, as well as funk-soul-fusion outfit Tower of Funk who have appeared in numerous orchestra events.
Along with these legendary local talents, the HHSO is partnering with another outstanding arts organization on the island for the July 8 show, which Incorvaia is particularly excited about.
“We’re partnering for the third year in a row with the Junior Jazz Foundation to feature their faculty. I don’t think the audience truly understands what a special evening they’re in for,” he said. “The Junior Jazz Foundation goes to great lengths to bring in a wide set of talents and skills, and this effectively gives them a faculty concert well beyond what they could be doing as part of the camp. And we get a huge jam session with some of the best up-and-coming jazz musicians in the world. It works out for both of us really well.”
Leading off the Jazz in the Park on June 24 will be an act that Incorvaia is pleased to welcome back for another year, Tuffus Zimbabwe and the Tuffus Zimbabwe Quartet. The piano player for the Saturday Night Live band, Zimbabwe’s path to 30 Rockefeller Center began just around the corner.
“Tuffus was a jewel of a find. He has ties to Charleston and the Lowcountry, and he specializes in the music of his great uncle. Edmund Thornton Jenkins,” said Incorvaia. Beyond the family ties, Jenkins pioneered the Charleston style of jazz. “It’s really an honor to be able to present Tuffus and have him play music that’s so connected to our region. And usually brings a few guys who are all-stars in their own right from the Charleston area.”

At Technical College of the Lowcountry’s FOODseum, the thread of Southern cuisine is woven into a rich tale of the Lowcountry’s delicious heritage.

Few culinary styles have as compelling a story to tell as Southern cuisine. In its ingredients and techniques lie the history of our region, from the far-flung ancestry of red beans and rice whose origins lie in West African jollof, to the deep-frying techniques brought over from Scotland. They speak to our unique geography. The fertile pastures of the South provided the ideal terroir for okra and peanuts to weave their way into our dishes. Our waterways once filled the entire country’s needs for oysters.
When viewed with the proper respect, it’s evident that Southern food is so much more than food.
At The FOODseum, the new interactive attraction inside Technical College of the Lowcountry’s Culinary Institute of the South, that respect shines through in every exhibit and detail.
“Part of the importance of the FOODseum is preserving these stories. It’s
preserving these recipes, so that people can pass them down and remember how to create these wonderful recipes,” said Leigh Copeland, assistant vice president of marketing & public relations for TCL. “Through Culinary institute of the South, we’re training the next generation. But beyond that, we wanted it to become a destination in itself, so we had this concept of an interpretive center.”
For Copeland, a native of Beaufort, this project was personal. As part of the team that spearheaded the FOODseum’s creation, she saw it partially as a vehicle for reviving her own Southern culinary heritage. “When we first started thinking about what FOODseum was going to be, it got me thinking about visiting my parents farm in the upper part of South Carolina. I’d go there in the summer and they’d be canning vegetables and shucking corn, and I paid no attention to any of that,” she said. “When my
grandparents passed, so did those traditions. That’s why it’s so important to preserve these stories and recipes.”
To ensure that FOODseum would offer a truly authentic and informed perspective on Southern Cooking, the Culinary Institute of The South brought in heavy hitters like Southern Food and Beverage Museum Founder Liz Williams and celebrated Charleston Chef Kevin Williams.
“They both offered so much insight as we were researching, in terms of content and ingredients we should highlight,” said Copeland. “We turned to them first and foremost.”
Their vaunted expertise has created in FOODseum a first-of-its-kind curation that puts every aspect of Southern cuisine on display. Rotating exhibits put the spotlight on iconic Southern dishes like barbecue, tracing their origins and showing how different regions have
reinterpreted it based on local ingredients. Exhaustively researched maps show where each ingredient is grown or produced, giving insight into how our agriculture has evolved over the centuries. A Lowcountry Spotlight section showcases different local chefs, restaurants and cookbook authors.
Along with the static displays, an exhibit lets people share their own Southern food stories, and the classic Southern dining table encourages visitors to set a spell and talk about their favorite dishes.
“We wanted to make sure that we offered a place where people could gather and share their own stories,” said Copeland. “We’re right in between Savannah and Charleston, two of the most iconic southern cities in America. We’re in a great location here with a unique culture in so many different ways.”
As part of TCL’s mission to create in FOODseum a place, “built by the community for the community,” Copeland looks forward to inviting a few locals to share their own stories.
“We’ve talked about having guest chefs come in to lecture on some of their favorite dishes, or hosting academic historians
to come in and talk about the food itself and the journey it took to the south,” she said. “These topics will help people better understand how Southern food came to be and how it got on the map.”
But there’s more to Southern food than its history. As more and more diners around the country come to appreciate the sweet flavors of Dixie, our profile as a culinary capital continues to grow. It’s a growing wave that the Culinary Institute of the South is perfectly poised to ride, and FOODseum salutes this through its Future of Southern Cuisine exhibit.
“What makes Southern cuisine so unique is that it is always evolving. It always leaves room for something new,” said Copeland. “And so we do highlight our graduates and alumni who are out there in the industry continuing to help southern food evolve and make it their own.”
If the mission is to usher in this new era in Southern food, the Culinary Institute of the South is the “how.” In its halls, the next generation of great Southern chefs are honing their craft and preparing to put their own epicurean stamp on the world. The FOODseum, then, is the “why.”
Through its exhibits, it spells out precisely what sets our region’s famed cuisine apart, encourages diners to look beyond the dishes to the stories behind them, and gives visitors a chance to experience Southern food like never before.

Summertime and the living is easy – especially if you are spending time on Hilton Head Island! HarbourFest is Hilton Head Island’s largest summertime celebration with weekly fireworks displays, family-friendly entertainment, arts and crafts, waterfront shopping, dining and activities, live music and much more.
Entertainer/pirate/ maker of music/teller of tales/adventurist Shannon Tanner is back at the Pavilion Stage this summer with two interactive family shows, Monday through Wednesday, at 6:30 and 8 p.m. Thursday nights are reserved for the Parrott Palooza Sunset
Celebration showcasing Shannon Tanner and The Oyster Reefers performing a Caribbean-style tribute to Jimmy Buffet at 7 p.m. starting on June 12.
Cappy can be found clowning around near the stage with her signature face painting, balloon twisting, glitter tattoos, sand art and silly sense of humor from Memorial Day weekend through Labor Day weekend, Monday through Friday, from 6-9 p.m.
Now in its 36th year, the highlight of HarbourFest is the Tuesday night fireworks shows which light up the night sky beginning June 3. Arrive early to spend some time on the water, relax over a delicious meal, shop the specialty boutiques or let the kids take a train ride along the Promenade before claiming your spot for the after-sunset show. Fireworks are scheduled every Tuesday night from June 3 through August 19 (except Tuesday, July 1), with a special Fourth of July fireworks celebration on Friday, July 4.

Hilton Head Island’s very own pied piper, Gregg Russell, has entertained generations of families for more than four decades with his interactive concerts filled with sing-a-longs and silly songs. On select Fridays, Rick Hubbard’s Great American Kids Show is center stage for a night of music, comedy and laughter.
