Being publisher of Taste has its benefits like getting a table when a restaurant is busy, knowing who has fresh fish that night, maybe even an occasional free dessert. But it also comes with the responsibility of shouldering many questions: “Who has the best seafood?” “What are your favorite restaurants?” or my favorite, “What places do you recommend?” Of course there are so many great choices on our Island and in Bluffton that I find myself answering their questions with more questions of my own to narrow the field. Are you looking for breakfast, lunch, or dinner? Do you want family-style or a romantic evening? What kind of budget/pricing are you comfortable with? Would you prefer to eat outside or in? Live entertainment? With over 250 restaurants Island-wide, there is no shortage of fantastic food and every option fills its own niche. From breakfast cafes to waterfront dining, fresh seafood to Italian, wings to burgers, fried to healthy and gluten free, I tell people to let your palate be your guide. So what is the best way to lead someone in the right direction? Although a shameless plug, my first option is to give them a copy of this magazine. Filled with a wide selection of wonderful restaurants, Taste also provides an in depth look at what makes each restaurant unique through editorial, photography, and of course advertisements. Also, we are proud to unveil our newly updated website, www.tasteofhiltonhead.com. Not only can you view the magazine on line, but also check out menus, current specials, events, festivals, and much more. One recommendation I do not mind giving is to try something new and try something local. When on vacation myself, I always try to find a new place to try, a local’s favorite if you will, because more often than not those places have a story to tell and offer great food with a local twist. And how do I find these spots? The internet and social media are a great start but I make a habit of picking up whatever publications I can get my hands on to cross-check with my internet list. Lastly, I ask a local. As you enjoy our beautiful Island this summer, have fun choosing where you eat. If you ate out three meals a day, seven days a week, it would take you over three months to dine at every restaurant on the Island. And then there is Bluffton... Not bad for our small Island paradise! I hope this issue of Taste and our updated website will assist you in your search for your ultimate dining experience.

They also offer a grilled lobster tail or seared scallops as well as some fried seafood like grouper and oysters. “We tried to stay away from fried but of course had to include a few. We have healthy options too and anything on the menu can be grilled or blackened,” explained Thomas. They have soups and salads, sandwiches and small bites, and for the non-seafood eater in your party there are burgers and barbeque. Heart Smart, Gluten-Free and Vegetarian options are available. The Kid’s menu comes with crayons and features all the favorites like mac ‘n cheese (a Reilley family tradition), pizza, chicken fingers, and fried shrimp. The bar at Carolina Crab Company has become a popular local oasis on the water and they have Happy Hour every day from 4-7 p.m. Their “Fun-Coctions” include a Banana Boat (Captain Morgan and banana puree over fresh strawberries and chocolate syrup – oh my!) and their Marina Ritas (4 different margaritas – watermelon, coconut, spicy, and skinny). Craft beers can be found on tap and in the bottle and plenty of wine choices that are paired every night with a fish special. There is a fun bar menu for the über causal meal or quick bite and includes things like ½ pound of peel and eat shrimp, snow crab clusters, crab or fish tacos, and boneless Buffalo wings. The Reilley brothers pride themselves on the team they have put together that make dining here a complete package. “All of our servers and bartenders work together. You will not have one server but an entire staff at your disposal. We are not a tourist trap or a food factory. We cater to everything you want with a local feel and at local prices,” commented Thomas. Worthy of note is the fact that Palmetto Bay Marina was recently purchased by Melrose Company, owner of the resort on Daufuskie of the same name. The new owners have big plans for the marina and have already started sinking money into sprucing up the landscaping and making parking lot improvements. This is great news for frequenters of the marina and even better news for the Reilley’s and marina tenants. In a nutshell, eating at the Carolina Crab Company is casual and fun and, and the pet-friendly patio means Fido won’t be left out.. Fun comes second nature to the Reilley brothers and they enjoy doing special events like Crawfish Boils, Oyster Roasts, and Crab Crackings. “We love to introduce people to different oysters and do it with different wine pairings,” Thomas said. To show their support for the community and always be giving back, they have also done special appreciation dinners gratis for local groups like nurses, teachers, firefighters and local business staff. Other Reilley family ventures include two Reilley’s and two Crazy Crab restaurants (with one location off of 278 near mile marker 1 on the North end, and a second location in Sea Pines in the heart of Harbour Town), Aunt Chilada’s, The Boardroom (a bar and live music venue in Reilley’s Plaza), and coming this

summer, their newest venture, “Fish Camp on Broad Creek,” which will be the Island’s new waterfront spot for backyard entertainment and dining for the whole family to enjoy.

To understand Hinoki, the restaurant, you must first understand what the word Hinoki stands for. In Japanese, hinoki is the word for a towering pine of immense cultural and spiritual reverence: Chamaecyparis obtuse — the Japanese cypress. While various cultivars can be found all over the world, a true hinoki can only take root in Japan, owing to some magical combination of the island nation’s volcanic soil and sea breezes. Hinoki grows slowly, showing little concern for how much it has grown in a year, just as long as it has grown stronger. And the rich color and sturdy timbers of hinoki have made it the standard for building anything of cultural importance – temples, castles, traditional noh theaters, and of course, sushi bars.

“Cypress is very popular in Japan. I grew up with this cypress,” said owner Teruyuki Suzuki. In fact, if you look around Hinoki’s tranquil dining spaces, the small but bustling bar by the hostess stand, and around the bright glass cases of the sushi case, you’ll find hinoki almost everywhere you look. On the tables in the front, you can count the rings of a tree that only grows in Japan, and can only be found on Hilton Head Island inside the walls of Hinoki. That insistence on holding fast to traditions, while seeing how they can be cultivated in the sandy soil of a very different island, informs the core philosophy of Hinoki. The ingredients, from the tuna to the mackerel to the uni, are carefully selected to provide the same sushi you’d get in the land of the rising sun. Under the bright lights of the sushi case, their colors pop with freshness and the promise of mouth-watering flavor. “In Japan, a sushi man goes to the market to pick out the fish. That’s a skill for the sushi chef,” said co-owner and chef Chikara “Chi Chi” Yamagashi. And while a hinoki can only grow in Japan, its cultivars can grow around the world. The unique subspecies of sushi that Suzuki and Chi Chi have created takes everything that makes

traditional Japanese sushi such a global phenomenon and put a mouth-watering spin on it. It’s only natural that someone of Suzuki’s background would create something entirely new out of something so magnificently traditional. Originally trained in French cuisine, Suzuki honed his craft in the kitchens of the Four Seasons Tokyo. Beyond just the traditional Japanese cuisine, his palette was expanded by the world-class gourmet cuisine found inside the luxury boutique hotel. This global perspective allowed him to put a truly unique spin on the traditions of his home country. “Most people don’t do truly traditional Japanese cuisine. There’s some Chinese, some Korean. We do it traditional, but we give it something new, and it ends up making something completely different,” said Suzuki. Suzuki’s culinary background also finds expression in an unheralded addition to Hinoki’s kitchen – the sauces. Everything from the ginger dressing to the wasabi vinaigrette is made from scratch. The result is a dining experience that simply cannot be replicated – no matter how much out-of-town diners try to find it elsewhere. We get a lot of people who come from bigger cities, as well as people who have had sushi in Japan, and they enjoy what we do here, and we appreciate that,” added Chi Chi. Suzuki is a prime example of a global talent who flourished locally, but Chi Chi, although born and brought up in Tokyo, came to Hilton Head Island to go to tennis school, and flourished into a worldclass sushi chef. Originally hired as a busboy at Kyoto Japanese Restaurant, where he trained under Suzuki and restaurateur Hirofumi Ono, his uncanny ability to soak up knowledge, plus his natural showmanship and dry wit,

made him an instant star. He quickly rose up the ranks from the teppanyaki tables to the sushi bar. Chi Chi was there when Suzuki and Ono opened Hinoki 15 years ago, and he was a natural fit when Mr. Ono retired and Suzuki began looking for a co-owner. And now having worked his way up from the ground floor, Chi Chi shines as the star of the sushi bar. His deft work with a knife creates delicate thin cuts of mackerel, his skill with presentation creates edible works of art, and his natural good humor has made him the restaurant’s resident rock star. Sometimes literally, if you’re there on one of the many nights in which he gets out his ukulele and serenades patrons in between sushi rolls. He may be a rock star, but don’t tell him that. “I’m just a guy, OK?” he said with a laugh when a nearby patron began extolling his virtues on a recent visit. “I’m a sushi chef.” But even among chefs, Chi Chi is a bit of a rock star. That same patron made note of the fact that the sushi bar at Hinoki has become a popular hangout for some of the island’s most esteemed chefs. This fact was confirmed by this writer when the first comment on a picture posted to Facebook of my “Dinosaur Egg” was a chef who commented, “We are honestly so lucky to have a sushi place of their quality in the area.” Hinoki, like the hinoki for which it is named, has grown with measured speed in its 15 years. Like its namesake tree you’ll find its roots firmly embedded in Japan but reaching for the skies. And when you’ve created the kind of restaurant that other chefs go to when they crave authenticity, you know that you’ve cultivated something truly memorable.

There are many factors that go into making Michael Anthony’s Cucina Italiana one of the best restaurants on Hilton Head Island, but no one would argue that the driving force is its Executive Chef, Chris Johnson. Call it an act of fate or what you will, but the fact that Chris and Michael Anthony’s found each other in 2008 has been a windfall to everyone who has dined there. An additional boon is that this man behind the magic has helped put our Island on the culinary map of southern excellence. Growing up in a small town in New Jersey, Chris watched his mother and grandmother in the kitchen with puppy dog eyes and found cooking to be somewhat of a novelty. By age 10, he was preparing meals for the family and he landed his first job in a restaurant at age 15 as a bus boy. After begging the chance to work in the kitchen, he was allowed back stage (perhaps pushing the law a bit at that age) and got a first-hand look at fine food preparation. Simultaneously as his interest in cooking blossomed, Chris was developing into a top notch athlete with football driving his passion. “I started playing football at 5 and it was always my dream to go pro,” explained Chris. He went to West Virginia on a football scholarship where he played Offensive Guard and his dream was in sight until he heard that dreaded pop in his knee and knew his ACL was torn. “At that point, I had to make a choice about my future and I chose walking at age 50.” Young for a career change and a drastic one at that, Chris decided to hang up his cleats and put on his apron and headed to the Le Cordon Bleu College of Culinary 20

Arts an hour away in Pittsburgh. “I always said I would be a professional football player or a chef so I guess you could say I have lived out 2 dreams.” After cooking school and a few years in a restaurant in Pittsburgh, Chris had an opportunity to own his own spot in his home town. “I opened my doors in a part of town that was promised to be revitalized. When the town never followed through on the promise, my upscale restaurant just wasn’t warranted in that area.” After a couple stints as Executive Chef in nearby restaurants, Chris decided to follow his parents south and eventually ended up on Hilton Head. That was when fate stepped in and Chris and Michael Anthony’s found each other. “I had the same cooking philosophy as they did – traditional, classical Italian fare.” He started as a Sous Chef and worked his way up to Executive Chef in 2012. Now 8 years in the kitchen, Chris has not only made a name for himself locally, but was named to the 2013 edition of “Best Chefs America” and was recently listed among the 1,000 top chefs in the south. When asked what his secret was, Chris responded, “I just keep it simple. My food is flavorful but not overdone with a lot of spices. I have an Italian heritage and have been doing Italian for 15 years so the recipes are a part of me.” The summertime menu at Michael Anthony’s always takes advantage of summer’s bounty from the garden and sea. Chris likes to make his Panzanella, a classic tomato and bread salad from Tuscany and will prepare daily seafood specialties with shrimp and the fresh catch of the day. “We have so many favorites on the menu that we really only can change a few things here or there like with specials.” Chris not only spends his evenings in the kitchen at Michael Anthony’s, but he also is Dean of their popular Cooking School during the day. The cooking classes are held upstairs in an open area that is equipped with the finest culinary tools that money can buy. He typically teaches 2 to 3 classes every week and they vary from hands-on (with a maximum of 10 participants) to demonstration classes. During the hands-on classes, Chris will teach 3 different courses, often a salad, a pasta, and an entrée, and the chefs-to-be will prepare the meal and then sit down and eat it with a fine wine pairing. During the demonstration classes, Chris will wow his audiences with things like the art of making gnocchi or scaloppini or even do a class that is all about regional cheese. Between the cooking classes and being Executive Chef, Chris often spends 12 to 13 hour days at the restaurant.” How do you do that day in and day out?” I asked. Chris responded, “A lot of people love to cook… but you have to really have a passion for food to do what I do.” I guess that is how magic is made in the kitchen.

Born and raised in Hilton Head, Kari Schmid is from a southern Cajun family, with one older sister and two younger brothers. Prior to working at the Old Oyster Factory, Kari worked as a hostess for the company’s sister restaurant, Red Fish, when she was in high school. She has been an exceptional server at Old Oyster Factory for the past 8 years. Her mother worked at the Old Oyster Factory when Kari was growing up, and Kari fondly remembers going to work with her, loving the smells of the kitchen, and having Shirley Temples. “In college I studied Advertising and Marketing, but stayed attached to my true passion of serving because of the money, flexible schedule, and because it allowed me to meet and talk with people from all over the world,” Kari said. “To be successful in the hospitality 26

business, one must have a positive outlook, tough skin, and good people skills,” she said. “To be around all different types of people is challenging but generally enlightening and rewarding.” Obviously not all guests are going to be in a great mood when they come in for dinner with their families. They are often sunburned after spending the day on the beach, and hungry. “I do what I can to make these people happy and their experience a great one. It’s not unusual to have some customers who are a little cranky when they are seated, but as they leave have the kindest words to say about the service and their experience.” Kari loves thrift stores, carpentry, photography, coffee, interior design, building, and repurposing furniture, and she admits that she couldn’t live without her saw and her glue gun. When she’s not

working, she’s usually making cosmetic changes to the house that she and her husband purchased several years ago. She often looks for instructions on Pinterest, a website that features a DIY (do it yourself) section about crafting and building. To meet Kari, you would never imagine her building and decorating as she does. She is a very tiny woman with multiple talents. “I am very much a DIY person,” she said, “and I like to figure things out.” Some of the projects she has tackled include a built-in book shelf, a planter box fence around their back yard, a dining room table, barstools, a headboard, and repurposing a bar. “I met my husband, Nick Schmid, 8 years ago, and we finally tied the knot! We got married at Honey Horn last November where we also did a DIY wedding and were lucky and very appreciative with our food and beverage ties!” The back deck of the Old Oyster Factory was the perfect place to have their rehearsal dinner. Kari loves playing with their 7 year old boxer, Leroy. “He is our baby, and has two huge baskets overflowing with his favorite toys. Leroy is so much like a human it is scary!” Kari admitted that she just started making Leroy’s dog food – consisting of spinach, broccoli, flaxseeds, protein, coconut oil, oatmeal, and peas! No surprise there and Leroy is thriving! “At the Old Oyster Factory our staff is like family,” Kari said. “I often share responsibilities with another long-term server, Frank Vura, from Hungary. Our managers and owners genuinely care about us and our well-being. They share any ideas for changes with us before implementing them, to determine if we agree or have other suggestions. This has made our restaurant so successful, because who knows the customer better than the people who deal directly with them. And, one of the best advantages to working at the Old Oyster Factory is that I get to watch the sun set over the water every day!”

Healthy Summer Eating BY LOUISE LUND

People who fondly remember the taste of fresh picked fruits and vegetables are not just being nostalgic. Natural sugars and volatile compounds give fresh picked fruits and vegetables their delicious flavors. Eating lots of fresh fruits and vegetables is good protection against many diseases. What is not always as well recognized is the special benefits of eating fruits and vegetables in season and grown closer to home. Produce shipped in from southern California, Mexico, and China will lose much of the nutritional value and flavors on the long trip. Ideally, crops are harvested at the point in the plant’s development when the level of nutrients is highest. Immediately after harvest the nutritional value begins to fall. The summer months are some of the best for fresh and local fruits and vegetables. “Produce that is picked right before you eat it is best,” said Andrea Giancoli, RD, a spokesperson for the Academy of Nutrition and Dietetics. “It’s at the peak of freshness, nutrition and flavor, and you’re supporting your local farmers.” The average person should consume at least two and a half cups of fresh vegetables every day and two cups 36

of fruit a day, according to Giancoli. What’s most important is that you consume a wide variety of fruits and vegetables to get the greatest nutritional profile. Every kind of produce tastes better at the height of its season. Tomatoes are juicier, strawberries are sweeter, and pretty much any other fruit or vegetable is better when eaten during its natural harvest. Blueberries, best from May through October, are big on disease-fighting antioxidants and have plenty of research to back up their brainboosting capabilities. They also enhance mood and help combat cancer cells. They can help prevent serious diseases such as diabetes, heart disease, stomach ulcers, high blood pressure, and can reduce bad cholesterol. What’s summer without some juicy melon? Thanks to the high water content of watermelon, cantaloupe, and honeydew, they help to fill you up without filling you out. They are packed with vitamins A and C for eye health and boosting the immune system. Fresh or dried plums, or prunes, can improve bone density and fight off heart disease, obesity and type 2

diabetes. Figs are an excellent source of dietary fiber, and are a good source of calcium and potassium. Peaches, summer’s favorite stone fruit, are rich in beta carotene, which promotes eye health, skin health, and more. This summertime favorite contains vitamin C, and is an excellent source of vitamin B6, niacin, and folate. Peaches are also rich in potassium, which helps maintain healthy blood pressure as well as prevent kidney stones and bone loss. A not-so-fuzzy relative of peaches, nectarines, have been shown to boost bone health, sharpen eyesight and prevent stroke. Cantaloupe, a summer melon, is high in vitamins A and C, and has heart-health benefits. Like cantaloupe, honeydew is rich in vitamin C, which promotes skin health, according to the American Dietetic Association. Tart cherries reduce inflammation in the body. Sweet cherries have cancer preventive components including fiber, vitamin C and carotenoids, according to the USDA. Pineapple, a sweet and tart tropical fruit, improves digestion and helps prevent swelling. Grapes are rich in phytonutrients. Eat these lowcal sweet treats often and you’ll


experience a range of benefits such as protection against certain types of cancer, better blood pressure regulation, and improved cognitive health. Avocados are a nutrient-rich super fruit, in season from August to October. They provide many nutrients and can help protect your body from heart disease, cancer, and degenerative eye disease. They also help to prevent osteoarthritis and rheumatoid arthritis. Avocados improve cardiovascular health, regulate blood sugar levels, and prevent cancers of the mouth, skin, and prostate gland. Fresh corn is a true summer classic, a starchy vegetable packed with health boosting nutrients. Red bell peppers provide a sweet, crunchy punch of Vitamin C and are best in the months of May through September. Red peppers are actually mature versions of green ones. They taste sweeter and milder than green ones, and contain 11 times more beta-carotene. Tomatoes are the heart, skin, and brain protector. The antioxidant Lycopene is highest in very red tomatoes and provides a long list of benefits, from protecting skin against the sun’s burning rays, to slowing arterial aging, to fighting heart disease, stroke, memory loss and impotence. Studies have found that cooking or stewing tomatoes actually boosts lycopene’s power in tomatoes. Unlike winter varieties, summer squash is low in carbs and calories. Zucchini and yellow squash are the most common types, and both are excellent sources of antioxidants responsible for keeping eyesight sharp and immune systems strong. Swiss chard is a potent vegetable that reaches its peak in the summer. It contains a substantial amount of magnesium and potassium - minerals essential to managing blood pressure and preventing osteoporosis. Beets guard against cancer and high blood pressure. Available all year long, the youngest, most tender ones are available from June through October. Beets are a good source of folate, which guards against birth defects, colon cancer and osteoporosis, and are high in fiber and betacarotene. Best in the summer, Yukon gold potatoes actually contain more potassium than a banana. Summer squash and other members of the squash family are high in beta-carotene and antioxidants, according to several studies. Crisp and sweet sugar snap peas contain vitamins A and C, as well as folate which improves heart health. There’s no doubt hothouse production and the import of off-season produce from other countries has affected what you can find “in-season.” In some stores, it can be easy to forget that there actually are seasons and harvest cycles that make certain fruits or vegetables unavailable for stretches of time. But paying attention to where fruits and vegetables were grown, the closer to home the better, will make a big difference in the flavor and nutritional value.

There’s something to be said for the way craft beer changes with the seasons. In autumn and winter, rich malt flavors wrap us in comfort, and notes of coffee and chocolate lend a fullness to our brew, all combined to stave off the chills of the season. But summer demands something a little lighter, a little more refreshing. Summer beers bask in golden hues of sweet witbiers, delight with the hoppy bite of IPAs, and revel in the creativity of a brewer in full summer beer mode. And we are fortunate in this area to be blessed with an abundance of craft breweries.

The craft beer scene has exploded in the Lowcountry lately. River Dog Brewing continues its growth onto tap lists at restaurants around Beaufort County, and Hilton Head Brewing Company, the first in Beaufort County, has launched an outstanding tap room on the north end as part of its expanded brewery. I love stationary. Pretty papers, matching envelopes, a fresh and empty journal makes my heart skip a beat. It’s no wonder I encourage all of my clients to journal to some extent. For some, it’s a horrible chore that becomes a stumbling block to their success (so we move on). But for others, the process of journaling is the key that unlocks every hidden secret about food, goals, body image, confidence, and habits. These habits, once revealed, lose their power almost immediately. If you Google ‘food journal’ you will have access to thousands of printables that have columns for carbs, protein, calories, fiber, ounces of water, and the list goes on. But what if a simple list of foods doesn’t paint the whole picture? What if the why behind each food choice is actually of greater consequence than the food itself? I am going to take a step outside of my role as a Nutritionist and walk through a 48

whole new approach to food journaling that can literally change your life from the ground up. I am going to ask you to see food for the role it plays in your life versus breaking down the elements that create a balanced diet. Once you can identify where food is filling a role other than energy / fuel / satiety, you can go beyond weight loss, go beyond a few pounds or dress sizes, and take a step toward whole life wellness. The process is very simple. To start all you need is a notebook or journal, and a readiness to be really honest with yourself. Each time you eat you will answer three simple questions: Why am I eating? Who am I with? Who prepared my food? The answers to these simple questions will paint a picture of the viewpoints you hold about food, eating, preparation, and also highlight some simple habits.

Why am I eating? The answers here are going to vary from plain and simple hunger to reason much more complicated to understand. When you start to see your food choice as an entitlement, let that be a red flag to dig deeper in to your choice. For example, ‘I earned this piece of pizza’ or ‘I’ve had a hard day so I deserve this glass of wine’ are prime examples of eating out of entitlement. I recently wrote an article titled “You are not a dog” that dives in to the idea of rewarding yourself with food. Like a dog who performs tricks for a treat, are you going through the motions of life to earn something that in the end makes you feel worse? Or is food something that moves you along to feeling better? What if why you eat is more important than what you eat? The science behind this is that elevated levels of cortisol (our stress hormone) trigger the body to store energy for later in fat cells versus keeping it available for energy to use right now.


If your ‘why’ is something that causes stress and spikes your cortisol, you could be eating healthy food that isn’t being metabolized the way you think. Who am I with? How does your peer group impact your habits? Indeed, your peer group has a much bigger role than what you might initially think. One of my favorite authors, Glennon Doyle Melton, always says to find your tribe and love them hard. Well, I couldn’t agree more. Finding your tribe means finding the people who are heading the same direction as you and who will encourage and cultivate the habits that will keep you moving on the path towards your goals. Think on this, do your peers encourage you to make the best choices? Or do they question your motives? Check how you feel after interacting with them. Lifted up and light? Or defensive? If you haven’t found your tribe, swing by CTF on the south end. There is an awesome community of people who encourage each other every day. Additionally, I found that the more times I ate with my family, the better our little family unit functions. Prioritizing having meals around the table together can reap lifelong benefits for both you and your children. Ronald Reagan said “All great change happens around the dinner table” and I believe no truer words have been spoken about impacting change one small moment at a time. Who prepared my food? Does it matter who prepared your food? Actually, it does. When you take charge of your nutrition and plan to eat meals that you have prepared you have a better chance of staying on plan and avoiding unseen calories and chemicals from preservatives. We are so very lucky here on Hilton Head Island that we have some of the best chefs on the east coast right in our own backyard. The farm to table movement is seen in grab-and-go establishments along with fine dining restaurants. Knowing who is behind the menu and understanding their philosophy on food can help you choose restaurants where your chances on staying on track are increased. If you find that most of your food comes from packages and you can’t trace back to who prepared that meal, that’s a good place to start making small changes. Three simple questions, one amazing result. Ingredients 2 Filets of Flounder 2 Eggs-Whipped ½ Cup of Flour 1 cup Panko Bread Crumbs ½ Cup Shredded Parmesan Cheese ¼ Cup of Oil Sauce ¼ Stick of Butter ½ cup Heavy Cream 1 teaspoon Dill Weed

Instructions Mix bread crumbs and cheese together. Dredge Flounder filets in flour, egg and then breadcrumb mix. In a large Sauté pan heat oil and sauté fish on each side till lightly browned. Transfer fish to sheet pan and put in oven for 10 minutes, while fish is in oven discard oil and add heavy cream and dill, heat till it comes to a boil reduce heat and add butter that has been rolled in excess flour and whip till butter has melted. •••••••••••••••••••••••••••••••••••••••••••••• When you are not in awe of his unique and lightning fast two-finger style of picking the guitar you will be mesmerized by his beatboxing where he turns his mouth into a rhythm machine. He has so many things going at once you would think you were listening to a band. His talent is God-given and his musicianship astounding. His name is Zach Deputy and after you hear him once you will go out of your way to hear him again and again. From his lowcountry roots to Kansas, Colorado, and California, Zach Deputy is wowing audiences and taking the music industry by storm as he makes mad music across the country. Zach only had two music lessons his entire life, yet was playing professionally at age 16. “It’s a gift you know. It was just so easy – what I was meant to do. I was always fascinated by music. I would walk right up to performers and stare at them,” said Zach. “Once I picked up a guitar though, then I really became a freak. I drove my family crazy. All I did was play, not only at home but everywhere… cafeteria, hallways.” Zach grew up on Hilton Head and in Pritchardville and before going solo at 19, he occasionally played with local favorites Deas Guys and Earl Williams. When it comes to local talent, Zach breaks the mold. “I am backwards from the Hilton head motif. Whereas most bands here are cover bands, I am 95% original and then I throw in an ‘old stuff’ cover here and there.” His music is “technically all over” but has hints of bluegrass, funk, blues, reggae, Cuban Salsa and calypso with elements of folk for good measure. “I look at music as a spice rack. When it comes to my cooking, I use the spice that tastes best. It’s a never ending process of borrowing. I’m the artist always mixing

a new bowl of gumbo,” he explained. Zach describes his fast finger style of picking as derived from Flamenco and classic Spanish music. “I mold it to go with contemporary and Island Jazz.” He said it best this way: “The base of my music is soul. It is dance music for the soul.” However you classify it, his music reaches down inside you and you can’t help but give up your entire body to the beat. When I spoke with Zach for this article, he was traveling to Colorado for a big western tour. He cruises around from coast to coast in his Mercedes high rider with his tour manager and merchandise girl. Presently he plays about 180 shows a year. “I always like coming home when it makes sense but I don’t like overplaying anywhere. If you play too many shows you can forget what real life is.” Zach has two albums coming out this year. Keep on Moving was released in March which he recorded with a 6-piece band. The 2nd album, Wash it in the Water, comes out this summer and is “the best work” he has ever done. “It is by far my best music and it is all original.” Both of his new CD’s as well as all of his music are available on ITunes. DOWN ON THE CORNER

Seven years ago, Bluffton’s hottest live music venue was just a coffee shop. Interestingly enough, so was Bluffton’s most sophisticated bourbon bar, its most metropolitan sidewalk café and its favorite destination for Sunday brunch with the neighbors. In just seven short years, The Corner Perk has grown from “just a coffee shop” to one of the linchpin institutions of Bluffton. It’s a fascinating trajectory for a business, and its one about which owner Josh Cooke stays remarkably humble. “Oh I didn’t think we’d make it three months,” he said with a laugh. “I didn’t 82

have a clue what we were doing.” Looking around at what those seven years have created, it’s hard to believe that. The Corner Perk had already gained notoriety throughout Bluffton when it was still that sleepy coffee shop on the edge of town. Their simple dedication to fresh roasted, hand-pulled coffee, and the exquisite yet simple menu of lighter fare, had folks willing to make the long trek out to Burnt Church for their morning joe. It became the town hangout, and soon a Corner Perk cup in your hand became visual shorthand that you were a true local.

Then a spot opened up in the Promenade, which was still in its infancy, and things began to percolate. “I was actually about to sign a lease in a different location, then I talked to Bill (Herbkersman, Promenade developer) and asked, ‘What are your plans, because I’d love to see a coffee shop there.’ Turns out, he did too,” said Cooke. The launch of the new Corner Perk coincided with a boom in Old Town, and suddenly the coffee shop on the sleepy corner at the edge of town was now smack dab in the heart of it all. And that was just the beginning.


With the relaunch, Corner Perk put a greater emphasis on the cuisine. From breakfast to lunch and everything in between, the menu abounds with surprising fare like sizzling skillets packing plenty of juicy sirloin, mouthwatering shrimp and cherrywood bacon. Wraps, sandwiches, salads and omelets tempt at every turn on a menu that went from simple side fare while you enjoy your coffee, to destination dining. That’s not to mention a wide array of cocktails alongside a list of outstanding craft beer on draft. “It’s gotten to a point now where people almost get confused. Is it a coffee shop? Is it a restaurant? Do I order at the counter or sit?” said Cooke. We will simplify things and say yes it’s a coffee shop. It’s also Bluffton’s go-to Sunday brunch and lunch spot, where the busy sidewalks of the Promenade and the sophistication within almost make Bluffton feel like the streets of Paris. That evolution from coffee shop to

full-fledged restaurant is only part of the many endeavors Cooke has undertaken in those seven years. Corner Perk unveiled its own heavy duty roaster about a year ago, allowing it to open a retail arm selling coffee by the bag or by wholesale. And while some of that may make its way into your French press, a good amount of it is finding itself in another spot entirely – your pint glass. “Every brewery in town is working on a coffee beer with us now,” said Cooke. That includes River Dog Brewing Co.’s Perkolatte, which will soon be available in cans, as well as the Red Eye Perks from Salt Marsh Brewing and an upcoming creation from Southern Barrel that will combine Corner Perk mocha with peanut butter. But the biggest quantum leap in Corner Perk’s evolution came with the opening of the Roasting Room Lounge and Listening Room, a live music venue par excellence. Cooke credits his friend Jordan Ross with the acoustic brilliance of this lofty upstairs space, where noise-

damping insulation, floating walls, and sprayfoam ceilings create a space tailor made for the superbly eclectic array of local, regional and touring acts that have been stopping by for a set. And while it’s a technical marvel, the Roasting Room is also superbly comfortable place to kick back and sip some of the finest bourbon in the world. The reclaimed wood of the walls, the glittering array of bourbons and the indulgent variety on the bacon menu have combined to create a space that’s equally trendy and timeless. “You do stuff that gets people excited. Bluffton Dishes Up Summer Summer and Bluffton go together like hickory smoke and hog. And this summer looks to be one for the record books. BY BARRY KAUFMAN • PHOTOS BY ROB KAUFMAN

When Bluffton was first founded, taking the name Kirk’s Bluff, it was as a summer retreat for wealthy Savannah planters. The bends and twists of the May River just have a way of coaxing down the winds of the upper atmosphere, spiraling them around marsh banks and sending them soaring over the grassy shores of the bluff. Those winds serve as nature’s air conditioning, staving off the blistering summer heat that scalds the rest of the Lowcountry. The point of this whole history and meteorology lesson is to impart one crucial fact: Bluffton is, and always was, a summer town. There’s no better time to head down to the river than summer, when cooling breezes create a respite from the mercury’s steady rise. And this summer, with a wealth of outstanding new restaurants hanging up their shingle and a calendar packed with events, will truly be one for the record books. The restaurant scene in general has been on a decided uptick over the last few years, but some recent moves foreshadow a fantastic summer for local foodies. Those still mourning the loss of Vineyard 55, take heart. Earl Nightingale, owner of Ela’s on Hilton Head Island, has taken over the 84

Calhoun Street space famed for its front porch and impeccable people watching, and is using it to create something completely fresh and new for Bluffton.

“We called it the Pearl because it’s a pearl of a location right there in Bluffton,” said Nightingale. “We like what we’ve done at Ela’s, but this is going to be a little trendier; a little edgier. We’re looking to try a nice, clean healthy culinary approach.” That approach will come courtesy of Matt Valentino, and will dovetail with a new look for an iconic Bluffton space. “So much of our philosophy on restaurants, whether at Ela’s or here, is to look at the whole sensory experience… the music, the atmosphere, what you taste, what you drink, right down to the choice of stemware.” Across the street, at what had seemingly just yesterday been overflow parking for The Dispensary, Bluffton has suddenly gained two more icons – The Depot and The Raw Bar, two towering spaces perched on the edge of a gentle cove leading to the May. We were first given a preview of these new restaurants last year when Chef and Co-Owner Matt Jording told us of The Dispensary’s plan to “basically create a little town center right there.” His description then did not do justice to the magnificent pair of buildings now standing at The Dispensary. The Depot, which will


focus its menu on sizzling steaks, draws both its name and material from The Estill Train Depot in Estill, South Carolina. Old growth heart pines from the old train depot have been reclaimed for the new restaurant, along with elaborate wrought iron work from the old Barnwell General Store in Barnwell, SC. Sharing a winding deck with the adjacent Raw Bar and Old Town Dispensary, the plan is for all three to combine for one dining experience, allowing you to go from steaks at The Depot to oysters at Raw Bar to drinks at the Dispensary and put it all on one tab. And speaking of Vineyard 55, owner John Rinaldi has made his way up Calhoun Street to open Calhoun’s, a selfdescribed Southern tavern with an emphasis on specialty cocktails in the former Infield Bar & Grill space. The menu, described as small plates with a Lowcountry emphasis, is being crafted by Executive Chef Darren Macioszek. Those who remember the sort of masterpieces Macioszek was able to make out of the humble pizza as owner of Fiddlehead Pizza have every reason to be excited what he puts together at Calhoun’s.

Outside of lunch and dinner hours, Bluffton has plenty more on offer to keep summer buzzing. The event schedule has been announced for the 2016 Bluffton Sunset Party Series, held throughout the season at Bluffton Oyster Factory Park. June 17 sees Greg Maynard and Everyone’s Favorite Blues Band playing Blues & Brews on The Bluff from 5-9 p.m. with more than 50 craft and international beers, plus a food court featuring a little bit of everything. July 14 and 15 sees the return of the May River Shrimp Festival, with music from Executrix and Souls Harbour. The summer officially reaches fever pitch at the Dog Days of Summer Sunset Party, 5-9 p.m. on Aug. 19, with local restaurants and music by Chris Jones and The Will Snyder Trio. Tickets to each are just $5. For music with a view, head out to Palmetto Bluff for the Summer Concert Series, featuring Deas-Guyz (June 7), Cranford Hollow (June 21), Colby Deitz Band (July 12), Lowcountry Boil (July 26) and The Accomplices (Aug. 9).
