PUBLISHER’S NOTE Something about this time of year always leaves me feeling nostalgic, and I think I’ve figured out what it is. Part of me thinks it’s a sign of getting older, wanting to hold on to the past even as the present seems to be moving faster and faster. But what I really think it is about this time of year in particular is the return of the tourist season. Watching visitors flock to the island from all points of the globe reminds me of my favorite childhood tradition: our annual road trip every March. I grew up in Kentucky, where the winters can be pretty brutal, so that road trip always served as my signal that winter was behind us and the best months of the year lay ahead. It was the same story every year. My father would get off work on Friday afternoon, and we would pack up the Volkswagen Bus (yes, we actually had one) and by 8 p.m. we would be on the road to Panama City Beach. My father would drive through the night while we all slept and we would reach our destination just as the sun was coming up. Even with a sleepless night behind the wheel, my father would take us all over town that day, starting with the beach and then winding over the amusement parks, putt putt courses and batting cages as night fell. It was the tradition of it that I remember most, the annual routine of it. And the culmination of every trip was a feast at Captain Anderson’s, with me ordering the red snapper nearly every time. Those trips were a huge part of my childhood, and probably a big part of why I get nostalgic when I see visitors coming here in pursuit of their own traditions. I see cars packed with luggage, bikes and beach chairs and I’m right back in that Volkswagen like it was yesterday, playing “I Spy” and fighting with my siblings to pass the time. Of course, back then a trip to the beach was a once-a-year treat, my one chance to take advantage of the surf, sand and all that came with it. After living here for over 30 years it’s easy to take life on this beautiful island for granted. Whether it’s your first time to the island or you’re here to continue your own annual tradition, we welcome you and hope you enjoy all Hilton Head has to offer. You may not realize it amid the chaos that is spring break, but one day you will reflect on these special times and all of the amazing memories that were created.

HOLA, AMIGO’S

More than just a purveyor of mouth-watering Mexican food, Amigo’s serves as the ultimate litmus test for Lowcountry locals. BY BARRY KAUFMAN

“We are so fortunate,” said owner Carolyn Baltz. “We have an awesome local following.” And while this local following might be reticent to share their favorite parade spots or late-night triangle stories, they 12

are more than happy to spread the gospel of Amigo’s. When you’re indulging in dishes like their signature steak fajita burrito, reveling in the way perfectly grilled steak mingles with sauteed vegetables, gooey cheese and authentic

seasonings, it’s not an experience you want to keep to yourself. It’s one that demands you share the love. That singular experience was part of the appeal when Baltz took over Amigo’s not too long ago. A seasoned veteran of


the island’s food and beverage scene (including a 17-year stretch as owner of Market Street Café), she knew all too well that the fewer things she changed, the better. “Some of these folks have been here since day one. It’s their recipes,” she said. “I didn’t change anything.” Anything? “Well, we painted,” she said with a laugh. “And we moved the license plates. People freaked at first because the license plates weren’t on the wall.” It’s as much a testament to the 26-year-old eateries enduring appeal as the line of people ready to order while Taste sat down with Baltz to talk about the restaurant. The first two gentlemen received barbecue chicken salads without so much as a word, thanks to the staff just knowing their order. A third took a brief look over the menu before ordering the steak fajita, “like I always do.” “I’m the same way,” said Baltz, who has a special off-menu shrimp taco as her go-to. (PROTIP: The shrimp taco isn’t the only off-menu item. While you’re asking locals about Amigo’s, see what their favorite secret menu item is). There is a certain “if it isn’t broke, don’t fix it” mentality one has to embody when taking over a beloved island institution like Amigo’s. But that’s not to say Baltz didn’t find opportunities for improvement. The paint and the license plates are only part of it. Start with the new home to those license plates: the bar. “We’ve expanded the bar,” said Baltz, indicating the shelves now bearing a full line of spirits for cocktails. “Our margaritas are the number one seller, but we’ve also expanded happy hour so from 4-6 you get half off margaritas, free chips and salsa and a dollar off everything else.” Baltz has also expanded on the restaurant’s dessert menu, adding both traditional and chocolate flan as well as homemade brownies. “I make those brownies every day,” she said. “Sometimes twice a day, because they’re just selling out so fast.” But whether you’re at Amigo’s for the first time because a local recommended it or you’re there because it’s simply the place you go to look at the menu for a moment before ordering the same thing you always get, you’re going to be treated the same way: as an amigo. That’s because of the last big change Baltz made when she took over ownership, bringing in a dream team of the finest hospitality pros she’s encountered during her long career. “After 30 years in food and beverage on this island, customer service is my number one thing,” she said. “We’re so lucky. We have an awesome staff.” For 26 years, Amigo’s been the place every local will send you when you’re looking for some mouth-watering Mexican food. Stop on by, and take your first step to becoming a true local. (And if you ask this local, stop in when they’re not busy and ask for the chimichanga. It’s not on the menu, so keep this between us). FLATBREAD GRILL BY BARRY KAUFMAN

There was a simple, yet effective, premise that defined Flatbread Grill when it first opened ten years ago. It was never written down in any kind of mission statement, it was never formalized into any kind of motto, but it went unspoken as it dictated everything about this then-new restaurant. You see, it would have been very easy to open a restaurant right at the front doorstep to Coligny Beach that serves… OK food. Flatbread could have offered up premade entrees and the steady flow of tourists walking across their porch to make their way to the surf would have ensured that this new venture stayed in the black. It would have been easy, but that wouldn’t make it right. And that is the simple premise that has driven Flatbread Grill from the beginning. “We don’t buy any of the pre-processed, pre-made stuff,” said owner Bruce Kimball. “If I’m putting out frozen calamari, for example, the customer’s going to know it… It’s worth spending the money.” That means whether you’re getting one of their signature 16

brick-oven Neapolitan pizzas or one of their housemade pasta dishes, everything on your plate reflects the best ingredients. Bacio cheese. Angus beef. And yes, hand-breaded calamari. Yet despite a focus on scratch-made quality, the other side of Flatbread Grill’s driving premise is a casual atmosphere in keeping with its beachside location. “We just want to put out good quality food at reasonable prices. 90 percent of our menu is under 15 dollars. That’s who we are,” said Kimball. “If you want fine dining, I’ll send you to Sage Room or somewhere.” And for ten years, that upscale casual approach has made Flatbread Grill an institution. But while most institutions operate from a standpoint of “if it ain’t broke, don’t fix it,” Flatbread Grill has never shied away from innovation. Their original entryway made a statement, but converting it to a beachside bar opened up an entirely new dynamic for the eatery. Offering immediate service to anyone walking off the beach with a powerful thirst, the outdoor bar reflects the upscale


casual nature of Flatbread Grill, with refreshing margarita twists that set it apart. “We didn’t want to copy the competition, so we wanted to try something different,” said Kimball. These twists let you pair your frosty margarita beverage with your choice of Patron, Tito’s, Sangria or even a watermelon cocktail, creating an entirely new thirst-quenching experience with every souvenir tumbler you refill. The outside bar is a tangible piece of what has kept Flatbread Grill relevant. But what’s perhaps most important to its continued success is the intangibles. In the same way you might only be vaguely aware that the ingredients on your pizza are of the highest quality, you might not see that every detail of the experience has been carefully considered. Cleaning under the table, replacing furniture and utensils the moment they show signs of wear, these are things you don’t notice until they’re not done correctly. And since managing these details is such a huge part of the philosophy at Flatbread Grill, you never will. “I walk around here and make sure that everything is clean and looking its best. That’s what ownership is. It’s being consistent and thorough,” said Kimball. It’s a viewpoint of ownership that he will soon pass on, as he prepares to sell Flatbread Grill to a trio of employees who have proven themselves more than up to the task. “I was basically retried ten years ago, when I opened this place, and this is a young person’s game,” he said with a smile. Taking over the reins are Elizabeth Evans, Roman Zavala and Amanda Fox. As a long-time employee and front of house manager, Evans was perfectly positioned to take on her share of ownership. “She does an excellent job with the details,” said Kimball. “She serves, she tends bar and has a lot of customer contact, but I was drawn to the fact that she would be here and take the reins and do what has to be done.” Just as Evans has kept the front of the house ship-shape, Zavala has made the kitchen at Flatbread Grill a hotbed for young enthusiastic chefs. “He is someone who has really learned how to run a kitchen and his staff is incredibly loyal. They really look up to him,” said Kimball. “He found staff at a difficult time to hire kitchen employees. The knowledge he had to run this kitchen means a lot.” Rounding out the trio of Flatbread Grill’s next generation of ownership is Fox, who found herself elevated from server on the strength of her energy and rapport with the customers. “Even as a server, she was finding ways to make things run better,” said Kimball. “Plus, she is great with customers. People really like her, and that’s part of the business.” Will you notice any major changes under the new ownership? Most likely not. Because that’s what makes Flatbread Grill so special. You won’t necessarily notice that your table and everything around it has been meticulously cleaned. You won’t necessarily notice that the dish on your plate was hand-crafted from the best ingredients. And you won’t

BACK ON COURSE Following a year that saw the iconic event moved to fall, the Hilton Head Island Wine and Food Festival returns to spring. BY BARRY KAUFMAN

If there’s one word that most people in the restaurant industry are tired of hearing over the last year, it’s the word “pivot.” First, they had to pivot when pandemic lockdowns made indoor dining a dicey proposition. Shifting to carry-out-only menus, setting up makeshift outdoor dining rooms in parking lots and on sidewalks… whatever it took, restaurants kept rolling through the worst of it. The Hilton Head Island Wine and Food Festival, our island’s annual celebration of the restaurants and F&B pros who keep us fed and happy, had to pivot as well. Traditionally one of the lynchpin events of the spring festival season, it spent 2021 in an unfamiliar spot on the calendar: September. “Up until then, it had been held in March for 35 years,” pointed out Jeff Gerber, Executive Director. “But the event was amazing. It was great being in the new park. We’re going back there this year and for the foreseeable future.” Beyond holding the public tasting at Coligny’s Lowcountry Celebration Park for the first time, last year’s event also saw the ever-popular Uncorked event moved from six weeks before the main event to mere days. It also changed venues, to the beautiful rooptop bar at Courtyard by Marriot. “We had 100 people up there,” said Gerber. “The location was great… it turned out every bit as nice as we’d hoped it would.” Last year’s event proved successful, but then organizers did have an extra five months to put everything together. So when the decision was made to move this vernal event back to its rightful place, it had to be a tall order. After all, this is an event 32

encompassing not just the signature public tasting, but a whole week of smaller events and celebrations. Something like that takes an entire year to put together. This year, the organizers had just six months. “No rest for the wicked,” said Gerber with a laugh. “I mean, it’s a bit challenging, but who in the world isn’t going through challenging times? We’ve all been dealt this hand.” Gerber points out the incredible support the event received from its partners as a huge reason why the time was right to move back to spring. “We thought about bumping it to May at one point, but then you have wedding season… our partners were great. They just said, ‘If you have to go to May, we’ll still support you.’” And it wasn’t just the restaurants and venue partners. “We started selling tickets in October when people had literally just been here,” said Gerber. “I guess we’re doing something right.” In fact, when Gerber spoke to Taste of Hilton Head in late December, the Grand Tasting and the VIP Lounge at the Public Tasting had already started filling up. That’s a testament to the popularity of this event, and to the public’s hunger to once again mark spring with the finest flavors the island has to offer. “Wine and Food is about friends and family and sharing. By being back it infers that things aren’t back to normal yet, but it’s closer than it used to be,” said Gerber. “It’s like a favorite bottle of wine. OYSTER DEBATE Fried, steamed, raw… how do you take yours?

For something so universally beloved, it’s amazing how few people can agree on the best way to enjoy oysters. To some, the only proper way to enjoy one of these briny bivalves is to pluck it right out of the pluff mud with your bare hands, pry it open with a pocketknife and slurp it down right there in the water. To others, such bare-bones preparation robs the oyster of the succulent majesty that comes with coaxing out its flavors over simmering coals. Still some won’t touch the things unless they’ve been battered, fried and served on a baguette. Who’s right? Who’s wrong? As with most things, it’s simply a matter of taste. Speaking diplomatically, Dale Augenstein of Steamer Seafood said, “That is a loaded question. Everyone has a preference from steamed local to gulf oysters on the half shell… In general, oyster lovers really love their oysters!” And while that may be true, with any debate someone must be right, correct? So we put the question out to a few local restaurateurs and foodies to get their take. Brendan Reilley, scion of the famed Reilley family and head honcho at Crab Group, knows for sure how he likes his. Or rather, how he doesn’t. “Anything but fried,” he said. “Grilled or raw, but just not fried. I’ll eat fried shrimp, just not fried oysters.” When pressed, however, he will share his ideal oyster: raw, with horseradish and a mignonette. That seems to be a favorite among restaurateurs, with The Pearl’s Alex Nightingale saying, “The best way to eat an oyster is ice cold on the half shell with a touch of spicy cocktail sauce.” When it comes to the best type of oyster, he’s partial to a Prince Edward Island beausoleil. So the pros all have their viewpoint, but what of the everyday diner? To get the pulse of the people, we posed this question to the Bluffton and Hilton Head Food Experience, a 10.5 thousandmember strong Facebook group dedicated to sharing the most mouth-watering meals in the Lowcountry. As you might imagine, such a contentious question sparked no small amount of debate, even by Facebook standards. Over 140 comments, users shared their favorites. While most echoed the


sentiment that the ideal oyster is served raw with a little bit of horseradish, mignonette or cocktail sauce, a few folks went against the current. Lorraine Borger wrote, “I like them roasted over an open fire… then shuck, dip in butter or cocktail sauce.” Alan Robins weighed in saying, “I love them topped with a dab of pimento cheese, baked, and finished with homemade bacon bits! Or fried and placed atop a deviled egg with onion jam underneath!” Thomas Heyward added, “I love them any way but raw, even the briefest of steaming is ok. But one of the best ways would be oysters in brown gravy over rice. It’s outstanding.” This touched off a slew of recipes in the comments, including Gabrielle Muething’s suggestion of Lowcountry Oyster Stew (“Use farm fresh milk, fresh lemon and parsley and a touch of Sherry to make it fantastic... With upside down Vidalia onion cornbread or cheesy slab croutons,”) Sharon Kaper’s preferred method (lightly deep fried with tartar sauce) and Sabrina Heimig’s French-inspired preparation (“They usually marinate shallots in red wine vinegar and put the shallots on top of oyster.”) Naturally, oysters Rockefeller was well represented among the group, with Holly Carrington Ashby writing, “May River Oysters Rockefeller done right! Must have spinach, shallots, garlic, parmesan, panko and above all Pernod. To die for!” This being a Facebook group for restaurateurs and diners alike, a few local experts weighed in, including Margaret Pearman of Charlie’s L’etoille Verte, who wrote that there is, “Really no wrong way if the oyster is the spotlight.” She may be on to something there. At the end of the day, we live in an area where we can enjoy some of the best oysters known to man. What you choose to do with it – steam it, fry it, BBQ it or eat it raw – is up to you. Just as long as you save a few for us. (DISCLOSURE: The author of this piece swears by wrapping a whole bushel in a wet towel over a wood fire for about an hour, then enjoying with homemade ghost pepper hot sauce and saltines. While he recognizes there are other ways to eat oysters, he only does so begrudgingly).

Ground turkey breast Zucchini, shredded (~3 cups) Mozzarella Garlic, minced Onion, yellow, minced Salt Black pepper Parsley, minced

Serves: 8 Serving Size: (1) 4-ounce burger patty Calories: 200 Fat: 5 grams Carbohydrates: 7 –grams Protein: 31 grams Fiber: 2 grams

Method: • In a large bowl combine all ingredients, ground turkey, zucchini, mozzarella, garlic, onion, salt, pepper, and parsley. • Blend well. • Portion out ~4-ounce patties. • Preheat grill. Lightly grease grill grates. • Place burger on grill and cook for 4-5 minutes, or until turkey burger easily flips. (If the burger is sticking, it needs more time cooking, don’t flip it.) • Flip and continue to cook for 4-5 more minutes, or until the internal temperature reaches 165 degrees. • Serve with your favorite burger toppings and enjoy!

He received additional training at the University of Georgia and now the President of the Beaufort-Jasper Beekeepers Association maintains more than 50 hives on Hilton Head Island and at Palmetto Bluff. His Hilton Head Honey is available at the Coastal Discovery Museum, the Hilton Head Plantation Farmers’ Club Markets, Burke’s Pharmacy and The Purple Cow. Although honey bees are not native to North America, there is a long tradition of beekeeping in the Lowcountry.

Love local honey for its sweet taste and medicinal benefits? Before you throw a hive out in the backyard and hope for the best, Lowcountry beekeeper David Arnal has some tips to help honey bees thrive. A landscape architect who is also Hilton Head Island’s only USDA-registered farmer, Arnal has been maintaining honey bee hives since 1988 when he offered to take over five hives at Clemson University. “It just took off from there,” he says with a laugh. 52

Jamestown is usually credited with having the first hives, but researchers at Clemson University recently discovered Spaniards brought over Northern European brown honey bees when they settled Santa Elena on South Carolina’s Port Royal Sound in 1566. According to Arnal, honey bees had already made their way 200 miles inland, as well as 200 miles north and south of Santa Elena (present-day Parris Island), 70 years before Jamestown was founded. Begin a beekeeping adventure by planting a pollinator-friendly backyard or community garden. “The best thing you can do is build habitat in your backyard – your community – not just for honey bees, but all pollinators,” he explains. “Plant stuff that blooms in August, as that’s the time of year when there really aren’t any good blooms in Hilton Head and Bluffton that provide nectar. Plant little pockets of zinnias, salvias and other types of flowers that bees will be attracted to and they’ll naturally drift over to your squash blossoms, watermelon, cantaloupes and other things that need to be pollinated.”


Knowing basic bee biology is also important. “Just like you and I, bees need carbohydrates, protein and water,” Arnal notes. “There are bees that collect water, there are bees that collect carbohydrates which are the nectar they turn into honey and there are bees that collect pollen which is their protein source. The combination of those things keep them alive and we simply harvest the honey source that they produce nectar from.” Since bees forage about two miles from their home, Arnal tries to spread out his beehives across the Island so as to not overload a specific area. The variety of nectar and pollen also adds more flavor to his honey. And, like any other farmer, weather directly affects production. “In some seasons we might not have any honey in the spring because you’ve got to leave enough honey for the bees to use,” he says. “If we have a bad spring, or a really wet spring where the bees can’t fly, or vice versa and a drought in the summer and there’s just no water in the soil for the plants to produce nectar and copious amounts of pollen – it’s just something you have to work around.” Arnal also offers a one-hour presentation to community groups and garden clubs entitled “What is Happening to Our Bees?” The number of managed beehive colonies in the United States has stayed pretty steady for the last two decades at 2 million. During World War II, when beeswax was used for armaments, there were around 6 million colonies in the country. “Economically, what we’ve had to do is just keep these [colonies] alive,” says Arnal. “It’s taken away some of the joy of beekeeping with the discovery of colony collapse in 2006 which brought to light how important honeybees were to the environment and to people who like to eat things that are pollinated.” “My industry is not growing,” he continues. “It’s pretty much remained steady because there are a combination of things that are causing problems.” Topping the list of issues is the use of pesticides, fungicides and herbicides. When Arnal’s honey bees drank water from a puddle next to a right of way treated with herbicide, it poisoned his whole yard. Bees are also exposed to pesticides used in commercial agriculture and fungicides used on golf courses – although since bees do not pollinate grass, fungicides are not a huge issue locally. Then there are the Asian mites which showed up in the United States in 1989 and decimated bee populations living in trees followed by another Asian parasite that affects gut health. “The bees have built up some resistance to the mite,” notes

Arnal, “but it still requires a considerable amount of intervention by the beekeeper. There are a lot of stressors on a honey bee.”

Still buzzed about beekeeping? “The best beekeepers we have that started as beginners in our organization sat in on our meetings for a year,” emphasizes Arnal. “We do a lot of hands-on work at our meetings, so they learn how to keep honey bees.It’s not something that you learn in a day. There’s a great deal of misinformation on the internet and, of course, it’s very different keeping honey bees in Minnesota or in California than it is keeping honey bees on Hilton Head.” The Beaufort-Jasper Beekeepers Association meets on the 4th Saturday of the month in the Discovery Lab at the Coastal Discovery Museum. Founded in 1983 by local businessman Tom Reilley with a few friends and family, the Hilton Head St. Patrick’s Day Parade is South Carolina’s original holiday parade and one of the Island’s most popular and well-attended annual events. Don your green and stake out your spot among an estimated 30,000 spectators along Pope Avenue on Sunday, March 13 to catch this family-friendly community parade which kicks off at 3 p.m. Recognized as one of the Top 20 Tourism Events in the Southeast, the St. Patrick’s Day Parade often includes a military flyover and an appearance by the Budweiser Clydesdales joining the U.S. Marine Corps Band from Parris Island, high school and university marching bands and military units, pipe and drum bands, floats, community groups, dignitaries and the antics of the Shriners. Wingfest 25 is scheduled to return (for the third time) to Shelter Cove Community Park on Saturday, March 19. “We aren’t just ‘wingin’ it’ anymore,” declares the Wingfest website. “After 25 years, we like to think we know what we’re doing. Our keys to success? Invite the best local restaurants, add some handpicked bands, sprinkle in some kids activities, pour a little too much alcohol, and spark some semi-friendly competition.” Hosted by the Island Rec. Center, nearly two-dozen restaurants competed for the People’s Choice and Judge’s awards in 2019, the last time Wingfest was held. Coconutz was the people’s first choice with One Hot Mama’s and Howell-Chase Heating & Air Conditioning securing second and third place, respectively. Last year, Samuel Yao of Ann Arbor, Michigan was named Best in Show with his handwoven sculptural baskets made with fallen palm tree fronds. Anne’s Feather Art & Painting from Alva, Florida placed second with wildlife images painted directly on humanely sourced feathers combined with found objects such as shells, driftwood and lures. Toni Chirico of 8 Petals in Chapin, South Carolina took home third with her uniquely crafted fused glass art. Bluffton Mayfest Coordinated by The Rotary Club of Bluffton, Mayfest – a.k.a. the Bluffton Village Festival – is held annually on the Saturday before Mother’s Day from 10 a.m. to 5 p.m. on Calhoun Street in Old Town. A celebration of Bluffton’s singular “State of Mind,” the event features dozens of local and regional arts and crafts vendors, live music, delicious food, the eagerly anticipated and hotly contested Ugly Dog Contest, Pie Eating and Donut Eating Contests and plenty of activities for kids. Athletes in any sport pursue strength with everything they have. A stronger backhand, a longer drive, a bigger squat; strength is at the base of every PR (personal record). But even long after competitive days are over, strength can be the key to wellness, longevity, and vitality. SO WHAT DOES BEING STRONG MEAN? In what areas does strength matter? Does physical strength translate to any other discipline? I have three areas that are key to living a strong and a healthy life, both physically and mentally. MEALS. That’s right, your plate can build your strength or take it away. A strong plate is one that encourages cell turnover and sustains energy levels. A handful of green veggies several times a day can do just that. Adding a cup of spinach to your omelet in the morning is a great start, as this will plus-up your already lean breakfast with vitamins, minerals, and heart-healthy omega-3s. On the flip-side we know that added sugar does the opposite. Foods high in added sugar do not provide the level of satiety that a whole food does, and may actually trigger a binge later in the day. This cycle is tough to stop once started. So create a strong plate that includes lean proteins, green veggies, and plenty of flavor. MUSCLES. This is likely the most obvious area, so let’s get to the business of building and maintaining lean muscles. A lean and muscular body may provide an aesthetic that is visually appealing, but that is nothing compared to the internal benefits of carrying lean mass. Lifting weights with short rest intervals allows your body to produce testosterone along with human growth hormone. For men and women alike, the combination of naturally produced testosterone and growth hormone is the fountain of youth we are all looking for! To effectively build muscle you will want to work to failure in each muscle group. Consider bicep curls: complete 3 sets of 10 reps, then increase the weight and do as many as you can until complete muscle fatigue. Working to failure ensures that you are at your own limit for any given exercise. MINDSET. Merriam Webster defines strength as; “the capacity of an object or substance to withstand great force or pressure” which opens up the consideration of strength from physical to something mental as well. Being strong physically is nice; being strong mentally is necessary. Mental toughness allows a person to not just endure life’s challenges but to thrive among the chaos

and uncertainty in any situation. A mentally tough person can withstand adversity, challenges, and most importantly failure. A mentally strong person can see failure in light of what is possible, not just in the short term. WHAT AREA ARE YOU STRONGEST? Where can you build strength?
