PUBLISHERS NOTE

Fall on Hilton Head is a special time of the year, especially for me. I moved to the Island in the fall of 1989 with the thought of spending a few years here and then moving on to other things. Here we are, twenty three years later, and I’m still here. Funny thing is that many long time Islanders have the same story: Came for a visit, stayed for a lifetime. I remember that first fall on the Island like it was yesterday. I didn’t know anyone here which was a little awkward, but also a little exciting. What I remember most was how easy it was to meet people and how friendly everyone was. In only a few months I felt like I had been here for years. In most places, if you are not from there you are considered an outsider. You may eventually feel like a part of that community, but it can take years. Hilton Head Island is different. The people here are gregarious and affable. So this fall, it got me thinking, why is this such a special place where it is so easy to fit in, make friends and feel like a part of the community so quickly? I think part of the reason is because the majority of islanders have taken the same path to get here. We weren’t born here, and most of us weren’t raised here either. We remember how we were first treated and try to do the same to our new residents. Pay it forward so to speak. Also, I think everyone is just happy to be here and happy to share a piece of our paradise with others. Because our fall weather makes it so easy to get out and do things, it is also our season of festivals, where we celebrate and embrace cultures and traditions and of course, food. What better way to enjoy the hospitality the island has to offer than with fantastic food, beautiful weather and good company. These festivals are the perfect opportunity to have a family outing, to catch up with old friends, and to make new ones. The past twenty three years have gone by in a flash and every fall is a nice reminder of what makes Hilton Head so special. This fall, take in an oyster roast, walk on the beach, grab a bite and a drink on the patio, and soak in the wonderful area that we are lucky enough to call home!

Palmetto Bay Sunrise Café Celebrating a Decade of Egg-citing Meals BY MARIANNE LOBAUGH • PHOTOS BY ROB KAUFMAN

1,000,000 — this is the staggering number of eggs that Palmetto Bay Sunrise Café has carefully cracked by hand one at a time and served to customers during their ten years of operation near the beautiful waters of Calibogue Sound in Palmetto Bay Marina. Whether your preference is eggs benedict with city ham or crab cake, shrimp hash, eggs all ways or an omelet, Palmetto Bay Sunrise Café’s kitchen will be sure to please your appetite for breakfast and lunch. “We are known for our egg dishes. A large part of our menu is all about eggs,” confirms Leslie Stewart, owner of the Sunrise Café along with her husband, Paul, who goes by “Stew.” But if you think your choices are limited to fried, scrambled, sunny side up or poached — think again. “We have some menu items that are a little different. All the benedicts we have experimented with over time,” said Leslie. Sunrise Café’s regular menu contains five tantalizing variations of 8

eggs benedict, but be sure to ask about the daily special to discover what unique creation is being offered today before making your choice. Leslie mentioned a couple of recent benedict favorites: fried green tomato with country ham and tomato, basil and mozzarella with a balsamic reduction. One of her personal favorites will be returning soon along with cooler autumn temperatures. “Another benedict that is absolutely to die for is our braised short ribs eggs benedict with a brown sauce of red wine and tarragon. It’s a little on the heavy side for the summer months, so we usually offer it during the fall and winter,” said Leslie. Other unique menu specials that include eggs in more subtle ways are blueberry cream cheese stuffed french toast available on Fridays and Saturdays, raspberry pancakes with fresh lemon curd offered Tuesdays and peach pecan french toast on Mondays. Leslie admitted customers do vote with their menu selections to make popular specials into regular menu

items that become available seven days a week. “Shrimp hash and the Sunrise and crabcake benedicts all started out as menu specials and by popularity made it to our regular menu. The blueberry rrench toast is almost there,” Leslie said. But don’t think for a minute that longevity and success have made the Stewarts comfortable and complacent. Traveling and visiting other restaurants bring fresh ideas to the Stewarts that they eagerly bring back to Hilton Head Island. A recent trip to Las Vegas has resulted in an improvement of a popular soup. Leslie described their recent discovery of pistou, a French version of pesto, that now adds a punch of herbal flavor to the Café’s tomato soup. “We do try to freshen our ideas,” said Leslie. Another unique feature about this restaurant is that you can order breakfast or lunch menu items at any time during their hours. “We also have really great


lunches,” Leslie said. Adding that the lunch hours are great times to visit on weekdays to avoid crowds. Lunch menu highlights include: the tuna melt, a hand cut New York strip, hand-pattied burgers, soups, salads and a variety of delicious sandwiches. Plenty of seafood choices are offered too including: combination platters, shrimp scampi, a pan seared tilapia, potato crusted flounder and she-crab soup. Speaking of she-crab soup, which Leslie describes as “fabulous,” she says that all of their soups are homemade from scratch and are “pretty fantastic.” To complete the meal, the Sunrise Café also features a full bar with a great selection of wine and beer. “We have delicious Blood Marys and Mimosas,” Leslie said. Guests can enjoy their meal in the dining room or on the sunny southern style wood planked porch in comfortable patio furniture where the breeze can be enjoyed from the nearby water. Aside from the extensive menu of delicious varied dishes, Leslie believes her friendly staff adds something special to the experience of the Sunrise Café. She was eager to tell me about Paula Brown, who has worked along

side she and Stew since their opening day in March 2002. “Paula started as a dishwasher and is now in charge of the kitchen. She does everything here, whatever it takes. She is incredibly talented and smart and I really wouldn’t want to go a day without her,” said Leslie very sincerely. Leslie added that Brown took cake baking and decorating classes in her time away from work and has created many outstanding special occasion cakes for the Café. Staff member Melissa Foy recently hired Brown to share her talents to make a cake for her upcoming wedding. Leslie remarked that many other staff members have more than five years of service at the Sunrise Café with many chefs and kitchen staff with 7 to 8 years of experience. “We are aware that our staff is second to none. We never want to lose sight of the employees being wonderful,” said Leslie. Looking back over the past ten years, Leslie becomes a little nostalgic. “When we first opened up, there was not a lot going on down here. Captain Woody’s was the only other place open at the time. Between

Woody’s and us, we managed to draw people here and it’s really grown. I always say life brings life,” Leslie said. Customers have also been an important part of the decade of success for the restaurant according to Leslie. “Our customers are very loyal. We get a lot of locals, but we also get a lot of loyal repeat visitors that come the same time every year, year after year. We’ve gotten to know them just like they are locals, too. They have been a huge part of our success,” said Leslie. She said the people have been the most enjoyable part of providing great meals to residents and visitors to Hilton Head Island over the past 10 years. “We do consider this to be a family. Everybody here really does try to take care of everybody else. Stew and I are grateful for all of our good fortune,” said Leslie. Diners visiting the Sea Grass Grille location at any time over the past 25 years have likely been greeted by Kathy Jannott’s warm smile and treated to the culinary masterpieces of Chef Chad Newman. Previous to opening the Sea Grass Grille in 2004, Jannott and Newman were the key employees of a restaurant in the same mid-Island Plantation Center location just outside of Palmetto Dunes and Shelter Cove’s entrances. When the business moved, the two decided to team up with Jannott’s husband Peter and launch their own culinary venture, retaining the 12

location and hopefully the customer base that had become friendly with the manager and chef during their 17-year tenure. The three agree that Jannott and Newman’s time-tested working relationship, extensive professional experience and clearly defined individual responsibilities have contributed to a successful ownership team — one that has allowed Jannott and Newman to continue serving their faithful fans and their families. “We have a lot of repeat customers over the many years we’ve been here. We’ve gotten to know them and their

children,” said Chef Newman. “We’re getting to know the third generation in some of our customer’s families,” Kathy adds with a warm smile.


The trio believes that customers benefit from having familiar faces consistently seen on the premises in hands-on owners and an owner in the kitchen. “At least one of us is always here … or two or three,” Chef Chad said. This much time and attention from ownership all adds up to a spectacular experience. Islanders clearly agree. The restaurant was voted “Best Seafood Restaurant on Hilton Head” by Hilton Head Monthly readers in 2011 and Island Packet Reader’s Choice selection for “Best Seafood Restaurant” in 2012. Visitors also have praised Sea Grass Grille by consistently ranking it in the top 20 of Hilton Head’s restaurants on TripAdvisor, awarding the Grille TripAdvisor’s Certificate of Excellence for 2012. A visitor from Ohio recently commented on TripAdvisor’s website, “My husband and I enjoyed a fabulous dinner at the Sea Grass Grille last night. The food was fabulous and the service sparkling. … My husband selected the Rack of Lamb and said it was one of the best dinners he has ever enjoyed.” The restaurant’s interior is open, casual, warm and inviting with touches of Sea Grass, bamboo and many other native coastal items flavoring the décor. The tables are adorned with colorful woven cloths in varied designs of coastal living. “We wanted the décor to be like a beach house kind of feel, like someone’s living room,” Kathy said. The menu follows the sea inspired feel with a focus on the freshest local seafood prepared by Chef Newman, a graduate of the Culinary Institute of America in New York, and his expert staff, which contains additional Culinary Institute graduates. A generous number of daily specials offered on both menus allow for delicious seasonal surprises, while the menu’s familiar favorites include: Pan seared sea scallops with a roasted sweet red pepper coulis and Lowcountry kabobs with grilled shrimp,

Andouille sausage, tomato and sweet onion. But the menu does not restrict itself to seafood lovers. Other delectable entree items include: filet mignon grilled and topped with gorgonzola butter, Aussie rack of lamb herb crusted with lamb au jus, grilled pork chop with cranberry and apricot chutney, shrimp and pasta tossed with asiago cheese, pesto and cream. Dinner entrees include the Grille’s house salad, vegetable and potato. Chef Erich Striegel joined the staff in November 2011 as the head chef for lunch and has added some new offerings to the lunch menu that have become instant customer favorites including: an Asian shrimp salad with local shrimp, Napa cabbage, carrots and red onion topped with a sesame vinaigrette and a local grilled Mahi Mahi with a green tomato chow chow. “Erich has added some very innovative and exciting new lunch items and desserts,” Chef Chad said. These new selections join the already outstanding lunch menu of omelets, salads, sandwiches, seafood and house specialties including: Chad’s upside down chicken pot pie, a chicken breast on puff pastry with a special sauce and the unforgettable Carolina tomato pie, fresh tomatoes in a flaky pie crust baked with gruyere, mozzarella, parmesan and fresh basil. Chef Striegel also has added two irresistible special desserts: Italian lemon olive oil cake with raspberries and toasted meringue and a southern inspired treat called the South Carolina peach upside down cake. For those with special dietary

needs and concerns, Sea Grass Grille will happily accommodate. The current menu contains many gluten-free items and adjustments can be made to many selections to meet specific dietary needs — just ask. Sea Grass Grille also meets the dietary pleasures of their youngest customers offering a children’s menu that includes kids favorites of: pizza, pasta, chicken fingers and more. “We’ve seen more families visit us, especially during the summer months,” Kathy said. Accompanying Sea Grass Grille’s tantalizing cuisine is one of the Island’s top wine selections featuring vintages from Germany, France, Spain, Italy and the finest California has to offer earning the Grille Wine Spectator’s 2012 Award of Excellence. The menu offers more than 100 bottles ranging in price from $24 to $110, with the vast majority of prices in the $20-$39 range. Their wine selection also includes a very generous selection of wine by the glass ranging in price from $6.50-$10.50 for those who enjoy variety during their meal. “We offer over 50 wines by the glass and lots of bottles of wine under $30. We focus on good value wines in an affordable price range,” Kathy said. The Sea Grass Grille strives to prove that excellent food and personal service can be found at affordable prices. “We don’t want people to feel like we are just a special occasion restaurant. We want people to feel they can come any night and have a reasonably priced meal. We have several entrees under $20 and we try to offer something for everyone,” Kathy said. One of the hackneyed phrases tossed about by restaurant managers is “Do your best.” It’s less expensive to keep a customer than it is to attract new customers. While they may not tell others about what went right, they will certainly talk about what went wrong. These are words of wisdom that Erika Waronsky lives by daily in her position as Manager of Steamer Seafood Restaurant. “Make the customers feel welcome and let them know that you truly appreciate their business. They could have gone anywhere, and they chose to come to you.” Erika made time to talk with Taste to tell us about her love for the restaurant and her commitment to providing great service and great food, with a sincere smile and a friendly attitude. “It’s all about making sure that each customer has the best experience they can while they are here.” It’s much easier and less costly to avoid a problem than to fix the problem when the customer is already upset. “Just put a smile on your face and offer them great service and great food, even though they may be hungry and irritable after a day at the beach or in the car with the family.” When she came to Hilton Head Island during the summer of 2000 with some college friends, she knew she instantly loved the area. “I already knew that it was a great place. The first night on the Island, we went to Steamer for dinner, and I liked it so much that I applied for a job as a server. I worked there all summer and I’m still here!” Confirming her love for her job, she added, “I can honestly say that I have never dreaded going to 20

work. I’ve learned so much from owner Dale Augenstein about running a restaurant, through busy and slow times; and I’ve never even thought about leaving.” Having grown up in Morgantown, West Virginia, Erika studied at West Virginia University. “I didn’t plan to work in the restaurant business. But this was my first real job, and I am so happy with it that I have no desire to do anything else. I’ve been fortunate in many ways to have gotten a job right out of college, and liked it enough to stay.” It was obvious at the time of our visit that even though it was Erika’s day off, she was still very much on top of things. While sitting at a table on the deck with her 4 month old baby girl, Brynn, shortly before the lunch rush,

an employee interrupted Erika with a problem. Without panic or hesitation, she quickly solved the problem. “Train your staff, and insist that they treat the customers as honored guests,” Erika added. “The real trick, however, is to hire the right people – ones who are dependable, energetic, friendly, hard working and caring.” In the summer, Steamer hires 35 college students – most of them from the University of Kentucky and from Western Kentucky University, Augenstein’s alma mater. “Sharing of lessons learned after each shift between managers and staff has enhanced the team’s effectiveness.” When asked what it takes to be successful at her job, Erika’s quick response was that you must be able to deal with people with a smile on your face. And, you cannot take things too seriously. You have to keep a sense of humor and keep things in perspective. And it’s icing on the cake if you really like what you do.” Even in the busiest time of the year, Erika balances her career with her new baby and her husband. “I bring Brynn to work with me often when I am going to be working in my office in the next building. My husband and I make time to go out on our boat with the baby, and take time to enjoy each other, relax, and regroup. Always fresh, always fun! Tapas Restaurant The Island's Fabulous Taste of Paradise. In 1992, a 7.3 magnitude earthquake shook Southern California early one June morning. The tremblor was enough to rattle Ardis Matthews and her husband, Max, into travelling across the country “to fabulous places, none of which were exactly right.” But, as it turns out so many times in life, the road less traveled, led to the most adventure. When the Matthews were in Charleston “we were sitting in a bar being friendly,” laughs Ardis. “We were talking to a nice couple from Hilton Head about our trip to Savannah. They said Hilton Head was right on the way, just make a left and go over a bridge.” The Matthews fell in love with the Island immediately. “It reminded us of our old home in California.” After trading one paradise for another, and replacing surprise earthquakes with preemptive hurricane warnings, Ardis had to find out what to do with herself. Ardis is perpetually jovial and enthusiastic. She is enthusiastic about

anything. Anything. Every new experience is “exciting”, “cool” or “fabulous”. Every past experience, even if it was less than grand, has one little slice of humor, wisdom or combination of the two. She is sweet, sassy and indefatigable. She doesn’t fear change, she embraces it. “This is all learning by doing,” she says of her extensive menu. “Except that I did have a fabulous […there’s that word again, ‘fabulous’…] opportunity to take cooking classes with some of the greatest chefs of the

1980’s in California.” Wolfgang Puck, Bert Greene and Julia Childs among them. “It was mostly fun. And the main thing I learned from these classes was, ‘I can do this.’” To Ardis, the best cooking she comes up with is “looking around that kitchen and reinventing the same ingredients over and over and over again. I’m not classically trained, I just makes what tastes good. And fortunately it seems to taste good to other people too.” Besides food that tastes good, the good food changes all the time. “There are certain items I would never take off the menu. I like the classics, but then I like totally wacky new flavors.” Ardis reflects and then starts laughing again, “And then I like the stuff in between! I don’t know! I like food! Anything but beets!” You can’t help but smile in her presence.

“I love being inspired by the freshest ingredients available and inseason,” Bryan Bobinchuck replied when asked what his favorite dish is to prepare. “I love being inspired by inseason ingredients - letting the food dictate to me, when deciding what to prepare.” When boat captains are committed to delivering a fresh catch of the day to the restaurant daily and their supplier delivers the freshest, local, organic vegetables almost daily as well, you know it’s all about fresh. Catch 22 is a deliciously comfortable and cozy restaurant and Chef Bryan is committed to serving fresh, local foods. A variety of friendships and tight business relationships have developed between Bryan and the local boat captains since the restaurant opened in 2001. Although the name Catch 22 would imply a concentration on seafood, Bryan says the sea fare and land fare is about a 50/50 split. One of the restaurant’s most popular dishes is the bone-on filet, aged for about 28 days. “It’s tender because it’s a filet, but it’s flavorful because it’s bone-aged. The flavor will rival a rib eye, but it always has that tenderness because it’s a filet.” Chef Bryan’s bone-on filet is noted to be one of the best steaks on the island, and he is proud to share that he cuts the USDA Prime steaks in house. When Bryan was 14, his family moved to Hilton Head and he was able to land a job as a dishwasher at a local restaurant. “The chef there taught me to cook, and that was my formal culinary training. I never really planned 24

to be in the restaurant business when I grew up, but found that I had a passion for creating food.” When that restaurant closed, he was hired by Reilley’s; where he became head chef until the time he left in 2001 to open Catch 22 with his wife, Daisy, and partners Gary and Penny Duren. It’s been well established over the years that the food is exceptional, which is a large part of why Catch 22 is consistently rated one of the Island’s most popular restaurants and why its clientele has included famous people such as Michael Wilbon, Tom Petty, and Kenny Chesney. Many of the PGA crowd have discovered Catch 22 and have made it a regular stop on their visits to the island - Rocco Mediate, Lanny Wadkins, Mark Anderson, Stewart Cink, and David Feherty, to name a few.

The fish is “fresh off the boat.” The majority of seafood consumed in the US is from overseas, and most people don’t know or think about that. Although local seafood is slightly more expensive than imported seafood, the taste is significantly better. Who wouldn’t prefer seafood fresh off the boat over seafood that has been imported from half way across the globe? Not only does fresh local seafood taste so much better, it isn’t pumped with preservatives and is therefore much healthier. “Fall is my favorite culinary season,” Bryan admitted. “I prepare a variety of dishes using seasonal vegetables, such as the many varieties of hard squash. I love to roast meats and vegetables and to prepare comfort foods.” While noting that during the summer they serve a lighter fare, in the fall he prepares more roasted root vegetables - beets, turnips, rutabagas – and prime rib is served every Thursday night. When he’s not working, Bryan loves to be outdoors - fishing, camping, and swimming. “I love spending time with our 5 year old daughter, Charli, who is my sweetheart. Take a dash of culture and a splash of peaceful ambience. Add a whopping portion of gourmet food, a healthy dose of fine wine and spirits, and a superlative scoop of fun, and you have dialed in the recipe for Palmetto Bluff’s 2012 Music to Your Mouth festival, November 15th-18th. Palmetto Bluff once again has shown no restraint in organizing one of the most amazing four day festivals on the east coast. I dare not classify it as a food festival because it goes so much farther to entertain, dazzle, and wine and dine its guests. “What makes us different is that it is not about us. We have over 75 different guest chefs, winemakers, brewers, distillers and artisans and we let them tell their story,” explained Courtney Hampson, marketing manager for Palmetto Bluff. “We work with the best chefs and artisans and while we have a class level that we try and meet, the food is first class and over the top, the feel of all of our events are casual and fun and truely about making connections over food.” Music to Your Mouth events kick off Thursday morning when guests embark on an antique yacht for a Foraging Cruise to Daufuskie where Gullah chef Sallie Ann Robinson will showcase the tastes she grew up with on the pristine Island and share some fascinating Gullah lore. The afternoon will hold a Blending Class in the wine cellar where the unique art of mixing the finest grapes to create a balanced, quality, and distinctive wine will be demonstrated. “We wanted to do more than a tasting. There are two cooking classes: Food of Place Cooking Class: Heart of Dixie with “super creative” guest chef Chris Hastings from Birmingham, AL (2012 James Beard Best Chef of the South and Iron Chef winner) and Food of Place Cooking Class: The Mississippi Delta which will feature two famous guest chefs and what’s hot in the delta. “The purpose is for these chefs to do what they do locally with ingredients from their backyards. A staple of Music to Your Mouth has become their version of the popular boat cruise called SS Stink & Drink. When then noon gong chimes on Friday, the Grace will leave port sporting a full array of wines and cheeses. Don’t let the name fool you – this is one casual but classy affair and it sells out every year. For the stamina builders, there is an Audi Tailgate on Friday evening before the Potlicker Block Party on the Riverfront. There are Potlicker parties all over the country and the folks who put them on search for artisans and farmers that are masters of their trade and then they make documentaries about them. So this Potlicker will be an all southern cast with music, stories, films, bacon and bourbon. Old Rip Van Winkle

Distillery will be on hand as will Benton’s Country Hams. The night will wind down with smores, sweets, and punch by the fire pits. It’s up early on Saturday morning for the avid runners or those that want to work off last night’s indulgences with the Hair of the Dog 5K. Runners will wind their way through breathtaking nature trails and picturesque neighborhoods and just in case you were afraid of burning off too much alcohol, bloodies will await at the finish line. Courtney said that many sign up, but not everyone actually makes it. The signature event of Music to Your Mouth is Saturday’s Culinary Festival from 11 to 3 p.m. with a spotlight on fresh and local – locally caught, grown, and raised from our own waters, woods, and farms. Twenty Five chefs will be preparing samples of their specialties while twenty winemakers and distilleries will be pouring the refreshments. Live music will entertain as festival goers roam in search of tantalizing tastes. As Music to Your Mouth is so much more than food, Palmetto Bluff’s riverfront will be tented and teeming with cooking demonstrations, a local market, a game day tent for football score catch-up, and new this year will be a beer garden and a ‘What’s Shakin Bacon Forest’. Many artisans will set up shop at the Culinary Festival so you can take a treasure home with you. “A whole lot of Christmas presents get purchased every year from the market,” said Courtney. Bluffton’s own wood turner, Jim Renaur, will be on hand showing his specialty bowls, cutting boards, and wine bottle stoppers. Earthborn Pottery out of Alabama will bring their unique pottery

pieces and also here from Alabama will be award winning menswear designer Billy Reid. Fat and Juicy Bloody Mary Mix, a high test concoction that requires no additional spicing, will be available to taste and purchase. Four Corners Gallery of Bluffton will show works from artists in all mediums and Beaufort’s Great Food Co-Op will be selling their famous natural ciders and edibles that have been perfected over the course of four generations. The weekend’s beat goes on Saturday night at the Kiss the Pig Oyster Roast where guests can party with all the festival’s guest chefs and feast on everything that can be prepared from a pig. “Pig is big.” Set on the May River, this final festival dinner is put on by the Palmetto Bluff culinary team. To put the night to bed properly, the fire pits will be lit up for The Last Hurrah featuring coffee, libations, and desserts. The fire won’t go out until the last guest does. Finally, Sunday morning send-off will be the Biscuits and Blues Brunch. Whether you need a quick fix before getting on the road, or want to sip a mimosa or bloody by the river, brunch will start your day off well. Taste of the Season was created to celebrate the talents of our area’s top chefs and indulge the foodies of the Lowcountry. More than 35 area restaurants and chefs will showcase their skills and culinary creations this year on November 16, at the Hilton Head Marriott Resort and Spa in

Palmetto Dunes, from 6:00 until 9:00 p.m. Each year, winners of Taste of the Season are chosen by those who attend the event to sample some of the region’s best culinary offerings. Awards are presented to the restaurants serving the most popular dishes. Hundreds of ballots are submitted for both best cuisine and best decor. At last year’s event, Michael Anthony’s Cucina Italiana stood above the rest, winning Best Cuisine for their Classic Piemontese


Veal and Spinach Ravioli with Butter and Sage. “Taste of the Season showcases the Lowcountry’s culinary arts scene with award-winning cuisine from the area’s top chefs,” says Bill Miles, Chamber president and CEO. “It’s a spectacular way to sample the area’s incomparable cuisine and enjoy the very best of the best all in one venue!” This year marks the 23rd anniversary of the culinary showcase and it continues to get better and better. At Taste of the Season, the chefs are out to wow tasters with scintillating recipes fit for a holiday feast. The creator of the favorite dish takes bragging rights of Best Cuisine for the rest of the year. Last year’s event drew a sell out crowd who nibbled on braised short-ribs, scooped up scallops on Chorizotortilla hash and noshed sweet potato and shrimp gnocchi. “We want our local chefs to shine

at Taste of the Season as well as allow everyone to have a great time,” says Jennifer Freeman, chamber Event Manager. “Our event staff and a planning committee are coming up with a lot of exciting ideas. Just expect the unexpected and bring a big appetite!” “With more than 250 restaurants

in our area, visitors and residents find Taste of the Season a great way to try the best of the best,” says Miles, “although it’s still difficult to try every dish on the menu at the event!” While food is the focus, attendees are also able to browse great gifts offered in the silent auction

Each year, when the evening is complete, the Chamber and the participating restaurants donate over 300 pounds of food from the Taste of the Season event to Second Helpings to distribute throughout the Lowcountry. Traditionally, one of the island’s most popular events—and always a sellout—this year’s tasting promises to be the best yet. All food for the evening is included in the ticket price. Fall Festivals to Fill our Weekends BY RISA WILLIAMS McMILLAN

Maybe it’s our perfect fall climate or maybe it’s because the summer visitors have left and lightened our load. For whatever reason, the fall months seem to have become synonymous with festivals on and around Hilton Head. These events, many of which were started as fund raisers, have snowballed into family outings and perfect stages for cultural forays. One of our newer festivals but by no means smaller, is the Italian Heritage Festival on September 22nd at Shelter Cove Community Park. Event organizer, John Pagluica, keeps raising the bar to make this event a celebration of all things Italian from food and drink to sports, music, and travel. There will be grape stomping, golf chipping, a dunk tank, and a silent auction. Then there will be food - Italian food and lots of it. “The first thing people think about when it comes to Italian is food and we want to stay with that,” said John. Close to twenty local Italian 42

restaurants, including all that were in attendance last year and three new ones, are signed up to share samplings of some of their specialties. You can expect a wide array of choices like Meatball Sliders, Fresh Garlic Bread Bruschetta, Swordfish Spiedini, Sausage and Pepper Hoagies, Seafood Antipasta, Grilled Oysters with Parmesan Herb Butter, and Crab Cake with Parma Ham to name a few. Italian beverages will also abound including coffees, espressos, cappuccinos, sodas, beers like Moretti and Dolmiti, and Italian wines and Chiantis. A few new additions to this year’s line-up include a traveling accordion player out of North Carolina, a meatball making contest among participating chefs, and a pizza eating contest between local high schools by NY City Pizza. The 2012 festival will also rev up the cooking demonstrations so they occur about every 30 minutes. Festival goers will learn how to make pasta, homemade sausage, limoncello, Italian

desserts like tiramisu and biscotti, and cheeses like mozzarella. Kids will have plenty of park devoted to their entertainment complete with their own grape stomping venue, stickball, bocce, and bouncy houses. Aside from creating a forum to share the Italian culture, “The festival is all about charity,” explained John. Organizers split up 100% of the event proceeds between a number of local non-profits including Volunteers in Medicine and Deep Well. John expects to reach park capacity with over 4,000 attendees this year and encourages people to bring picnic blankets, chairs, and umbrellas so they can spread out, be comfortable, and make a day of it. The Kiwanis Club of Hilton Head stages this every year and it just keeps getting hotter and hotter.


Kiwanis is expecting participation from about 30 restaurants and amateurs, all competing for the bragging rights in the award competition. Beef and beans, sausage and sage, there are no rules as the pro’s sidle up next to the armchair quarterbacks and fill their pots with golden chili. Winners of last year’s cookoff were Smokehouse, One Hot Mama’s, Salty Dog, Redfish, Bombora’s, Wild Wing Café, and The Lodge. Musical entertainment at the Chili Cookoff will be provided by a local band and there will be free children’s games and even a water slide so parents can fully focus on the food and fun. Because you will be ready to do it all again the next weekend, the Hilton Head Burgers & Brew Festival will be held October 12th and 13th at Shelter Cove Community Park. Put on by The Island Rec Center, the Burger & Brews will replace the Cajun Festival that has been held in the past. Friday night’s festivities will be a toned down version of Saturday’s, but will still have live music, a kids’ zone, and plenty of burgers and beer. Saturday’s burgers will be served up by 8 to 12 local restaurants. According to Joe Cain, event aficonado, more than hamburgers will be in the offing. “There will be all slider portions of crab burgers, shrimp burgers, chicken burgers, any and all burgers,” said Joe. One quarter of the park will be fenced off for the brews which will be brought in by Pearlstine and will feature some 20 different domestic, foreign, and craft beers. As with all Rec Center festivals, the kids’ zone will be a happening spot and the dance floor will rock. The 8th Annual Bluffton Arts & Seafood Festival has blossomed into a week-long series of events that go from October 14th-21st. The festival starts with a Boat Parade up the May River on Sunday the 14th and the ensuing days are filled with oyster roasts, kayak tours, an author’s night, Farmer’s Market, 5K Oyster Run, Boat Tours, Children’s Fishing Tournament, and a Family Night complete with food, stories, movies, and activities. The main events of the festival are the The Art & Seafood Street Fests, held both the 20th and 21st when downtown Bluffton is transformed into a sea of people and strollers and pets. In a Blufftonian-like leisurely pace, people travel from tent to tent chatting with the over 90 local and regional artists, admiring and purchasing their loves of labor, and feasting on seafood and low country cuisine from a smattering of restaurants. This is vintage Bluffton. It is like an enormous block party that at the same time gives you a sense of this small town’s pride. While Bluffton is in itself eclectic and unique, so is the art festival which showcases a variety of mediums from woodcarving to photography to stained glass. Saturday night will include a firework display at dusk on the dock and both days will have live music and entertainment. The Hilton Head Motoring Festival & Councours d’Elegance, held October 26th – November 4th, has earned the distinction of being one of the nation’s most well regarded automobile shows and has been named one of the Southeast Tourism Society’s “Top 20 Events.” From Savannah to Hilton Head, this multiday festival features numerous events, the biggest being the Concours d’Elegance at the Coastal Discovery Museum at Honey Horn on the 4th. In its 11th year, the Concours will have an Americana theme this year and will feature the Ford Model T as its Honored Marque. While many love to feast on Lowcountry Boil when they come to Hilton Head, there is another attraction by the same name that has been picking their way into our hearts and homes for years. Although the band members have changed through time, their purpose of entertaining with their bluegrass Americana remains the same. Jevon Daly, fiddler extraordinaire, sat down with Taste to share his musical endeavors. Taste: Tell me about Lowcountry Boil. Jevon: We are a group of four who love what we do. My dad, Michael, plays the banjo and he has been playing on the Island since we moved here from Philadelphia in ’83. Gary Pratt is from Albany and he plays bass. Andy Pitts grew up in Savannah and he is guitar. We all pluck and sing and get along great… except occasionally my dad and I get into an argument on stage but the audience thinks that’s great fun.

Taste: So you are mostly northerners playing southern music? Jevon: That bluegrass is southern is a misnomer. It actually originated in the Appalachians and fiddlers came down from Pennsylvania and Ohio. When we first started, we played heavy metal and the Grateful Dead and then we learned blues and jazz. We are family entertainment now. Bluegrass is really a conglomeration of many genres. Taste: I’m assuming that the fiddle is not your only instrument? Jevon: I play viola, mandolin, guitar, bass, violin. When I was in 6th grade, I was recruited to play saxophone in the Hilton Head High School marching band. I started playing professionally at 25 and 15 years later I am still going strong. Taste: Is all of your work original? Jevon: We write a lot of our own and give the words a local twist. We have a

song called “Hilton Head” and one called “The Tiki Hut”. When we stuck to all bluegrass, people wouldn’t dance, so we added stuff like Hank Wiliams, Ricky Nelson, Neil Young and the Beatles. Taste: Tell me something different or funny about you. Jevon: Well, I’m also in another band called Silicone Sisters which is raunchy, old time sex, drugs, Jack Daniels, and rock ‘n roll. When people hear Lowcountry Boil and realize that we are the same people in Silicone they can’t believe it. The two bands are polar opposites. We love it all and have created a unique niche for both in the area. You can enjoy the quick pickin’ of Lowcountry Boil this fall on Thursday evenings at Hudson’s.

A TASTE OF ISLAND RECIPES PARMESAN CRUSTED WAHOO over cheesy grits topped with a jumbo lump crab bruschetta by Land’s End Tavern

PARMESAN CRUST 2 cups finely grated parmesan cheese 1 cup finely crushed ritz crackers salt and pepper to taste thoroughly mix crust and set aside CHEESY GRITS 2 cups of stone ground yellow grits 6 cups of chicken stock 2 cups of heavy cream 2 cups of shredded cheddar and monterey jack cheese blend Combine grits, stock, and cream in a large sauce pot. Bring to a boil then lower to a simmer and cook the grits for 30-40 minutes whisking every couple minutes so not to stick and burn on the bottom. When they are the right consistency whisk in the cheese and set aside. JUMBO LUMP CRAB BRUSCHETTA 4 cups of diced tomatoes 1 tablespoon of chopped garlic

1/2 cup of grated parmesan cheese 1/2 cup of chopped basil 1/4 cup of olive oil 1 pound of jumbo lump crabmeat Combine all the ingredients except the crab in a large bowl and mix. Then gently fold in the crab so not to break up the big lumps. Let mixture sit for 10-15 minutes in the fridge. PROCEDURE Place 4-8 ounce Wahoo filets in buttermilk for 10 minutes to marinate. Take each filet and dredge them in the parmesan crust to fully coat fish. Saute filets in a little olive oil 3-4 minutes on both sides until golden brown. To plate make a bed of the cheesy grits in the center of the serving dish. Place the Wahoo on top of the grits, then top with the bruschetta mixture. Garnish with more of the bruschetta around the plate, cracked black pepper and fresh basil tops.

METHOD FOR BLACKENED LOCAL MAHI MAHI Preheat oven to 350°. Lightly season with blackening season. Sauté in pan on both sides for about one minute. While fish is cooking, in a mixing bowl add mayonnaise, crab, spinach, and parmesan. Remove fish from pan and place spinach mixture on top. Cook in oven for about 8 minutes.

METHOD FOR SAUCE, TOMATO COULIS INGREDIENTS FOR BLACKENED LOCAL MAHI MAHI 4 Mahi Mahi Filets, 7 oz. each Hudson’s Blackening Seasoning (available at www.Hudsonsonthedocks.com) 2 oz. fresh Jumbo Lump Crabmeat 1 cup Spinach 2 tbsp. Mayonnaise 2 tbsp. Parmesan

Toss 3 vine ripe tomatoes in extra virgin olive oil and salt and pepper. Then roast tomatoes at 350° for 20 minutes. Roast 3 garlic cloves in extra virgin olive oil for about 15 minutes. Let cool and put into blender with tomatoes. Add 1/4 cup of chicken stock and 1/4 cup of cream. Blend until smooth. Put on bottom of the plate, and then add fish and crust. Oktoberfest isn't just for Germans anymore. The German celebration of beer and good times has gradually caught on everywhere. Next to the Christmas tree, Oktoberfest is the most popular German custom that has ever been exported to the rest of the world. It's not surprising that in the USA and Canada, with their high percentages of people of German heritage, there are hundreds of Oktoberfest celebrations. While Germany's Oktoberfest lasts just 17 days, America's tends to stretch from mid-September through the end of October, and it's either treated as an excuse to drink beer outdoors or as a 56

more traditional harvest festival that combines food and drink with things to do with the kids. People have flocked to Germany from all parts of the globe for more than two centuries to participate in the world's largest annual festival. In addition to the two-week celebration in Munich, the Bavarian capital where the tradition began, Oktoberfest is enjoyed in one form or another in cities and towns worldwide. The German Oktoberfest is a 17 day beer festival, usually beginning in late September and running through early October. It attracts millions of people from Germany and all over the world, all there to do two things - eat

and drink. Today’s Oktoberfest is all about the beer and the food. So how did this global party get started? Prince Ludwig of Bavaria, who was later crowned King Ludwig I, wanted his people to share in the celebration of his marriage to Princess Therese of Saxony-Hildburghausen on October 12, 1810. He organized a horse race and invited all the people of Munich to attend the celebration. The royal party drew about 40,000 guests - only a small fraction of the 7.5 million visitors Munich is expecting for this year’s Oktoberfest. German immigrants later carried the tradition with them to their new homes in other countries.


Many characteristics of the early Oktoberfest celebrations have been retained, if not expanded upon. Munich's annual celebration is still held on the original site. The tradition of beer and food stands, begun in 1818, continues today and is perhaps the most significantly developed aspect of Oktoberfest. The modern celebration has replaced the small tents with giant brewery-sponsored beer halls that can hold up to 5,000 people apiece. The party has also grown in length, to become a 17-day extravaganza, ending the first Sunday in October. The festival opens with a grand parade of the Oktoberfest "landlords" and breweries, and features traditional dancers and costumed performers, the Riflemen's Procession, music...and, most definitely, beer! German-Americans are the country's largest self-reported ancestral group. Thanks to those immigrants and their descendents, Oktoberfest is now celebrated all over the world - from Canada and the United States, to Mexico and Hong Kong. The largest Oktoberfest outside of Germany is in Canada, and Oktoberfest is spreading to new geographical locations. Correspondingly, there are hundreds of large and small Oktoberfest celebrations held annually throughout the U.S. the largest being in Cincinnati, Ohio. German immigrants were responsible for developing industries that are considered "native" to Cincinnati, such as meat packing, the machine industry, and building trades. With more than 80,000 bratwursts consumed each year, it is called the most authentic Oktoberfest this side of Munich, and has been named Zinzinnati. More than 500,000 people attend each year to do the chicken dance, and enjoy the festivities, which includes a "Running of the Wieners" race. The Tulsa, Oklahoma Oktoberfest is proud to claim that theirs was the origin of the first Oktoberfest Chicken Dance in the United States, and their theme for the 2012 festival is "Poultry in Motion." These celebrations became increasingly popular with the rise of microbreweries, and with the opening of authentic German brew houses. Local Oktoberfest celebrations can be found in American cities large and small, including Chicago, Denver, Boston, Las Vegas, New York, Savannah, Hilton Head, and Bluffton! For those who can’t make the trek to Munich for the Oktoberfest, or to Canada or Cincinnati, the good times, music, food, and drinking can also be found at many Oktoberfest celebrations right here in our area. Many of our local bars and restaurants in October offer a steady diet of hearty German food, maybe a little polka music and, of course, the malty Oktoberfest-style lagers. German Food Recipe Oktoberfest is as much about good food as it is about beer. Traditional German recipes take time. Try preparing this Oktoberfest favorite in your own kitchen.

Wiener Schnitzel

What is commonly called Wiener Schnitzel is made with veal. If made with pork, it's one of the quick pork chop recipes called Schweineschnitzel. It's made the same way and is an economical schnitzel to serve. Turn this German Schnitzel recipe into Jägerschnitzel (Hunter's Schnitzel) by serving the Wiener Schnitzel with the Jägerschnitzel sauce recipe below. Ingredients: • • • • • • • • • •

4 veal cutlets, pounded lightly 1 tbsp. lemon juice 1/2 tsp. salt 1/2 cup flour 3 tbsp. water 1 egg 1 cup bread crumbs 3 tbsp. butter 3 tbsp. peanut or vegetable oil 1 lemon, sliced Instructions:

Trim fat from meat and clip edges to stop edges from curling during cooking. Sprinkle cutlets with lemon juice and salt. Place 3 shallow bowls on counter. In first one, put flour. In second one, mix egg and water. In third one, put breadcrumbs. Coat schnitzel, first with flour, then egg, and then breadcrumbs. Heat butter and oil over medium heat in skillet. Fry cutlets until golden brown, about 3 minutes per side. Serve immediately, garnished with lemon slices.


What Are We Doing Here? An Open Disclaimer BY CRAIG HYSELL

At my gym, nutrition is a GIANT part of our athlete’s progress. When we define an “athlete” at CrossFit Hilton Head, we are actually referring to the entire diversity of our membership roster. We feel that not only were human beings genetically designed to be athletic (i.e. active), there is also a positive psychological transition that takes place when one is practicing at a sport (“the sport of fitness”) rather than just “working out”. While degrees of athleticism can be discriminatory, athleticism in and of itself is not. Unless we suffer from some extreme genetic pathology or extreme catastrophe, we all possess the ability to be athletic to some degree. And we all need to eat. The pursuit of activity (re: athleticism), just like nutrition, is an intrinsic need who’s degree is based on both biology and lifestyle choice. “Diets” and “work outs”, in the parlance of our times, are temporary. Lifestyle choices are not. It is our experience at CrossFit Hilton Head that lifestyle choices can often make the most, or worst, of biologic limitations. To argue what is “best” is pointless. Everybody’s “best” is different. Nutrition and fitness are a lot like politics and religion. Divisive. But it doesn’t have to be. To be “active” in its most general, scientific sense is beneficial biologically no matter what you are doing. To debate what are “intelligent nutritional decisions” is also beneficial. How do we distinguish between “best” and “intelligent” when it comes to diet? The results of eating calorically dense but

nutritionally sparse food , as well as the fact that a food is indeed calorically dense and nutritionally sparse, is a measurable, observable and repeatable process. It is based on numbers, not ideals or emotions. Remember the guy that ate McDonald’s at every meal for a month and made a documentary of it? Measurable, observable and, although not recommended, repeatable. Yes, this was an extreme case, but increments still add up. How many “increments” you are willing to choose is up to you and you have every right to choose whatever you want because this is the United States of America. But, education is paramount to at least having the ability to make intelligent decisions. Where you get your information is just as important, if not more so, than what the information is.

I am not a nutritionist and I don’t pretend to be. Please keep that in mind when reading. Over the coming issues I intend to talk about a great many things here. Usually combining nutrition and activity because I think the two are meant to co-exist. I intend to do my homework and offer you the most intelligent information I can on small topics from what I feel are reputable resources. The point of this column will NEVER be about what is best.
