HAACP Hint - Handling Fresh Produce For the most part, fresh fruits and vegetables are not as likely to carry pathogens as are some other foods. The risk from such microorganisms can be minimized or eliminated by simple preparation safeguards. • • • •

Start with a clean sanitized work space. Prepare vegetables away from raw meats, poultry and eggs, as well as from cooked and ready to eat foods, to prevent cross contamination. Wash fruits and vegetables thoroughly under running water to remove dirt or other contaminants just before cutting, combining with ingredients, or cooking. Failure to wash fruit before cutting it may result in contamination of the interior of the fruit. Pay closer attention to lettuce and spinach leaves as dirt can get into the inner leaves. Cut away bruised or damaged areas.

Cooked vegetables should be refrigerated as cut raw vegetables at 41 degrees or below. Or cooked vegetables should be held hot above 140 degrees and discarded after four hours. Never use sulfites on any products used raw. If a chemical wash is used it should meet requirements listed in the Code of Federal Regulations such as Ecolab Fruit and Vegetable Anti-Microbial Wash SUPC#5927173.

Produce Cooler Organization Chart Correct produce storage is extremely important as the temperature increases at your operation. Warm weather is a direct negative influence on the overall shelf life of fresh produce. It is understandable that space may be an issue at certain operations. It is important to note any resemblance of this format will greatly increase the shelf life of your produce order.

How it works….. Market Session One runs from Saturday 6 a.m. to Monday noon. Market Session Two runs from Tuesday 6 a.m. to Thursday noon. Remember, to ensure peak freshness, no produce is harvested until after the close of each market session. That means all orders placed during Market Session One (Sat-Mon) will arrive with your next regularly scheduled delivery on the following Thursday, Friday, or Saturday. Orders placed during Session Two (Tues-Thurs) will arrive with your next regularly scheduled delivery on the following Monday, Tuesday, or Wednesday. • If you would like your product to arrive on Thursday, Friday, or Saturday – you should order during Market Session One. • If you would like your product to arrive on Monday, Tuesday, or Wednesday – you should order during Session Two. Special Note to Customers with Monday Deliveries: Park Farms Chicken orders are slightly different for those that have Monday deliveries, you must order during Session One to get delivery the following Monday. Exotic varieties were utilized by those who knew that they were not an “eat at your own risk” item. Portabella mushrooms, which have become a part of menus around the country, were not consistent until 3 years ago. Shiitake mushrooms seemed to only exist in the Oriental cultures. Sysco mushrooms are produced using state of the art growing, handling and shipping methods to ensure the highest quality. Following are a few simple steps to maintain the quality of your mushrooms. • For optimum shelf life, mushrooms should arrive at between 34 and 38 degrees Fahrenheit. • Refrigerate mushrooms immediately. • Do not store mushrooms in non porous containers, leave in the shipping container until usage. • Do not store near pungent items, mushrooms can easily absorbs these flavors. • Do not stack heavy items on top of mushroom containers. • Do not wash before storage. Washing should be done just before preparation using a damp cloth, a soft brush or in volume preparation rinsing with cold water. Residual water can accelerate deterioration.

Prepare the roux by combining the melted butter and flour and cooking in a saucepan over medium heat for 5 to 10 minutes. Allow to cool. In a heavy bottom soup pot, heat olive oil over medium high heat until rippling. Add onions, green onion and leek and let cook untouched until caramelizing is noticed around the edges. Allow to cook an additional 10 minutes. Add garlic and sauté an additional 5 minutes. Add veal stock, raise heat to high and bring to a full boil. Add roux and return to a gentle boil, reduce heat and simmer for 10 minutes. Adjust seasoning with salt and pepper. Fill four oven safe soup crocks equally with soup. Float one piece of toasted bread and cheese over the bread. Place under broiler until cheese is melted and toasted. Serve!!

Quality Assurance Make a Difference in Today’s Market Food Safety • Sysco QA staff is the largest in the Food Service industry and consists of members that are highly trained food safety professionals, conversant in all aspect of HACCP and Food Safety. • Approved suppliers are required to participate in annual third party audits of their programs. Sysco Quality Assurance personally follows up on any deficiencies or issues that arise from the independent audit. • Sysco QA verifies that GAP’s (Good Agricultural Practices), GMP’s (Good Manufacturing Practices) and HACCP (Hazard Analysis Critical Control Points) as well as food defense programs are in place both in the fields and processing plants ensuring all programs are followed, documented and enforced. Parts of the audits include the detailed reviews of adjacent land use, irrigation water quality, soil amendment testing and sanitation practices at fields, plants and coolers. • Sysco Quality Assurance Environmental Program for produce specifies microbiological sampling and sanitation monitoring information for the Sysco/Fresh Point Brand suppliers in an effort to reduce risk as associated with food born illness. • Suppliers are required by Sysco QA to perform visual pre-operational sanitation inspection of plant processing equipment, such as tables, lugs, knives, trays, walls, floors, and refrigeration equipment, which must be completed prior to the start of each production day by trained quality assurance personnel. • Lettuce from field ditch, drain, and edges will not be packed into Sysco and Fresh Point brands. “No harvest” width is to be determined by on-sight Sysco QA inspector.

Product Traceability • Sysco/Fresh Point Branded finished product cases bear a code date for product traceability and recall action. • Sysco Quality Assurance has a formal Recall Program and, if necessary, a Crisis Call System, in place that can quickly communicate the information to all distribution facilities involved in the recall action. • Sysco/Fresh Point Brand suppliers are expected to routinely conduct traceability exercises, or mock recalls, to verify their ability to track product. • All fruits and vegetables grown and processed outside the United States must have the country of origin printed on the internal and external packaging in accordance to current regulations.

Product Quality • Prior to harvest, each lettuce field proposed for Sysco/Fresh Point field packed lettuce is inspected by a Sysco QA representative to ensure the product meets Sysco/Fresh Point Brand specifications. • Routine product revolutions are conducted by Sysco Quality Assurance Staff to confirm the Sysco/Fresh Point Brands meet the designated specification and customer expectations. Sysco QA verifies minimum weights, yields, quality, temperatures and product rotation of Branded products produced. • Product specifications include the maximum days allowed for the product to ship, which can be as little as two days from harvest. This ensures the freshest product is shipped. • All Sysco/Fresh Point Brand finished products must comply with Sysco QA’s predicated specifications.

Supplier Sourcing • Sysco QA performs on site inspection of fields, processing facilities and coolers prior to the manufacture of Sysco Natural branded products. • Sysco QA verifies supplier’s continued compliance by performing routine (announced and unannounced) visits of each approved supplier. During these visits, Sysco QA reviews, in-process food safety programs, and evaluates finished products. • Every supplier providing SYSCO/Fresh Point Brand fresh produce must demonstrate GAP-compliances by providing an agreed upon, signed letter of guarantee.
