elcome to the Winter issue of Essential Naples – a quarterly lifestyle publication in Southwest Florida for health-minded locals who desire credible information on wholistic health and well-being trends. We launched our first issue last summer, however, if this is the first time you’re picking us up, you’ll find our coverage is 100% local with expert content that interests both Naples residents and professional wholistic practitioners. Essential Naples focuses on four essential lifestyle pillars – Health, Relationships, Finance and Purpose. In each issue, you’ll find articles on wide-ranging topics from local experts in each of these areas who have dug up infinite nuggets of wisdom to share with all of us. Please connect with them as they make this complimentary magazine possible. I hope Essential Naples will become a regular must-read for you! My perspective for this letter is a little different than most publishers. My passion is to open your mind to new ideas, new belief systems and shift your perspective to a healthier and happier way of living. Have you been asking yourself, “Why am I here?”, “What is my purpose?” Do you long to jump out of bed each day excited to be alive because you are completely fulfilled in your work and personal life? The truth is that life is short and we can’t afford to waste another moment. Until we know our true purpose for being here, many of us wander aimlessly from one job to the next or one relationship to the next, always searching for something that will make us happy. The great spiritual masters teach that we will never find happiness by looking for it outside of ourselves. To be truly fulfilled or enlightened as they say, we must find peace within our own mind and body. To find peace you have to truly know yourself, what your soul wants, what your ego wants, as both play an important role in finding your purpose and living your dreams. Your soul will give you clues as to what your purpose is, while your ego will put you in action on obtaining your goals and desires. inety-five percent of diets fail. Most people that lose weight gain it back plus more. This fact is extremely discouraging, but I am here to tell you that it doesn’t have to be like this for you. Here are the top 3 mistakes I see with my weight-loss clients. If you want to experience true and lasting weight-loss success, avoid these 3 mistakes at all costs! Mistake #1: Going from 0 to 100 at the beginning of your weight-loss transformation. An example of this is when someone who hasn’t exercised in years sets a goal to work out for an hour a day seven days a week. This is a huge change in lifestyle and will likely bring up a lot of resistance. Instead, set a goal to exercise for 15 minutes a day, five days a week, and build up from there. When you implement incremental changes, you set yourself up to achieve long-term success. Mistake #2: Slacking when it comes to scheduling your week. If you want to start eating healthier, schedule time for grocery shopping and block off spots in your schedule for cooking. Don’t Be Misled by Standard Glucose Guidelines By Denise A. Pancyrz

D

iabetes patients are given numbers to manage their glucose levels. What do these numbers actually mean to you? On the surface, this chart makes sense and seems clear cut. There is more to interpreting your glucose levels than checking it against a basic chart which can be misleading. Let’s step through the process by reviewing a few examples and learn to read between the lines.

This blood sugar chart shows normal blood glucose levels berfore and after meals and recommended HbA1c levels for people with and without diabetes.

Meals have a direct correlation with glucose levels. Who appears to have consumed a better or more helpful breakfast? We don’t know if Jane, Bob or Mike is taking diabetes drugs or insulin, so there is always more to the story. For this example, we will keep it simple. Mike is doing a better job managing his breakfast. You may be thinking, “Denise, don’t be crazy! Jane must be managing the best, her fasting and post meal

A. Jane has a fasting glucose of 85 mg/dL, which is in normal range. Two hours after breakfast, her glucose increased to 135 mg/dL. Her post meal glucose is also within range, less than 140 mg/dL. B. Bob has a fasting glucose of 105 mg/dL. Two hours after breakfast, his glucose increased to 155 mg/dL. Both readings are slightly out of range. C.Mike has a fasting glucose of 137 mg/dL. Two hours after breakfast his glucose is 157 mg/dL. Both readings are outside of normal range.

readings are within normal range.” There are several facets you want to review when verifying if you are heading toward diabetes, managing, or reversing diabetes. Using a single form of information is never really enough to make the best decision. Jane and Bob have something in common. In both cases, after eating their meal their glucose increased by 50 points. Jane’s readings are in normal range, however, her glucose spike is a red flag that she may have a metabolic impairment possibly inching her towards diabetes. Bob most likely has had a metabolic impairment for quite some time. I would start looking at eating habits for both. Lifestyle changes can be very impactful. Mike had the lowest glucose spike. His glucose increased only 20 points from 137 to 157; compared to Jane and Bob who ate food that increased their glucose by 50 points. Because Mike’s fasting glucose is high, it is evident Mike has diabetes and has had a metabolic impairment for quite some time. However, it appears that he may already be working on his lifestyle changes which is very impactful for reversing the effects of diabetes. As you see, you can fall within the parameters of a chart, but it never tells the whole story. Don’t sell yourself short when it comes to your health. One chart, one test, one opinion may send you down a misleading path. Learning to properly interpret your results can make the difference between maintaining or reversing your diabetes. •

he term ‘holistic’ is best summed up as looking at the individual human or animal as a whole and not just treating the symptom of a disease. It includes examining the physical, emotional and energetic body. Using the word ‘holistic’ can be viewed as an umbrella term because it covers a wide range of practices, techniques and therapies.

Holistic Medicine for Your Pet

Many people practice holistic/natural therapies for themselves and are now implementing them for their furry friends. The American Holistic Veterinary Medical Association (AHVMA) was formed in 1982 by veterinarians who were interested in a holistic approach to veterinary medicine, elevating the veterinary profession through innovation, education, and advocacy of holistic medicine. One of the main objectives of the AHVMA is to do all things necessary to further the highest standards in care and treatment of animals and provide continuing education for Veterinarians. You can find Holistic Veterinarians on

their website: AHVMA.org. The Association holds an annual conference for Veterinarians once a year in the United States. This conference is the premier source of post-graduate holistic veterinary continuing education. Holistic medicine, by its very nature, is observing in a “(w)holistic” manner. It means taking in the whole picture of the patient – the diet, the environment, the relationship the pet has with its owner – and developing a healing protocol tailored to the patient’s needs. Every animal is made up of inter-dependent parts that work together. When one part is not functioning properly, the body is not able to function optimally. A holistic veterinarian is interested in nutrition, environment, emotions of the owners, stress levels, and other factors.

es, unfortunately, unlike Vegas, every cell in your body will find out about what you put in your mouth. Let’s talk microbiome. The oral cavity houses over 700 species of bacteria, or microbes, that play an important role in the biology of health and disease. These microbes are composed mostly of beneficial bacteria that, in health, are oxygen loving or aerobic. Any change in response to our environment; diet, weight, hormones and even state of mind will influence it. They provide the first line of defense and the host’s immune system controls this bacterial colonization. Our oral health is directly related to the types (and amount) of good and bad bacteria in our mouths. Generally speaking, most Americans today are well aware that these species found in our mouths travel through our blood stream, our breathing, and our digestion to the rest of our body. New research has correlated this and the fact that these pathogens have been linked to Alzhiemer’s, Autoimmune diseases, (arthritis and psoriasis), as well as several cancers. There is even new research linking gum disease and COVID-19. Hospitalized COVID-19 patients with underlying gum disease are more likely to suffer respiratory failure. In 2000, the U.S. Surgeon General called the mouth, “the mirror of health and disease in the body”. It’s not a closed system. This is why a well-trained Biological Dentist has a pretty


good general idea of a person’s health in just that first comprehensive examination. If there is an imbalance of the oral flora, you can be sure there is an imbalance in the gut which will lead to inflammation, illness, and disease. For instance, P.gingivalis is found in patients with gum disease (Periodontitis) and dysbiotic gut. Dental plaque is the material that sticks to your teeth. Plaque is a biofilm on the surfaces of our teeth and depending on the concentration ratio of “good” to “bad” bacteria, we are healthy and in equilibrium or not.

How Do I Know If I Have “Good” Vs “Bad” Bacteria?

Before the Industrial Revolution, our guts were better equipped to fight off inflammation, viruses and fungi. Unfortunately, our highly processed diets, refined sugars, and chemical and pharmaceuticals in our foods and water have immensely changed how our bodies fight inflammation. Antibiotic resistant SuperBugs are almost impossible to fight off even though bacterial resistance is a natural process. Statistics show that SuperBugs kill someone every 15 minutes and that’s just in the U.S. However, there is promising research with macrophages found in our guts that have the ability to “eat up“ these superbugs. The oral microbiome is essential to health as it can influence both oral and systemic diseases. In health, your teeth feel “squeaky clean” and your gums are pink. So, this plaque or biofilm in our mouths contains the blueprint to our health or lack of health. Plaque is easily removed when it is soft. ne of the common complaints among patients is finding an effective treatment for their knee pain. Standard medicine often only masks pain and symptoms with addictive drugs and corticosteroid injections and many times unnecessary surgery is recommended. The good news is there are ways to treat knee and joint pain without drugs and steroids.

Regenerative Medicine for Cartilage Wear or Tear

Due to injuries, mechanical issues, or overuse and aging; cartilage may be damaged or lost, resulting in pain. There are many alternatives to surgery, which are discussed here:

STEM CELL ALLOGRAFT

Allograft is a tissue donation and transplant from one person to another. Connective tissue from one source containing live mesenchymal stem cells may help with inflammation and regeneration of cells in a recipient. Umbilical cord stem cells from Warton’s jelly is considered a connective tissue. It cushions and protects the blood vessels within the umbilical cord from mother to baby. The cells come from the umbilical cord from a healthy birth. The umbilical tissue could either be discarded or preserved for medical benefits. The tissue contains no antigens so there is no rejection and no matching required for the recipient. In times of injury, the body recruits its own stem cells for repair and healing. As we age our own stem cells become less efficient. The addition of millions of young potent stem cells from the allograft helps the body heal like it did when it was younger and more capable. The allograft is administered with a simple injection and there is no downtime after the procedure. There is no known insurance coverage for live stem cell allograft procedures.

PLACENTAL AND AMNIOTIC FLUID ALLOGRAFT While Wharton’s jelly contains 7% by volume mesenchymal stem cells and 93% other growth factors, the placental allograft contains no live stem cells but 100% growth factors. While this application doesn’t work quite as well as the live cells combined with the growth factors, if it is done more than once similar results and outcomes can be obtained. PLATELET RICH PLASMA PRP

Platelets from your own blood draw are concentrated and injected into the site of needed repair. Your own platelets release growth factors in the area to assist in regenerative healing. Results and outcomes are typically fair to good. There are many different techniques for concentrating the platelets. Also, the younger and healthier the patient, the healthier the platelets will be and better outcomes can be expected. This procedure is not covered by insurance.

VISCOSUPPLEMENTATION USING HYALURONIC ACID MOLECULES

There are many hyaluronic acid products available that are commonly used to cushion and lubricate the joints. The natural f luid within the knee joint space is normally high in hyaluronic acid molecules. As we age the concentration of these molecules is less, therefore the addition of these products can help the joint move better and feel better for a period of time. Many patients with knee pain may have worn out only the inside or only the outside of the knee joint. This happens due to the muscle function and the actual alignment of the joint space. The lower bone or shinbone (tibia) may rotate inward or outward or straight back. The malalignment of the joint causes excessive stress and accelerates degeneration and damage unevenly through the joint. The detection and correction of this problem takes a high level of skill that is typically only perfected by a small number of chiropractors. The key is early detection before the malalignment becomes permanent.

There are 13 muscles which cross the knee joint. These muscles must work in unison to properly move the joint and balance the weight through the entire joint. Some muscles may become too tight or weak over time. The imbalance of tightness or weakness accelerates wear and tear on the joint. There are very few practitioners which are skilled in diagnosing and lengthening the tight muscles and strengthening the weak muscles. To complicate matters further, there are 12 muscles that cross the ankle and 16 muscles that move the hip. onsidering the pervasive use of preservatives and the increase in modified foods in our diet, is it any wonder why we have more digestive problems than any other generation on Earth? Our high sugar and carbohydrate intake feeds the fungus and molds (like Candida) that we don’t want in our gut. The preservatives in food that are designed to kill bacteria in the bread, cereal, canned and dried foods are killing the good bacteria that we do want in our gut. We all know that antibiotic use disturbs the bacterial balance in a terrible way.

Get Rid of the Weeds

If you have tried probiotics then you know that they can have a positive effect. However, if your front yard was a huge crab-grass/weed patch, would you sprinkle thousands of dollars of high-quality seed on it expecting a beautiful lawn to emerge? Of course not. You would first get rid of the weeds. Consider this three-pronged approach to the gut rehabilitation process. The first step is to get rid of the weeds. Kill off as many of the bad bacteria and irritating fungus as possible. The second step is to re-seed the gut with good bacteria which will aid in digestion and keep out the fungus. Thirdly, we need to repair the damage that has been done to the epithelial lining of the intestines by the fungus and bad bacteria. This can be done holistically and naturally. In order to accomplish the first step, we need a broad-spectrum antimicrobial that is

bio-compatible yet kills bacteria and fungus significantly. An enhanced aqueous silver colloid of better than 40 ppm will accomplish this nicely. It is best taken on an empty stomach and in bolus dosing of 2 ounces every 2 hours. This can be continued for two or three days with one bottle per day being consumed. It should be remembered that mixing a colloid of silver with anything containing salt will ruin it and food tends to make it less effective. Taking the colloid on an empty stomach and not eating for an hour afterwards maximizes the effect. After two or three days of this protocol, you will have attenuated the bacteria and fungus in your gut significantly. Another side benefit of this is that the level of H. pylori in your stomach will also be dramatically reduced.

Re-Seed with Good Bacteria

Now, it’s time to re-seed with the probiotic of your choice. This will re-establish the fauna of bacteria necessary to support proper digestion and nutrient extraction from your food. The probiotic ingestion should be continued for at least a month. It is not that important to have the most expensive probiotics available. The most important task is to make sure that they have a good environment in which to multiply and thrive. You gave them an environment where they’re not fighting to survive by clearing out all the bad bacteria and fungus in the first step.

The third step is to repair the epithelial lining. Antibiotics, preservatives and sugar have allowed a fauna of pathogens that have been eating away at your intestinal lining, 24/7 for years. This tissue needs to be healed. Endocannabinoids from cannabis work in conjunction with the endocannabinoid system of the body. Scientists are still studying this complex cell-signaling system but we know that endocannabinoids (like CBD) bind to our receptors to signal that this system needs to take action. Endocannabinoids are known to relieve pain, reduce inflammation, aid in appetite and digestion, balance hormones, improve metabolism, reduce chronic pain, and improve mood, learning and memory, motor control, sleep, cardiovascular function, muscle formation, bone growth, liver function, reproductive function/fertility, stress, nerve function and skin conditions. In natural medicine, we often refer to the process of homeostasis. That is, the body’s ability to bring itself back into balance after an illness, injury or even a deficiency. Scientists now believe that the endocannabinoid system’s main role may be to maintain this equilibrium or homeostasis. Cannabis plants contain over a hundred different cannabinoids. THC (tetrahydrocannabinol) is the psychoactive cannabinoid that produces a “high” sensation. THC can provide many benefits but it can also cause paranoia and anxiety in some people. CBD cannabinoids do not produce the “high” sensation and can be extracted from cannabis or hemp plants. Two different com-

pounds of the same plant, producing two different effects. CBD is anti-inflammatory, anti-seizure and can combat anxiety and nausea.

Terpenes Have Medicinal Benefit

Terpenes are another component of cannabis which are known to have medicinal benefit. They are organic compounds produced by plants including cannabis. Scientists have discovered that terpenes can actually enhance the benefits of CBD. This is known as the “entourage effect” and is why using a broad-spectrum CBD oil with multiple cannabinoids and terpenes intact creates a more effective result. Terpenes are organic compounds produced by plants and some insects. They are largely responsible for how plants smell; think lavender, rosemary, pine and even orange peel. In fact, terpenes are used to make essential oils. Most terpenes are bioactive meaning they have an effect on the body. For instance, chamomile tea, is a relaxant and even help people sleep; it is the naturally occurring terpenes that are responsible for its sedative effect. Terpenes play a vital role for plants. They often attract pollinators and sometimes repel predators. ith 20 years of experience and a wide variety of certifications in different modalities such as myofascial release, cranial sacral therapy, lymphatic drainage and others, I’ve treated over 30,000 people in the last 20 years. I originally became interested in massage therapy due to a car accident that happened to me about 22 years ago. I hurt my neck badly and it was recommended to me to fuse a couple of vertebrae which I decided against doing. I made the rounds trying different therapies; physical therapy, chiropractic care, and acupuncture, with no relief. Luckily, I found a massage therapist who did a treatment called myofascial release. After 8 treatments, she completely relieved my problem with my neck. I was so impressed by what happened that I decided to become a massage therapist. I went to massage school at night while still working at my construction job during the day. In 1999, after about a year of going to school, I got my license as a massage therapist. I spoke to the owner of Absolute Health Therapeutic Massage, informing her that I wanted to buy the business. Candace, the therapist who treated me, and a couple of other therapists worked there. She sold the business to me and I expanded it to include 18 therapists and 14 treatment rooms. After 10 years in the business, I decided to specialize in myofascial release. In 2008, I opened the only myofascial clinic in SW Florida, Therapy on The Gulf, where I practice today. I had a couple of therapists join me who also had lots of experience in this type of therapy. I’ve expanded over the years offering different types of modalities that have to do more with medical conditions such as surgeries, joint replacements, and cosmetic surgeries. I found people were in a lot of pain and had many injuries especially due to sports. Performing myofascial release therapy on these individuals increased their range of motion, their flexibility and their ability to get back to a normal life much quicker. While traveling the world for about 25 years as an international roofing contractor in foreign countries like China, Africa, the Middle East and

Europe, I routinely had massages and bodywork done, finding it relieved most of the aches and pains that I had related to my work. I kept that information in the back of my head not knowing exactly what I would do with it. Since I’ve been a therapist now for 20 years, all those experiences have definitely made my life a lot more interesting and my health is better now than it was 20 years ago. Though I’m older, I’m in better condition than ever thanks to the many therapists who helped me with a better diet, more hydration (I never drank water at all) and certainly by having therapy/bodywork on a regular basis. I still have a therapy session once a week and recommend this to people to keep themselves in a healthy, balanced lifestyle. The Chinese have a saying that “dis-ease” of the body causes disease. I think the best prevention for most disease is to keep the body in a balanced situation. y mother used to say to me things like, “play it safe”, “a bird in the hand is worth two in the bush”, and a million other statements that she would come up with to protect me. questions. It boils down to what does it mean to be a ‘chef’. It is a vast myriad of abilities and responsibilities to be sure and it certainly is not the “sex, drugs, and rock & roll”. For me, I find it incredibly humbling and exciting that as chefs we have the ability to educate, to connect communities, to affect perceptions and choices, and to actually initiate real significant change. It is more than an ability, it is an imperative responsibility. If we as chefs are neglecting this, we are not only NOT doing our jobs, but we are doing a disservice to society. This brings me to my current journey. 2020 was certainly a year that blessed us with hardships that afforded us the opportunity to rise to the occasion with openness, positivity and innovation. In such, I was able to start the Sunday Supper Club, using my educational background in cultural ecology to connect the often times behind the scene farmers and family owned food producers of SWFL to the broader community in a very personal way. While on this journey, I have met so many interesting, passionate, brilliant and innovative people, many of whom started out in other careers, but through their love of their craft they became selftaught amateurs who reinvented themselves into new professions. Let’s meet a few of them!

ex, drugs, and rock & roll” excitedly exclaims the general manager of an infamous 5-star South Beach, Miami party hotel abundant with A list celebs and bikini models. Enthusiastically he implores, “…this conference needs to showcase that we CAN be and ARE great at so much more than that…” One year prior, I was a guest at the very same hotel for “trufflepalooza”; a fully decadent tasting dinner co-hosted by Andrew Carmellini, a James Beard Award winning Miami/NYC chef, and a very close friend of mine who owned the truffle company cosponsoring the event. After a phenomenal meal brought to completion by an ever so balanced umami laced black truffle parmesan ice cream and a cappuccino graced with freshly grated white alba truffles, we retired to my friend’s loft in downtown Brickell. Have you ever seen $30K of fresh truffles in a glance? I did that night. In a not so large refrigerator lay very carefully packed containers of “product” adjacent to the “clean room” used for repackaging individual orders of these very delicate and costly fungi. This was a very different and interesting experience to say the least. Fast forward to the day this farm boy from parts unknown of Hawaii was having a surreal moment filled with excitement, wonder, humility and anxiety. I had just started as the resort’s executive sous chef, overseeing 6 different food outlets and banquets at a hotel which consistently rated as one of the top 5 hotels in a city that is among the top tourist destinations in the world. Little did I know that wacky truffled evening, I would soon be back here helping to run the place. Preparing and conceptualizing for the aforementioned conference (a national summit of event directors) we were instructed by a VP of the hotel group to be innovative…to exceed expectations! For me to do this, I needed to first ask some questions. What are the expectations placed on chefs? What is in the core/the roots of what we are doing? It all has to start somewhere. Who are we? What’s in our “genes”? What’s guiding us? What fuels our passion? What’s going to make us better than great? To answer these questions, we need to first ask about the freshness, quality, ethics, ecology and sustainability from where our food comes. How does the ever-changing perception of food affect our choices? How do our choices affect the perceptions of the communities which we serve, our health and local/global ecosystems? How do we make better choices for a better future? Over the years that I have evolved in, out and back in to being a chef I do often ask myself these

Russell is a truly “fun guy” whose entrance to the mesmerizing world of mycology began as a hobby. While in his “day job” he makes custom cabinetry, over the last year he has been setting up a pretty impressive small scale mushroom farm. Fungi, being decomposers, presented themselves as an ideal carbon neutral food to farm. They require very little energy to grow/harvest and sawdust from his wood working (typically a refuse) became a perfect repurposed resource as a growing medium for many of his mycelium (the “root mat” so to speak that produces the fruiting body which we know as a mushroom). Using a storage tote, some fans, and vent materials to create a scaled-up humidifier for one of his grow climates, Russell is still very concise in all the details. He uses a clean room to clone his various fungi strains in custom

made agar discs to study the different varieties under a microscope and learn how different temperatures and humidity levels can speed up or slow down fungal growth. He opts for a slower fruiting, but better eating mushroom. Currently, Russell is growing 3 varietals of oyster mushrooms (one of which he’s named “Suwannee” after the North Florida swamp where he and fellow “fun guy” Parker foraged the original, an indigenous species), shiitakes, reishi, and lion’s mane. All of which are incredible quality, super tasty and amazingly nutritious. Amongst the multitude of fascinating health properties, there are studies that show lion’s mane can help with regrowth of the human nervous system. Russell plans to add shimeji (beech), pioppino and cordyceps (medicinal use) over the coming months. He estimates that production will be upwards of 200+ pounds per week by January. As a culinarian, I can attest that these are certainly the most unique, freshest, highest quality, and tastiest fungi to be found in SWFL. Closing the “green loop”, Russell is also a rancher of earth worms (vermiculture) feeding them with used grow blocks (saw dust/mycellium) creating vermicastings (available to purchase by the pound); the best organic fertilizer for your veggie garden.

Luis Orbegoso & Sherry Spargo of Chakra Microgreens/Kombucha

The etymology on the name chakra is not what you might think at first take. In fact, it stems from Orbegoso’s (a former M.D. from Lima, Peru) background. The enunciation of the word ‘chakra’ is from the indigenous Quecha peoples of the high elevation Andean communities (the descendants of those who built Macchu Picchu). It refers to “mama paccha” (the mother, the earth) providing a gift from the soil. All of their microgreens are grown using a very high quality specific organic soil mix and are additionally provided nutrients and hydration through a small scale aquaponic system (the use of a living aquatic ecosystem with a species such as tilapia that create all the nutrients needed by the plant as a by product). Every consideration is taken into effect including but not limited to: the origin

of the seeds, the type of light used, the temperature and humidity of the growing space, the air quality, and how each different variety of microgreen has specific individual needs. Classical music fills the air waves (for plants and people) as his wife Sherry (former nurse and interior designer) and son freshly cut/package these living superfoods. The end result being very happy plants that are super high in nutritional density with low amounts of lectins and tender cellulose walls, making them easier for your body to absorb the nutrients as you snack on these crisp, bright and delicious baby plants. Their kombucha is equally as detail specific and amazing. Organic teas, seasonal fruits and local honey are used in the fermentation process inoculated with a “top secret” s.c.o.b.y. (symbiotic culture of bacteria and yeast). Orbegoso’s medical science expertise has aided him in customizing a balance of the acids produced via fermentation and FLAVOR! Of the top 3 beneficial “organic acids”, acetic acid and gluconic acid are highly probiotic, while some studies show the third (glucuronic acid) can help increase the production of endorphins/sex hormones. The kombucha can be used in recipes to make salad dressings, in fact they bottle a private label mustard kombucha dressing. As a chef, I can honestly say in my humble opinion this is the best tasting locally made kombucha available in SWFL. Oh, did I mention that approximately 80% of their energy requirements for the microgreens and kombucha are provided via a solar grid engineered by Orbegoso and all the “spent” growing medium is turned into compost? No waste. Efficient. Highly sustainable. Having the opportunity to grow relationships with these farmers has been a blessing for me. Initially my path set out to talk about how traditional farmers practicing “regenerative agriculture” meant fostering healthy soil (dirt), which in turn meant a healthier planet and a healthier you. I was inspired by a couple of great documentaries: “Kiss the ground” (available on Netflix) and “Fantastic Fungi” (available on Amazon video & AppleTV). Facts and statistics about how we could (in theory) over the next 3 to 5 decades sequester all the carbon emissions our species has produced in the last 150 years and reverse climate change was astounding and inspiring. Talking DIRTy is certainly a conversation everyone should be having. I’ve now seen that the path to this regeneration of our ecology, personal and social health as a species, and doing it in a sustainable way, comes in many and often times unexpected forms. •

Roasted Lion’s Mane Fungi and Fermented Garlic Honey Yummm Sauce (serves 4 - 6)

Recipe: Local lion’s mane, equally delicious and medicinal, is our choice for this recipe. It’s kept simple to let the mushroom’s natural flavor and texture shine - grilled and accented with a sauce made of fermented garlic honey, which besides being a flavor bomb, is also a magical concoction loaded with natural anti-bacterial, anti-viral and immune boosting properties. This dish hits the flavor notes of spicy, sweet and umami. It’s the perfect dish to help you stay healthy this winter.

Ingredients:

Mushrooms & Garnish • 3 to 4 large Lion’s Mane Mushrooms (Shiitake or Oyster Mushrooms) • 1 small bunch green herbs to garnish (scallions, thai basil, coriander leaves) • 2 - 3 oz. shaved radish (daikon or really any fresh radish)

To Make Fermented Garlic Honey: • For the fermented garlic honey:

• Mix all ingredients together in a large sterilized glass mason jar. Spices are optional for extra dimension of flavor. • Seal the container. • The mixture will initially be very thick. • Store in an area between 75-85 (f) degrees. • 1-2 days - garlic will start to purge liquid and the mixture will begin to get a little looser. • 3-4 days - the mixture will begin to become even more liquid, gently swirl the mixture to stir. Don’t open yet. • 5-10 days - the mixture will become much thinner, bubbles will begin to emerge, you may burp the

• From this point on, the mixture is ready for use. It may be consumed as is, or turned into another sauce or marinade.

• Once you start using, this mixture can perpetually “live” in its container and always be ready for use (I’ve had batches for over 2 years). You simply need to continue to feed it. Leave some of the original batch and “feed” it with a little more fresh garlic and raw honey.

To Make Garlic Honey Yummm Sauce: • Reserve half or more of your fermented garlic honey for future use.

• Mix 6 oz. of strained fermented garlic honey with the ginger, tamari, sesame oil, mirin, and gochujang. • Whisk together until smooth.

• I like to pop in 4-5 pieces of the fermented garlic into the final sauce, as it continues to ferment and add some extra “funk” to your finished sauce.

Cook the Fungi • Tear the lion’s mane into 2 to 4 large chunks.

• Brush lightly with the sauce - allow to soak in for at least 30 minutes. • In the meanwhile, preheat a cast iron grill to medium-high heat.

• Place the chunks of mushrooms on the hot grill pan - do not move them. • Allow to char for 3-4 minutes, baste lightly with sauce (caution, this may cause some smoke if indoors). • Flip, char for another 3-4 minutes - do not move them again. • Remove from grill pan.

• Garnish with the scallions, radishes, and other picked fresh green herbs.

Add to make Yummm Sauce • 2 oz. fresh ginger root (finely minced or micro planed) • 4 oz. tamari (or shoyu) • 2 oz. mirin (sweet rice wine) • 2 tbsp. roasted sesame oil • 2 oz. gochujang (fermented chili paste homemade or store bought is ok)

Wednesday Happy Hours, Yoga on the beach, private guided meditation sessions, and self-care wellness podcasts that were recorded right at the hotel. This wellness program was created in tandem with local experts and intended to help travelers feel their best while away from home. The Edgewater offers two heated swimming pools, a state-of-the-art Fitness Center, private and group personal training, in-suite massage, Holistic Nutrition, bike rentals, paddleboard and kayak rentals, and can also arrange water sport rentals, fishing charters, and other fun activities. We rented bikes and rode about two hours through the beautiful Moorings and Park Shore neighborhoods past awe-inspiring Banyan trees whose limbs arched overhead across the road. Even better, though, was relaxing on our cabana bed watching the gentle waves of the Gulf roll onto shore and taking in the dazzling sunsets from our private balcony. Everywhere you looked from this resort was a breathtaking view. There are only a handful of places that I can remember staying where the views were so spectacular, I didn’t want to leave the room. This was one of them. The balcony stretched from the entire length of our bedroom to our living room. Imagine opening your eyes each morning to seeing miles of sea and sand stretched out before you. Just incredible. Just to give you an idea of the size of the balcony – it included two Adirondack rocking chairs, a small breakfast table with two chairs and two chaise lounges! The suite also features a spacious living room and modern kitchen with a full-size refrigerator, microwave and granite counter breakfast bar. And maybe the best part of the Edgewater was sitting around the fire pit at night having lively discussions with the other guests. For me, that’s priceless and rarely experienced in most hotels or resorts where I’ve stayed.

But let’s get to the food! Every Wednesday from 4:30-6:30pm, Coast Restaurant features the Wellness Wednesday Happy Hour with healthy offerings of lite bites and boozy beverages by the beach. You are treated to interactive activities held by guest speakers and local wellness experts from the Naples area. Coast makes healthy dining choices easy by offering breakfast, lunch, and dinner options that are inspired by the diets of the world’s Blue Zones. Here is just a sample of the menu:

We also enjoyed the Red Berry Salad with baby spinach, goat feta cheese, candied walnuts, red onion, strawberry, balsamic vinaigrette. For entrees, don’t miss the Grilled Grouper (a must in Florida) with jasmine rice, asparagus, mango chutney, and the Seared Salmon with orange-ginger glaze, sautéed bell peppers, and basmati rice. Everything was delicious! One of the most unique things I’ve seen that they’re offering is the Suite Space with Remote Learning and Working. have been a dietitian for 20 years and when I tell people that, it never surprises me that they think my job is to tell people how to lose weight and design meal plans. Sure, the majority of people that come to see me have some weight concerns and need a guide on how to eat. However, the way I look at weight loss is it happens as a side effect of making healthier food choices, reducing inflammation, and correcting imbalances. Weight loss should not be the only goal. The goal is to optimize health for a more resilient body and to feel your best.

Your Issue is in Your Tissue

A prescription for nutrition goes beyond fork to mouth and you have to understand the underlying issue and root cause before you design a treatment plan. My favorite saying is “your issue is in your tissue” and in order to heal the body you need to evaluate the whole body to find the

underlying cause for the dis-ease. Before I even meet with an individual I have them fill out a 13-page questionnaire. I ask unique questions to understand which avenue to explore in the body. I am hunting for oxidative stress, compromised detox pathways, heavy metal burdens, dysbiosis and leaky gut, parasites, nutritional deficiencies, stress, hormone imbalances, and metabolic issues. I even take a look at your fingernails because the outside body is a result of an imbalance inside. It is not only about food, it is about mood, sleep, energy, vitality, mental health, metabolism, hydration, exercise, and toxic burdens to name a few.

What Do the Symptoms Really Mean?

Do you have ringing in your ears or grind your teeth? Yes? Then we start with parasites. Do you have food intolerances? Yes? Then I start exploring dysbiosis. Are you hungry all the time and feel blood sugar drop between meals and

n the 2019 Sundance awarding-winning movie The Farewell by director Lulu Wang, there is a powerful scene where the uncle expresses a common Chinese philosophy about cancer: “People don’t die of cancer — they die of the fear.” This dialogue occurs between the granddaughter of the diagnosed grandmother and her uncle. The family has chosen NOT to tell the aging grandmother that she has Stage 4 Lung cancer; that it is the family’s responsibility to “carry her” through her journey without telling her the extent of the dis-ease. That statement in the movie is a powerful truth that is expressed in the Asian culture. Being afraid is common when you first discover you have cancer. There are ways that you can gently manage your emotions so that they become your allies, not your enemies on your healing journey. (PS – This movie is a “must watch”! Spoiler alert – it has a happy ending which supports how powerful your mindset can be.)

The result, which has been documented by a handful of studies so far, is poor treatment results when using chemotherapy and poor prognosis in general. In some cancers, the overabundance of adrenaline can even lead to an increased expression of certain oncogenes and mechanisms that insure cancer cell survival.

There is a strong and growing list of evidence-based research studies to support the fact that our emotions affect our ability to heal. In fact, there is a connection between doctor-instigated fear brought on by a cancer diagnosis resulting in both suicide and heart attacks. A 2012 Swedish study cites, “Cancer patients were 5.6 times more likely to die from heart-related causes, such as heart attack, in the days after receiving a positive cancer diagnosis, not from the cancer but from the heartbreak and devastation wrought by the news.” This connection was seen especially within the first 12 weeks after diagnosis. It was also most prevalent in those individuals that had received a “terminal” diagnosis.

When I first began my second healing journey with Breast Cancer, I often woke up in the middle of the night in a cold sweat reacting to the subconscious fear, as well as the shock and “disappointment” in my myself. Eventually, as I dove into the work of healing, the fear turned to gratitude, hope, and a firm conviction that I was doing all that I could to turn things around. This is what I wish for you, but you must take it one step at a time. The power of this path lies in the little actions you take every day. Here are six such steps you can start today:

H

ow does one thrive in life, business and relationships? I want to share with you my personal experience of how I was able to thrive in life. This is about a decision I had to make many years ago. Now when I look back on my life I can see how huge and impactful this decision was on my life from that point forward. Before I share what the decision was and what I chose, let me give you a little background information. I grew up in Ireland the eldest of 9 children. I was what is now known as a child who is very sensitive, but back in Ireland in those days I was told not to be so shy. I had periods of depression which went undiagnosed and became more frequent and more severe. I was hospitalized in my early 20’s, suffering from severe depression and anxiety. I was either crying non-stop or having major panic attacks. I did not even know that depression and anxiety were something you could go to the doctor for, I just thought I was going crazy. I was diagnosed with reactionary depression which meant that I was reacting to a number of major traumatic events in my life which had occurred over the previous year. I was given a number of medications and over the period of about 3 months I started to feel better (for the first time in many years). I was sent home highly medicated and told to get on with my life. My doctor also told me that I would never be able to have a stressful job and to give up any thoughts of pursuing teaching. A few years passed and with each new stressor new medications were added to my regime. I got engaged and moved to London to be with my

fiancé. When I went to fill my prescription for all my medications, I was told that a lot of them were blacklisted in the UK and certainly should not be used in the combinations that I had been prescribed. Needless to say, the move caused a major relapse which resulted in my being admitted to a psychiatric hospital in London, where my meds were assessed and immediately changed. I was given a new diagnosis of Major Depressive Disorder with Anxiety. This time however I started therapy. My therapist, Jenny, was using a technique called Transactional analysis. I started feeling and connecting what had caused me to get to this place. This was not my first time living away from Ireland. Two years previously I had moved to London with a friend. Everything seemed fine and to be going well but inside I was not doing well. My depression and anxiety were becoming unbearable and I felt I had nowhere to turn. I ended up going back to Ireland to my family home and feeling a complete failure. This second time in London was beginning to feel very familiar and I knew I could always go back home. I had been there less than a month with the new meds and having regular therapy. My body was so anxious that it would constantly be jerking and I was afraid to go anywhere or do anything. One Tuesday morning I had just started my regular therapy session when Jenny said to me, “Your session is ending now and you have until 1pm today to decide whether you are going to stay in London or go back to Ireland. If you choose to stay it will be really, really hard but worth it.”

My mind was a whirl! I knew that if I went back to Ireland that I would never leave, that I would be stuck with my parents and never live my own life as an independent adult. I also knew that if I chose to stay in London that in order to heal I had to face a lot of very painful emotions. I was afraid that there was no guarantee that I would ever feel well and was taking a huge risk in staying. I was also realizing that I really did not know myself and I was in London with the man I was planning on marrying. What if that didn’t work out either? I’m sure you can imagine the turmoil. It was nearly impossible for me at that time to live a so called normal life. I was afraid to do everything, I was constantly in despair and having panic attacks. At 1pm, I met Jenny in the therapy room and told her that I had decided to stay. It was the best decision I ever made. Looking back now a few decades later, I can see the enormity of that decision. This was not just a fork in the road, it was the most important decision I ever made. It was pivotal and life changing. If I had gone back to Ireland I can see now that I would never have gotten well. I’m not denying that it was hard, it was very hard. I was in the hospital for 6 months, but I got off all my medication and continued with therapy. In the transition period between leaving the hospital for good and living life independently, I worked part time and began to get my confidence back. I went back to school and completed a Post Graduate qualification in Education. I got a job as a High School Science Teacher. This was a huge step for me and vindicated how far I had come. It felt as if I had finally finished what I had started many years ago. I’m not saying that life was easy and that I didn’t stumble and have set backs along the way. What I am saying is I never ended up back in a psychiatric hospital. I have continued to work on myself since then, moving from traditional therapy to alternative healing modalities and energy healing. I became a practitioner and have been supporting others now to move forward in their life with love and joy. Oh, and I did marry the guy! •

re you still shaking your head and brushing the dust off your shoulders asking, “Wasn’t that interesting?” as you recall 2020? With 2020 came the destruction of beliefs and value systems, the hoarding of toilet paper, and a quarantine to keep us safe. Now we arise out of the dust re-engaged. The slowing of the machines of our lives forced an inward look at our priorities. A glimpse into the year ahead indicates innovation and plenty of opportunity to use our intuition. The planets have a plan for everyone. The gigantic gas filled balls overhead hold archetypal energies which we unconsciously pick up and integrate. Think back to 2020 when Saturn was in Aquarius for a while. Saturn rules boundaries and limitations, Aquarius rules groups of people. Quarantine, anyone? In December 2020, Saturn and Jupiter moved into the sign of Aquarius for a

lengthy stay. The Age of Aquarius seems firmly upon us. Though astrologers surely disagree when this official age begins, there is no disagreeing about key aspects of the year ahead.

as tax season become a frustrating paper chase? These tactics can buy you some relief. As is the case almost every year, tax day is apt to sneak up in a hurry. Whether you use tax preparation software or outsource your tax prep to a CPA, here are some key strategies to ensure a smooth and worry-free tax season.

STRATEGY 1: Use a tax checklist or organizer.

Using some type of a tax checklist or organizer can help you avoid that paper chase and assemble all of the key documents you need in advance, completing your return is then a matter of filling in data. Tax checklists abound online. If you outsource your tax preparation to an accountant, it is a good bet he or she sends you a tax organizer to work from, either paper or digital; such forms often come prepopulated with your tax data from the previous year. Comparing the current tax year’s numbers to those of the year prior can be a handy way to track trends in your income, inter-

est earned on your investments, and charitable giving, among other items.

STRATEGY 2: Determine if you will be itemizing or taking the standard deduction.

A key next step in gearing up is to determine whether you will be itemizing your deductions or taking the standard deduction. If you employ a tax advisor to help with your tax return, he or she may have provided some guidance on this issue based on your previous return. If you do your taxes on your own, you can probably get a pretty clear view of whether you will itemize or use the standard deduction by taking stock of the major deductible items. What are the options and where to begin? The best place to start is to recognize that stress factors and their effects are not always obvious. We need to be aware that they exist if we are to develop a strategy aimed at reharmonizing and rebalancing our mental, physical, spiritual and emotional health. The next goal is to find a way to slow down the “merry go round”. Jumping off at full speed can leave us banged up, bruised and a bit dizzy, but if we can slow it down first, we can recalibrate and regain our footing before stepping off completely. This can be done by finding practitioners who offer stress reducing techniques that encourage parasympathetic nervous system (the relaxation aspect of your nervous system) activation to draw a line in the sand with the stress that begins to allow your body to slow down and reharmonize. This stress motion can cause all the systems in the body to become imbalanced and it takes a minute to allow for the shift back into harmony. It’s not an overnight process so be patient. Next, it is imperative to find the proper professional help to dive deeper into unresolved mental and emotional factors that are often a catalyst for making the “merry go round” spin faster and faster. It’s the momentum behind the stress. These things must be unburied and dissolved so that the stress doesn’t mount up again causing us to fall back into the downward spiral. Another important factor is recognizing the need to nurture and be kind to ourselves. Putting the diver in a pressurized chamber pushes the nitrogen back into solution. Then, by slowly reducing the pressure in the chamber, the diver can “surface” at a slower pace that doesn’t allow bubble formation. When used with 100% oxygen in a pressurized chamber, oxygen is pushed into the blood, not just the red cells, but also the serum, and directly into the tissues of the body. Justice and mercy must both be a part of how we treat those who terrorize others. When you can forgive, you do not hate and when you do not hate you are capable of loving, and love is the most powerful weapon known to man. It is not an accident that we say; kill with kindness, love thine enemies and torment with tenderness. If we are going to eliminate war we must love our children more than we hate our enemies. When we raise a generation of children with compassion and when parents let their children know they are loved, we will have a planet made up of the family of man where our differences are used for recognition and not persecution. Words and experts cannot be our Lord. Abraham did not bargain or refuse his Lord’s request. Jesus, who was capable of performing miracles, did not jump down off the cross to impress everyone with who he was. Our Creator must be who we have faith in so we can live as Abraham and Jesus did, fearing only separation from their Lord. Think of what Noah experienced too. He didn’t argue with God over what was about to happen. I think he knew that living was more difficult than dying. We are all here to learn what it is to hurt and be hurt, and only then will we be perfect enough to love and be loved. Someday we will all come to understand that in love’s service only the wounded soldier can serve.
