Welcome

It’s great to welcome you to our 4th edition of Escape and we hope you enjoy the read. 2021 was a challenging year for us all in the industry, however, in many ways there were some phenomenal positives in the year too. To name just a few – we successfully reopened our George Hotel after her stunning investment and refurbishment, opened our first unique themed Afternoon Tea Room experience, whilst our exclusive Pod also continued to welcome guests for the ultimate dining experience at our coastal location at Kingscliff Hotel. Weddings are back in full swing this year and bridal parties have been welcomed back to the Duke’s Head, Thatcher’s and Hog’s Back Hotel & Spa. The return of our leisure guests who we missed for much of 2020 will be continued to be supported in a number of new ways, including exclusive hire of sites and measures to ensure guest safety in our spaces is of importance whilst they visit on their journeys. Our programme of refurbishment continues, including Great Hallingbury Manor situated in Bishop’s Stortford, which we plan to turn into an all-day dining restaurant and lounge bar that overlooks stunning gardens and a lake. The 45 bedrooms will also get a boutique-style facelift. Great Hallingbury is also easily accessible to Stansted Airport and offers Park and Fly options to really start your holiday breaks off in style. The resilience and flexibility of our team and operations, and the ingenuity demonstrated to ensure we remain a hotel group of choice continues to make me proud and, as we see the green shoots of Spring, we will continue to open up from restrictions of the past two years. Thatcher’s Hotel, East Horsley, Surrey Thatcher’s Hotel is a charming Tudor style property set in the heart of the glorious Surrey countryside. There are three fully licensed rooms that can cater for wedding ceremonies of between 20 and 120 guests, offering you the convenience of enjoying the whole day under one roof. We have many distinctive features within the hotel grounds, such as the ‘wishing well’ and gazebo which make the perfect backdrop for your bridal photos. Even during the winter months, our evergreen foliage surrounds the hotel with colour, so weddings are beautiful here whatever the season. Now it’s time to party! Thatcher’s has a bar and music licence until midnight and a function room capacity of up to 150 guests for an evening reception. The Mill Hotel in Sudbury, Suffolk is proud to be dog-friendly with a third of its 62 rooms across the ground and first floors offering facilities for your pet to make their stay memorable, including a water bowl, bag of treats and blankets. Dogs are welcome in all areas of the hotel except for the main restaurant, but if you’d like to dine with your best buddy, you can make the most of the bar area (but strictly no hound hangovers allowed). And with stunning countryside to explore with your pet, you will both build up an appetite to ‘woof ’ down a delicious meal!

The Gainsborough Trail

The Meadow Walk is the first section of the Gainsborough Trail, named after the famous painter, Thomas Gainsborough. A continuous walkable route, stretching approximately 12.4 miles, it will eventually encompass the whole of the Sudbury area, giving access to the best of its countryside along with Great Cornard, Chilton and beyond.

The Meadow Walk

The 3.5-mile (5km) Meadow Walk features Sudbury’s ancient water meadows, a rich source of biodiversity for wildflowers, insects, birds and mammals. The meadows are carefully managed by the Sudbury Common Lands Charity, which continues the old tradition of summer cattle grazing. Along the route, you

will also discover remnants of Sudbury’s industrial heritage and picturesque views that vary with the seasons.

Stour Valley

The Meadow Walk provides a great introduction to the history of Sudbury and the Stour Valley. For 200 years, bricks made from local clays were transported down the river by lighters (barges) to London. Much of the route is along the old railway track that used to run from Sudbury to Cambridge. A Surya Christmas From festive feasts fit for a king to party nights ending the year with a bang, we round up all the fun and frolics from around our hotels.

Kingscliff Hotel, Holland-on-Sea, Essex Christmas was such an exciting time at the Kingscliff with so many long-awaited celebrations taking place – and we’re delighted everyone enjoyed themselves throughout! We introduced our festive menus, which were a hit alongside our new seasonal drinks menu – from hot drinks to cocktails to feature

drinks, there was a beverage for every taste. Our Lounge was a popular place for larger groups where they were able to enjoy a celebratory meal in private. And, thanks to our bespoke Bang & Olufsen speakers, they danced the night away in sonic style. The Pod was a big draw

throughout the month and a festive installation from All About Balloons provided just the right seasonal touch. Norman the Nutcracker helped with the countdown to the big day and all guests were given the opportunity to get snap-happy with a festive Selfie Board. Christmas Day itself was a huge success, with many

groups returning from previous years and already pre-booking for 2022, while New Year’s Eve ended 2021 in style. The George Hotel, Colchester, Essex Christmas at The George started from the town centre high street as guests were welcomed into the newly refurbished hotel with a warm glow from hanging lights, trees and decorations adorning the reception, bar, restaurant, and secret courtyard areas. The hotel beckoned the community of Colchester and beyond with festive and party menus for everyone. Our Tudor Room was decked out ready for private events, while our new, gorgeous, vintage-inspired tearoom was strewn with sparkles, offering customers a Christmas Afternoon Tea throughout November and December. We concluded a year of peaks and troughs with a high on New Year’s Eve, including a welcoming drink of Prosecco, a menu with myriad courses to delight the tastebuds, and ambient music to entertain guests from a talented local saxophonist.

Thatcher’s Hotel, East Horsley, Surrey Christmas at Thatcher’s was a very special time this year despite the uncertainty caused by the pandemic. Seasonal songs playing and beautifully decorated Christmas trees next to our bar and in the main reception added to the celebratory mood.

Our function suites hosted an array of parties and lunches over the course of the month, ending on a high with our local scouts group’s annual dinner dance. The Mill Hotel, Sudbury, Suffolk The historic watermill, set against Sudbury’s stunning water meadows on the edge of the market town, provided the perfect setting for a magical Christmas break. More than 550 people enjoyed a five-course Christmas lunch or festive Afternoon Tea with their loved ones, family and friends during private and corporate get-togethers held over the seasonal period at The Mill. The town’s local carol societies brought along plenty of cheer while tucking into delicious mince pies on 5th and 19th December, with singer Pete George entertaining resident guests and locals on Boxing Day. Gt Hallingbury Manor, Bishop’s Stortford, Hertfordshire The skies above Great Hallingbury Manor were a lot quieter with fewer planes above the hotel flying in and out of Stansted Airport during Christmas, reflecting the tranquillity of the hotel itself along with other hospitality venues due to the pandemic.

Duke’s Head Hotel, King’s Lynn, Norfolk The festive season got underway at the Duke’s Head Hotel with the transformation of our Walpole Ballroom into a winter wonderland. Available to cater for party nights for more than 150 people, our team kickstarted the magical events with a Prosecco reception, a three-course meal, followed by dancing the night away to music played by our resident DJ Jak Ropa!

Our team really exceeded guests’ expectations and we’re delighted that Head Chef, Stuart, was finally able to roll out the Christmas banquets he had been planning since his arrival in 2019, put on hold due to the pandemic. For the first time, we hosted a travel group for the Christmas period, so the pressure was on to ensure this was a success. Jak supported our guest welcome with a snow cannon showering the entrance to the hotel, with the festive package including a visit to midnight mass, popcorn at our in-house, pop-up cinema, a quiz night and live entertainment. We concluded with a spectacular high and another first for the hotel calendar: our ‘Party of the Year’ event for New Year’s Eve with Prosecco, The Hungry Hog Roast Company’s prized hog roast rolls and another Jak Ropa Disco…the countdown to the next Christmas begins!

However, our loyal guests who braved the trip out for Christmas Lunch wholeheartedly enjoyed a welcome drink, canapés in our Oak Room and then a fantastic, four-course traditional meal in our Lakeside Restaurant followed by mulled wine and mince pies while watching the Queen’s speech. It will be a very special year for our hotel in 2022, as we have plans for a refurbishment; we want to make Great Hallingbury Manor the perfect destination for small celebrations as well as a great food and beverage venue for locals and guests who stay with us for the convenience of being close to the airport. The hotel carpark has quadrupled in size to allow for more cars and encourage our guests to Park and Fly, and we are also refreshing our bedrooms to provide even greater comfort and style. Tom Peppers, Clacton-on-Sea, Essex At Tom Peppers, we’ve not stopped since Covid restrictions lifted and what a blast we had over the autumn compared to the lockdown year before! Preparations for events such as Halloween, Christmas Eve and New Year’s Eve gave the team a real sense of normality again. After an amazing summer reopening, numbers dropped slightly as it always does moving into the colder months, with holidaymakers vacating the sunny seaside shores and a record number of students passing their ‘A’ Levels and heading for universities around the country. Still, there was hard work to be done with entertaining our locals, who enjoy the welcoming comfort of the town’s most popular bar and nightclub. Events included themed club nights, genrespecific celebrations, karaoke and also box office sports again proving very popular. Halloween was a hoot this year, as it was extra special falling on the weekend itself. A costume ball was held at The Loft nightclub, which sits above Tom Peppers, with many customers fully immersing themselves by wearing spooky fancy dress. And the fun didn’t stop there with simultaneous Halloween events taking place in both Tom Peppers and The Cellar bar.

Christmas came around super-fast this year. Excitement was bubbling as it’s always a bumper period for the industry. Events included an ugly Christmas jumper party, which raised over £100 for charity, a back-to-school throwback disco and a New Year’s Eve black and gold themed party. Unfortunately, consumer confidence was affected by the new coronavirus variant over the Christmas period, meaning that not everybody could attend festivities to round off the year. But this means that next year’s Christmas and New Year’s celebrations will be even more special. We get the low-down from Hollie Brewer, formerly General Manager of The Kingscliff Hotel, who now heads up The Mill Hotel. Tell us a bit about yourself and career to date… I’ve worked in hospitality for 10 years in all areas, including bar, restaurant, weddings and events, operations and management. I studied at the University of Chichester where I obtained a Marketing and Events degree. This followed onto my first event management job at the Hog’s Back Hotel in Surrey where I first joined Surya Hotels in 2016. From there, I’ve worked my way around Head Office, The George, Colchester – overseeing events – and then landing at the Kingscliff Hotel in January 2019 as Operations Manager. In July 2020, I was then made General Manager. I absolutely love what I do

and definitely see myself in hospitality for a very long time. What was your previous role and when did you join Surya Hotels? I joined Surya Hotels in 2016 as the Wedding and Events Co-ordinator at the Hog’s Back Hotel. Previously, I worked at the Frankie & Benny’s restaurant chain throughout college/ university years. What does your day-to-day role involve? A great perk of the job is no day is the same. It always depends on the day of the week or month of the year. Day to day around the hotel highly involves keeping on top of the team throughout and interacting with guests throughout the day (otherwise known as ‘doing a lap’), alongside usual admin duties, meetings with team members, and forward planning with the Heads of Departments. Just coming out of Christmas, we had a very successful month

with many, many parties enjoying the festivities around the hotel. My main role within this is to ensure high guest satisfaction and to ensure all areas of the hotel are working together. What do you love most about your job? The Team – the people you work with really make your job. Describe yourself in 3 words… Funny, Organised, Coffee addict Last year was a very tough year for hospitality – what are you most looking forward to in 2022? Hospitality has had its ups and downs through the past 18 months, and it’ll be great to see staycations again this summer. Summer 21 was amazing, it really brought everyone together in Holland-on-Sea and we were a very popular holiday destination. To see all our locals come back to business and enjoy what we have to offer. I am also excited about new challenges within the company, and how we will undertake these as a team.

Curried Spring Lamb Shank

IT STARTED WITH MUD PIES

Ingredients

4 lamb shanks 4 sticks cinnamon 4 cardamom pods 6 cloves 3 onions, finely chopped 1 ½ tsp ginger paste 1 ½ tsp garlic paste 1 tsp turmeric 1 tsp chilli powder 2 tsp ground cumin 2 tbsp ground coriander 4 tbsp plain yogurt 4 ripe beef tomatoes, roughly chopped 4 tbsp oil

What are your earliest memories of cooking? My earliest memory of cooking is when I used to make mud pies in the garden – I was around seven years old.

Method Brown the lamb shanks in a hot frying pan. In a separate saucepan, fry off the onions, garlic, ginger and all the spices in the oil. Add the lamb, tomatoes and yogurt, and cover with water and cook for 3-4 hours until the lamb is tender.

Remove the lamb and push the sauce firmly through a sieve, and then reduce until very thick. Use the sauce to reheat the lamb shanks in. Serve with Jersey Royal potatoes, yogurt, and fresh coriander leaves

Custard Panna Cotta Ingredients

Rhubarb jelly

250ml cream 25g sugar 1 tsp custard powder Vanilla essence 1 tsp gelatine powder

2 sticks of rhubarb, cut into small pieces 100ml water 25 g sugar ½ tsp gelatine

Method

Method

Bring the cream, sugar and custard powder to the boil, add vanilla essence and gelatine. Stir until the gelatine has dissolved.

Simmer the rhubarb, sugar and water until the rhubarb is soft and the water is pink. Pass through a sieve, keeping the rhubarb syrup. Put the syrup back on the heat and add the gelatine until dissolved. Pour into moulds and set in the fridge. When set, pour the panna cotta mix and leave to set for 3-4 hours. When ready to serve, dip the moulds into hot water briefly and ease the panna cotta onto the plate.

When did you first realise you wanted to become a chef? I spent three years working in random hotels and pubs, and then back in 1987 decided that this was going to be the career I wanted to do. How would you describe your cooking style? Traditional mixed with modern. What inspires you in the kitchen? Local, seasonal and fresh produce, when ingredients are at their best and tastiest. Who is your culinary hero? Keith Floyd, who was an English celebrity cook, restaurateur and TV personality. He hosted cooking shows for the BBC and liked to combine cookery and travel.

Which one ingredient would you take to a desert island? Not really an ingredient, but I would need to take coffee. Which starter, main course and dessert is your favourite? A traditional starter of chicken liver parfait, kumquat chutney and melba toast; a family roasted lamb dinner; and dessert would be my mum’s spiced steamed sponge with Highland toffee sauce. What would be your ultimate menu showstopper? Something which could be done in front of guests for that bit extra such as a crepe suzette, which would be flambéed at the table in front of them. Which is your greatest cooking hack? I don’t really have any cooking hacks; I like to do things the traditional way which I generally find best. What’s your recipe for being a successful chef? Plenty of dedication and passion for food.

KOREAN STYLE BEEF BURGER

SERVES 2 PREP TIME 10 min COOK TIME 15 min READY IN 25min

Ingredients

200g minced beef 1 tbsp ginger garlic paste 2 pinches crushed black pepper 2 tbsp SUN HEE BBQ SAUCE ½ chopped onion 2 burger buns 2 slices of cheddar cheese Few slices of onion Few slices of tomato Few salad leaves Salt to taste

Method

Mix well to form two burger patties and refrigerate. Meanwhile prepare a few tomato and onion slices. Cook your burger patty in oven at 180 degrees Celsius for 15 minutes and take out and place sliced cheese over it. Lightly toast the burger bun, lay a few salad leaves, sliced onions, tomatoes and burger patty, drizzle generous amount of Sun Hee BBQ sauce. Enjoy, burger night with a Korean twist!

In a mixing bowl combine beef mince, ginger garlic paste, salt, crushed black pepper, Sun Hee BBQ sauce and chopped onion.

‘MY SECRET TO A PERFECT PAELLA!’ What are your earliest memories of cooking? When I was 17 years old, my mother became ill and was unable to cook for me as she used to, so I had to learn to cook for myself. When did you first realise you wanted to become a chef? I did not really know what I wanted to do when I was younger, but when I was 20 years old my father encouraged me to go to college to become a chef and this is what I did. How would you describe your cooking style? A fusion of Mediterranean and modern English. What inspires you in the kitchen? Preparing dishes for customers that they will enjoy and appreciate the level of the creativity and care that has been taken – and receiving compliments from happy guests. Who is your culinary hero? Ferran Adria, formerly the Head Chef of the 3-Michelin Star El Bulli in Roses on the Costa Brava, once one of the best restaurants in the world. Which one ingredient would you take to a desert island? Sugar – I have a very sweet tooth! Which starter, main course and dessert is your favourite? Three textures of artichoke with seared foie gras, Perigueux Sauce and a foie gras foam; slow-cooked beef cheeks, black truffle mashed potato, sauteed ceps and spring onions, port velal jus; cheese ice cream, tomato and vanilla marmalade, black olive tapenade, courgettes coulis and a citrus tuile. What would be your ultimate menu showstopper? Slow-cooked beef cheeks, black truffle mashed potato, sauteed ceps and spring onions, port velal jus. Which is your greatest cooking hack? To make the perfect paella, first you need to make a very concentrated base of chopped onions, garlic, red peppers, and tomato puree, and caramelise well. What’s your recipe for being a successful chef? Have passion for your work and enjoy what you do.

Ajo Blanco Ingredients

200g whole blanched almonds 75g white bread, crusts removed (halved) 600ml iced water 2 cloves garlic, peeled and roughly chopped ½ cucumber, peeled and de-seeded 75ml olive oil 1-2 tablespoons sherry or white wine vinegar Salt and pepper

To Serve

1 tbs flaked almonds 24 seedless white grapes (halved) 100g cooked octopus (optional) 1 tbs cayenne pepper 50g watermelon (cubed)

Place the whole almonds in a food processor and the bread, and process until fairly finely ground. Add the garlic and cucumber and continue to blitz. Drizzle in the rest of the water, the olive oil and half of the white wine vinegar.

Repeat this step with the flaked almonds and reserve them for the garnish.

Taste and season with salt and pepper, adding a little more vinegar if you think it needs it. The soup should be very smooth. If it still feels grainy, pass it through a fine sieve. Transfer to a serving bowl or jug, cover and chill for 2 hours.

Cover the white bread with the iced water and soak for 10 minutes until soft. Drain and squeeze out the water. Reserve the water for the next stage.

To serve, pour/ladle into bowls and top with the flaked almonds, octopus, watermelon, grapes and a drizzle of extra virgin olive oil.

Method

Place the almonds in a dry frying pan and toast over a medium heat until they start to colour.

Salmorejo Ingredients

2 slices white bread 8 large ripe tomatoes (chopped) 1 green pepper (chopped) 3 garlic cloves (roughly chopped) 75ml olive oil 2-3 tbs sherry or cider vinegar

To Serve

1 hard-boiled egg (chopped & crumbled) ½ red onion (diced) Serrano ham (cubed) ½ green pepper (diced)

Method

Soak the bread in a shallow dish of water for 30 seconds.

100ml of water, and blend again adding a little more water if the consistency is too thick. Check the seasoning and add a little more salt, vinegar or olive oil to taste. Chill the soup for at least 2 hours.

Transfer the bread to a food processor, add the chopped tomatoes, green pepper, garlic and olive oil, and blend to a smooth consistency. Add 2 tbs of the cider vinegar, a pinch of salt and
