SQUERRYES ESTATE EXPERIENCES

Squerryes Estate in Westerham has just launched its Afternoon Tea experiences. Served in their Tasting Bar overlooking the vineyards, guests are invited to spend a leisurely afternoon pairing refined flavours with a glass of English Sparkling Wine from the estate. The menu celebrates the best of Kent’s produce: a seasonal selection of savouries, delicate patisseries and warm scones with jam and cream, crafted by the Squerryes culinary team. FOXHILLS XMAS & NYE LINE-UP REVEALED

Award-winning hotel and country club Foxhills, are putting on an array of festive activities this month, including a ‘Members Christmas Party’ on Saturday 6th December, a ‘Peter Pan’ Pantomime on Saturday December 13th (including a meet & greet with the characters and sweet treats for the kids) and a Wreath and Candlemaking workshop on Sunday 21st December, open to members and non-members.

MEGA-CHORING SAGA CONTINUES

Former royal and Hollywood impresario, Meghan Markle, is coming under fire (again!) for stealing a designer dress from a magazine photoshoot.

Not short of a bob or two, the former Duchess was pictured wearing the Green Galvan Designer Dress for a shoot in Variety Magazine in 2022. The ‘said dress’ mysteriously went missing after the shoot. No one could explain it “vanishing into thin air!” when it was signed out to Meghan for just a few hours on set.

Three years on, eagle-eyed fashionistas picked up that Meghan was wearing the same £1,300 Emerald Green Designer Dress in her promo for the special of her upcoming Netflix show ‘With Love, Meghan.’

Any head scratching required here? There’s no smoke without fire… they say!

Adding weight to the story is acclaimed New York Times Journalist Vanessa Grigoriadis, who gave an exclusive interview to the ‘Heretics Podcast’ in March last year – outlining the Meghan stealing allegations.

“Meghan did not return ‘a lot of stuff’ from ‘a very high-profile photo shoot,’” she admitted in the interview.

Hilarious!

Meghan’s spokesperson hit back at the recent accusations saying: "The insinuation that any items were taken without the full knowledge and agreement of the on-set stylists or their respective teams is not only categorically false but also highly defamatory.

“Any items kept were done so in total transparency and in accordance with contractual

‘X Factor’ winner Louisa Johnson hosted the ‘AMC Music Showcase’ in front of a packed-out crowd at the newly opened Y Nightclub in Guildford on Tuesday 25th November.

Around twenty students at the Guildford-based music college got to perform and showcase their talent from musicians, bands, singers to DJ’s, rappers and MC’s. The crowd was delighted and the drinks and cocktails at Y Club flowed accordingly!

The Academy of Contemporary Music (AMC) has schools in Guildford, London and Birmingham. They offer courses in Performance, Songwriting, Games, Production, Rap & MC, Business and more. Y Club has four individually designed spaces, including a baroque influenced main room, an arena-ready sound system, the latest laser and lighting, exclusive VIP areas and outdoor garden terraces.

Guilfest is back with a bang in 2026 with top music acts including The Proclaimers, Rudimental, Sophie Ellis-Bextor who will be descending to Stoke Park in Guildford on Saturday 4th and Sunday 5th July.

STEAK FAJITAS

This recipe from Delish is a fantastic way to eat your favourite Mexican fajitas without the carbs yet all the flavour. Packed full of nutritious, fresh and healthy ingredients you can be safe in the knowledge that one serving is only 298 calories, leaving more room for mince pies and turkey at Xmas.

INGREDIENTS:

(Serves 4)

• 2 tbsp. vegetable oil, divided

• 1/2 yellow onion, sliced into half moons

• 2 bell peppers, thinly sliced

• kosher salt

• Freshly grou nd black pepper

• 1 lb. skirt steak, cut into 1/2" slices

• Juice of 1/2 lime

• 1/2 tsp. cumin

• 1/2 tsp. chili powder

• 4 c. cooked brown rice

• 1 c. black beans, drained and rinsed

• 1 c. frozen corn, warmed

• 1 avocado, thinly sliced

• 1 tbsp. finely chopped cilantro, for garnish

• Sour cream, for serving

METHOD:

(Takes 3-4 Hours)

DIRECTIONS

1. In a large skillet over medium heat, heat 1 tbsp vegetable oil. Add the onions and peppers, and season with salt and pepper to taste. Cook until onions are translucent and peppers are tender, 7 to 10 minutes. Remove from skillet and reserve.

RECIPE

2. Add remaining vegetable oil and let heat for about 30 seconds, then add skirt steak to pan. Squeeze lime over steak and season with cumin, chili powder, salt and pepper. Let them sit for a minute or so to get a nice sear, then cook to your preference, about another 5 minutes

for medium well done steak. Remove from skillet.

3. Build bowls: start with about 1 cup rice per bowl. Top with steak, onions and peppers, avocado, black beans and corn.

4. Garnish with cilantro and drizzle with sour cream. Serve.

WINE PAIRING

A Coronita (Corona and lime) or Margarita are traditionally associated with Mexican foods and certainly go down a treat with spicy dishers! However when looking to pair wine with Mexican foods such as these Steak Fajita Bowls we would highly recommend a Cabernet Sauvignon which maintains the fruit without the harsh tannins, making it a great choice for flavourful Mexican dishes.

Rich dark berry fruit with spice, herbs, and sweet toasty oak, Cabernet has lush fruit, yet balanced texture to integrate with the meaty, spicy, vegetable flavours. Alternatively, a Malbec is similarly bold and has strong fruit notes which would work exceptionally well with a dish like this.

AVATAR 3: FIRE AND ASH

The third instalment in James Cameron’s epic science fiction film series ‘Avatar’ is making its way to the big screen just in time for Christmas.

‘Avatar : Fire and Ash’ is the sequel to ‘Avatar : The Way of Water’ (2022) and the original ‘Avatar’ (2009).

The first instalment made $2.9 billion at the box office while ‘Avatar 2’ made $2.3 billion, with the combined total gross of both movies putting it well over the $5 billion mark.

The third outing is co-written, coedited, co-produced and directed by Hollywood great James Cameron, who was behind the Oscar-winning ‘Titanic.’

The film centres on the ongoing conflict on Pandora, escalating as lead characters Jake and Neytiri's family encounter a new, aggressive Na'vi tribe.

Acclaimed writers and producers Rick Jaffa, Amanda Silver, Josh Friedman and Shane Salerno were also involved in the new blockbuster film.

Original cast members Sam Worthington, Zoe Saldaña, Sigourney Weaver, Stephen Lang, Joel David Moore and Giovanni Ribisi reprise their roles from previous films in the new ‘Avatar 3’, while Brit actor David Thewlis and Oona Chaplin, who is the granddaughter of the legendary Charlie Chaplin, portray new characters.

HOW DID YOU FIRST GET INTO SINGING?

I've always had a thing for music. I was that kid putting on shows for my parents, making up performances in my head, insisting they sat through them. I was always involved with school plays and musicals, part of the choir, just anywhere there was a chance to sing. Growing up, it was all about women who owned the stage; Alicia Keys, Rihanna, Taylor Swift, Beyoncé, The Saturdays, you name it. I loved listening to them and feeling empowered. I had this keyboard with a CD slot, and I'd work through my CD collection for hours, belting out tunes into my neon pink mic. Honestly, it's always felt like music lets me express what I can't put into words, more like poetry through melody, so it's been my favourite way to be myself.

WHAT INSPIRES YOU WHEN MAKING MUSIC?

I want to make music that lifts people up or helps them through hard times, even if it's just by helping them forget their worries for a bit. It's like therapy for me, but also I hope it speaks to others too. If someone's having a rough day and my track helps them feel better, that's the best feeling. I really want my music to be a safe space, where fans can connect, support each other, and just vibe together. It's about community, and that's a huge part of why I do what I do.

YOU HAVE RECORDED WITH MUSIC ROYALTY OVER THE YEARS – WHO WAS THE BEST TO WORK WITH & WHY?

That's such a tough one! If I had to choose, working with Tiësto was unreal. Getting the chance to collab with a DJ of his level it was one of those "pinch me" moments where someone you admire actually believes in you. Meeting him backstage at his concert, seeing how genuine he was plus what he did with the remix of my original song made it such a turning point for me. It just felt like someone of his calibre backing me meant I might actually have a shot at this.

YOU HAVE BEEN PERFORMING FOR ALMOST A DECADE NOW – WHAT IS THE SECRET TO YOUR ONGOING SUCCESS?

Honestly, I feel like I'm always learning. Starting out at 14 and now being 23, it's been a massive journey still figuring out who I am, meeting new people, coming of age, getting more independent. There have been so many changes, but I think the key is just staying true to myself, being open with my fans, and letting them in on the journey. I reckon that honesty is what helps people connect with me and my music.

WHAT MUSIC STAR INSPIRES YOU THE MOST?

Without a doubt, Beyoncé. I grew up listening to her, and the way she brings her music and shows to life is honestly so inspiring. Every song has a message and the love her fans have for her work is incredible. Whenever I need a bit of motivation or a reminder of what's possible, it's always her I go back to.

ARE YOU PLANNING ON TOURING/ PERFORMING LIVE?

There are definitely a lot of chats happening about it, and I'm hoping to announce some shows in 2026. So watch this space!

WE'VE NOTICED A SIGNIFICANT SHIFT IN YOUR BRANDING RECENTLY. CAN YOU TELL ME WHAT INSPIRED THE REBRAND AND WHAT MESSAGE YOU HOPE IT SENDS TO YOUR FANS?

I've always been in the dance scene since I started out, and while I've loved it and learned so much, I feel ready to move more towards pop. That's probably the biggest shift, but it's also about knowing myself better now. I've been through a tough patch, really worked on myself, and finally feel comfortable in my own skin. I think you can see that confidence coming through. Going forward, it's about making music that feels more "me" and connecting with people on that level.

WHO ARE SOME OF YOUR BIGGEST INFLUENCES IN THE INDUSTRY RIGHT NOW?

At the moment, I'm loving what Olivia Dean, Raye, and Zara Larsson are doing. I've followed Zara for ages and she's just smashing it right now. She sounds great, looks amazing, really inspiring stuff.

YOUR NEW SINGLE, "RED", HAS JUST BEEN RELEASED. CAN YOU TELL US ABOUT THE STORY BEHIND THE SONG AND WHAT INSPIRED ITS NARRATIVE AND TITLE?

"Red" is definitely a bit sexy if I can say that! The whole video's shot in red, I've got my girls looking incredible, and there's a big flirtatious energy. But there's more to it than that. It's about knowing your worth: if you don't treat me right, I'll be gone before the morning. You see the stereotype of men leaving in the morning in songs all the time so I wanted to flip it. It's empowering, a bit cheeky, and just a reminder that I don't need anyone's love to feel whole.

WHICH FASHION DESIGNER INSPIRES YOUR STYLING CHOICES THE MOST?

Honestly, I'm still finding my feet when it comes to fashion! For ages, I kept it simple,just trousers and tees and my team used to laugh at how laid-back I was. Lately though, I'm starting to explore more, work with different stylists, and figure out what suits me. No favourite designer just yet, but I'm enjoying trying new things.

YOUR PERFORMANCE AND STAGE PRESENCE HAVE GROWN ENORMOUSLY IN RECENT YEARS. YOU'VE WORKED CLOSELY WITH PINEAPPLE STUDIOS' MARK BATTERSHALL. HOW MANY HOURS DO YOU TYPICALLY SPEND IN THE STUDIO REHEARSING CHOREOGRAPHY?

It really depends on the project, but if we're getting ready for a music video, it's usually around six to seven hours a day, four times a week. It's pretty full-on, just like a regular work day in the studio to get everything looking sharp.

YOU'VE FILMED MUSIC VIDEOS BOTH WITH AND WITHOUT DANCERS. WHICH DO YOU PREFER? DO YOU FIND IT EASIER TO WORK SOLO, OR DOES THE ENERGY SHIFT WHEN YOU HAVE A FULL GROUP ON SET?

The energy definitely changes when you've got a crew of professional dancers backing you, you really step up your game. But it depends on the project. I do love the pressure and focus when it's just me on set, but there's also something wicked about everyone getting involved in a big group number.

OF ALL THE SONGS AND MUSIC VIDEOS YOU'VE CREATED, WHICH ONE IS YOUR FAVOURITE AND WHY?

Tough call! I loved shooting "Love You Right Back". It was a big moment for my image and where I want to go as an artist. My first solo performance, in a catsuit, filming in a mirrored box, I felt amazing, and the end result was exactly what I wanted. More recently, creating "Wildfire" was an amazing experience. It was really technical, building an AI world took so much behind-the-scenes effort and patience, but I'm obsessed with how it turned out, even if it was a challenge!

WHAT ARE YOUR PLANS FOR THE FUTURE?

I'm already working on my next project for 2026, even though the EP just dropped! New producers, new vibes, I can't wait to announce what's next.

We were beyond excited to receive our invitation to try out Beaverbrook’s notable gastronomic experiences including The Dining Room - Japanese Grill, The Garden House, WildKitchen, The Pizzeria at The Deli and Mrs Beeton’s in The Village. We hope you enjoy this exclusive review as much as we did.

On arrival at our picture-perfect day at Beaverbrook, we were instantly wowed by the grandiose buildings with their beautiful white stoned architecture and exquisitely maintained gardens, overlooking the rambling Surrey Hills. Beaverbrook is a hotel, a retreat and a spa which also has award-winning golf courses, padel and tennis courts, woodland adventures, a cinema, ice-skating, hot air balloon dining and gastronomy heaven with five world-class

restaurants; that are all open to the public. Lucky us! In case you didn’t know, Beaverbrook was once home to celebrated newspaper publisher Lord Beaverbrook and was also the part-time war residence for Prime Minister, Sir Winston Churchill. During WW2, Churchill appointed his good friend Lord Beaverbrook as Minister of Aircraft, hence the nod to the wartime heritage located throughout the Estate, including Beaverbrook’s famous spitfire logo, used in all their branding to this day.

GASTRONOMY REVIEW

THE DINING ROOM –JAPANESE GRILL

Our gastronomy extravaganza started at The Dining Room’s Japanese Grill - a gem in Surrey’s culinary scene with multiple accolades including ‘Best Fine Dining Restaurant’ at the Surrey Awards. The elegant menu of delicately flavoured Sushi, Sashimi and Nigiri with the finest cuts of meat and fish from the Josper Grill, is remarkable.

Headed up by the internationally renowned chef, Wojciech Popow, who has worked with Gordon Ramsay, top London nightspot Yashin and was awarded Sushi Chef of the Year, ensures the cuisine and creativeness of the dishes at The Dining Room - Japanese Grill are second to none.

We got to sample Chef Wojciech Popow’s acclaimed Nigiri Selection - ‘Omakase Nigiri’ - on our recent visit including individual portions of: ‘Sake : Smoked Soy & Black Garlic’,

‘Akami : 20 Year-Aged Mirin, Ponzu & Yuzu Kosho’, ‘O-Toro : Truffle Yuzu Miso & Fresh Truffle’ and the much-hyped ‘Madai : Tosa Soy & Foraged Cornish Ants.’

Yes, you did read that correctly…Cornish ants! A delightful delicacy and a must try at Beaverbrook.

All were sublime, fresh and flavoursome although the winning Nigiri for our tasters was the ‘Ebi : Yuzu Soy & Yuzu Foam’ and ‘Hamachi : Acorn Soy & Madagascar Peppercorns’ which had that added spicy kick.

The entrée of ‘Lobster Taco’ was to die for too.

Generous chunks of fresh lobster infused with miso and a crispy, patterned wholewheat taco – dressed with caviar and wafered mushroom. On the recommendation of our sommelier, we washed this down with a glass of the local Albury Estate Sparkling Wine – it worked perfectly.

What an impressive start to a perfect day.

THE GARDEN HOUSE RESTAURANT

Our next stop was a short walk away to The Garden House. On arrival we were greeted by the ever-friendly staff and dropped off more Surrey Rocks Magazines in their decadent, yet snug Robin’s Nest Bar.

The Garden House, known for its beautiful location and gardens for growing flowers, vegetables and herbs for their menus, is truly amazing. As the seasons shift, so does The Garden House, embracing the latest seasons with Head Chef Adam Sharpe presenting hearty menus inspired by what’s growing at the garden and its potting sheds.

We were offered an amazing ‘Smorgasbord’ selection of Starters and Mains including ‘Roasted Sand Carrot Soup’ with rosemary and carrot crisp which was delightful, bursting with sweet vegetable flavour and goodness. The rosemary, we were told, was handpicked that day (of course!)

The ‘Garden House Tomato & Olive Focaccia’ to accompany, was served warm straight out of the oven, with early harvest olive oil and whipped butter on the side. The bread was crusty, yet so soft and doughy in the middle, with an abundance of seeds and fresh olives. Splendid.

Next up, the ‘Crispy Polenta Squid’ with purple shiso and samphire was a beautifully presented dish. Freshly cooked squid, fragrant samphire, illuminated shiso and ideal crunch on the tempura batter with no grease, which completely amazed our tasters.

Our seafood heaven continued with the ‘Hand Dived Orkney Scallop’ with corn espuma, parmesan and lemon thyme sauce. Succulent scallops served with a divine, fragrant, citrus sauce. We mopped up with the remaining Focaccia bread, easily making this a 10 out of 10 dish.

Finally, the ‘Artisanal Burrata & Butternut’ mainstay starter dish complete with fresh sage from the garden and rocket pesto was another winner. Presented in a seasonal pumpkin; the burrata was soft, creamy and shredded easily on touch, while the butternut squash was cubed and cooked perfectly al dente. Combining this with the fresh sage and vibrantlycoloured, green pesto dressing, was a definite tastebud explosion.

Filling up fast, we were whisked away to our next destination.

THE PIZZERIA AT THE DELI

Beaverbrook’s gastronomy experience continued with a visit to The Pizzeria at The Deli located in the stunning The Coach House Spa building located a short walk from the Main House.

Here you can enjoy stone-baked pizzas, vibrant cocktails and fresh seasonal fare with a relaxed and comforting dining experience.

The Pizzeria at The Deli is the perfect spot to dine with family and friends. Made with fresh, seasonal produce, their traditional pizzas are stone oven-baked to create a truly authentic taste. Pizza dough is made in-house using a unique recipe for a perfectly balanced base.

The Italian-inspired menu includes Beaverbrook's classics, like the ‘Ortolana’ with roasted vegetables, and the Chef's specialities like the ‘Ai Gamberi’ with burrata and king prawns.

THE BEAVERBROOK WILDKITCHEN

‘The Beaverbrook WildKitchen’ was built especially for the Estate in 2024 by ‘The Gentleman’ director Guy Ritchie’s bespoke outdoorliving company - offering the perfect Al Fresco/ Outdoor Dining Experience, catering for up to 24 guests.

This ideal special occasion venue WildKitchen, represents a revolution in the outdoorliving experience, making it possible to eat outside all-yearround, with the world’s first, fully retractable canvas and hardwood flooring designed to withstand wet and windy conditions.

The concept was made even more famous by the 2025 Netflix ‘Beckham’ documentary when David Beckham and his family opened & closed the series cooking from their very own Guy Ritchie-personalised WildKitchen. Apparently, Madonna’s exhusband created the brand out of “the love of fire, BBQ’s and the great outdoors.”

After visiting on our recent Beaverbrook tour we can see the passion project in its full glory - and it really is remarkable! A kitsch, cosy and completely different dining experience is on the cards with flaming hot plates and a Beaverbrook personalised menu.

Beaverbrook guests can choose between two exclusive menus to try at The WildKitchen: ‘The Surf & Turf by Adam Sharpe’ from The Garden House or ‘Wild Japanese Dining by Wojciech Popow’ from the Japanese Grill, depending on your guest’s palettes.

Or new for 2025 is ‘Into The Wild’ where you can embark on an extraordinary experience that combines adventure, connection and feasting. This exclusive group day package brings together the adrenaline-fueled ‘Bear Grylls Survival Academy’ and the culinary magic of WildKitchen, offering a unique way to bond as a team or family at Beaverbrook.

MRS BEETON’S AT THE VILLAGE

A short buggy ride from the Main House (thank you Eugene - our buggy driver!) and nestled within the Leatherhead and Mickleham woodlands at Beaverbrook, you can now visit the nostalgic and timeless charm of ‘The Village.’

With 21 guest rooms, housed across a collection of ten cottages and a main 5 bedroom house, as well as an events space called ‘The Writer’s Block’ and a beautiful, bright and colourful restaurant called ‘Mrs Beeton’s’ - we took a step back in time for our last Beaverbrook experience.

Mrs Beeton’s at Beaverbrook (named after the famous Victorian culinary goddess) offers classically British fare, alongside an impressive dessert menu and wine list. Carrying through the artistic theme, is an impressive menu with elegant literacy touches, including the placemats which play homage to manners of Mrs Beeton’s day!

"Dine we must and we may as well dine elegantly as well as wholesomely" is quoted by Mrs Isabella Beeton. Well said.

We were delighted to have our Beaverbrook Dessert Experience here. First up was the classic ‘Strawberry Eton Mess’ which contained crisp meringue, strawberries, vanilla and mascarpone chantilly. Served in a sundae dish this was light, fresh and irresistible.

The second dessert was a ‘Salted Caramel Sundae’ containing chocolate brownie and hazelnuts in a large sundae dish. Sweet but not sickly this was devoured alongside a herbal tea and cappuccino.

There were also 6 amazing milkshake choices including; ‘Salted Caramel Pretzel’ served with vanilla ice-cream, milk, caramel sauce, pretzel or the ‘Oreo Cheesecake’ with cookies, cream, chocolate ice-cream.

Beaverbrook’s dazzling design duo of Sir Frank Lowe (advertising mogul and Beaverbrook’s Creative Director) and acclaimed British designer, Nicola Harding, have united to bring the dazzling interiors to The Village. It is a beautiful and artistic home from home!

Another must try.

WINTER ICE-SKATING EXPERIENCE

Beaverbrook’s beautiful open-air ice rink transforms the Estate into a Winter Wonderland from November 20th 2025 to February 1st 2026 with festive melodies as you glide across the ice in the stunning surroundings and a cute eatery for hot chocolate and snacks.

Beaverbrook’s signature ‘Skate & Dine’ experience includes a 45-minute skate, rink-side treat and a meal in one of their

The Art of Atmosphere

In Denmark, winter’s long nights are softened by a warm, glowing light – the cornerstone of Danish festive living. “Lighting is everything at Christmas,” says Helena Christensen. “I scatter candles all around my home – tea lights, pillar candles, anything that adds a soft glow. And I love mixing in statement lighting that doubles as décor.”

This season, BoConcept’s sculptural lighting brings ambience and artistry together.
