Quietly opening earlier this year, Babette has quickly become a beloved culinary gem for those in the know in Coral Gables, a city that, like the restaurant itself, is as much a tribute to legacy as it is to the present moment. Figuratively speaking, Babette is rooted in memory: the culmination of the decades Chef and Co-owner Daniel “Dani” Chávez-Bello has spent time in some of the world’s most celebrated kitchens. At its heart, the restaurant is both a celebration of a life in hospitality and a love letter to his wife and business partner, Alexandra Oliveros Febres-Cordero.

Memorial Auditorium into an exciting new entertainment and recreation hub and enhanced time-honored memorial for Broward County’s military veterans is unprecedented.” Since taking to the South Florida ice in 1993, the Florida Panthers have established an unmatched legacy of award-winning sportsmanship, economic development, corporate philanthropy and civic responsibility.
According to the Fort Lauderdale Downtown Development Authority, the Panthers have impacted the local economy by at least $110 Million over the last two seasons during the team’s long playoff runs; a number that is expected to grow exponentially in the coming years. As a catalyst for urban growth in the greater Fort Lauderdale area, the Florida Panthers have invested $100 Million into the construction of their official practice facility Baptist Health IcePlex with two NHL-regulation sized ice rinks and the recently revitalized historic War Memorial Auditorium, a 44,000 Square Foot Multipurpose Concert Venue. As part of the project, the Panthers renovated all veteran art and monuments around the venue (which has drawn visits from U.S. Presidents and celebrity icons from Buddy Holly to World Boxing Champion Héctor Camacho over the decades) including the merchant marine monument outside the venue, the red flags along the exterior walkway which represents soldier art, one plaque representing Broward County veterans that served in the Vietnam War and a second plaque representing those who made the ultimate sacrifice in defense of the nation. Overlooking the main lobby from the top of the wall, patrons will find a soldier statue that was donated in the early 1970’s by Gold Star Mothers which is a group of mothers who lost a child or loved one during the Vietnam War. “We are honored to receive this prestigious recognition from History Fort Lauderdale as we aim to be stewards of our community through meaningful partnerships to make a lasting impact across South Florida,” said Panthers Chief Operating Officer Rob Stevenson. “One of the most important aspects to the revitalization was to preserve the historic 50year-old legacy of War Memorial Auditorium, elevate the Broward County Veteran monuments and provide a firstclass experience for guests attending events here.” Previous honorees of the History Makers Fundraiser have included notable organizations and individuals such as The Miller Family of Miller Construction Company, Galleria Fort Lauderdale, Kelley Shanley, Ted Drum and the Drum, Clark and Cox families, Denison Yachting, the Marine Industries Association of South Florida, the Forman family, “Alligator Ron” Bergeron, City Commissioner Steven Glassman, developer Dev Motwani, H. YMCA Of South Florida Hosts 11th Annual Veterans Day Salute
The YMCA of South Florida, in partnership with the City of Weston, will honor former and current military members during its 11th annual Veterans Day Salute, presented by Milner Technologies, on Friday, November 7th from 8:30 a.m. to 11:00 a.m. at the Bonaventure Town Center Club, 16690 Saddle Club Road, Weston, Florida 33326.
This year’s keynote speaker is Robert O’Neill, a legendary Navy SEAL and decorated combat veteran who served for eight years on SEAL Team Six, where he led and participated in more than 400 missions around the world. His heroic contributions include rescuing Captain Richard Phillips from Somali pirates (as depicted in the now famous movie, Captain Phillips, starring Tom Hanks), aiding in the mission to save “Lone Survivor” Marcus Luttrell and leading the team that brought down Osama bin Laden. O’Neill has been awarded 53 military decorations, including two Silver Stars and four Bronze Stars with Valor.
“Celebrating Veterans Day every year is very special for us, and we are honored to once again host this heartwarming salute to all military personnel and their families,” said YMCA of South Florida President and CEO Sheryl A. Woods. “This is an extraordinary celebration of the brave men and women, past and present, who serve our country.”
More than 500 community leaders and veterans are expected to attend the Y’s annual Veterans Day breakfast. All veterans in attendance will receive a special gift that includes a challenge coin and more. According to data from the Florida Department of Veterans’ Affairs, nearly 10% of the nation’s 19.1 million veterans live in Florida, making it the third largest veteran population in the nation. Dani. “The very soul of the place is built on what we share - the life, the love, the family we’ve created. We opened Babette to set a table where others can feel that same sense of joy, comfort, and amor de la vida.”
Babette presents a refined yet welcoming menu, where Mediterranean soul meets the precision of French technique, the vibrancy of Spanish cuisine, and unexpected Japanese influence. Every dish is rooted in ingredient purity and thoughtful simplicity, allowing flavors to shine without distraction. Dishes that have become signature must-tries include a sumptuous Crab Truffle Flan, a complex dish rich in flavor, bedrocked by chawanmushi, a Japanese steamed egg custard, that Dani fell in love with during his time overseas. Other notable selections include a visually striking and delicious warm Summer Vegetable Mosaic, an artful composition of organic carrots, radishes, snow peas, parsnip and carrot purée, pickled cauliflower, and baby zucchini; and Beet Tartare, a vegetarian spin on the carnivorous classic anchored by dashi and dressed with sherry and rosé vinegar. Equally compelling Entrees include housemade Cavatelli with tender lamb ragout, brightened with mint and paprika; a crisp Berkshire Pork Cutlet paired with rosemary apple purée, green asparagus, and earthy porcini; and the Magret de Canard – silky slices of duck served with kabocha squash, roasted endive heart, and a luscious zucchini-spinach purée.
Among the current dessert offerings are a simple yet elegant Apple MilleFeuille and Berries Pavlova. A full bar is available as well as an impressive wine list, curated with care by Dani himself, offering bottle selections and offerings by the glass for erudite oenophiles and budding enthusiasts alike.
The decor is a seamless blend of timeless European elegance and modern chic, evoking a warm, inviting, and often candlelit/romantic atmosphere. Every detail from the vintage-inspired furnishings to the soft, ambient lighting evokes the charm of a cozy café on a quiet European street, while still embracing Miami’s joie de vivre. The intimate space accommodates 30 guests indoors, while a charming patio with seating for 20 offers a perfect outdoor dining experience under the Miami sky. Meanwhile, a secret stirs upstairs. Coming November 2025, The Romeo Room, an intimate escape draped in velvet and whimsy, where Victorian tea room elegance meets the allure of a modern speakeasy. Guests will be able to slip away into this intimate hideaway to enjoy thoughtfully crafted cocktails and a menu of curated bites, all served in a space designed to feel like a world apart.
The backstory: Chef Dani’s journey to Babette began in Venezuela, learning to cook with his mother and making sandwiches with his father; these two experiences kick-started his passion for cooking and his lifelong love affair with Nutella. As a young man, seeking a posh professional life, he joined law school but soon discovered himself gravitating toward F&B when he decided, rather spontaneously, to open a café. His moneymaking endeavor soon became his raison d’être, and though he completed and graduated from law school, his true passion ultimately led him to pursue a life in the kitchen. In Barcelona, he won a national culinary competition and earned a scholarship to culinary school, training in worldrenowned kitchens, including the genre-
defying, trend-setting El Bulli, still considered to this day one of the most impactful restaurants in the history of modern gastronomy, widely considered the most influential restaurant of the modern era. At Can Ravell, he cooked for the King of Spain and helped Lluçanès earn a Michelin star, but it was joining legendary Chef/Restaurateur David Bouley that truly helped him blaze a path forward, working with the chef to open restaurants all over the world. In fact, Dani credits his time in Okinawa as a pivotal turning point in his life and career; it was there that he became acquainted with Blue Zones, a discovery that directly impacted how he
approached cooking. In 2020, after a chance meeting as adults, he reconnected with Alexandra, the little sister of one of Dani’s school friends. And what began as a rekindled friendship soon blossomed into a love affair and a business partnership, which brought them to Miami, where Babette was born in 2025. A great deal of Babette’s allure is the product of Alexandra’s keen eye; a product designer by profession, with extensive experience in interior design and corporate image development, her undeniable sense of style is integral to the concept and complements Dani’s culinary prowess. In addition to leading Babette, Dani is also the Chief Culinary Officer at Epicured, where he leads menu development in collaboration with Epicured’s Partners in Health, furthering their mission to heal through food. This role reflects his passion for health-conscious, purposeful cuisine.

To say that Niño Gordo in Wynwood “goes big” is putting it lightly. Maximalist in style and brimming with whimsy, Niño Gordo is an Asian street food fever dream of a restaurant in the best possible way, a stimulating mix of big flavors, pop culture encompassing everything from manga and Godzilla to the iconic noodle bar in Blade Runner. Open since Spring 2025, it’s wholly unlike anything in a market bursting with food & beverage concepts of all kinds, delivering as much on the plate as it does the eye. No surprise, really, considering the original Argentinian location ranked #34 on the World’s 50 Best Restaurants List and was called one of Buenos Aires’ best restaurants by The New York Times. Yin to Niño Gordo’s yang is Dekotora; a sushi bar and speakeasy, accessible through a hidden entrance behind a faux cigarette machine. Named after the wildly-creative decorated Japanese trucks of the same name. Serving its own proprietary menu of craft cocktails and sushi and seating only 16, Dekotora is as ideal for a clandestine night out as it is for private cocktail parties with friends. Both Niño Gordo and Dekotora stand alone as unique destinations but combined, they are Miami’s most compelling and delicious double features.
Before even crossing the threshold, Niño Gordo exudes a bold, playful sense of mystery and excitement; starting with a front door that’s cheekily blended within a massive graffiti mural – by Argentine artist Ever Siempre – that spans the exterior, hinting to guests that they’re about to embark on fully immersive dining experience with much to discover within. The surprise and delight of the concept’s creative and rebellious spirit truly shines once inside where every room has its own uniqueness and personality. Guests enter through the Red Room, a neonhued dreamscape illuminated by the warm glow of crimson lanterns suspended from the ceiling, anchored by playful wallpaper and whimsical aquarium installations. To the left, a lively diner-style counter at which guests literally sit before Niño’s colorful kitchen crew. To the right and behind a sliding door, the Gold Room, a bedazzling jewel box of a room combining polished floor-to-ceiling mirrors and gold framework that can double as a private dining space for up to 40. Through its unapologetically maximalist design, Niño Gordo is an otherworldly collision of whimsy and wonder worth discovering.

In sync with the bold authenticity of the restaurant’s design and ambience, Niño Gordo’s culinary offerings are just as vibrant and dynamic. Thoughtfully curated by chefs Pedro Peña and Germán Sitz, the menu blends innovation and tradition to deliver dishes that celebrate Miami’s diverse cultural landscape while honoring classic Southeast Asian flavors and techniques. By design, the menu is structured to take diners on a tantalizing culinary journey through an eclectic lineup of plates designed to be shared. Be it diners’

Guests can also enjoy a selection of flavorful plates including the Hamachi, Tuna Tataki, Cauliflower Karaage and Mushrooms for $12 each. But the Wynwood destination wouldn’t be a true double feature without the second piece to the theatrical puzzle. Enter Dekotora, the uncanny sushi bar and speakeasy that’s sneakily hidden by an entrance masquerading as a faux cigarette machine. Inspired, both in name and design, by old-school dekotora trucks with interiors that were transformed into works of art on wheels, Dekotora boasts an identity, menu and atmosphere to call its own, and serves as both an authentic standalone dining experience, as well as the dynamic partner to Niño Gordo that is as ideal for pre-dinner bites and cocktails as it is for a nightcap.
Here, a Japanese-inspired menu features a selection delectable crudos such as Hokkaido Scallop with kiwi cilantro and jalapeño, and Hamachi with hearts of palm and kombu; makis including Spicy Tuna with cucumber and sesame seeds, and Snow Crab with cucumber, yuzu, salmon and season; plus, fresh sashimi and nigiris, and several chef selects including chef’s Hand Roll of the Day and Chirashi. Dekotora’s dazzle and delight continues with a playful bar program of exquisitely crafted cocktails and zero-proof libations, plus a selection of sake, wine and beer. Flooding In Hallandale Beach
The City Has Been Doing Major Water And Wastewater Projects
By Hallandale Beach Mayor, Joy Cooper
Over the past articles, I have written about flooding and a resiliency study under way that will update all of our flood maps to the new reality of Sea Level Rise and climate change. While the study is in the final phase we have not just been sitting back doing nothing. We have always had stormwater plans. Last week, I had many meetings with residents who came to meet with me about flooding. The overarching theme was, “what are you doing?” and “I want a pump at my house.” I shared, I wish there were a magic fix and I could make the entire city flood proof. I also shared that, this is the issue I lose sleep over.
We need the plan to create a work plan and then we have to fund the work plan. More importantly, we need to be strategic and get it right. We still continue to do what we can while we are in the process. Below is one of those measures while we are waiting on completion of the study. I requested that the city enact a local ordinance to implement the state statute that allows police to ticket drivers who create a wake. We have put up no wake signs and deployed police and barricades in low lying areas, but ignorant drivers still barrel through flooded streets and cause damage. Chief Michel spoke and actually thanked me. This issue is extremely frustrating not just to our residents but our officers. They will be placing the ordinance on the agenda and I requested they utilize the highest fine possible allowed by
the statue.
Water and flooding do not have borders. Hollywood to our north has been working on barrier island flooding for years. They have had issues all along A1A, not simply around the Lakes area. They have put out temporary pumps in some areas like Hallandale where there is no quick fix. In addition, there is nowhere to pump water. They are now beginning the process to deep well inject.
The large-scale pumps and seawall project is jointly planned and funded between the FDOT, Broward County, city and private property owners. Broward County, State and Army Corps have authority over the parks along the intracoastal and without getting into the details on all the projects they passed, I will focus on the lakes.
In 2019, they passed a General Obligation Bond to cover multiple projects. In 2023, the project was still conceptual but moving forward with design and permitting. The completion date then was 2025 but we know that is not the case. Their bond did not cover the entire project and they went to the state who actually provided two grants for planning.
The lake seawall sites alone funding was $14 Million for only seven sites and with the state awarding $18 Million in funding they could do all the public sites. The sites with private properties with docks are required to be done through the owners. Ironically, this is where there is some of the worst flooding. I am not cov-
ering the other part of A1A, but I understand the cost for stormwater management improvements citywide are well over a billion dollars. So how does the city pay for stormwater since improvements are not all paid for by grants from other agencies? In simple terms, fees. Hollywood, just like our City, has a Stormwater Fee. Their rate went from 10.62 per equivalent unity to $22.00 dollars this year. This fee is the base for single families. Other properties classes their fee is calculated based on property square footage applied to the equivalent rate.
Hallandale has been doing major water and wastewater projects. These have been time based on the project plans. Obviously, we are doing some projects, but we cannot do them all at the same time. We do not need all the money upfront, so this afforded us the ability to phase in the rates. Increases are being phased up to 2028. The percentage increase overall will be 28.75 % for water, 21.50% for wastewater and 30% for stormwater.
I always like to say percentages always matter but sound extremely high in relation to the actual dollar. For example, the dollar changes for Water and Sewer this year on the base rates went from 38.91 to 42.02 and 25.33 to 26.72, respectively. For stormwater we also have increased the rate by 10% annually. This year it went from $9.81 Dollars to $10.79 Dollars. This fee accounts for our operation and main-
tenance costs as well as other improvements.
One project that is listed on the current project is the Northeast Drainage between 12th and 10th. We put $10 Million into the plan but know that the project will cost more once we have the final concept and design. We agreed to ask for the State Grant that made it to the Governor’s desk only to be cut. It does not mean we will not do it, it just means it is not fully funded.
This is why we need a new study and plan. The new plan like Hollywood’s will need to include not just drainage pumps but seawalls and other Infrastructure improvements to address the new normal created by Sea Level Rise and Climate Change.
The Infrastructure Plan we are working on is already $300 Million. I have started to make sure we as a commission realistically discuss and prepare our residents for this critical issue. It will take time to create a strategic plan; cost estimates that are just not projected but include the economic reality of increases of goods and service over time and multiple tiered approach to funding.

Could Shorten Our Lifespans
The federal government is on the brink of reversing a century of medical progress for older adults. As a social scientist, it’s not often that I weigh in on medical policy. But as President of the American Society on Aging, which represents more than 5,000 professionals working with and on behalf of older adults, what I’m seeing alarms me.
Senior officials within the current administration are tacitly encouraging vaccine skepticism -- and it’s jeopardizing the health of our rapidly aging population and undermining the longevity gains we’ve spent decades building.
If we continue down this path, older people today, as well as their children and grandchildren, could live shorter, sicker lives than those who came before them.
In 45% of counties nationwide, older adults now outnumber children. Millions rely on caregivers and community health workers who enter their homes and assist with daily living.
That makes vaccine policy not just a political debate, but a matter of life or death.
Yet the federal government is actively eroding the public’s trust in, and access to, vaccines.
The administration recently irresponsibly fired every member of the Advisory Committee on Immunization Practices, functionally throwing away decades of institutional knowledge that guided vaccine recommendations.
Meanwhile, budget cuts at the Centers for Disease Control and Prevention and Food and Drug Administration threaten to delay research and approval for vaccines tailored to aging bodies, like those targeting RSV, Shingles and Pneumococcal infections.
That could leave older people vulnerable to new viral strains and unable to access the preven tive care so many have counted on their whole lives.
The danger doesn’t end with today’s older adults. Today’s unvaccinated children are tomor
row’s elders. Take Measles, for instance. Thanks to a widespread immunization campaign, the United States eradicated measles in 2000. Now cases are soaring as vaccination rates drop.
Downplaying the severity of the infection is dangerous. Secretary of Health and Human Services Robert F. Kennedy Jr. recently claimed that measles infection provides lifelong protection in a way that vaccines don’t.
Research shows that’s not true.
Scientists have discovered that measles causes “immune amnesia” -- potentially wiping out more than 70% of a child’s antibody defenses against other diseases.
Children who survive measles become far more vulnerable to other infections for years afterward. More broadly, a growing body of evidence shows that access to preventive care in childhood, including immunizations, lowers the risk of chronic illness and disability in later life.
Childhood vaccinations don’t just prevent infections. They are a building block for healthy aging. Skipping them early on may set people up for greater impairments and shorter lifespans decades down the road.
These policy changes are also taking a personal toll on older people and caregivers, who are experiencing growing anxiety and confusion. A free, effective shot used to be something they could count on.
For the past century, vaccines have made it increasingly possible for Americans to reach old age and experience longevity. To throw that away now, during the greatest aging boom in our history, would be shortsighted and tragic.
We need clear, science-driven vaccine guidelines, robust funding for immunization research and public messaging that builds trust instead of fear.
