Raspberry Lemon Cheesecake in a Jar

• 1 pkg. Rockin’ Raspberry Cheesecake Dip & Dessert Mix • 8 oz. (250 g) cream cheese, softened • 3 cups Cool Whip • Zest from 1 lemon • 2 cups fresh raspberries • 2 cups graham crackers, crushed • 4 (250 mL) mason jars Combine the Rockin’ Raspberry Cheesecake Dip & Dessert Mix with cream cheese and lemon zest until smooth. Rustico Meatball Skewers

Roasted Seasoned Cauliflower

• 1 small onion, peeled and coarsely chopped • 1 1/2 lbs. (680 g) ground beef • 1/4 lb. (114 g) ground pork • 1 cup dried bread crumbs • 1 egg • 3 Tbsp. Italian Rustico Seasoning Blend • 1 tsp. salt • 1/2 tsp. pepper

• 1 head of cauliflower, cut into florets • 3 to 4 Tbsp. olive oil • ¼ teaspoon Himalayan Pink Salt • Your choice of Sunset Gourmet Seasoning: • 2-3 Tbsp. Italian Rustico Seasoning Blend • 1-2 Tbsp. Nashville Hot Chicken Seasoning Blend • 1-2 Tbsp. Applewood Chipotle Rub & Seasoning • ¾ cup Parmesan cheese, finely grated

Place chopped onion in food processor or blender and pulse to form a coarse puree. Measure out ½ cup and place in large mixing bowl with all other ingredients.

Mix until well combined. Form into small balls about 1" across. Place meatballs on water soaked skewers and bake in a 350°F oven for 15-20 minutes or until internal temperature is about 160ºF. Serve warm with our Asiago Cheese & Spinach Dip.

Preheat oven to 425°F. Place oil in a large bowl and add salt and the seasoning of your choosing. Stir to combine, then add cauliflower. Toss until ingredients are evenly distributed and cauliflower is lightly coated. Arrange cauliflower in an even layer on a parchment lined baking sheet and bake for 15 minutes. Remove from oven, toss cauliflower, then sprinkle with Parmesan cheese, continue baking until it’s deeply golden on the edges, about 10 to 20 minutes more.

Coat chicken with oil and sprinkle with Applewood Chipotle Rub & Seasoning.

Massage the seasoning into the chicken and refrigerate for several hours; remove Beef Tenderloin Steak 15 minutes prior to cooking.

Prepare one side of the BBQ for high heat. Sear chicken on hot side of the BBQ for 10 minutes. Turn pieces over Chicken Quesadillas and move to the cooler side of the grill. Reduce temperate to medium/low. Roast with lid closed for 15 to 20 minutes.
