Pumpkin Spice Loaf

• 1 pkg. Pumpkin Spice Quick Bread Mix • 1 cup pure pumpkin • ½ cup oil • 3 eggs • ¾ cup chocolate chips Preheat oven to 350°F. Grease 9" x 5" loaf pan.

In a large mixing bowl blend together pumpkin, oil and eggs. Add bread mix and stir until well blended, about 1 minute; add chocolate chips and stir to distribute evenly. Spoon batter into loaf pan and bake for 50-60 minutes. Remove from pan and let cool before slicing.

Born with kidney issues, we have spent a lot of the last two years in and out of Children’s Hospital and I have been unable to return to my day job as he requires round the clock care.

If there is one thing that this little man has taught me, it is that I need to be more present for my children, every day.

RUSTIC BUTTERY CHICKEN • 1 Tbsp. Italian Rustico Seasoning Blend • 1/2 cup melted butter • 1 1/2 - 2 cups seasoned dry breadcrumbs • Salt & pepper • 4 boneless, skinless chicken breasts • 1 lemon, optional Combine first 2 ingredients; pour into a shallow bowl.

Place breadcrumbs, salt and pepper in a separate shallow bowl. Dip chicken pieces in butter mixture and then into crumbs, coating completely. Place chicken on a greased baking sheet; drizzle with remaining butter mixture. Bake at 375°F for 25- 30 minutes or until chicken is no longer pink in the middle. Top with a squeeze of fresh lemon if so desired.
