F

rom the moment you meet Brian and Lynn Pedgrift, they make you feel like family. The first time we met, I was greeted with warm hugs and a smile. After hearing their English accent, my memories came flooding back to the Ideal Living Show where I first met them. It was Fall 2018 and the show had a buzz. They seemed very energetic about beginning the next chapter in their lives.

Fast forward to Winter 2019. I ring the door bell and again, I’m greeted with warm hugs and a smile as they welcome me into their new home at Summerhouse.

We sit down at the kitchen island and pick up where we left off.

Brian and Lynn tell me how they met— and the story is as much fun as they are.

It all started with an aerobics class.

Brian, an organic chemist, worked for a pharmaceutical company. He adds that his company offered exercise classes on site for its employees but grins when he says it had a bar, too! Lynn, the aerobics instructor, taught his class. It started out with just a few classes a week. Soon, Lynn was teaching over 20 classes.

You could say, the rest is history. The coupled married in August of 2000.

When you look around Brian and Lynn’s house, built by Streamline Developers, you see portraits of their beautiful daughters, Victoria 35 and Domini 33. On the shiplap fireplace, lifelike paintings of Rupert and Nikki stand out (their beloved dogs who passed away).

“Having the model homes to walk through helped with the decision and only being 10 minutes from the beach was huge,” Brian says.

“I can’t wait for it to rain. I’m going to sit under my covered porch and just listen to it,” Lynn says with a breath of relaxation. They both admit, the clubhouse and the pool sold them on Summerhouse. They visited several times before making their final decision.

“Having the model homes to walk through helped with the decision and only being 10 minutes from the beach was huge,” Brian explains.

“We visited several communities from Florida to North Carolina and when we discovered Summerhouse, Topsail Island, and 10 minutes to toes in the sand, our search was over!”

Summerhouse was the perfect fit for them.

FINDING BLACKBEARD’S TREASURE WE HERE at Summerhouse know a good thing when we find it.

So it’s no surprise to us that Topsail Island has a long history of holding the treasure men seek...

It’s been three centuries since Blackbeard the pirate (also known as Edward Thatch), roamed the waterways and islands of our coastal North Carolina home.

And though Blackbeard wrought havoc all along the east coast, as far south as the Caribbean, his swashbuckling tales have become a part of our North Carolina history that we treasure.

In 1996, Blackbeard’s flagship, Queen Anne’s Revenge, was discovered in the waters of the Beaufort Inlet (just north of us here at Summerhouse).

A historical treasure trove, it is property of the state of North Carolina. But despite its historic allure, it held none of Blackbeard’s ill-gotten gold and riches.

TOPSAIL TURVY: The Topsail area was a frequent stop for Blackbeard and his crew. Port City Daily talked with Chris Rackley, local history buff and President of Lewis Realty in Surf City, to learn more about the pirate and how Topsail got its name.

“According to Rackley, local legend tells that Blackbeard once frequented the area around the Cape Fear area, even taking pirate Stede Bonnet, aka “The Gentleman Pirate,” who had some knowledge of local waters, under his wing.

Rackley says that it is rumored the pirates would stop over in Topsail Island between their trips to the Caribbean, to pillage and plunder passing ships in the busy colonial trade routes.

The name Topsail, it is said, comes from the “top sails,” of pirate ships that merchant vessels would watch for when passing by the island.

“Legend says that merchant ships would come by, and look for the sails hidden behind the dunes,” Rackley said. “Then the pirates ships would cruise out, do their thing, pillage, plunder, and go home.

That’s how the island got its name.”

Although Rackley says that the name actually comes from the area around Beaufort Inlet, which was historically called Topsail Inlet, it’s fitting for the history of pirate activity in the Cape Fear.”

THE REAL TREASURE: So where did all that treasure go? Many locals think that the south end of the island is a likely hiding place for Blackbeard’s stash. And while tales of ghost ships, long lost pirate gold are still going strong around these parts, we can’t help but think that Blackbeard for all his cunning may have missed the most valuable treasure of all—the incredibly gorgeous shores of Topsail that glisten like diamonds. We feel awfully lucky to live in this pirate’s paradise.

SHRIMP & GRITS

COOKI NG I NSTRUCTIONS:

Bring chicken stock to a boil. Add grits. Cook for 18 minutes.

Stir often as mixture cooks.

Fry your chopped up bacon in a pan till done but still tender. Add in shallots and garlic and keep cooking for 3 more minutes—ahhh— smell that aroma! Spoon the bacon mixture out of pan. Reduce the pan’s heat to low and keep that bacon grease warm. Good things are comin’...

Add the cream cheese and butter to the grits and turn it down to low. Stir till it’s creamy and well mixed. Add salt and pepper, then your bacon/garlic/shallots mixture. Mix it all in and let it sit for about 8 minutes, covered.

Turn up your bacon grease pan to medium/high. Once up to temperature, add the shrimp. Sprinkle in the paprika, salt and pepper and cook for about 3 minutes, stirring constantly.

Prep Time 25 Minutes Cook Time 30 Minutes Serves 4 people IN G R EDIEN TS: 1 cup stone-ground grits 4 oz cream cheese 36 oz (4 1/2 cups) chicken stock 8 strips of bacon, cut into 1” segments 3 small shallots, chopped 2 lbs jumbo shrimp peeled 3 tablespoons butter 1 garlic clove, chopped 1 /2 teaspoon paprika 1 green onion, chopped Pinch of black pepper Sea salt to taste

Fill

bowls with grits. Then, scoop the cooked shrimp on top each bowl. Drizzle a little of the bacon pan grease for some extra Southern flavor!

TIP: We say this is ‘four servings’ but if they’re really hungry and you do a really great job preparing it, you might just run out!
