Oh, those wonderful crabs Judging from the photos I took during the past month or so, the theme for this edition of Suffolk Living magazine should be crabs but actually, the theme is “water,” the second of the four elements from ancient philosophy, following “Earth,” which we featured last edition.

You’ll read plenty about Suffolk’s waterways in this edition. Perhaps the most important of those stories is one that’s long overdue about the vital work being done by a volunteer, nonprofit organization looking to help improve the health of the city’s waterways. The Nansemond River Preservation Alliance has been on the scene since 2009 to help educate people about what we’ve lost by allowing the river and its tributary streams to become polluted. Even more important is the work the NRPA is doing to clean up those waterways and to teach the next generation to keep them clean. Take a look at that work on pages 32-34.

As I said, I shot a lot of crabs preparing this edition. They figured prominently in the photos I took for the NRPA feature, and they took center stage during a visit to Johnson and Sons Seafood in Eclipse. The Johnsons are well known for the crabs they harvest, but this time of year they are after a specialty that folks in the know are willing to get in line to enjoy — soft shell crabs. I visited Ben Johnson on the second day of soft shell season to learn a little more about this traditional Virginia delicacy. I learned a surprising secret that you’ll find in that feature on pages 18-19.

Continuing the water theme, we visit Lone Star Lakes Park in this edition for a look at one of Suffolk’s best little secrets. Whether you’re looking for a great place to do a little lake fishing, a chance to take a run without worrying about passing traffic or an opportunity to see bald eagles, deer, turtles and other wildlife, Lone Star has the answer. It’s Suffolk’s quiet, get-back-tonature park, and you should take some time to get to know it on pages 28-30.

Once you’ve burned some calories at Lone Star, you might be in the mood to reward yourself. The good news is there are plenty of wonderful restaurants in Suffolk that are eager to help. The great news is that some of those restaurants have even figured out how to take the calories out of dessert, so the rewards can be great, indeed. Take a look at how the winners of the Healthy Dessert Contest worked their magic on pages 22-25.

Nothing soothes the headache of a long work week quite like sitting on the grass of a waterside park and listening to some rockin’ live music while the stars come out a fine summer evening.

A

$50 million expansion of Target’s Suffolk distribution center will bring at least 168 new jobs to the city, it was announced in late April.

“I am thrilled to announce Target Corporation’s significant investment in the city of Suffolk,” Gov. Terry McAuliffe stated in a news release about the expansion. “Target’s expansion is a testament to the commonwealth’s assets, including a strong workforce, pro-business climate, and access to global markets via the Port of Virginia.”

The press release stated the expansion would create “hundreds of new jobs.” Eddie Baeb, a Target spokesman, said the hiring plan is still in development but the company plans to “create a minimum of 168 new jobs.”

“We don’t have exact numbers beyond that,” he added, explaining that the 168 figure represents the minimum number of new employees that would qualify Target for certain government grants it expects for the project.

Suffolk City Manager Selena Cuffee-Glenn said it could be up to 700 jobs.

Baeb said the Suffolk location, which opened in 2003, is important logistically for the company to get products to its stores.

“Clearly, this is a great location for distributing and for getting things from nearby ports,” he said.

The footprint of the current building on Manning Bridge Road will not grow, Baeb said, as all of the construction will be on the interior. No down time is expected for the facility or its employees, he added.

“We’re just really ecstatic that they chose to expand here in Suffolk, when there were a number of different distribution centers that were under consideration,” said Kevin Hughes, economic development director for the city.

Hughes said the city will provide an Economic Development Investment Program grant of $400,000, based on the estimated $40 million taxable amount of the announced expansion.

“We don’t just see Target as a major employer in Suffolk, but as an ally and stakeholder in our city’s future,” Mayor Linda T. Johnson stated in the governor’s release.

In addition to the grant from Suffolk, Target will receive benefits from the Port of Virginia’s Infrastructure Development Zone Grant Program.

The Virginia Jobs Investment Program also will provide funding and services to support the company’s employee training program.

“This announcement and Target’s investment in Suffolk and the commonwealth will provide hundreds of new jobs for Virginians,” Delegate Chris Jones stated in the release. “Target is a good corporate citizen that makes valuable contributions to the communities it serves.” ←

Soft shell crabs offer a seasonal delight story and photography by R.E. Spears III

T

here’s something special about the month of May in coastal Virginia, and it has nothing to do with dogwoods or azaleas.

As the waters warm in the Chesapeake Bay and the tidal rivers that feed it, a grand awakening begins, followed by an even grander transformation. The awakening happens below the surface and goes largely unseen, but Ben Johnson and the other employees of Johnson and Sons Seafood in Eclipse will see the transformation take place thousands of times between now and November.

With the water temperature topping 50 degrees now — and likely to stay that way until sometime in November — Virginia’s blue crabs are awake, moving about and growing.

It’s the growing part that Johnson gets to watch.

He has thoughtfully placed crab pots in the James River, and for crabs losing their hard shells in the molting process, those wire enclosures appear to offer excellent protection from predators for the duration of the molt. The safety is, of course, an illusion, as Johnson checks the traps daily, hauling in hundreds of peeler crabs per day during the peak of the season.

Those crabs are hauled to the Johnsons’ dock in Eclipse, and they’re unloaded into tanks, where the water is continuously recycled from adjacent Chuckatuck Creek. For the next six months, someone will be watching these tanks almost 24 hours a day, waiting for the crabs to back out of their hard shells and transform into one of Virginia’s most eagerly anticipated seasonal delicacies: the soft shell crab.

says, looking over the operation inside a dockside building strung with bare-bulbed lights and lined with 28 tanks stacked more than six feet high. On the second day of soft shell season, only about a third of those tanks are running.

“When things are full, it’s pretty much constant” work for whoever is on duty moving “busters” — those crabs whose shells have cracked and started to slough off — from the peeler tanks and into safer ones where they won’t be hurt, and then moving the soft shells from the tanks and into a cold room to await shipping to a distributor or dockside purchase by individuals and restaurants willing to pick the crabs up themselves.

For all his hard work, Johnson doesn’t even eat soft shell crabs. After having enjoyed them all his life, he had some at dinner one evening several years ago and awoke that night with hives. A year or so later, he tried again, and the hives returned, but worse.

“I can eat crab cakes, crab meat — all that stuff,” he says. But not soft shells, the crabs he works hardest to harvest. “The only thing I can think is it’s something in the shell.”

Actually, for those folks in Tidewater who love crabs and suffer no allergic reactions, it’s well known that Virginia’s blue crabs are, indeed, something in the shell. But the secret that even some crab lovers haven’t discovered is that blue crabs are something wonderful out of the shell. ←

T

he very title of the Healthy Dessert Contest sounds oxymoronic. But it’s actually very, very tasty.

Presented by Healthy People Healthy Suffolk, the goal of the contest is to “make the healthy choice the easy choice.” If a healthy dessert is on the menu, the thinking goes, most people will choose it.

The desserts in the spring contest among participating Suffolk restaurants had to adhere to strict rules: fewer than 250 calories, with less than 30 percent of those calories from fat and less than 60 percent from carbohydrates.

This year’s judges were last year’s winners: Harper Bradshaw of Harper’s Table, Jose Perez of Cedar Point Country Club and Melinda Powers of Suffolk BBQ Co. There was prize money at stake, too. Each winning chef, profiled in the coming pages, earned a cash prize.

The contest was presented by Healthy People Healthy Suffolk and sponsored by the Obici Healthcare Foundation, Love Local Buy Suffolk, Stop Diabetes, the Suffolk News-Herald, Suffolk Partnership for a Healthy Community and Suffolk Tourism.

‘A roller coaster ride’ People’s Choice Award

At first, it didn’t look like Aaron Spring’s creation for the 2015 Healthy Dessert Contest was going to go over very well.

“It was a hard sell at first,” the Mosaic chef said of his Ginger Agave Panna Cotta. But then, “every single one of them that had it loved it.”

So much so, in fact, that they all voted for it to win the People’s Choice Award in the Suffolk Partnership for a Healthy Community’s contest.

Italian for “cooked cream,” panna cotta is what Spring likes to call an “eggless custard.” Flavored with ginger and topped with agave, a basil salad and grilled oranges, the dessert clocked in at fewer than 100 calories per serving.

Spring said his main motivation for the dessert was using local ingredients and making something home chefs can easily

replicate.

But the panna cotta wasn’t his first try. There was a lot of trial and error to figure out what he was going to make, Spring said. It included a sweet potato tamale.

“I just couldn’t get it to work and be under the calorie content,” he said of the tamale. “It was fun to do it. I loved the challenge of it.”

After serving in the U.S. Army for three years as a chef, most of that time in Korea, Spring enjoys cooking smaller portions.

But he still wants it to be exciting for the people who eat his creations.

“I want to take you on a roller coaster ride,” he said. “I want you to not expect it but be thrilled with what you get.”

The panna cotta was a perfect example of that, he said.

“It’s not overly sweet for a dessert,” he said. “So it’s surprising and fulfilling, but without having a sweet ending.”

Judge’s Choice Award

Having grown up on a 16-acre farm in Danville, Kenny Reynolds draws a lot of his inspiration in the kitchen from his grandmother and his mother, who is a pastry chef.

His mom is also diabetic, and that influences his cooking at Vintage Tavern.

“I try to make lots of low-cal desserts or low-carb desserts,” Reynolds said.

So the 2015 Healthy Dessert Contest was old hat to him, and it showed. He won the Judge’s Choice Award in the Suffolk Partnership for a Healthy Community contest.

“I don’t like my desserts to be supersweet,” he said. But at the same time, he said, he likes to “have fun with dessert.”

That resulted in his Whoopee Pie creation.

The pie used whole-wheat pastry flour instead of all-purpose flour and canola oil instead of butter to make it meet the calorie specifications for the contest. It also used a little bit of fruit sorbet to sweeten the deal.

That’s where his grandmother came into the picture. She used to pickle and can everything under the sun, including berries. Reynolds had some of last year’s berries available, because they’d been canned for use at Vintage Tavern.

“Nothing’s really growing out of the ground quite yet,” he said, noting he wouldn’t have had local berries available for use were it not for the canning.

Reynolds said he was pleased to win the Judge’s Choice Award in the contest.

“Seeing their reaction was great, having somebody in the industry respect what you did,” he said.

‘Something I’m passionate about’ Presentation Award

For someone who’s “not a big chocolate fan,” Brianca Wolfrey sure does use a lot of it in the dessert she created for the 2015 Healthy Dessert Contest.

The beautifully created dessert by River Stone Chophouse’s pastry chef won the Presentation Award from the judges. Wolfrey came up with a chocolate meringue piped into a champagne flute and topped with toasted hazelnuts and raspberries — all for only 202 calories per serving.

The only problem is that, at the end of the dessert, there’s still half a spoonful of chocolate meringue at the bottom of the glass that the spoon is too wide to reach.

Wolfrey got the idea from a cooking show where they were featuring healthy desserts, but the recipe didn’t quite meet the contest’s definition of healthy. She tinkered with the ingredients until she got it under 250 calories.

The meringue is made from the usual egg whites, cream of tartar, sugar, salt and vanilla extract, along with a generous helping of cocoa powder.

Wolfrey says she cooked to help calm herself during stressful times at Elizabeth City State University, where she majored in biology.

She was studying to become a pediatrician but soon discovered she really wanted to cook for a living.

“It’s something I’m passionate about,” she said. “I think everybody should find their passion.”

The Gates County, N.C., native grew up on soul food but has learned to cook and eat many different things.

“When I went to culinary school, it opened my eyes to different things,” she said. She especially likes Italian, Asian and Indian food.

She has to watch what she eats closely, though, since she is allergic to peanuts and strawberries. She still cooks with them, though, when others are eating it.

“I try to connect with my food,” she said. “Especially when I can’t taste it, I feel my way through it.”

Her ultimate goal is to have her own restaurant, she said. Perhaps the chocolate meringue will be on the menu there.

Lone Star Lakes is ‘where Tidewater ends’ story by Matthew A. Ward photography by R.E. Spears III

A

n asteroid impact 35 million years ago that formed the Chesapeake Bay also helped reveal one of North Suffolk’s best kept secrets.

Bradford “Biff ” and Susan Andrews, retired school teachers turned Virginia Master Naturalists, are two of the relatively few who are in on the secret of Lone Star Lakes Park.

Once a week or so, they arrive in their Honda Civic to explore the 11 lakes, Chuckatuck Creek, Cedar Creek and the surrounding landscape.

Nature has reclaimed Lone Star after marl mining created its lakes, in turn after colonial expansion pushed the Nansemond Indians out of what was their homeland.

The miners came in the early 20th century, digging out the calcium carbonate (formed from the remains of marine animals) mixed

with sand and clay. It made for superior cement, Biff Andrews notes.

“The main road was the old railroad track,” he says, referring the road passing beneath Kings Highway just past the Chuckatuck Volunteer Fire Department.

Miners crushed the marl on site, loaded it onto barges and floated it down the creek to the James River and on to Newport News.

The city purchased the property in the 1970s after the mining creased in the 1960s, according to Biff Andrews. Today it’s a haven and a playground for canoeists and kayakers, fishermen, horse folks, model airplane enthusiasts, archers and more.

Susan Andrews and her husband “Biff” like to walk along the road and trails at Lone Star Lakes at least once a week. There are many places to sit down and enjoy the views, like this bench at Crane Lake.

Of course, there are also those who just get a big kick out of the wonders of nature — like Susan and Biff Andrews.

“We simply look at what there is to see,” Biff Andrews says during a visit to the park one sunny April morning. “I bet you didn’t know we discovered a dead two-toed amphiuma salamander. It was two feet long.”

“We are in awe of it all,” Susan Andrews says. “I think that is the big part for me.”

Back to the geology lesson, recounted in the Chuckatuck Greater Historical Foundation’s 2011 book, “Chuckatuck: Crossroads in Time,” and also by Susan and Biff.

The asteroid struck near Cape Charles, the fracture extending as far west as Chuckatuck, where it coincided with the Suffolk Scarp.

Evidence — the marl perhaps chief among it — shows Lone Star was once well east of the Atlantic shoreline. But it’s now about 25 feet above sea level.

Lone Star is where Tidewater ends, Biff Andrews says, adding, “East of here, it’s all salt marsh.”

“Literally, you can draw a line on a map and say, ‘This is where Tidewater ends, and the coastal plain begins,’” he says. “And we are just lucky enough to live here.”

Now Biff Andrews is leaning down to point out a chunk of marl. “You can tell this was once the sea bottom,” he says.

Next, they point out a green heron. “They are the last of the herons to get here in the spring,” Biff Andrews says.

Pretty soon, they spot a blue heron on one of the lakes, and now they’re pointing out what look to be raccoon tracks in the mud.

Biff Andrews and J.R. Ruggiero, the park ranger for almost 15 years, who has also come to show off Lone Star’s charms, are puzzling over a tree. Ruggiero identifies it as a honeysuckle, but it looks different than honeysuckles Andrews has seen.

There’s always something to learn at the lakes.

Ruggiero says the lake water is “very, very clean.” The lakes have a combined surface area of about 500 acres, he says, and the total park stretches across 1,094 acres.

“What’s great to me — J.R. is so proud of it,” Susan Andrews says.

Ruggiero says, “It’s one of Suffolk’s best-kept secrets, because many people who have lived here many, many years don’t know Lone Star exists.”

The park sees 22,000 to 30,000 visitors annually, he says, and is open daily from sunrise until sunset, except in inclement weather. ←

T

he Nansemond River is in trouble.

Bacteria levels have resulted in the closure of huge portions of both the Upper and Lower Nansemond to shellfish harvesting, and its tributaries — Bennett’s, Bleakhorn and Knott’s creeks — are under a similar condemnation order by the Virginia Department of Health. Phosphorous levels far exceed the point at which algae blooms can grow, and water clarity is poor.

But the river has an advocate now in the Nansemond River Preservation Alliance, and those who love the Nansemond — and, by extension, Suffolk’s other waterways — now have reason to hope things will improve.

In fact, the NRPA, founded in 2009 by a group of 14 citizens who lived alongside or had interests in the river, is the reason anybody even knows the extent of the waterways’ pollution problems.

To folks just passing over one of Suffolk’s bridges, “it doesn’t look condemned to people, and that’s the problem,” says John Wass, NRPA’s treasurer and cochairman of some of its committees.

But the organization has been conducting tests along the river for a couple of years now, and the work of its more than 200 volunteers has helped identify the true state of the waterway, as described most recently in its “2014 State of the Nansemond River and Its Tributaries Report,” which contains results and analysis of two years worth of water sampling data.

“The river reflects the quality of life here in Suffolk,” says Executive Director Elizabeth Taraski, sitting at a conference table in the alliance’s one-room office in the C.E. & H. Ruritan Club building in Eclipse. The room is cluttered with river maps and surveys, photos and artwork depicting life in this waterfront community and cabinets filled with educational and testing equipment.

“Everyone wants healthy waterways,” Taraski says.

The problem is that it’s easier to get unhealthy waterways, and once they’ve been polluted, it’s very hard — maybe even impossible — to restore them to full health.

When the dam was built that created Lake Meade at the head of the Nansemond, for example, nobody realized one effect would be to reduce the flow of the river and thereby limit the Nansemond’s ability to flush out pollutants, so animal and pet waste, faulty septic systems and the hard-to-pinpoint “non-point source” pollutants that wind up in the waterway are not as readily cleared as they

were before the dam was built. And when heavy rainfall from hurricanes, nor’easters and other weather events gets added to the mix, things can go from bad to worse, Taraski explains.

So a big part of cleaning up the Nansemond is working to reduce the potential impact of those non-point source contaminants. That means diligently enforcing septic tank cleanout and shoreline encroachment regulations, cutting back on the use of fertilizers, picking up and disposing of pet waste and making sure the only thing that goes into storm drains is rainwater.

Accomplishing those goals requires educating the public about the goals and what can be done to achieve them, and that education is a big part of NRPA’s mission.

CHILD LABOR: Adolescent spinners in the Suffolk Knitting Mills were photographed in June 1911 by Lewis Hine, who documented the working and living conditions of children in the U.S. for the National Child Labor Committee between 1908 and 1924.
