The Melbourne-born retailer joins The Calile Hotel’s precinct as Vanessa Spencer brings her signature edge to Brisbane.

James Street has become Brisbane’s go-to shopping precinct, where global names meet local visionaries and every store is well considered. With each new opening, the street continues to grow, reflecting Brisbane’s increasingly sophisticated fashion landscape.

The latest name that joins the line-up is The New Trend (TNT), one of Australia’s leading multibrand retailers, opening its first Brisbane boutique at The Calile Hotel. Known for its curation of international designers and homegrown labels, TNT brings a fresh perspective to the precinct and a new way to shop for elevated, everyday style.

For co-founder and brand director, Vanessa Spencer, Brisbane has been on the radar for some time.

“We’ve had our eye on James Street for years, but it never quite felt right,” she says. “When the site at The Calile Hotel became available, it was the perfect fit. Brisbane has such an incredible energy right now — the customer is curious and craving something new. The Malouf family has curated a precinct that feels considered and special, so it made complete sense for TNT to finally call it home.”

Fashion has always been Vanessa’s world. After her formative years in New York at a leading retailer, she returned to Melbourne with a vision to fill a gap in the market. “Where was the excitement, the curation, the personal relationships? I wanted to create a space that felt both inspiring and intimate — like stepping into your best friend’s wardrobe, where every piece feels carefully considered.” she shares.

“That vision became The New Trend. Eight years on, we’ve grown into a national business with boutiques in Melbourne, Sydney, and now Brisbane.”

Each boutique has its own personality, shaped by the city it calls home. Brisbane’s design reflects its subtropical surroundings while staying true to TNT’s signature style.

“Sophisticated, modern, and warm,” Vanessa describes. “We designed the space with Queensland in mind — natural textures, organic forms, and local makers — while keeping it elevated and understated, more than just a traditional retail space.”

To bring the vision to life, TNT worked with top Australian creatives, collaborating with Melbourne design trio AKI Interior Design Studio, who understood their aesthetic from the very start.

A bespoke architectural piece by artist Simone Tops anchors the store, custom lighting by Sarah Nedovic makes a subtle statement, and every element brings authenticity and soul to the boutique.

Inside, the racks tell their own story. WARDROBE.NYC, Coperni, and Cult Gaia sit alongside Australian and New Zealand powerhouses like Christopher Esber and Harris Tapper.

“We’ve also got some exciting new brands making their debut here,” Vanessa says. “We can’t wait to introduce them to our Brisbane client.”

The edit is tailored to the relaxed lifestyle — light, airy, and versatile. “Lighter layers, resort-inspired silhouettes, and pieces that move effortlessly from day to night. But we’ve also brought a little Melbourne sensibility in the styling, balanced with Brisbane flair.”

For Vanessa, curating an edit is an art form. “It always starts with instinct,” she says. “We think about how each piece fits within the season’s colour story, how it works back with other brands, and how she’ll wear it in real life. Fabric and hand feel are so important, as are finishing details.

“We don’t just want trend-driven pieces that disappear in a season, we look for products with longevity and intention.”

This combination of curation and connection is what sets TNT apart.

“We want it to feel welcoming and effortless,” Vanessa shares. “Yes, it’s about the edit, but just as important is the human side — the warmth of the team, the genuine conversations, and the feeling that someone understands you and your style.”

The TNT client is a modern woman with a love of individuality. Confident, curious, with a strong sense of her own style, she values quality and longevity but isn’t afraid to have fun with fashion. Just like TNT, she’s evolved — her wardrobe more refined, more intentional, but always with that spark of individuality.

Looking ahead, Vanessa’s passion lies in supporting both local and global talent.

“Giving local designers a platform while bringing international powerhouses to our clients excites us most,” she says. “It’s about offering discovery and familiarity in one space, within an edit that feels modern, thoughtful, and uniquely TNT.”

When asked to sum up the new boutique in a drink, Vanessa labels it as a French 75. “Sophisticated and sparkling, with the brightness of citrus that feels perfectly at home in Brisbane’s sunshine. Refined and timeless, yet light and playful — exactly the balance we wanted for this space.”

Mia Elizabeth’s earliest memories of fashion take her back to her childhood in Ibiza. “For a few years, we lived in a hotel where my dad was the general manager, and every day I would watch glamorous women and men in their resort wear and effortlessly cool street style,” she recalls.

By 17, Mia was already working in the industry. While still in Year 12, she began styling work before moving into retail with SABA and later David Jones, where she immersed herself in the world of labels, designers, and the thrill of watching each new collection arrive. Her passion led her to study photography at TAFE, followed by Styling and Creative Direction at the Whitehouse Institute of Design in Melbourne and Sydney. With a Bachelor of Design under her belt, she broadened her horizons in Los Angeles, styling for international brands and clients, and even a few celebrities.

Returning to Brisbane, Mia freelanced while dedicating over six years to Suited to Success, a not-for-profit helping disadvantaged women re-enter the workforce with confidence.

Her own style, she describes as “feminine, always polished, and thoughtfully put together with the day’s weather and tasks in mind.” Professionally, however, her approach always centres on the individual. “First, we identify body shape, colouring, and best features, exploring how to dress in a way that flatters their shape and highlights what they love most

about themselves,” she explains. “We define their personal style using three to four key words that act as a guide for future wardrobe choices.” Doing this, she says, helps to guide each client’s signature style.

At Westfield Chermside, Mia makes styling sessions feel like a pampering experience. Before the session begins, she has a call with her clients to put them at ease. From there, it’s the little touches – complimentary valet parking and coffee – that set the tone for the day. “Shopping should be enjoyable, not overwhelming,” she says. “Once we uncover your signature style, the whole process becomes exciting and empowering.”

Beyond the thoughtful extras, what really stands out is Mia’s ability to create a calm, supportive environment where clients feel both understood and celebrated. Styling isn’t just about finding the right clothes; it’s about building confidence and helping people see themselves in a new light. And luckily, Mia is there to guide, encourage, and inspire every step of the way.

“The experience is seamless because I’ve already done the groundwork: I plan the store visits, communicate with retail staff ahead of time and during the session, and curate the pieces they’ll try. All they have to do is show up, enjoy the process, and explore new styles that truly reflect who they are.”

As a die-hard fashion fanatic, there was never another career for Johnston but one in the fashion industry. It’s her passion – a passion that bounces from wall to wall in her studio, emanating from the careful organisation of her samples, through to the affection she shows her three beloved sewing machines, named Janet, Mo, and Paloma. A pocket-rocket in stature and demeanour, Johnston is a perfect match for her whimsical, bubbly designs. Her face lights up as she details the musical muses who inspire her textiles – songs like “Aquamarine” by Addison Rae and “Dance The Night” by Dua Lipa, just to name a few.

Johnston’s self-defined “dopaminewear” was born out of a struggle to find pieces that matched her energy. It’s a celebration of fun, nostalgia, and individuality – something Johnston didn’t always embrace growing up. She uses colour in her work now as a way to be seen. She says, “I felt pushed to the side growing up… so using a lot of colour in my work is a way for me to take control and stand out confidently in adulthood.” Nowadays, Johnston is never one to shy away from a bold outfit, the owner of an eccentric personal wardrobe which has garnered her a buzzing social platform. How does she craft her signature style? “I always start with something that makes me happy… it’s about having pieces that make you feel alive.”

Welcoming us to tour her Hemmant studio, content creator, designer, and textile maker, Rachel Johnston, invites us into the world of her independent label eeyo – a world of vibrant colour and effervescent energy.

She is an era of ‘leaning in,’ finding her flow in her whimsical prints, not afraid to stay in her own lane, and even branching out to homewares. As she continues to guide us through the space where the eeyo magic happens – brown paper patterns meticulously laid out, rolls of brilliant textiles patiently sitting on her table – we come to a framed Style Issue from 2022 sitting proudly on the wall. We talk about what has changed since her last visit to the pages of Style. She says she’s done some growing up in these years: “The brand’s identity is a lot more defined. I’m a lot more sure of who I am and what I bring to the table.”

On an unseasonably warm spring morning, our cover shoot crew arrived at Spicers Hidden Vale. Spirits were high as we wandered the property, taking in sweeping valley views and soaking in the calm that drifts over the 12,000 acres of native bushland.

Equal parts elegant and rustic, the retreat feels rooted in Queensland’s rich pastoral heritage. Originally a working cattle station, its farmhouse spirit has been lovingly preserved to this day, giving off the impression that time stands still. Restored colonial cottages and luxury cabins strike a balance between rustic charm and sophistication, complete with private ensuites, indulgent amenities, and tasteful countryinspired décor.

Ryan proposed during a sunset walk on the beach at Port Douglas. “I suspected absolutely nothing,” says Alana. “Typical Sagittarius energy, I was far too focused on it being my birthday. He suddenly got down on one knee and my jaw hit the floor.”

It seems fitting that Sam Burgess, owner of one of Australia’s most stylish bridal boutiques, came to the city for love. A detour from the fast-paced world of New York, Sam is now elevating Brisbane’s bridal market, one Vivienne Westwood dress at a time.

Sam’s pre-Bloom life was the kind most fashion insiders dream of: eight years as a Macy’s fashion buyer in New York, where she gained deep industry know-how and even worked with Madonna to launch her Material Girl collection. After a career spanning global brands and multiple cities, Sam and her husband relocated to Brisbane, his hometown, in 2020, and thus, the idea for Bloom was born.

Amid the uncertainty of COVID-19, Sam spent 2020 laying the boutique’s foundations, connecting with designers via video calls and cementing partnerships. Today, Bloom is home to some of the world’s most sought-after names in bridal, including Vivienne Westwood, Danielle Frankel, and Elly Sofoclí. Seamlessly walking the line between trendy and timeless, the team are known to jet off to bridal fashion weeks to curate their collection, bringing the energy of the world’s fashion capitals back to the racks of Brisbane.

The boutique’s ethos was inspired in part by Sam’s own wedding dress experience in 2016, which revealed a gap in the market. “The collections I saw felt too traditional, the experiences were overly sales-driven. I never truly felt comfortable,” she recalls. Bloom takes a different approach: thoughtful and slower-paced, championing individuality over convention and careful curation over mass appeal.

Beyond design and quality, “I look for authenticity, a shared approach to partnership, and a standard

of service that mirrors our own,” Sam explains. For most of the labels Bloom stocks, the boutique is their sole Australian partner, giving Brisbane bridesto-be access to a handpicked selection of dresses that balance toughness with femininity, luxurious volume with structure, and statement touches with simple elegance.

Every detail, from the chic aesthetic of the space to the warm and inviting staff, is crafted to feel premium yet approachable. Brides are guided with care by stylists who provide as much (or as little) direction as desired, helping them find a gown that “feels personal and unforgettable.”

Bloom’s tight-knit team of three is central to the experience and kept deliberately small, so each appointment remains intimate. Alongside Sam, Studio Manager Alicia brings style and editorial insight, often joining buying trips, while stylist Em has an instinctive ability to connect women with gowns that resonate. Together, the dedicated trio take the time to get to know the racks and the processes, enabling all who walk through their doors to feel truly looked after and prioritised – no confused casual floor staff here.

In a sunlit Brisbane studio, the legacy of one of Australia’s pioneering female jewellers continues to shine. When sisters Natasha and Alexandra launched their eponymous brand in 2015, they built on the foundation laid by their mother, Marion, whose workbench they’d grown up beside. Today, Marion remains Head Jeweller, her influence evident in every piece.

From the outset, Natasha Schweitzer was envisioned as a brand that blended strength and modernity with timeless appeal. Sculptural forms, architectural lines, and bold proportions became its signature, challenging the idea that fine jewellery must be delicate and ornamental. While the focus has evolved over the years — with engagement and bridal now at the heart of the business — craftsmanship, considered design, and emotional connection remain the core of everything they create.

As sisters, Natasha and Alexandra bring different strengths to the brand: Natasha leads creative direction while Alexandra drives production. Their partnership has grown stronger over time, underpinned by a trust only siblings can share. Together, they’ve celebrated milestones from opening their first boutique and moving into a dedicated head office, to seeing their designs worn by global names like Taylor Swift and Gigi Hadid.

The Natasha Schweitzer aesthetic is refined, minimal, and architectural. Pieces are bold yet designed to be effortlessly wearable, transitioning seamlessly from everyday to evening. Storytelling plays a central role in their process, especially when creating deeply personal pieces such as engagement rings. For Natasha, this connection became even more profound after becoming a mother, when Alexandra gifted her a pendant engraved with her son’s initial and birth date —

a reminder of how jewellery can capture life’s most meaningful moments.

Inside their Brisbane workshop, a team of over 10 artisans focus on sustainability and craftsmanship. Even the smallest elements, like gold dust, are carefully collected and reused. Jewellery’s innate sustainability lies in its ability to be reimagined: gold can be melted down, stones can be reset, and each piece can be passed down through generations. For the sisters, creating jewellery with longevity isn’t just a process — it’s a philosophy.

When working with couples to design engagement rings, they encourage starting with lifestyle to ensure the piece feels natural and practical for everyday wear. Each ring is bespoke, shaped by the couple’s story and tailored to their budget. A common mistake they see is overlooking how an engagement ring will pair with a wedding band, which should complement it in proportion and style for a harmonious, lifelong match.

While trends shift, elongated stones like ovals and marquise continue to endure. The sisters predict that the future of engagement jewellery lies in personalisation, with couples seeking unique cuts and meaningful details that reflect their own stories.

Amelia & Nicholas Gulliver’s story began on the streets of Surry Hills. In town from the Gold Coast for a friend’s engagement party, Amelia, mid-phone call, was interrupted by Nick who, having spotted her across the street, walked up to her and opened with a bold (and slightly cheeky) pick-up line: “You’re the most beautiful girl I’ve seen in such a long time.” Amelia hung up instantly, and two weeks later Nick was on a plane to the Gold Coast for their first date. They have been inseparable ever since.

Nick proposed in Jordan Valley, during a romantic getaway. Afterwards, he led Amelia to a private candlelit dinner in their cabin, prepared by a chef who, to their delight, was a musician and serenaded the newly engaged couple between courses.

Taking over one of Brisbane’s best-known bridal boutiques was no small feat, but creative director Jodie Nielsen, backed by years of global experience, was up for the challenge.

Jodie Nielsen grew up surrounded by fashion. With a stylish grandmother, a mother who adored shopping and sewing, and a great-uncle who helped bring haute couture to Australia, creativity was practically stitched into her DNA. Like many young girls, she had a childhood fascination with Barbie and the freedom she represented: “She could be anyone she wanted to be, do anything she wanted to do — it was up to my imagination.”

That spirit of possibility followed her into her adult years when she co-founded a fashion label with bridal designer Pauline Benjes in the late 2000s, igniting her love of helping women feel extraordinary. From there, a career spanning global fashion houses like Zara and Reiss, opening Brisbane’s first Victoria’s Secret, and roles that took her from Dubai to London gave her a deep understanding of style, service, and storytelling. Those experiences eventually led her to work at one of Brisbane’s leading bridal boutiques, where she honed her expertise — and ultimately, to taking the reins at After Five.

A Brisbane institution with more than 30 years of history, the process was equal parts daunting and exhilarating. “Generations of women have walked through these doors. It’s a rite of passage,” she says. “To inherit that legacy and reimagine it with fresh sophistication is both an honour and a responsibility.”

And reimagine it she has. Out went the outdated, in came serene fitting suites, world-class gowns, and a sense of modern romance. Labels like OUI the Label, Winter & Willow, White April, and Tania Olsen now share the racks, offering brides a wide range of options, designed to feel “indulgent yet approachable – a couture sensibility wrapped in warmth.”

At its core, After Five is about honouring the individuality of every bride. Jodie and her team pride themselves on listening first, guiding each bride through the process with empathy, patience, and expert knowledge – and their rave reviews speak for themselves.

What made Currumbin Valley the perfect home base for you

When I arrived in Australia as a young child, my family (who sailed by yacht from Europe) looked for a home that had the same freedom, space, and connection to nature as being out on the ocean. They found a 10-acre property in Currumbin Valley and we set up home there. Having the best memories has meant the Valley has always held a very special place in my heart. After 25 years of living elsewhere, I returned with my own family.

Were there any non-negotiables in your brief to the architect and interior designer

Big ones for us were the span of the ceilings, the simplicity of the glass windows, and the size and scale of each room, including the hallways. Having come from a three-storey, 412sqm block we’d previously built on, I was always reminding the team that this was a property where space was not an issue. I wanted it spread out, with breathing space between everything – including the pool and outdoor entertaining areas. I felt like I was always pushing it “out.” We also had a strong desire to make the house really “silent” when we wanted it to be, so the solid nature of the build and the glass was important. The critical element was to enjoy a single-storey home that was very connected to nature, sustainable, and climate-conscious, with the ability to be off-grid.

Are there specific design features, details, or spaces that hold the most personal meaning for you

The pop-out hoods were a big excitement for us. We had been inspired by a property we travelled to that had smaller versions of them on its wings, so we incorporated them on a large scale throughout. They allow you to sit “out” in the garden while still being completely indoors. The kids are always lounging on them, which I love. The origami pop-out ceiling is definitely a feature we stare at and love every day – it creates a sense that the trees and the Valley are connected, never blocked. The sunken lounge with the huge floating fire was always the room we were most excited about, and we recently extended the floating sofa so that it now covers the entire planter wall it sits in front of.

Can you tell me a little about your new album I think we’ve made a really fun and interesting pop record. We all bring our own musical tastes and influences, but it feels like this time we’ve really managed to tie them all together to create something that feels both cohesive and unique. It feels like we are in a real state of flow now. Everyone chipping in when needed but also knowing when to get out of the way. It’s more collaborative than it’s ever been.

Are there any key concepts or themes that shaped the new record

For me at least, the themes of a record only really become apparent halfway through the writing. In reflecting on our songs, I started to pick up on these themes of getting older and the pros and cons that come with that. Change is inevitable but often with it comes opportunities to grow. Maybe on a bigger level the record is about embracing this, embracing self-growth whilst also letting go of our past selves.

Sonically, how does this record differ from what you’ve done before I actually feel like this record has drawn sonic influence from our whole catalogue. We’ve blended synths and banjos, acoustic instruments and drum machines, et cetera. In the past we’ve purposely moved away from certain instruments and sonics, but this time around we embraced all of it.

If you could tell your younger self one thing back when you were just starting out, what would it be Pace yourself. Play the long game. Never stop writing new songs and look after yourself on the road. It’s not a race to the top.

What can we expect from your set at The Long Sunset

Well, we’ll be playing the new songs! It’s been a long time since we had new material to play so that’s exciting for us. We will of course, though, be playing the classics too.

Are there any artists you’re especially keen to catch at The Long Sunset

Vera Blue I reckon. She’s a weapon. Such a mighty voice and writes beautiful pop songs. That’ll be great.

Festivals often become core memories for people – is there a festival experience you’ve had that stands out to you

We’ve been lucky enough to play main stage at a heap of festivals over the years, but the one that stands out is our first show at Splendour in the Grass. We were on a side stage but had no idea whether anyone was going to come. We ended up jamming the tent and played to over 5,000 people. It was mind-blowing and a very special experience. I’ll never forget that.

How does this new chapter feel compared to your past releases

This chapter feels really refreshing. Every release is a marker of where I’ve been, and this one feels like stepping into something a bit darker, freer, but still deeply emotional. I’ve grown a lot as an artist since my last work, and I think you can hear that in the music. It’s more confident but also more playful.

Are you experimenting with new ways of writing or producing these days

It’s become more instinctual. I’m less afraid to follow a darker soundscape or sit with a lyric that feels unsettling. When I started, I leaned a lot on acoustic guitar and raw songwriting. I still do that a lot especially on my own, but I’ve been working with lots of amazing producers which has inspired me to create differently, whether it be starting with beats or synths or starting with experimental vocal samples and harmonies. I love collaborating in new ways, leaving more room for spontaneity and happy accidents in the studio.

Are there any key concepts or themes that have shaped your new music

Yes, definitely. Nature always weaves its way into my music. There are themes of longing, decay, rebirth. But also themes of desire and transformation. A lot of the new songs explore contrast between strength and fragility, chaos and stillness. Gothic romance has definitely seeped into the lyrics and the production.

How do you balance vulnerability and storytelling in your music

I’m pretty open in my writing. Vulnerability is what connects me to people, so I lean into

it rather than shy away. But sometimes I like to veil things in imagery – it gives the listener space to bring their own meaning to the song. I’ve found a certain confidence in just saying it as it is, not overthinking it if I want to be bold or fearless with lyrics or how I use my voice.

What can we expect from your set at The Long Sunset

They can expect energy, honesty, and a bit of escapism. I love building sets that let people dance but also get lost in the more emotional, haunting moments. It’ll be a journey. I’m excited.

Are there any artists you’re especially excited to watch at The Long Sunset Yes, I’m always excited to discover new acts and connect with artists I admire. Festivals are the best for that, you get to be part of the crowd as well as the stage. I’ve always adored Boy & Bear and the way they tell stories through their music. And I love Gretta Ray, she’s the sweetest and such an amazing artist.

Music festivals often become core memories for the audience — do you have a festival performance or experience that stands out for you

Splendour in the Grass will always feel monumental. When I performed with Flume for the first time in 2016 when he headlined, and then the following year I played my own set the day Perennial came out. It was so special. I’ve played so many amazing festivals in beautiful parts of Australia and I’m so excited to be playing The Long Sunset to make new memories.

“It’s not about me chasing some scoop or writing some epic novel. It’s about the five people in my life that I love the most.”

Trent Dalton, the acclaimed journalist and author behind the novel-turned-Netflix-hit, Boy Swallows Universe, is back at it again with his new book Gravity Let Me Go. We chat hard truths, the cost of storytelling, and always choosing love.

If anyone is qualified to speak on love, it’s Trent Dalton. It’s the thing that drives him. A sentimental man who holds his dear city of Brisbane close, and his family closer, he seems to fall in love over and over again – with his home, his wife, his two children, his job, his stories, even his beloved pints at The Normanby Hotel. Having already written about love in so many of its glorious, painstaking forms, including his joyous, tumultuous childhood detailed in the semi-autobiographical Boy Swallows Universe, Dalton now hones in on the intricacies of long-lasting marriage for his “most personal book yet.”

His new release, Gravity Let Me Go, sees Dalton pull out the vulnerable parts of himself, and his shortcomings, writing a lead character he says is filled “with every failing I feel I’ve had as an adult man.” He says it’s the 100% fictional but “100% honest” culmination of a real-life wake-up call he experienced within his own marriage – a lesson he had to learn about the cost of his self-diagnosed “storytelling addiction.” “There’s been times in my life where I’ve lost sight of the really important things in life because I was chasing… I was kind of blinded by a little bit of ambition.”

Looking in the mirror, heartstrings exposed, Dalton sees himself as the young, ambitious journalist desperate for the story of a lifetime, momentarily losing sight of the real scoop, the most important story right in front of him – his own love story.

To Dalton, the secret lies within “remembering the great story that exists inside your own home.”

It is thus only fitting that Dalton came to this realisation after asking 200 strangers for their thoughts on love for his book, and now touring theatre production, Love Stories. The irony is not lost on him that his own wife, Fiona Franzmann – who’s since co-written an extra story for the stage adaptation – was the last one he interviewed, “like an idiot,” he says, kicking himself. It’s this side of love Dalton is really interested in capturing: the flip side of the ‘meet-cute’ – the complex, raw, and beautiful notions of long-lasting love, flaws and all. He says it took these strangers’ stories to realise, “of course, it’s not about me chasing some scoop or not about me writing some epic novel, it’s about the five people in my life that I love the most, you know?”

His marital love story is one he is eternally proud of. It’s an evolving story marked by the moment an emotional Dalton left a Rosewood church, hand in hand with his new wife, overcome with the sense his life was about to change. Set to the sweet sounds of The Beatles’ All You Need Is Love, he couldn’t imagine the type of ordinary, epic love story he was in for. “It’s hilarious how much I thought I would love my wife on my wedding night… having no clue just how deep that love could go.” He reflects on this day, 25 years on, about how this love has transformed over time – “it just got richer and deeper and more complex.”

OXYGEN: THE NEW ENERGY DRINK

Running on empty, no matter how much sleep I got, had become my norm. Between work, workouts, and weekends out, my tank never truly refilled. That’s when I discovered Hyperbaric O2 Health in Bowen Hills — and a week of oxygen therapy that completely shifted my energy.

Our faces often hold on to what we sometimes forget, but Olga Newman knows how to set those memories free and restore balance.

At 35, Olga Newman found herself facing something many women quietly wrestle with: a creeping insecurity about her reflection. “My face began to collapse downward, and I hated my photos, always covering myself with foundation,” she says.

It was strange for me to hear, because the Olga I met one Monday afternoon at KAILO Medispa seemed not only confident, but looked truly radiant. At 42, the mother of two boys, her skin is tight and glowing, and she has such an air of selfassuredness that I never would have guessed she once struggled with her appearance.

Born in Siberia, where winters could drop to minus 35 degrees, she grew up surrounded by raw nature, spending much of her childhood with her grandparents on their farm, learning the rhythms of the land and the magic of traditional medicine. Tell us about yourselves and life before SEPOE

SEPOE is a female-founded beauty brand on a mission to create products that work smarter and harder. Before starting SEPOE, we worked in the pharmaceutical and medical industries as registered nurses. Seeing how medical technology transforms lives made us question why the beauty world wasn’t harnessing the same innovation and how we could change that.

How did SEPOE come to life

With mums in the medical field, we’d always heard about exosomes. Through research, we realised they were rarely used in beauty — and when they were, the price was skyhigh. We set out to make this powerful technology accessible and fairly priced, without compromising efficacy.

What’s the story behind the name

Our name links to our hero ingredient. Exosomes work on an intercellular level, repairing and rejuvenating deep within the skin. In Korean, “sepo” means “cells.” We added an ‘e’ for a modern twist — and SEPOE was born.

Where do you see SEPOE in the future

What advice would you give women wanting to start a business

“Just do it” really is the best advice. If you have a passion, follow it. When we started SEPOE, we had no clue how to run a business and no fancy degrees behind us — we just believed in ourselves and our idea. With determination and a supportive community around you, you’ll be amazed at what you can achieve.

A TASTE OF ATTIMI

Through inventive tasting menus, refined hospitality, and a philosophy of living in the present, Attimi captures chef Dario Manca’s vision of reshaping Australia’s view of Italian cuisine.

Directly translated as “moments” in Italian, Attimi is a fitting name for the Paddington restaurant where chef and owner Dario Manca invites diners to savour the present. But beyond celebrating the here and now, his ambition runs deeper: to reshape the way Australians view Italian cuisine.

“Italy is so much more than pizza and pasta,” Dario says. “Every region has unique traditions, and by blending those with modern techniques, we can tell a much broader story.” At Attimi, that story unfolds as a Michelin-inspired dining experience where creativity meets time-honoured recipes.

The restaurant is the realisation of Dario’s lifelong dream. After years of working under other restaurateurs, he reached a career crossroads in 2024 and seized the opportunity to bring his vision to life. Guests are now treated to thoughtfully curated menus of eight or twelve courses, each dish designed as a moment to remember, paired with exceptional wines and warm European hospitality.

Dario’s culinary philosophy is rooted in contemporary Italian: bold flavours, generous seasoning, and intriguing textures, all layered over traditional foundations. It’s food designed to surprise, challenging expectations of what ingredients can pair well and transforming old dishes into new favourites.

His personal favourite dish? The Ducketta. “It was born from a desire to use every part of an ingredient, which is very in keeping with Italian culture,” he explains. The preparation takes days, but the result is an ingenious, flavour-packed plate that honours Rome’s culinary traditions while showcasing Australia’s finest poultry.

As Attimi looks ahead to extended hours for spring and summer, Dario is most excited about sharing more of these moments with guests. “I want people to feel present, delighted, and inspired by food in ways they might not have expected,” he says. “That’s what dining at Attimi is all about — living in the moment.”

THE ESSA WAY

Phil Marchant’s zucchini with whipped goat’s curd & marigold vinaigrette

An unassumingly atmospheric restaurant and wine bar renowned for its creative dishes and striking architectural design – and recently named Gourmet Traveller’s Queensland Restaurant of the Year –ESSA’s head chef and owner Phil Marchant shares his refreshing spring starter recipe.

Serves 4

Ingredients:

Whipped Goat’s Curd

150g fresh goat’s curd

100g goat’s cheese

2 tbsp cultured cream (I get mine from Tommerups

Dairy, it’s incredible!)

1 tsp lemon juice

Zest of 1 lemon

Pinch of sea salt

Marigold Vinaigrette

2 tbsp marigold vinegar (we steep marigold flowers into chardonnay vinegar and leave for six months, but you can use apple cider vinegar)

6 tbsp extra virgin olive oil

1 tsp lemon juice

Pinch of Tasmanian sea salt flakes

To Finish

2 medium green zucchinis (bright, shiny, and firm)

2 medium yellow zucchinis (buy the best you can)

Pinch of Tasmanian sea salt flakes

Freshly cracked black pepper

Small handful fresh oregano leaves (or basil, if preferred)

Method:

1. Whip the goat’s curd: Combine goat’s curd, goat’s cheese, cultured cream, lemon juice, zest, and sea salt in a small bowl. Whip with a whisk until smooth, light, and slightly aerated. Chill for 45 minutes or until firm, then place into a piping bag.

2. Prepare vinaigrette: Whisk together all ingredients and set aside.

3. Slice the zucchinis: About 10 minutes before serving, slice zucchinis into thin rounds using a mandolin for precision (a knife works, but a mandolin is better).

4. Season the zucchini: Toss slices with a few spoons of vinaigrette, a pinch of sea salt, and a few twists of black pepper. Let sit for 5 minutes.

5. Pipe the curd: On a serving plate, pipe a circle of the whipped curd – a donut shape is ideal.

6. Check seasoning: Taste the zucchini after 5 minutes. They should be fresh, with a little bite, sweet and slightly acidic. Adjust seasoning if needed.

7. Arrange the zucchini: Layer the slices concentrically over the curd, slightly overlapping for a layered effect.

8. Finish the dish: Scatter oregano leaves and drizzle a little vinaigrette in the centre.

9. Serve immediately: This dish is best enjoyed straight away – don’t delay!
