Something I’ve been hearing from people in the hospitality industry for years now is that Brisbane’s food scene is next level – rivalling Sydney and Melbourne with every new opening.
So, in this month’s Dine issue, I’m stoked to show off the best and brightest foodie haunts our River City has to offer. As a full-time foodie, self-appointed go-to friend for dining recommendations, and a longtime fan of the ever-fabulous Lucy and Nikki, this issue is quickly becoming one of my all-time favourites.
We had a blast running amuck all over the city for our cover shoot, and I think the photos say it all. Hope you enjoy reading it as much as we enjoyed making it!

A hauntingly beautiful anti-runway moment. Hosted at their William St atelier, Macgraw projected their collection Bloodstream onto the building’s terrace — a moody, cinematic experience shot beneath a 19th-century Moreton Bay Fig in a historic cemetery. Gothic altars, ancestral nods, and ethereal anti-brides made this one of the week’s most original showings. “We think of her as our anti-bride, drifting through a world of her own making,” said designers Beth and Tessa MacGraw.
Part of the NewGen showcase, this Melbourne label made its mark with relaxed silhouettes, suede-like textures, and lowslung trousers — all styled with that lived-in, nonchalant cool. Informed by art and culture, the collection captured Permanent Vacation’s ethos: effortless, considered pieces made for reallife wardrobes.
Showing for the fourth time at AFW, the brand’s AURA collection channelled unseen energy into soft tailoring and dreamy fluidity. Inspired by personal auras and ocean rhythms, Resort ‘26 was light, expressive, and powerful. “This collection is about the energy a woman brings into a room,” said founder Ainsley Hansen. “We wanted the runway to feel like a full experience.”

Brisbane Fashion Festival returns with a bold blend of heritage, innovation, and homegrown flair.

Returning for its 20th year, Brisbane Fashion Festival is moving with the times — and ahead of them. With a program that brings together fashion icons, rising creatives, and ideas worth talking about, this year’s event is a confident statement on where fashion is headed next.
From August 24–29, King George Square and surrounds will come alive with five major runway shows, unexpected activations, and a curated mix of designers, from cult names to next-gen newcomers. More than 50 designers are on the bill, including fashion heavyweights like Easton Pearson, George Wu, and Paul Hunt, alongside a wave of emerging talent shaking up the local scene.
In one of the festival’s most ambitious moments yet, a golden hour runway will unfold across the Kangaroo Point Bridge, a dramatic backdrop for a city redefining the festival. There’s also a choreographed collaboration between Layla Restaurant and the Queensland Ballet, an industry brunch, and a Q&A with fashion legends Pamela Easton and
Lydia Pearson at the Queensland Museum.
But beyond the spectacle lies a deeper focus. The festival continues to highlight conscious design: slow fashion, storytelling, and a more intentional approach to style. The Prospecting Next Gen show offers a look at the future of the industry, while the Designer Group Show brings together seasoned creatives who’ve helped shape the fashion landscape.
Since its inception in 2006, the festival has grown into more than just a schedule of shows. Under Festival Director Lindsay Bennett, it’s become a platform for considered fashion — the kind that values ideas as much as aesthetics. “We want to connect audiences with the people shaping fashion’s future,” says Bennett. “It’s about creativity, but also purpose.”

Another June, another Dine BNE City to look forward to for a month of mouthwatering mayhem. And who better to show us how it’s done than besties Lucy Jackson and Nikki Westcott? We tagged along as the dynamic duo made a staycation out of it – sipping, snacking, and serving looks across some of Brisbane’s best (and most delicious) venues. Hungry? You will be.

“WE’VE ALWAYS BEEN OPEN ABOUT BEING EXACTLY WHO WE ARE. I THINK PEOPLE CAN RELATE BECAUSE WE ARE JUST NORMAL GIRLS.”
What does a classic Lucy and Nikki night out look like
LJ: Always start with a sundowner. We love starting when it’s still golden hour. Honestly, a night with us always ends way later than it needs to. The intention is always to go out for a few drinks after work. It never ends up that way.
What has been your favourite podcast episode of all time
NW: I think it was our third ever episode when our content was just storytelling. We decided to talk about our cute-but-psycho ex relationships, back in the day. We just trauma dumped. We were hungover, pissing ourselves laughing. We looked at our producers and said, “How long has it been?” They said ‘10 minutes.’ It felt like we’d been there for hours. Just trauma dumping.
LJ: We were trying to be selective with what we talked about. That was the day it all dropped and we were like, “We’re talking about absolutely everything.”
You recently interviewed Anthony Albanese – what was that experience like and are you wanting to cover more serious content in the future
NW: The funny thing about old Albo is that we were quite protective of our space, so he agreed if he came on, we could ask him whatever we wanted. We did a regular podcast segment called Advice with the Queens, but Advice with Albo. So, although it’s a serious guest and he was able to get his messages across, he also was able to just bro down with the Happy Hour brand. It was kind of cool.
What do you think it is about you two that has garnered such a loyal following
NW: I think our friendship as a dynamic can be quite relatable. A lot of people say, “She’s the Lucy to my Nikki,” because we are quite different. Lucy’s very loud, overshares, is more chaotic. I’m probably more chill and not as much of an oversharer. But our dynamic together just works.
LJ: I think we are a true representation of the majority of Australian girls in their 20s and 30s. We’re certainly not overly politically correct. We love our friends. We have a lot of fun on the weekend. We’ve always been open about being exactly who we are. I think people can relate because we are just normal girls.
NW: We grew up in really small towns as well, which I think keeps you humble, doll.
What have been the biggest life lessons you’ve had to figure out for yourself
LJ: I think something I’ve learned is that as life goes on, you’re going to get thrown a lot of curveballs that may not be the outcome you’re looking for. You can’t control the way things happen or the way people treat you. All you can control is your reaction to things. Bit of the “let them” theory vibes.
NW: Yeah, we do so much — we’re travelling a lot, working on different businesses. I always get this stressed moment of wondering if we’re soaking it in enough. I think just making sure there’s time for downtime amongst all the chaos. If you don’t, it’s harder to let things sink in and enjoy them.
What advice would you give to others on finding your people and keeping those connections strong
NW: We always say, what you put in is what you get out. Our girlfriends from Red Bull – none of us live in the same place anymore – but we prioritise the time we spend together. We make annual plans, and if someone misses it, they’re devastated. Prioritising your friendships and working on them –because like any good thing, if you’re not putting effort into it, it’s probably not going to last.
LJ: Friendships aren’t a chore, but I think what’s special about our group is it’s not hard to maintain. We love those people. We prioritise them. I call everyone 50 million times a week. If something happens and Nikki’s not there, I’m dying to tell her about it. It’s something you need to work on to maintain, but it’s so rewarding. You’d be crazy not to.
I think a lot of girls in their 20s and 30s tend to compare themselves to where other people are at in life. How have you dealt with that
NW: Your 30s are even more next level than your 20s. One’s got a baby, one’s pumping, one’s scrolling Hinge, one’s on a bender, one’s got a divorce. It’s crazy. I love that quote: “Comparison is the thief of joy.” It’s about not being too hard on yourself if you’re in a difficult position. It’s hard when you want to be somewhere else, but I like that little quote.
LJ: With our group of girlfriends, we’re very supportive. We don’t compete. We support each other. When we were all progressing in our careers, there was never any jealousy. We were all at each other’s events, supporting each other’s businesses, buying each other’s things. There’s that saying about jealousy… what is it, Nik?
NW: Be inspired by people who make you jealous, not threatened by them.
What does success mean to you
LJ: For me, I’ve never been overly financially motivated. I get a lot of satisfaction out of seeing the numbers come through. Like eight million podcast downloads in a month or a new collection launch that we’re really proud of. That kind of end product is what gives me a lot of work satisfaction.
What is the most unhinged thing you’ve done after a breakup
LJ: Oh, you’d be surprised. With how unhinged I am, I’m not like a “show up at your house with a mixtape” kind of vibe. Well, I was actually going to host a night of witchcraft at my house after my recent boyfriend cheated on me. We were all going to wear black and burn some of his clothes that were still at my house.
NW: A seance.
How would you describe each other in one word
NW: I reckon we’ll say the same one. Three, two, one.
LJ & NW: Fun.
After a world-shattering cancer diagnosis at 34, thus began a transformative journey that led Eve Wilson to help others heal from the inside out.
At 34, Eve Wilson was burnt out. “I was burning the candle at both ends working, studying, and partying, and I never stopped,” she says. Seeking change, she turned to a coach and met Anthony – her now fiancé and business partner. During this time, she was diagnosed with stage 1 breast cancer and told she had less than a three per cent chance of falling pregnant if she undertook treatment. “This led me to some pretty dark places – facing my own mortality at such a young age and dealing with the idea I may never have children,” she shares.
What followed was a spiritual awakening. “I learnt that no cure that fails to engage our spirit can make us well,” Eve says. Now cancer-free, engaged, and co-founder of coaching centre Awakened Lifestyles and the internationally accredited Inner Work modality, Eve has dedicated her life to helping others find purpose through emotional, psychological, and spiritual healing.
Their mission? To “make people doing Inner Work as common place as going to the gym.” Eve believes most people unconsciously live from inherited conditioning. “We guide people to live consciously... not what they think they ‘should’ be doing.” Through Inner Work, they help people discover their true selves, face their fears, release emotional baggage, and develop daily systems to live in alignment. Think of it as consciously manifesting your ideal life. “When you know what lights you up and you are willing to make choices that align with said values, it’s practically impossible not to end up having, doing, and being exactly what you said,” Eve says.
Inner Work has transformed countless lives, from stay-at-home mothers building eight-figure businesses to couples reigniting connection and individuals overcoming addiction, burnout, anxieties, and insecurities. Most of all, however, their main type of client is the burnt out corporate leader who, through working with the team, ends up finding their purpose and rebuilding their dream life.
Creating safe spaces, particularly for women, is central to Eve’s purpose. Her Women Unmasked events at The Calile Hotel offer a space for real conversations, allowing women to feel safe being seen and heard. “We remove the mask, drop the roles, and come home to the woman within.”

The wine bug bit early for Ian. “A friend and mentor invited me to his wine club,” he recalls. “It wasn’t formal, but I was sitting with industry legends, totally intimidated. Then someone opened a 2001 Soldera Brunello di Montalcino. The energy and detail of that wine still stick with me.” It wasn’t long before his love for hospo outgrew his part-time gigs in Philly bars and history studies. Before the internet reshaped the way we access recipes and cook, Daniil Paulman, now executive chef at Sofia’s Restaurant & Bar, remembers Estonia’s dining tables all looking and tasting identical, every household relying on the same cookbook. “Sometimes, someone would throw in a little twist – a new ingredient – and you’d hear someone ask, ‘What did you add? Can I get the recipe?’ That moment stuck with me. It was when I realised even the smallest change can make a big difference in taste,” he says. Daniil began experimenting with cooking – swapping ingredients, playing with flavours, and learning how to balance a dish, guided by Saturday morning cooking shows and trips to the market with his parents.
His culinary journey took a big leap when he moved to northern England, landing a gig at a vintage wine bar dishing up classic English country fare. It was a whole new world of ingredients and flavours, far from Estonia’s traditions. Inspired, he signed up for a commercial cooking course and dove headfirst into the demanding life of the kitchen. “I loved the intensity, the discipline, the rush of service, and the creative grind. Kitchen life was brutal but beautiful. It was rock and roll. That energy shaped who I am.”
Climbing the ranks to head chef, then spending time cooking in Spain, Daniil
finally made his way to the Gold Coast, where he sharpened his skills at The Fish House, an award-winning seafood spot, and later at Etsu Izakaya, a Japanese robata restaurant that introduced him to Eastern cooking philosophies. Then came the call from his mentor who offered him the role of sous chef at Sofia’s. “I didn’t even think. I just said, ‘Yes, Chef! When do I start?’”
Today, as executive chef, Daniil channels his global experience into Sofia’s Mediterranean-inspired menu. His philosophy is clear: “Keep it simple. Don’t overcomplicate. Use fresh ingredients. Be patient. And most importantly, don’t cook for Instagram. Cook for flavour.” He adds, “We focus on seasonal produce, bold flavours, and proper technique – no shortcuts. Our kitchen makes everything we can from scratch, including our own fresh pasta.”
One of his proudest creations came from a casual walk through a friend’s organic farm. “It was zucchini flower season... We made a dish with delicate zucchini flowers stuffed with creamy ricotta and lemon zest, then lightly battered and fried to a crisp.” Refined yet approachable, the dish is a perfect reflection of Sofia’s – elegant, full of flavour, and rooted in honest cooking that feels as warm and welcoming as the setting itself.

For most children, the question of what they want to be when they grow up often sparks answers like ‘firefighter’, ‘ballerina’, or ‘astronaut’. But for Shane Delia, the response was simply ‘chef’.
The Melbourne-based restaurateur, renowned for his award-winning, spicedriven cuisine inspired by the ancient culinary traditions of the Middle East and beyond, has found remarkable success with five eateries across Melbourne. Yet for Shane, it has always been about the food. “Food is what I live for… I love the instant gratification of creating something and feeding someone and seeing how they react. I think food is the ultimate communicator. It brings everyone together,” he says.
The rich and aromatic flavours that run through all of Shane’s dishes are a nod to his Maltese heritage, a culture intertwined with Arabic, Mediterranean, and Levantine influences. “I’ve always been in love with food from this region. It’s nourishing, it’s humble, and it’s hospitable,” he says.

Could a bar of dark chocolate a day help keep the leg vein doctor away? While that might be a stretch, there’s a kernel of truth in it – cocoa is rich in flavanols, known for their anti-inflammatory properties and ability to improve blood flow. Some factors influencing venous disease, such as age and genetics, are beyond our control.
However, making positive lifestyle choices – including dietary changes – may help slow the development of varicose veins and reduce symptoms of them. Add these nourishing foods to your bowl to give your circulatory system a boost:
• Dark chocolate: Opt for varieties with at least 70% cocoa to reap the benefits of flavanols, which may help relax blood vessels, lower blood pressure, and improve circulation. Just keep an eye on portion size and sugar content
• Avocado: Packed with vitamin C and magnesium,
which help knit collagen and elastin together. It also contains vitamin E, a natural anticoagulant.
• Salmon and tuna: These omega-3-rich fish promote cardiovascular health with essential fatty acids and vitamin D, helping blood circulate more freely. They’re also high in vitamins B6 and B12, which are vital in breaking down homocysteine – an amino acid that can damage blood vessels if left unchecked.
• Ginger: Studies suggest ginger can reduce swelling and break down fibrin, a protein that may cause veins to appear lumpy or feel hardened.
• Whole grains, seeds, and nuts: Their fibre content supports digestion, which in turn may prevent constipation – a condition that can place additional pressure on the lower body and venous system.
