Nutty Brittle 85g caster sugar 85g golden syrup 30ml water 1½ tablespoons melted butter 170g peanuts ½ teaspoon baking powder 1 teaspoon flaked sea salt

1) Place the caster sugar, syrup, water and butter in a pan. Bring to the boil and cook until it reaches a temperature of 113°c. 2) Stir in the peanuts and boil until it reaches 149°c. 3) Stir in the baking powder and vanilla and remove from the heat. 4) Pour onto a non-stick mat and whilst still molten, smear and pull out into strands, dust with salt then leave to cool. 5) Break into chunks and place in an airtight container until ready to use.
