R

ea l ta lk : I t y pica lly w rite my mont h ly E ditor’ s Letter w it h either a cof fee or cockta il in hand. Maybe it ’s entirely in my head, but a little buzz always seems to help get my creative juices—and the ink—f lowing. Ever since last June, however, I’ve had to kiss the caffeine and boozy beverages goodbye and rely on other outlets (mainly music and nature) to help bring me inspiration. Why am I suddenly sober? There’s a tiny human rapidly growing, and fiercely kicking, inside me—another little girl—whose health and well-being has taken precedence these pa st eight months . A s I (literally) gear up for her arrival (isn’t it crazy how much actual gear someone so small requires?) I'll continue to savor my uninterrupted sleep and enjoy the calm (even though life with a toddler is anything but…) before the storm of having two tiny tots. Fortunately, whether you’re expecting or not, this month’s issue is brimming with ways to better your body and mind—starting with our cover story “Super Foods” (page 55) where we highlight over 25 healthy(ish) eats from across the area. In addition to the obvious offerings (salads, plant-based plates, etc.), there are plenty of options for omnivores, too, like a protein-packed poke bowl and locally sourced burger “The bad news made using grass-fed, grass-finished ground beef is time flies. and predominantly organic produce. Even though cooking is a surefire way to watch your waistline, the The good eateries featured here are committed to serving food news is you’re that’s equally nutritious as it is delicious. When it comes to eating, you likely want to be the pilot.” drinking, too, but your sips don’ t necessarily need —Michael Altshuler to be alcoholic. Take it from the pregnant lady. Not only does cutting out booze cut out calories and hangovers, but today’s mocktails are just as enticing as the real deal. Turn to “Dry January” (page 78) for four of our favorites, like Bun in the Oven (available at Milestone) featuring house-made blueberry jam, freshly squeezed lemon juice, and “gin” that’s free of actual alcohol but full of spirit. When it comes to your mental health, check out “Best Year Yet ” (page 16) for 10 realistic resolution alternatives that are sure to bring more purpose and positivity into 2022, including picking a word or affirmation to serve as your guiding light (mine is “I am calm through the chaos.”) and making a lengthy list of all your accomplishments both big and small. Another 2022 to-do? Soak up more vitamin “sea” and D. After all, nothing helps boost the mood faster than a dose of fresh ocean air and physical activity. We have the perfect place to accomplish both in “Take a Hike” (page 34). Happy reading—and happy New Year! Here’s hoping you and all your loved ones stay happy—and healthy—all year long. Cheers!

YEAR YET by TARA MENDANHA

If you’re tired of setting the same lofty goals each year— and falling short each time—then give these alternatives a try. They’re more manageable and way more fun!

1

Pick a word or phrase for the year to be your guiding light through every little thing you do and moment you experience in 2022. Let it be one you can apply to all areas of your life—relationships, work, hobbies, health, spirituality, etc. You can pick words like “simplicity,” “breathe,” or “joy.” Last year, I chose the phrase “done is better than perfect” as a mantra to do everything—from cleaning the kitchen to creative projects. Don’t forget to plaster that word/ phrase all over your house as a daily reminder.

2

Make a vision or inspiration board. Put photos of all the things you’d like for yourself this year or a set of inspirational quotes you like

16

stylemg.com

| JANUARY 2022 |

or images you find calming. It doesn’t have to be some intense manifestation exercise, just a gentle reminder of what will bring you peace and joy.

3

Make a bucket list of all the fun things you want to do in 2022. It could be as simple as visiting a farmers’ market you’ve never been to or as complicated as riding a horse. (Is riding a horse complicated? It might have to go on my own bucket list!) You could even check out our online calendar for fun, recurring events at stylemg.com/ calendar.

4

Start a challenge. It could be a 30-day yoga challenge at a local studio, a 52-week

a friend you met) or an entire paragraph-long—whatever you can make time for. Research shows that gratitude is consistently associated with greater levels of happiness. Who doesn’t want to be happy this year?

6

Make a list of your favorites. Favorite local coffee shop and drink, favorite skin care products, favorite park, etc. Then go out and do/get more of them!

Make a five-minute selfcare checklist of things you want to indulge in each week or even each day. It could be something easy like taking five deep breaths when you wake each morning or using a luxurious face (or foot!) mask every weekend.

money challenge (where you put away a certain amount each week and watch it grow), a 100-day project where you do something creative each day (there’s a whole community online for this), or you can even make up your own. Anything to get the juices and energy flowing.

5

Start a gratitude log. It can be as simple as jotting down a word each day (like something yummy you ate or the name of

8

List all your accomplishments! Instead of focusing on what you have to/ need to/want to do this year, dwell on all the ridiculously cool things you’ve done this past year and beyond (made it through a pandemic, birthed a child, learned how to change a tire). Then, whenever you’re feeling down and out, reach for this list and be blown away by how amazing you truly are.

9

Start preserving memories. Journal about something that happens each day or one big thing from each week, or even print photos every week and stick them in a scrapbook. You can also save receipts and tickets from fun outings in a shadow box. Find a way to chronicle your wonderful life.

10

Do a detox—for your body, like a detoxifying body treatment or juicing detox; for your home, where you purge all your toxic cleaning supplies or personal care supplies; or a digital detox, where you delete time-wasting apps or track and reduce your phone usage. Anything to get rid of some of that bad juju!

Your holiday gifts may be unwrapped, your decorations back in storage, but your spirit of giving doesn’t need to end just yet.

Why not start the new year by bestowing the gift of life? January is National Blood Donor Month, and giving blood is one of the most impactful acts of kindness. The need is especially critical now, says Victoria Wolfe, communications manager at Vitalant—a nationwide nonprofit blood services provider with numerous local locations—because donations, already low from the pandemic, fall off during the busy holidays, while the need does not: Someone in the U.S. requires blood every two seconds. Nearly five million of us will need a transfusion this year. Transfusions often correlate with trauma, as after an accident, but Wolfe points out that many other medical conditions also may require blood: caesarean births with complications, for example, or major surgery, internal bleeding, sickle cell anemia, some cancer treatments, and more. "The need is way more common than you would expect," Wolfe says. She herself required 300 units of blood during treatment for leukemia (from which she is now recovered). About two-thirds of the population is eligible to give blood—but only three percent do. This means, Wolfe says, that “a safe and plentiful blood supply rests on the shoulders—or maybe in the veins—of a mighty few." Donors must be

in good health, at least 17 years old (there’s no upper age limit), and weigh at least 110 pounds. Low or high blood pressure, anemia, a recent tattoo, certain foreign travel, or a history of using injectable non-prescription drugs are among the criteria that could be disqualifying. People who had Covid-19 or have been vaccinated are usually OK to donate. Regardless of source, all blood is tested before it’s released. You can give blood whole for transfusions or as components— red cells, platelets, plasma—with the rest of your blood circulated back to you. Which type of donation you choose depends partly on your blood type: A, B, O, or AB, each either positive or negative for the protein Rh factor. O negative, though rare, is most in demand as whole blood

because it can be given to anyone. Plasma from AB blood, even rarer, also can serve all blood types. Whatever the type, blood has a short shelf life and must be continuously replenished. The supply must come from us; there is no artificial substitute for human blood. If you want to help save lives by giving blood, you can make an appointment to donate at a Vitalant center (vitalant.org) or the Gold Country Region Red Cross (redcrossblood.org). StemExpress (stemexpress.com) and Octapharma Plasma (octapharmaplasma.com), both local, accept blood for research. "We want everybody who can to donate blood," Wolfe says. "It’s a great feeling to know you’re a lifeline for somebody. In less than an hour, you can save a life." That’s a gift that keeps on giving.

Pretty in Ink 4 Top Tattoo Artists

by BELLA NOLEN

Tattooists have the incredible job of being able to make stories come to life—but what about the actual artists behind them? Meet some of our region’s best and learn about their experience with the art form. wasn’t easy living in Northern China where tattoos were frowned upon. Where do you draw inspiration from? Many [people and places], but the most important [thing] is to be happy and healthy. When I’m in a good mood and feeling clear physically, mentally, and emotionally, the inspiration rolls in.

ZHUO DAN TING Based in Folsom

What is the most memorable tattoo you’ve done? There have been so many! I completed a bodysuit in early 2021 in traditional Chinese design based on the stories of the Monkey King. It was really cool to have the client’s trust in my vision, and I love how it turned out.

How long have you been a tattoo artist? I’ve been tattooing since 2001, so for around 20 years. Where do you work? I’m the owner and an artist at Shanghai Tattoos (shanghaitattoo916.com) in Historic Folsom and also of the original Shanghai Tattoo in Shanghai, China, which I established in 2007. I currently work fulltime at the Folsom location. How did you get into your craft? I’ve been into art since childhood. My father was an art teacher, [and] we used to spend a lot of our free time drawing together. When I got my first tattoo at 16, I fell in love with the art of [tattooing] and decided I wanted to pursue a career in it which

WILLIAM “WILD BILL” HILL Based in Roseville

How long have you been a tattoo artist? Over 50 years. I built my first tattoo machine at 14 and began experimenting with tattooing on myself and [my] friends. I bought my first tattoo business license in 1974. Where do you work? Wild Bill’s Tattoo (wildbills.com).

How did you get into your craft? The first time I walked into a tattoo shop in 1972, at age 17, I knew it’s what I wanted to do. It took many years of 10-12-hour days and hard work to get where I am today; I drew every spare moment I had, a lot of the time with a pen, so it was a lot like tattooing because there is no eraser. Where do you draw inspiration from? Roxanne (my tattooist), Jack Rudy, Ed Hardy, and Brian Everett. What are some of your popular designs? Realistic fine line, and black and grey.

Zhuo Dan Ting photos courtesy of Zhuo Dan Ting. William Hill photos by Taylor Gillespie.

What are some of your popular designs? I do many styles of tattooing. My most popular is portrait work, realism styling, Asian styles (traditional and watercolor), and brushed Chinese calligraphy.

Based in Placerville How long have you been tattooing? 13 years. Where do you work? Royal Six Tattoo (royalsixtattoo.com).

How did you get into your craft? By pure luck. I [delivered some prints] to my friend at Black and Blue Tattoo in Hayward and was hanging out while traffic died down. At the time, his client wanted a Detroit Tigers emblem, and my friend didn’t

Based in Newcastle

How long have you been a tattoo artist? About 48 years. Where do you currently work? Liberty Tattoo (billlibertytattoo.com).

How did you get into your craft? I was giving tattoos back in the ’60s and ’70s. It was hard to get into—no one would tell you anything! I ran into a [couple of guys] who set up a shop in Sacramento and became friends with them. [I told them] “I build custom motorcycles and if you teach me to tattoo, I’ll give you one of them…” so that’s essentially how I got started. I then went back to college and took a lot of art classes, which helped a lot. Where do you draw inspiration from? The

internet is a big information center where you can find anything, get inspiration for all kinds of stuff, and rework [different designs] into your style. With that said, I also get some inspiration from a lot of old artists; it just depends on what the design is. What are some of your most popular designs? Right now, nature (trees, etc.) designs are really popular, but it goes in cycles. When I first started, it was Harley wings, then roses, unicorns, pegasuses, sunflowers, and tribal arm bands. I like doing realistic tattoos and colors, but it depends on the individual and what they like. What is the most memorable tattoo you’ve done? It’s hard to pick just one, but possibly a back piece with trains that just goes on and on!

know much about sports, [so I drew up the emblem] and that’s when my friend suggested I get into tattooing. The rest is history. Where do you draw inspiration from? My art is mainly based on life experiences. I had a lot of hard times as a kid, so when I draw, it’s oftentimes based on things going on personally. What are some of your most popular designs? A lot of people look for black and grey tattoos from me, especially roses, which I love. I relate to roses, because they’re beautiful and grow in every type of terrain and weather. What is the most memorable tattoo you’ve done? There was a girl who grew up in this area, [got into some trouble], and was going through a very tough time. I tattooed the word “surrender” for her.

Change the Game PARE NTING YOUNG AT H L ETES TO V IC TO RY by TARA MENDANHA

You’ve seen it all. Blood, sweat, and tears (sometimes your own, but mostly your kid’s) have been shed on and off the field. But has it all been worth it?

Don’t just take our word for it, though. According to the U.S. Department of Health & Human Services’ Physical Activity Guidelines for Americans, the pros to physical activity for our youth far outweigh any possible cons.

30

stylemg.com

| JANUARY 2022 |

Physical & Mental Health The activity guidelines state that youth who engage in regular physical activity benefit from improved bone health, weight status, cardiorespiratory and muscular fitness, cardiometabolic health, cognitive function, and a reduced risk of depression. Psychological health benefits include higher levels of perceived competence, confidence, and self-esteem, reduced risk of suicide, and suicidal thoughts and tendencies. It may also lead to better mental health outcomes in adulthood for those exposed to adverse childhood experiences.

Important Life Skills Sports participation also enables youngsters to develop social and interpersonal skills— think teamwork, leadership, and relationship building—and gives them key life skills, such as goal setting, time management, and a strong work ethic. These skills aren’t acquired automatically, however, and should be intentionally coached. Research shows that organized sports participation can reduce youth violence and crime.

Enhanced Academic Performance Physical activity and playing sports also provides cognitive and academic benefits, and studies show a significant connection between physical activity and cognitive function (concentration, memory) and academic behavior (school attendance). Studies also show that students participating in sports have higher achievement test scores and higher math scores compared with students who don’t. Participation in extracurricular

Having kids take part in extracurricular physical activities can mean a lot of sacrifice on the part of parents (endless ferrying back and forth, keeping the morale up when it’s way, WAY down, and burning a hole in your pocket with all those expenses), but we’re here to tell you that all of it—yes even the 4 a.m. mornings— are worth it.

activities, including sports, has also been associated with higher GPAs, lower dropout rates, and fewer disciplinary problems. When it comes to your own child, many factors need to be considered to ensure their overall needs are being adequately met on and off the field. Here are some points to ponder regarding your child’s athletic life.

While contemplating the myriad options kids have when it comes to sports, Doug Atkinson of Spare Time Sports Clubs (sparetimesportsclubs. com) believes in sampling before choosing. “Play enough sports while young and the right sport will choose you,” he says, adding that participating in both individual and team activities can allow your child to learn what they like and don’t like and eventually maximize athleticism to enhance performance in the sport of their choosing. Kaleb Wallen of Steve Wallen Swim School (wallenswim. com) also believes that kids should be involved in a variety of sports and activities growing up. “This not only provides them an opportunity to see what top interests they have but also helps them stay focused and instills [the importance of] health and wellness at an early age,” he says. Karen Bowman of Bowman Martial Arts (bowmanmartialarts.com) offers this piece of advice, “Ask yourself the following: ‘does my child work well with others and not mind sometimes waiting to play?’ If so, try a team sport. ‘Or does my child like to push themselves with their own goals?’ Then try an individual sport.”

Manage Stress & Competition They’ve picked a sport. Now let the games begin. “I’m constantly telling my students, ‘Life is nothing but mistakes. They happen all the time. Fix the mistake and keep moving forward,’” says Bowman. “If you’re the type of competitor who can adapt and not stress the mistakes, the rest of your life (competitions, academics, relationships, work) will always seem easier,” she adds.

32

stylemg.com

| JANUARY 2022 |

Atkinson also believes that student athletes perform better when they can let go of the pressures of winning and just play. He believes planning a schedule, setting realistic performance goals for both training and competition, and not focusing too much on outcomes helps alleviate some of that stress.

Nutrition & Wellness Although common knowledge, it should be emphasized that prioritizing diet, hydration, rest, and sleep are of utmost importance and key to any athlete’s performance. As Atkinson states, “Teaching young athletes to respect their bodies, both from the outside and the inside, is important to their performance and to having a healthy lifestyle.” He stresses the importance of sleep, too. “Consistent sleep at night and allowing for rest periods away from training are important to maintaining a healthy mind and body.”

Parental Roles Atkinson believes parents have an important part to play in a budding athlete’s life, but he has a word of caution, too. “Being a parent should not mean taking over the coach’s role in developing a young athlete. Coaches should coach and parents should be there to support

/stylemediagroup /stylemediagroup /stylemediagroup /stylemags

the athlete and the program in a variety of ways—from sideline cheering to providing snacks at competitions—while making sure the athlete is staying healthy and having fun.” Another aspect of parenting an athlete is keeping them consistent and disciplined. “If you truly want your child to be an athlete and not just a participant in a sport, you need to help them be consistent,” says Amitis Pourarian of The STUDIO Martial Arts & Fitness (trainatthestudio.com). “If your goal is to raise a happy and healthy athlete, as a parent, you need to create the space in their schedule to be consistent and not have them quit when they face adversity. This will make them better athletes and, in turn, when they’re good at something, they will be happy and confident when they’re doing it. This leads to a healthy mental attitude toward their sport,” she says. Bowman believes in letting your children enjoy the journey and supporting them come what may. She also echoes Pourarian’s sentiment of always showing up with this example: “In martial arts, not everyone breaks the board on the first try. But the bravest always return to try again.”

Take a Hike

LOCATED IN:

Bolinas. DISTANCE:

13.6 miles out and back. DIFFICULTY LEVEL:

Moderate; heavily trafficked.

Alamere Falls via Coast Trail by RYAN MARTINEZ

KNOW BEFORE YOU GO:

There’s a plethora of poison oak on the trail, which may be difficult to identify in winter. A shortcut is available, which shaves off four miles but requires scrambling down a slippery section of shale and shouldn’t be done at high tide. Wear shoes with traction, long layers, and sun protection. As always, practice Leave No Trace ethics. WHY WE LOVE IT:

Waterfalls cascading into the Pacific Ocean; seaside views through eucalyptus, pines, and oak trees; and enough mileage for a good night’s sleep (if you want to make a weekend of it, we recommend staying at Olema House) make this one of the Bay Area’s best hikes. FUEL UP:

Know the Tides There are two forces responsible for the tides: the moon and the rotational force of the earth. The side of the earth closest to the moon will feel the full gravitational pull of our lunar sidekick, and the ocean tides will rise on this side of the planet. On the opposite side of the moon, water resists the movement of our globe’s rotation, causing waters to rise on this side, too. Most shorelines experience two high tides and two low tides every day. Tide tables can help you plan your trip out to the beach and know when to head out (or back in).

“Eat well and you shall be happy” is what Los Moles (losmoles.com) owner Lito Saldaña considers the art of homemade food. Rather than prescribing medications and bandaging diseases she looks for the "root causes" and integrates each system in the body together. Augmenting my traditional medicine practice with functional and regenerative medicine has inspired me to find the root cause of patients’ illnesses while also bringing them to their optimal health from the inside out. Feeling well is the primary goal. I have incorporated many modalities to keep patients living lives to their fullest. Growing up in Hawaii, I enjoyed being in a naturally healthy environment and I found myself wanting to promote health in others. Becoming a physician, and traveling a path ranging from serving as President of my medical school class to serving as a Chief Resident of the U.C. Davis Department of Family and Community Medicine, allowed me to develop a solid foundation for having an active presence in the lives of my patients and finding deep satisfaction in seeing them thrive. In my practice, I promote attainment of key health objectives by encouraging, among other things, lifestyle changes, supplementation, energy medicine, low intensity extracorporeal shockwave therapy, platelet rich plasma, myofascial release therapy, PEMF (pulsed electromagnetic field therapy), and ION Cleanse to benefit and enrich my patients’ lives. Most recently, I have begun utilizing the OPUS microfractional plasma system to rejuvenate facial skin, bringing my patients even closer to optimal health, so that they can not only feel their best, but also look their best.

Q: WHERE SHOULD I BEGIN W H E N S TA R T I N G T O E X E R C I S E ? A: When first beginning to exercise, the focus for the first 90 days, movement-wise, is mobility and flexibility. Mobility is the amount a single joint can move within its possible range of motion. Flexibility is the amount of stretch that can occur in a muscle across joints. These are the most important exercises to begin with because they indicate how well a person can safely move. Simultaneously, proper breathing is taught. Each person must learn how to breathe correctly to maximize their fitness. Once a person can confidently breathe well and move well, we introduce the concept of exercise, which is specific movements done progressively for a specific purpose.

Weathering the

Drought Water-Wise Landscaping Tips by BELLA NOLAN

rought-tolerant landscaping is essential, especially in California, because it focuses on efficient ways to save water while still ensuring your home is attractive and functional. “It’s important to plan landscapes that will thrive in low-water years, as well as years where water may be abundant. Anticipating the unexpected will set you up for a successful garden,” explains Tami Kint, director of marketing at Green Acres Nursery & Supply (idiggreenacres.com). WHAT IS IT? “Drought-tolerant landscaping is reducing or eliminating irrigation. The common term is xeriscape, and it includes the removal of grass/sod, capping sprinklers, and converting the irrigation system to a drip system,” explains Chad Glass, owner of Shear Perfection Landscape (splandscape.com). PLAN, PLAN, PLAN! Don’t rush into turning your yard around. Instead, take some time to examine what plants need to be swapped and what irrigation systems need to be put in place. “I encourage everyone to [plan], because it’ll save you money in the long run and you’ll get a

better finished product,” says John LaFlaur, nursery manager at Bushnell Gardens Nursery (bushnellgardens. com). First, you’ll want to identify the plant material that needs to come out. This could be exotic shrubs or vines that suck up tons of water. Ultimately, the goal of drought-tolerant plants is to maintain an aesthetically pleasing yard while lowering water usage. You can do this by switching irrigation methods, amending your soil, and picking plants that thrive in our zone. LaFlaur begins by advising his clients to figure out where due-North is so they can see where the sun will beat down on the yard at its highest point. “Once you have that figured out, you can put together a plan based on topography, soil, and exposure.” After, think about your soil. “One of the best things you can do for drought-tolerant plants is increase the water holding capability of the soil.” Don’t forget about commercially available soil amendments, either, which increase water-holding capability of the soil and its texture. For this, LaFlaur recommends using soil testing kits. WATER WISELY According to Kint, “Once you’ve selected the right low-water plants for your landscape based on sun exposure, mature sizes, existing soil, and low-water requirements, it’s time to think about how they will be watered. Drip systems are the best way to ensure you’re only watering the roots of the plants and there is no overspray or water lost to evaporation. The best part about installing a drip system is that you can

allow additional water for plants you haven’t replaced yet and accommodate the new water-wise plants using the same system. As you replace thirsty plants with new plants, you can cut back on the emitters and reduce water use as you go.” Just remember: All new planting will require some watering, says Tim Bell from Capital Landscape (capitallandscape.com). “After the plants have been established and begin to mature, then you can cut back on watering them. In fact, some of the plants can be watered once a week!” says Bell. MULCH MATTERS For irrigation efficiency, consider reducing the amount of synthetic fertilizer you use, as it contains high levels of salt and will drain the water from your plants. Instead, opt for organic mulch or wood chips, which will slow the evaporation of water from the soil, cool plant roots in the summer, and insulate them in the winter. If you increase your

soil’s water-holding capability, then transitioning to a drip irrigation system makes even more sense, says LaFlaur. Lastly, you’ll want to put mulch on top of your plants, which prevents evaporation of water, keeps topsoil cool and moist, and crowds out weeds that compete with the plant for the water. As your mulch breaks down, it begins to feed the soil and voila (!)— you’re one step closer to a water-smart yard. WHAT TO PLANT LaFlaur recommends planting dianthus, fountain grass, and sage. Kint suggests grevillea, aka “coastal gem,” as well arbutus (marina). You can also utilize vertical elements in your yard, like trees, vines, or high shrubs. When planted strategically, these elements provide the shade needed to protect certain plants when the sun is at its highest. REBATES The City of Roseville offers a rebate program to exchange your grass for cash. They will rebate customers $1 per square foot of turf grass removed and replaced with water-efficient landscape up to $1,000 per address. Program funding is limited, and rebates are offered on a first-come, first-serve basis. For more information, visit roseville.ca.us. The City of Folsom will rebate customers $1 per square foot of turf grass removed and replaced with water-efficient landscape (up to $2,000 per address); what’s more, water customers can receive 50% of the cost of qualifying material (up to $500). For more information, see folsom.ca.us. For more on rebates in Placer County, visit pcwa.net. JANUARY 2022 |

VEGAN PLATE

1821 Douglas Boulevard, Suite C-5, Roseville, 916-953-7033, veganplateroseville.com Vegans rave about this Roseville hotspot whose key to success is simple: provide quality, consistent food that tastes great. As their name implies, everything—from burgers and pizza to noodles, rice bowls, desserts, and more—is entirely plant-based. Whether you have your heart set on Asian, American, or Caribbean cuisine, there’s a “vegan plate” guaranteed to please. WHAT TO ORDER: Buffalo Cauliflower Tacos. One bite of these beloved tacos—comprised of cauliflower that’s battered with coconut milk and corn grits then deep-fried and tossed with tangy buffalo sauce—and you’ll be wishing you discovered them sooner. Crunchy, saucy, and well-spiced, consider it “healthy” (cauliflower is a cruciferous vegetable that’s naturally high in fiber and B vitamins, after all!) fusion food at its finest. JANUARY 2022 |

1805 Cirby Way, Suite 12, Roseville, 916-771-4165, nixta.co Those hungry for something hearty can opt for the queso fundido, extra cheesy quesadillas, or very filling (very tasty!) Twenty Dollar Burrito with fried chicken and smoked carnitas, but customers counting calories are in luck, too. Nixtaco offers plenty of lighter meals made with nutrient-rich ingredients, like their popular tacos that sit atop handmade blue corn tortillas. Made using a special process called nixtamalization—a method where the corn is soaked and cooked in an alkaline solution, resulting in grain that’s more easily ground— the tortillas have tons of nutrients with unforgettable flavor. WHAT TO ORDER: Vegan Tacos. With six to select from, plantbased eaters are in for a muy delicioso treat. Unlike most Mexican eateries whose “veggie” offerings boast only the basics (beans, rice, iceberg lettuce, salsa, and maybe sour cream and guac), here your options run the gamut from a mushroom taco with sautéed creminis, avocado, lime, and micro cilantro; or the “avocado explosion” with fried avo, lime-pickled onions, toasted chili and sesame seed oils, chipotle-peanut aioli, and micro arugula. Served atop their famously fantastic gluten-free tortillas, they’ll keep your taste buds busy and your belly full.

SMITH FLAT HOUSE

2021 Smith Flat Road, Placerville, 530-621-1003, smithflathouse.com In addition to rich fare like baked triple-cream brie and chicken parmesan, Smith Flat House serves up plenty of plates for those watching their waistline, too. From a rainbow-hued ratatouille to an orchard pizza with roasted broccolini and baby heirloom carrots, it’s an epicurean’s paradise no matter which food adventure you choose. WHAT TO ORDER: Zenzero Salad. Zesty, citrusy, and always fresh, this salad’s base boasts beautifully colored ribbons of delicately shaved baby heirloom carrots and fennel. Lovingly tossed in a sweet yet tart blood orange vinaigrette and placed upon a bed of locally grown hydroponic sorrel (a leafy green vegetable that’s especially high in vitamin C) then finished with candied ginger crisps (“zenzero” translates to ginger in Italian), it’s gluten-free, vegan, and bursting with flavor and personality.

FLOUR DUST PIZZA

5080 Foothills Boulevard, Roseville, 916773-5080, flourdustpizza.com Using Italian-imported double zero flour enriched with whole wheat flour, Flour Dust—known for their praiseworthy pizzas with clever ingredient combos—makes their dough with a slow fermentation and very little yeast. In addition to a fool-proof, flavorful crust, the method helps break down the gluten, so your body doesn’t have to work so hard to digest it. In other words, you can indulge in your favorite comfort food (pizza) without the gut bomb that often comes with it. WHAT TO ORDER: Beet Salad. Made with golden and red beets, sliced fennel, Cara Cara oranges, fresh-squeezed lemon, and olive oil, this salad is as clean as they come. The dressing—heart-healthy roasted pistachio butter, red wine vinegar, and shallots—adds even more flavor and nutrition. Dairy-free, it’s perfect for both vegans and vegetarians but enticing to all.

PLACERVILLE PUBLIC HOUSE

305 Main Street, Placerville, 530-303-3792, placervillepublichouse.com Placerville Public House—which recently relocated to the historic Hangtown Building—serves scratch-made, seasonal fare using mostly local organic ingredients…with plenty of rotating craft pints, too. In addition to hearty plates like nachos with beer cheese and sticky pork wings, there’s better-for-you options, like an amazing ahi salad and herb-roasted squash tacos. What’s more, most menu items can be made vegan, vegetarian, and glutenfree. WHAT TO ORDER: Wild Fungi Flatbread. Expect loads of nutrient-rich wild mushrooms (from Cool Mushroom Farm), fresh spinach, three cheeses, roasted garlic, and peppers—all atop a crispy, gluten-free cauliflower crust—in this palatable pie. Served with creamy dill ranch, it’s a hearty meal that’s comforting and carb-free but full of flavor. JANUARY 2022 |

VISCONTI’S RISTORANTE

EAT HEALTHY WHEN EATING OUT

ZEST KITCHEN

Dining out can be such a rewarding and fun experience—you get to be with friends and loved ones and experience much-needed togetherness. However, you may find yourself worried about how to make choices that are in line with your health goals. Checking the menu before you go is key, but here are some additional easy swaps to keep in mind.

2620 Sunset Boulevard, Suite 1, Rocklin, 916-824-1688, zestvegankitchen.com Expect lovingly created, plant-based foods—including lots of seasonal specials—that are vibrant, fun, and full of flavor at Zest Kitchen. From ultra-healthy to cozy and comforting, everything they serve is good for you and super satisfying. Most of their menu is handmade from whole, fresh ingredients, making them a haven for those with allergies and dietary issues. WHAT TO ORDER: Nachos Grande. These aptly named nachos (they are indeed big!) include organic corn chips topped with seasoned black beans, house-made nacho cheese sauce, diced red bell peppers, sour cream, shredded lettuce, fresh jalapeños, and avocado or made-to-order guacamole (optional). Gluten-free, soy-free, and nut-free (if the sour cream is omitted), it allows those with dietary restrictions to enjoy a dish that’s oftentimes off limits.

1. Choose veggies over bread. Start your meal with veggies by ordering a salad or veggie appetizer instead of bread. When we fill up with fiber-rich foods, we often feel satisfied sooner. 2. Choose water, sparkling water, or unsweetened tea with lemon instead of sugary sodas or juices. 3. Know your sauces. Try looking for red sauces made with vegetables and less sugar instead of white sauces, which are typically filled with heavy creams, butters, or inflammatory oils. 4. Choose dressing wisely. Dressings are often made with sugars, additives, and soybean or canola oil—not olive oil. Ask your server about dressings and try to choose a vinaigrette made with olive oil or ask for oil and vinegar and add a pinch of salt and pepper. 5. Request avocado instead of mayo. Making the swap to avocado will provide you with healthy fats and help you feel fuller longer.

FISHOLOGY POKE BAR

2784 East Bidwell Street, Suite 400, Folsom, 916-587-1899, fishologypokebar.com One of the region’s first—and most popular—poke places, Fishology brings the freshness. Pack your bowl full of protein (all fish is cut fresh daily), a base of brown rice for some whole-grain goodness, and top it with tons of colorful mix-ins, and up to three sauces of your liking. Any way you fill it, expect a heart-healthy meal loaded with vitamins, healthy fats, fiber, and antioxidants. WHAT TO ORDER: Build-YourOwn Bowl. Those who like being in control will particularly enjoy getting to choose exactly what goes into their creation. To keep your bowl extra nutritious (and delicious!), we recommend loading it with the following: brown rice, salmon, seaweed, sesame shoyu, wakame, edamame, cucumbers, radish, masago, avocado, furikake, sesame seeds, wasabi, and green onions.

6. Choose wine over cocktails. While both have calories and sugar, wine is a better choice. If you find that wine leaves you with a headache or not feeling well, ask if they serve sulfite-free wine. It can make a big difference!

7. Skip fried foods. Swap fried foods for baked, broiled, or sautéed ones. These healthier cooking styles are much lower in fat and calories and are a more heart-healthy option. 8. Ask for a box early. Sometimes when we eat

socially, we tend to eat past our hunger queues, picking our way to a food coma. Instead of overindulging and eating until your plate is empty, ask for a box as soon as you start to feel full.

9. Skip decadent desserts. It’s OK to have

dessert, but choose fruit-based desserts, sorbets, or lighter options instead of dense cakes, pies, or ice cream. Add a cappuccino or coffee if you feel the need to keep going.

10. Don’t be afraid to ask. If you’re unsure about how something is prepared or some of the ingredients—just ask! Your server should know the menu and can likely recommend some healthy options or available swaps. Courtesy of Tasha Rosales, certified nutritionist at Wellness Homemade in El Dorado Hills. HEALTHY FOOD MUST-HAVES

Fight the flu and even cancer with these flavorful, readily available, great-for-you superfoods.

1. Cruciferous vegetables. Broccoli, cabbage, and Brussels sprouts all contain glucosinolates and indoles, which are antioxidants that can help protect the body’s cells from cancer and detoxify carcinogens. 2. Dark green/orange/red vegetables. Kale, spinach, carrots, yams, and pumpkins contain carotenoids, flavonoids, and folate, which can decrease the growth of some cancers. These colorful veggies also contain vitamin A, which helps support the immune system to function properly because of the nutrient's anti-inflammatory effect.

CANTINA LAREDO

1151 Galleria Boulevard, Suite 1175, Roseville, 916-771-2249, cantinalaredo.com Cantina Laredo offers a modern take on traditional Mexican food. That means you can expect selections like fire-charred skirt steak, smoky chipotle wine sauce, mushroom-stuffed green chilis, and bacon-wrapped shrimp. They’ve even got a handy-dandy nutrition guide on their website to help you choose the best options for your diet and lifestyle. WHAT TO ORDER: Pollo Asado Tacos. Boring chicken tacos begone! Enter juicy grilled chicken on corn tortillas topped with avocado, mango-pineapple pico de gallo, cilantro, a pungent poblano sauce, and Monterey Jack cheese. It’s lipsmackingly good.

HEYDAY CAFė

325 Main Street, Placerville, 530-626-9700, heydaycafe.com Offering a wide, ever-expanding array of cuisines, Heyday Café makes innovative food in the form of specialty salads, artisan pizzas and paninis, and mouthwatering entrées. Creative and health-conscious offerings include house-made black bean sliders and sausages, crab-stuffed salmon, freerange BBQ chicken, and more. WHAT TO ORDER: Chicken Curry Salad. Mary’s Free-Range Chicken breast is tossed with a flavor-packed curry, pink Lady apples, golden raisins, and celery then served over a bed of mixed greens, cucumbers, tomatoes, carrots, cabbage, toasted almonds, and a tangy balsamic vinaigrette. If you’re ever craving salad, this is the salad to get.

3. Berries. Strawberries, raspberries, blueberries, and blackberries contain vitamin C, fiber, and antioxidants. These nutrients help to protect against cell damage and boost the immune system. 4. Grapes. The active ingredient in these juicy bites, resveratrol, is found in the fruit’s skins and is a potent antioxidant and cardiovascular protectant. 5. Cherries. These bright red treats contain monoterpenes and have been found to slow the progression of leukemia. 6. Beans & legumes. Black, pinto, dried peas, and

lentils contain essential fiber and active components called saponin, phytic acid, and protease inhibitors— components that help protect against certain cancers (specifically colon) and slow cancer cell division.

7. Garlic/onions/chives/leeks. These flavorinducing culinary ingredients contain a compound called diallyl disulfide, which is a natural detoxifying agent and has become known as useful for cancer prevention and treatment. Garlic, specifically, also has antiseptic, antiviral, bactericidal, and fungicidal properties. 8. Green tea. This soothing and popular beverage

contains active compounds called polyphenols and flavonoids, which has been shown to protect against cancer, diabetes, cardiovascular diseases, and neurodegenerative diseases because of its powerful anti-inflammatory effects.

9. Nuts & seeds. Walnuts, pistachios, pumpkin

seeds, and flax seeds contain protein, fiber, tocopherols, and monounsaturated fats, which are known to have cardiovascular and anti-inflammatory benefits. They are also very satiating—even in small doses.

10. Avocado. This highly nutritious fruit—although often thought of as a vegetable—is high in monounsaturated fat, which helps to increase HDL, aka, “good cholesterol.” Courtesy of Amy Triplett, RD, clinical outpatient dietitian, at Marshall Medical Center's Diabetes & Nutrition Education Department.

odern healthcare has become more focused on placating your pain than changing your habits. The epidemic of chronic pain continues to skyrocket mainly because we have become reliant on practitioners to make us feel better, rather than being educated and supported on how to solve our own issues. Patrick Mummy designed and patented AlignSmart™ Technology and created the Symmetry system to help solve this crisis. He now provides training and licenses his technology in the United States and Canada. He argues that when it comes to the human frame and chronic pain a mechanical engineer or an architect can best explain how the human body should hold itself and function around the force of gravity. Our Symmetry practitioners utilize our postural assessment tools to measure 20 landmarks to analyze your posture and compensation patterns. These measurements are input in our proprietary algorithm to determine your individualized stretching and strengthening exercise routines which bring your body back into alignment. At each session, we generate a report including your postural alignment score to educate you on your progress and support you throughout your journey. SKI RESORT ROUNDUP by SUZIE DUNDAS

Northstar California Resort

stylemg.com

| JANUARY 2022 |

Northstar California Resort

5001 Northstar Drive, Truckee, 530-562-2267, northstarcalifornia.com

Northstar has a reputation for being the fanciest resort at the lake and tends to attract an equally posh clientele. It’s the most like East Coast skiing, with very defined runs and truly excellent grooming. Most skiers here are out-of-towners, not locals, which makes it busy on the weekends but one of the least busy “major” resorts on the weekdays. • Base area has an expansive (and expensive) village with an ice-skating rink and happy hour s’mores. • Some of the most defined terrain around the lake. • Has a few well-built parks. • Close parking lot is very small; expect to shuttle to reach the village most days.

Diamond Peak Ski Resort

1210 Ski Way, Incline Village, 775-8321177, diamondpeak.com

Diamond Peak, aka DP, is one of the most affordable mountains and, along with Homewood, offers probably the best views of Lake Tahoe. It has one particularly nice trail that looks like you’re going to ski directly into the lake, but—bonus(!)— leads directly to a mid-mountain bar. • Fewer trails but great progression (if you’re a beginner, it’s a good place to start on blues; if

/stylemediagroup /stylemediagroup /stylemediagroup /stylemags

Diamond Peak Ski Resort

you’re skiing blues, it’s a good place to work up to black, etc.). • Very short lines; one of the least-crowded mountains. • Ideal for kids and lessons; if you’re skiing the steeps, you’ll have a lot of space to yourself. • Has great midweek deals.

Mt. Rose Ski Tahoe

22222 Mt. Rose Highway, Reno, 775849-0704, skirose.com

As the highest resort along the lake, Mt. Rose gets brag-worthy amounts of snow. It’s also the closest resort to Reno, so it tends to get crowded with tourists. The front side is good for families, and expert skiers will love the steep chutes on the backside.

Northstar photos by Tomas Cohen. Diamond Peak photo by Chris Talbot.

Tahoe is home to ski resorts for all—from glitzy and glamorous to budget-friendly options that won’t break the bank. As a local who specializes in writing about the outdoors and adventure sports, I’m often asked: “What’s the difference between them, and how do I pick one?” So, here’s a quick and dirty guide, from my humble perspective, starting clockwise at the top of the lake.

• Has the highest elevation so gets a truly ridiculous amount of snow. • Downside: It’s off Mt. Rose Highway, the highest year-round pass in the Sierra Nevada, so you’ll need snow tires or chains and a brave soul to make the drive during storms.

Heavenly Mountain Resort

Heavenly photo courtesy of Rachid Dahnoun, Lake Tahoe Visitors Authority. Mt. Rose photo by Billy Jesberg. Kirkwood Ski Resort photo courtesy of Vail Resorts-Kirkwood. Sierra-at-Tahoe photo by Kyle Williams.

3860 Saddle Road, South Lake Tahoe, 775-586-7000, skiheavenly.com

Probably the most well-known Tahoe resort, Heavenly offers expansive terrain and the ability to ski from Nevada into California, and vice versa. Pretty cool! This place gets packed and is in South Lake Tahoe, which means it has more of a spring break/party vibe than the more relaxed resorts of North Lake Tahoe. • There are a handful of traverses and passes here, so snowboarders will want to be waxed, unless you want to unstrap all day. • Has the most variety of lodging around the lake; many home rentals and hotels are within walking distance of the village and gondola. • Walking distance to casinos and bars, so a great option for people looking for both skiing/riding and nightlife without having to drive.

Kirkwood Ski Resort

1501 Kirkwood Meadows Drive, Kirkwood, 209-258-6000, kirkwood.com

The furthest from the Tahoe basin and most remote, Kirkwood still has an old-school vibe and is best known for being steep and deep. Experts and pow-hounds will love the resort's prime powder and fantastic trails and bowls deep in the mountains. • Remote. Here’s a story: A friend skied here during a storm in 2017 and got trapped there for five days until the roads were cleared/opened. Be

Mt. Rose Ski Tahoe

prepared. • Not much in the way of nearby bars/ hotels/anything. • Least crowded of the Vail resorts and retains the most authentic feel of any of them.

*Sierra-at-Tahoe

1111 Sierra-at-Tahoe Road, Twin Bridges, 530-659-7453, sierraattahoe.com

With a little bit of an old-timey feel and a good amount of intermediate and progressive terrain, this is a good choice for skiers and riders who want to be close to South Lake but away from the huge crowds of Heavenly. It’s also one of the closest to Sacramento. • Less crowded than Heavenly but still close enough to stay in South Lake Tahoe. • Fun, laid-back, not-too-corporate vibe. • Only 46 trails but a good amount of steeps. *As of press time, the resort was closed for the season due to damage from the Caldor Fire. Please check their website for updates.

Homewood Mountain Resort 5145 West Lake Boulevard, Homewood, 530-525-2992, skihomewood.com

Ahh, Homewood. The mountain that’s never crowded and offers views for days. In my opinion, the downsides of Homewood are minimal: There are fewer food and drink outlets, and it doesn’t have a village, which is no big deal, as the amazing views more than make up for it. • This is a beginner and family mountain, so if you stick to the upper chairs you’ll probably have the place to yourself. • The parking lots are small, so arrive early. But the flip side is the mountain is never crowded, since there’s nowhere to park! • It has a decent amount of terrain vis-

Palisades Tahoe

Sugar Bowl Resort

Homewood Mountain Resort

à-vis the ticket price—it’s probably the best-kept secret in Tahoe. • Traffic on Highway 89 can be bad on Sundays when everyone is trying to reach 80 West.

Palisades Tahoe at Alpine Meadows

2600 Alpine Meadows Road, Alpine Meadows, 800-403-0206, palisadestahoe.com/explore/ alpine-meadows-ski-resort Alpine Meadows is a massive resort, with one high-speed lift that goes top-to-bottom in under 10 minutes and about nine other lifts leading out to its expansive bowls. Despite not having a village and only a few places to grab food or drinks, it has amazing terrain and is a little more insulated from high winds than sister resort Palisades. • Even when the Summit Six chair is closed for winds, other lifts can operate and access most of the same terrain. • Gets way less crowded than Palisades Tahoe, but that said, it’s still one of the most crowded resorts in Tahoe. • New two-stop lift offers quick access to Sherwood Bowl (fantastic on a pow day!).

This is one of my favorite mountains, and for good reason: It gets a ton of snow, has a vintage wooden gondola you can take to get to the resort, and there’s a variety of terrain for all ability levels. • Because it’s generally less crowded, pow days last longer here. • It’s off Old 40—a windy, steep road that often closes during the winter/ icy days. • Great learn-to-ski and ride deals and close enough to Truckee to stay in town and enjoy the social scene. Sugar Bowl Resort

Boreal Mountain

Palisades Tahoe

1960 Squaw Valley Road, Olympic Valley, 800-403-0206, palisadestahoe.com

Palisades Tahoe at Alpine Meadows

Ahh, Palisades. The resort that put Lake Tahoe on the map by hosting the 1960 Winter Olympics. The world-class terrain boasts over 20 lifts that spreads skiers and snowboarders out well, even on busy days—though it’s still best to avoid holiday weekends if you can. With the epic terrain comes high prices and a lot of corporate influence, but, man, it’s hard to beat fresh lines down Granite Chief on a storm day. • Huge. Thousands of acres of terrain and 20-plus lifts. • Bad traffic. A drive from Truckee that should take 15 minutes can take more than two hours during busy days. • Objectively, they probably have the best and most fun terrain (bowls, cliffs, chutes) and a very fun, social village at the base.

Boreal Mountain

19749 Boreal Ridge Road, Soda Springs, 530-426-3666, rideboreal.com

Truthfully, I’m a little hesitant to even put Boreal on here as a recommended ski resort, as it’s basically just a park mountain—but it’s good at being that. It’s also off Highway 80, meaning you don’t have to drive all the way into Truckee and beyond. If you like park skiing and riding and semi-affordable lift tickets, Boreal is probably worth a visit. • Small and not very steep with very young clientele (college students, teens, etc.). • Excellent for people who want to improve their park skills and beginners who don’t want to spend much on a pass. • Being on Highway 80 has a downside, too: 80 often closes or requires snow chains during busy storms, so getting trapped there for a few hours isn’t totally out of the question.

aving traveled to many countries, I’m often asked, “Where’s the best food?” Mexico always makes my list. The cozy, bootstrapped feel as you walk into Catalina’s Kitchen is a strong reflection of the spirit of the food itself: homemade and authentically delicious. I sat down and ordered a tamarindo agua fresca, a classic sweet and tangy juice found across Mexico, and looked over the menu. To start: the pupusas. Made from scratch on the spot, these Salvadorian delicacies can take a bit of time to come out, but oh man, are they worth the wait. Homemade corn flour lovingly rolled and stuffed with a hefty helping of cheese, choice of meat (I ordered one chorizo and one pork), and fried to perfection, they were, hands down, the stars of the show. Each one came with a traditional, house-made salsa, and a side of curtido (a cabbage, carrot, and onion slaw with an infusion of vinegar and oregano...the perfect balance to the comforting flavor of this classic El Salvadorian dish). Simply delicioso. For entrées, I chose a taste of both land and sea: the chile relleno plate and the shrimp fajitas. Being born and raised in a place whose entire identity

hinges on one fiery crop, green chile, it’s hard to be impressed by a chile relleno anywhere outside the Land of Enchantment (New Mexico). In the case of this rendition, the accompanying salsa certainly made up for its genetic shortcomings. With a healthy serving of Spanish rice and refried beans, you’ll leave satisfied. While I was expecting the fajitas to arrive on a sizzling skillet, the plate came with sautéed bell peppers and onions, a large serving of rice, and refried beans. The picante salsa roja complemented the pan-charred shrimp’s slightly smoky flavor, making it too easy to shove bite after bite onto my choice of tortilla. Throughout the meal, Spanish speakers began trickling in—a wonderful reassurance that the authenticity and homemade taste are truly a reflection of Latin origins. Finally, my dining companion and I decided to split a champurrado, a traditional chocolate-based drink made with corn flour and served hot. Unfortunately, the kitchen was staffed only by the owner, and he didn’t have time to prepare the recipe from scratch as they normally do. Something to look forward to proxima vez, I suppose!

Mocktails don’t have to be mundane! Fans of something that brings the heat will be drawn to the Spice Dream at Bennett’s Kitchen Bar Market. Jalapeños are combined with cilantro for a touch of firemeets-herbaceous balance. Fresh pineapple and lime juices bring deliciously sweet and tart notes, making it akin to a tropical, spicy margarita—sans tequila and hangover, of course. Insider tip: Their bartender shares that the concoction pairs perfectly with the restaurant’s mahi-mahi tacos.

You don’t need to wait until summertime to enjoy something blended and delicious. The trendy Sorbet Swirl at Sutter Street Steakhouse is something the whole family can savor— either alongside your meal or as a refreshing dessert. The drink starts with sorbet from Fiorello’s Artisan Gelato (usually mango, but it can change along with the season) and is combined with ice, lime juice, ginger ale, Squirt, and a dash of sweet and sour before being blended to a slushee-like consistency.

This mocktail packs the punches of flavor you’d hope for from the cheeky name. Whether you’re expecting or not, it’ll have your taste buds dancing all night long! It starts with house-made blueberry jam for a concentrated flavor before freshly squeezed lemon juice gets blended in. Finally, Seedlip gin—a non-alcoholic spirit with notes of lemongrass, Mediterranean orange, ginger, and lemon peel that tastes like the real deal— arrives on the scene. You’ll receive a shaken, not stirred, libation that’s served in a posh martini glass for a photo-worthy finish.

If sweet drinks aren’t your cup of tea, then keep your palate refreshed with this savory sipper with a twinge of tang from Iron Horse Tavern. Mild cucumber gets muddled with spicy cilantro in a generously sized jar, while seltzer and lemon-lime soda give the drink plenty of effervescent bubbles. Add to that a dash of simple syrup, squeeze of lime juice, and thinly sliced then rolled cucumber garnish, and you have a clean, bright, spa day-worthy drink that technically has veggies in it, too!

Head Chef Thuy Nguyen creates the vegetable stock by simmering broccoli stems until they get ultra soft and a nice broth base is achieved. Familiar pho

items such as noodles, daikon (radish), carrots, and cabbage are added for a healthy, colorful serving of veggies. The bowl is fully customizable, too; choose from mock beef, “meatballs,” or “chicken.” If you’d like to take it up a notch, feel free to add fresh tofu, wontons, or extra noodles. Creamy and smooth, the Wild Mushroom Soup at Hawks

makes for the perfect start to your dinner experience. This customer favorite begins with 10 thyme sprigs, butter, thinly sliced yellow onions, and salt. The onions get a good cooking (we’re talking a minimum of 15 minutes) until they’re ready to hang out with the assorted mushrooms and a pinch of white pepper, which provides an earthier flavor than black

pepper and works swimmingly with mushrooms. Chicken broth and heavy cream jump into the pot, and the thyme is removed. Everything is puréed and strained through a mesh sieve for a seriously luxurious finish. It’s then topped with a sweet sherry gastrique and crispy onions before it arrives tableside. FUN FACT: There is an entire cup of wild mushrooms in every bowl of this soup. 5530 Douglas Boulevard, Granite Bay, 916-791-6200, hawksrestaurant.com

Tried-and-True Tomato When thinking of classic soups that are comforting and will warm you up, a simple bowl of Tomato Soup comes to mind. You’ll find all the familiar notes of chicken stock, heavy cream, basil, and oregano in the offering at 105 Noshery. But your palate will be heightened with a healthy incorporation of rosemary, which isn’t always used in tomato soup. Familiar grilled cheese is swapped for grilled cheese croutons— crafted with mild cheddar and a

A French Affair

This classic French Onion Soup at Bricks Eats & Drinks makes for an awesome starter or a meal in and of itself. The rich beef broth is house-made and simmers for hours along with plenty of onions, which brings out their sweet undertones. Though it’s described by the restaurant manager as a familiar, traditional recipe, Provolone and a touch of Parmesan are used instead of Swiss or Gruyère. The cheeses are also broiled atop the soup instead of being heated

white loaf from Grateful Bread— for a nice crunch and slightly sweet note. As a bonus, California tomatoes are always used (the chefs go through roughly 150 pounds per week to craft this soup!), bringing to life that “farmto-fork” value of our region. FUN FACT: Tomatoes are high in vitamin C, making this soup an even better choice during winter months. 105 Vernon Street, Roseville, 916784-6674, 105noshery.com

Have you ever enjoyed Boston Clam Chowder with a twist? Head into Scott’s Seafood Roundhouse to experience an old-meets-new recipe slightly modified from 1974. Primarily inspired by the eatery’s first location on San Francisco’s iconic Lombard Street, it starts with Atlantic clam juice and clams. Red potatoes are popped in for a thick, creamy texture and a nice addition of starch. You’ll know you’re

using a torch, allowing all the flavor profiles to “melt” together even more. For avid fans of French onion soup, it's also worth noting: Some restaurants only offer a cup-size portion; here, the option to snag a full bowl of the good stuff awaits. FUN FACT: Though this soup is often a staple at steakhouses and fine dining establishments, it was originally an affordable French mainstay—it provided a way to use up onions, which were plentiful and inexpensive, and stale bread. 482 Main Street, Placerville, 530303-3480, bricksonmainstreet.com

eating California chowder when you stumble upon hints of Sierra Nevada IPA, which replaces traditionally used sherry and provides a unique, local flavor profile. A sprinkling of fresh herbs and some puff pastry cubes for texture finish this seafood masterpiece. FUN FACT: Clam chowder has been around since the 1800s and hails from New England. 824 Sutter Street, Folsom, 916-9896711, scottsseafoodroundhouse.com

Where We Live

D I D YO U S N OW ? 5 Fun Facts 1 The words “sled,” “sledge,” “slide,” and “sleigh” are all related and come from the ancient ProtoIndo-European root sleidh-, meaning “to slip.”

2 Nivisphobia is the fear of avalanches. Fear of snow is chionophobia and pagophobia is the fear of ice or frost.

3 The biggest hailstone ever recorded fell during the summer of 2010 onto the town of Vivian, South Dakota; it measured eight inches wide and weighed almost 2.2 pounds.

4 In ancient Greece, it was thought that drinking water from melted snow would give you "goiters," a thyroid disorder that causes your neck to swell. Although they didn't know why, they weren't too far off the mark—one of the causes of goiters is lack of iodine and, as we know, snow water—unlike groundwater— doesn't contain any minerals, including iodine.

5 Traditional Inuit igloo builders would craft different shelters depending on their purpose. One man, working alone, could throw up a snow dome designed to be an overnight shelter in around an hour. Larger, more permanent igloos—created for family living—could take two days. Source: The Little Book of Snow by Sally Coulthard
