Some changes for Stroll Scarsdale

Dear Friends,

With mixed emotions, I share that I’m stepping down as Publisher of Stroll Scarsdale to attend law school at the University of Wisconsin–Madison. Founding this publication and watching it grow has been one of the most meaningful experiences of my life. I’m deeply grateful for the relationships I’ve built with our readers, contributors, sponsors, and the incredible team behind each issue. Together, we’ve created a magazine that not only entertains but strengthens community ties through shared stories and local voices.

As I turn the page to a new chapter, I’m thrilled to introduce Stroll Scarsdale’s new publisher — my mom, Dolly McCarthy. Her creativity, passion, and commitment to community make her the perfect person to carry this legacy forward. Please join me in giving her a warm welcome. Though I’m stepping away from my role, I’ll remain a devoted reader and supporter. Thank you for the trust, enthusiasm, and connection you’ve shared with me over the years — it’s been a true honor to be part of your lives.

I’m absolutely thrilled to introduce myself as the new Publisher of Stroll Scarsdale! As the magazine heads into its third year, I want to first thank my daughter, Shelley McCarthy, for pouring her heart into this publication. Her passion, dedication, and love for this community are evident in every page, and I’m honored to continue the legacy she started.

As a longtime media professional (I was a TV News reporter/news anchor for many years in Chicago and Rockford) and storyteller, I’m excited to celebrate all that makes Scarsdale and Arlington Heights such special places to live. This publication is all about you — your families, your milestones, your passions — and I look forward to sharing more of the good and positive news that connects us. My goal is to continue building a publication that brings joy, inspires pride, and deepens our sense of community.

School you attend and grade? Prospect High School. I am a senior.

What sport do you play? How long have you been playing? I have been running on the cross country and track teams since sixth grade, so this is my seventh year.

What inspired you to get started with your chosen sport? My dad, who was a track athlete in high school, encouraged me to sign up in sixth grade. I signed up just to get involved with something, and I stuck with it ever since.

What event do you participate in cross country and track? For track events, I run longer distance races, which includes everything from the 400 m to the 3200 m.

What do you enjoy most when playing your favorite sport? I enjoy laughing and having fun with my teammates the most. We know each other better than anyone because of all the time we’ve spent together at practice.

What was your proudest moment? My proudest moment is winning cross country state as a team in 2022. I am so grateful for my teammates for being the amazing family they are, my coaches for training me to achieve more, and my parents.

Who is someone you admire? I admire my former teammate Audrey Ginsberg. When I was a freshman, she was the first person I knew to continue running in college. She inspires me because of all she has accomplished while being a kind person.

What advice do you have for others looking to get into running? My advice would be to find the fun. If you can find your passion for the sport and people who you love to do it with, putting in the work and improving will be that much easier.

How long have you lived in the neighborhood? We bought our home in 2018 and moved in 2019 — one week after Benjamin was born.

Street you live on: Wilshire Lane.

Where are you originally from? I’m originally from Manhattan Beach, California. Kevin is from Mount Prospect.

Is there anything your neighbors might know you for? I’m known for being friendly, welcoming, and outgoing. We’re very social with our neighbors and celebrate lots of events together.

Describe your family dynamic or interests: We’re a mix of chill homebodies and active sports lovers. Kevin’s three siblings and parents all live in Mount Prospect, so we spend a lot of time with extended family and cousins. We enjoy biking, getting frozen yogurt downtown Arlington Heights in the summer, and having dance parties or doing puzzles at home.

Any family traditions? We celebrate both Jewish and Catholic holidays, since I’m Jewish and Kevin is Catholic.

We also love watching Illini sports and professional games together as a family.

Favorite vacation memory? We recently did a road trip to St. Louis and Nashville with all three kids — it was so much fun! My personal favorite trip is still our honeymoon in Thailand.

What do you love about your neighborhood? The people — we’re surrounded by supportive, loving, and caring friends who always have our back. It’s also amazing being close to Kevin’s high school friends who’ve all moved back to the community.

What’s something meaningful or unique about your family? We’re multigenerational — my mom moved from California in 2020 and still lives with us to help with the kids. Also, blending two faith traditions brings a lot of richness to our family.

What is your profession? I’m a Family Nurse Practitioner and the owner of LTH Beauty, a Medspa located inside the beautiful Splendid Day Spa in downtown Mount Prospect. I specialize in Botox, filler, Sculptra, microneedling, and weight loss management.

What do you love about what you do? I love helping women feel confident, refreshed, and happy — and building

a network of supportive, empowered clients and fellow female entrepreneurs.

What inspired you to enter the field? I’ve always had a passion for beauty, wellness, and helping others feel their best.

Where did you go to college? I studied Community Health/Pre-Physical Therapy at the University of Illinois, earned my master’s in nursing at DePaul, and later completed another master’s at Saint Louis University to become an advanced practice nurse.

What does your spouse do? Kevin is a software engineer and has owned his own company since 2011.

What does your family love doing? Hanging with friends, family, going out to new restaurants, spending time with my kids outdoors, yoga, hiking, massages, all things self care.

Are you passionate about any charities / nonprofits / philanthropies? I’m involved in the PTA at Windsor and now more involved since I launched my business.

Describe your perfect day. Walk while listening to my podcast, usually Mel Robbins, yoga class, brunch with girlfriends, acupuncture, chiropractic.

What are your favorite things to do around town? We love going to coffee and breakfast at Scratchboard Kitchen and enjoy the music concerts during the summer months.

What are your favorite restaurants, hikes, events, TV shows, etc? I am currently watching White Lotus and loving it. I’m a sucker for romantic comedies and enjoy being outdoors, though I haven’t found my favorite hike yet.

Why did you choose to live in this neighborhood? My husband wants our kids to go to Prospect High School.

Hi, my name is Odie and I am 14 years old. I like to sleep most of the day and love when my family is home. I like to run along the fence with my neighbor’s dog. He can run way faster and way longer than me. My favorite thing to do is eat. I love all food!!

Is there anything other neighbors or pets would know about your pet? Odie loves to go into our neighbors yard and play with their two children. After a few minutes he sneaks away, goes through their gate and explores all the new smells in their front yard.

How would your pet tell the story of the day they met you and your human family? In the words of Odie: “My previous owner was a young gal who worked long hours and could not keep me. When I met my new humans they had a house filled with kids and another dog named Riley, I loved it. Riley became my best friend. My best bud now is the grandson of my mom and dad. I stay right by his side whenever he comes to visit.”

Has your pet ever run away or gotten into trouble? Odie: “I love running after skunks in our backyard. Each time I find a smelly friend I get sprayed and mom has to give me a really long bath. She does not like the smell, I don’t think it smells that bad.”

What is his personality traits? Super laid back until we leave the house then he becomes nervous thinking we will never come back.

What is your pet’s favorite Arlington Heights park? Schaag.

What is his pet peeve? When we do not give him table scraps he starts making funny noises hoping we will slip him some food.

Where did you grow up? I was born at Holy Family Hospital and I have lived in Rolling Meadows now 45 years. I have a ton of family in the area!

What inspired you to start your business? I enjoy helping people, but I have an extremely strong work ethic.

Ben’s Fudgy Chocolate Mug Cake

Ben loves to make the mug cakes as an afternoon as an afterschool treat or as a special family dessert. Especially when we’re at the lake with family!

INGREDIENTS:

• ¼ cup all-purpose flour

• ½ teaspoon baking powder

• 4 Tablespoons unsalted butter, cut into 4 pieces

• 3 Tablespoons bittersweet or semisweet chocolate chips

• 2 large eggs

• ¼ cup sugar

• 2 Tablespoons cocoa powder

• 1 teaspoon vanilla extract

• 1/8 teaspoon salt

BAKING INSTRUCTIONS:

1. In a small bowl, whisk together flour and baking powder.

2. In a medium microwave-safe bowl, combine butter and chocolate chips. Heat in microwave at 50 percent power for 1 minute. Stop microwave and stir mixture with spoon. Heat in microwave at 50 percent power until melted, about 1 minute. Remove the bowl from the microwave.

3. Add eggs, sugar, cocoa, vanilla, and salt to the chocolate mixture and whisk until smooth.

4. Add flour mixture and whisk until smooth. Use spoon to divide the batter evenly between 2 coffee mugs.

5. Place mugs on opposite sides of the microwave turntable. Cook in microwave at 50 percent power for 1 minute. Stop microwave and use spoon to stir batter in each mug, making sure to reach the bottom of the mug.

6. Cook in microwave at 50 percent power for 1 minute (batter will rise to just below the rim of the mug and the cake should look slight wet around the edges). If the top of your cake still looks very wet, cook in the microwave at 50 percent power for another 15 to 30 seconds.

7. Use oven mitts to carefully remove the mugs from the microwave and let your mug cakes cool for 5 minutes. Serve warm. Add some whipped cream, a crumbled Oreo or scoop of your favorite ice cream on top for even more decadence!

Microwave tip: Most microwaves have a power setting that lets you cook things at reduced power levels. It’s important to melt butter and chocolate at 50 percentage of full power. You often have to set the power level before setting the cook time.
