Creamy Tuscan Chickpea Soup
SEPTEMBER 2025
This hearty soup is a cozy mash-up of zuppa Toscana and Marry Me Chicken. Spicy sausage adds a deep, savory flavor while sun-dried tomatoes lend a sweet-tangy richness to the broth. Chickpeas make the soup extra satisfying without feeling heavy, and the vegetables are perfectly tender with just a slight bite. It’s an umami-packed bowl that’s both comforting and nourishing.
Ingredients
1 tablespoon extra-virgin olive oil
1-pound spicy Italian sausage, casings removed
1 large yellow onion, chopped (about 2 cups)
1 large celery stalk, chopped (about 1/2 cup)
1/2 cup finely chopped oil-packed sun-dried tomatoes
4 large garlic cloves, minced
8 cups chicken stock
2 (15-ounce) cans chickpeas, drained and rinsed
4 cups torn lacinato kale leaves (about 1 small bunch)
2 ounces Parmigiano-Reggiano cheese, grated (about 1/2 cup), plus more for garnish (optional)
1/4 cup heavy cream
2 tablespoons chopped fresh basil
3/4 teaspoon kosher salt
Directions
Heat oil in a large Dutch oven over medium-high. Add sausage; cook, stirring often and breaking into small crumbles using a wooden spoon, until sausage is rendered and browned, 5 to 8 minutes.
Add onion and celery to Dutch oven; cook, stirring often and scraping bottom of pot to loosen any browned bits, until vegetables begin to soften, 4 to 6 minutes. Stir in sun-dried tomatoes and garlic. Cook, stirring often, until fragrant, about 1 minute. Stir in stock and chickpeas; bring to a boil over mediumhigh. Reduce heat to medium-low; simmer, uncovered, until flavors meld, about 15 minutes. Spoon off and discard any foam that rises to the surface.
Add kale to Dutch oven; cook, stirring occasionally, until tender, about 5 minutes. Remove from heat, and stir in cheese, cream, basil, and salt. Divide soup evenly among bowls, and garnish with additional cheese, if desired.

Golf Course Renovation Update
The course continues to take shape each day as the grow-in progresses steadily. We’re excited to share that all playing surfaces are now officially grassed — marking a major milestone for the project.
To enhance long-term playability, we made the strategic decision to sand cap all bunkers and install additional drainage in key areas. This extra effort will add one more week of work with the construction team, but it’s a valuable investment in the course’s performance and durability.
With a few strong weeks of grow-in behind us, we’re now tackling the final punch list: wrapping up drainage, capping bunkers with sand, sodding washouts, and fine-tuning the finishing details. It’s incredibly rewarding to see the course come together — every day it looks more and more like the finished product.

GETTING THE MOST OUT OF YOUR WORKOUTS: DON’T WASTE A GOOD EFFORT
A simply stunning, superlative, stupendous and sassy September to all of you seers and sages of strength, scholars of sweat and specimens of sinew. By now, school is back in session for most; as I sit here at command central penning this installment, I can almost hear the collective sigh of relief coming from the parents! Our Fitness Center will soon become considerably busier. With the extra time many of you will have this is the perfect time to make sure to get the most out of your workouts as opposed to “spinning your wheels” or wasting precious time.
The commitment and dedication required to work out on a regular schedule is not easy. Even though most are aware of the litany of benefits associated with exercise it can still be difficult to find the time and motivation to stick with a consistent program. This month’s article is designed for those who have made this commitment but unfortunately may not be getting the most out of their workouts for one reason or another. Granted, doing any exercise, be it cardio, strength training or flexibility, is better than doing nothing and will yield some benefits. However, in many cases, a well-intentioned effort falls short of maximum productivity and outcome due to various common mistakes. If one has made the decision to improve their health, body composition and mental well-being through exercise it would behoove that individual to ensure that they were doing things properly and getting the most for their hard work and effort. Following are several important workout points which can be crucial to accruing optimal results from your exercise program.
Cardio Related Exercise- it is important to ensure that you are working at your optimum target heart rate. This is easily calculated as 220 (theoretical heart max) minus your age, multiplied by 75% (for fat burning) and 85% (for cardio training). The duration of cardio training should be more than 30 minutes per bout and be performed 4-5 times per week. For those trying to shed a few pounds it is a good idea to do your cardio training prior to strength training to increase your exercise pulse during the lifting phase of your program.
Strength Training Exercise- one of the most overlooked factors in formulating a strength training program is the order of exercises. It is extremely important that the larger muscle groups be trained first. An example of this would be doing your leg presses or squats prior to doing leg extensions, curls, etc. When training the upper body, exercises for the chest, back and shoulders need to precede arm exercises (bicep and triceps). Complete all the sets of a given exercise or muscle group rather than bouncing around from body part to body part to increase the level of overload and centralize blood flow to a specific muscle area. Don’t be satisfied with high repetition, low resistance sets which you can easily breeze through- the intensity of these is not sufficient to bring about a lasting adaptation and improvement. Make sure to allow a minimum of 48 hours of recuperation time between strength training workouts to allow the muscles to recover for the next bout. Always make sure to adhere to proper form and technique while lifting. This will not only help you avoid unnecessary injuries but also guarantee that the desired target muscle is isolated efficiently and maximum benefits are gained. Remember… “It’s not how much you lift but HOW you lift it”.
Stretch and Flexibility Training- while it is okay to do some stretching prior to cardio and strength training it is more effective to just warm-up easily before increasing your intensity. The best time to stretch is after your work out as the body is thoroughly warmed up and more pliable. This is the time when maximal flexibility gains can be made. Make sure to ease into each stretch- do not employ ballistic (bouncy) moves as they can cause injury and hold each stretch for a minimum of 20 seconds.
These are just few ways to increase the efficiency and productivity of your workouts and ensure that you are getting the most out of them. Working out is not easy; you might as well do it right!
