Steps

1. Find a nice accent pot to place your bulbs in that allows for a 3” root base. 2. Choose from pebbles or glass marbles and make sure you have just enough to support the plants. 3. Place a layer of pebbles at the bottom of your pot up to about 2 inches. Place the bulbs wide side (root base) down and put a few stones/marbles between them. Leave the tops of the bulbs exposed. 4. Add water until the level reaches just below the base of the bulbs. 5. Find a cool place away from direct sunlight. Check frequently and water about once a week to maintain correct water level.

Tips

• For the kids, try using small lego pieces in a glass jar. • Make sure to plant your bulbs close together, but not quite touching. This will ensure the display is full and vibrant. • To keep the bulbs from rotting, be sure to not fully submerge them in water. • Flowers will bloom in 4-6 weeks. • Once blooms die, compost or discard bulbs. • Use bamboo stakes and twine to hold them upright if they become droopy.

When there's a chill in the air, nothing beats the comforting simplicity of tomato soup and a grilled cheese sandwich. Next time you're tempted to reach for that ubiquitous red can, leave it in the cupboard and make your own tomato soup

instead. It's super easy, and tastes a thousand times better! This version is topped with a slice of rustic bread, heaped with salty Gruyère cheese, and broiled until hot and bubbly.

Method

1.25 kg plum tomatoes (about 20), sliced in half lengthwise

Preheat oven to 400°F. Place tomatoes, cut side up, on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Wrap garlic cloves in aluminum foil and place on the same baking sheet. Roast until tomatoes are soft and slightly browned, about 1 hour.

1 teaspoon crushed red pepper flakes 2 tablespoons olive oil 1 teaspoon fresh thyme leaves, finely chopped 3 garlic cloves Sea salt & fresh pepper 1L chicken stock 1 cup grated Gruyère cheese 4 slices of rustic bread

Remove garlic from foil. In a food processor, process the tomatoes and any remaining liquid, with the garlic for just a few pulses so it's still a little chunky. In a large pot, combine thyme leaves, red pepper flakes, chicken stock and processed tomatoes and bring to a boil. Reduce heat to low and gently simmer, stirring occasionally, for another 30 minutes. To serve, fill small bowls with soup. Place a slice of bread on top of each bowl, and mound grated cheese on top. Broil until cheese is melted and bubbling. Serves 4.

Without Sabotaging Your Health and Wellness Goals

The holidays are the perfect time to gather together and celebrate friendships, family and traditions. After all, as the song says, “It’s the Most Wonderful Time of the year!” For my family, the holidays always kick off by celebrating US Thanksgiving at the end of November. So, that makes the holiday season approximately 5 - 6 weeks in length, which means several weeks of overindulgence. This can quickly snowball into feeling down about setbacks in my wellness choices. It is important to take care of what we are fuelling our bodies with as well as filling our time with over the holidays. Here are some tips to help you navigate the holiday season without destroying all of your health and wellness efforts:

Don’t Skip Meals. A common mistake is to skip meals to save up calories for later in the day. It’s important to eat a balanced diet throughout the day to avoid over-eating later. Choose foods with higher protein and lower carbs during the day.

Fill Your Plate Once. Grab a plate and serve yourself a bit of all the foods you’d like to enjoy. Constantly nibbling while socializing around the table makes it difficult to keep track of portion sizes and the caloric intake can sneak up on you.

Watch Those Drinks! Be aware of drink mixers—most are loaded with sugar. A glass of tonic water has approximately 125 calories whereas soda water has zero. Add some lime or a “spritz” of something to cut back on calories.

Exercise. It’s easy to let a full-on workout slip through the holiday schedule. Think about head outdoors and getting some fresh air. Walk for 30-40 minutes, play at the park or go ice skating with your kids. Head up to the mountains for a day of skiing or snowshoeing. 28

Our lack of self-control, and tendency to over-indulge is the culprit. Empower yourself by deciding how much of what foods you will eat.

Allow Yourself to Say “No”. There are a plethora of wonderful events that we could attend over the holiday season and it’s easy to get overwhelmed. Give yourself permission to say “No”. Take some time to reflect on why you do the things you do.

Ask For Help. Don’t try to do and be everything for everyone. Ask for help if you need it. Sometimes the greatest moments are a result of doing tasks together.
