Here in the British Virgin Islands during 2015, if there is one common wish among residents, it is for more rain; not that it’s desired to see ‘British weather’ of course, but a little extra rain would be a blessing. Our vegetables aren’t growing and our cisterns are running dry, and the solutions to desalinate and provide the community with fresh water are anything but cheap. Luckily for us, there is a brand new cost-efficient and eco-friendly solution, which has made its market debut right here in the BVI on Great Camanoe. Elemental Water Makers (EWM) is the only company of its kind with “a new and patent-pending configuration which enables constant desalination using only fluctuating renewable energy which enables fresh water at lower costs than previously possible,” said Sid Vollebregt, managing director of EWM.

“Desalination is the process of removing dissolved salts from saline water for the production of fresh water. The preferred desalination technology is reverse osmosis,” - Sid Vollebregt. The company was founded in the spring of 2012 after two engineers, Sid Vollebregt and Reinoud Feenstra fresh from Delft University of Technology successfully completed a field pilot in Indonesia, resulting in the innovation of a reverse osmosis system that can run continuously without electricity, using only fluctuating renewable energy of the sun, wind and/or waves.


This is realised by incorporating an elevated water buffer to cope with the periods absent of renewable energy. The required elevation has been reduced by 80% through energy recovery. Hailing from the Netherlands where fresh water is abundant and accessible, EWM wished to find a solution for fresh water scarcity in areas where it was a problem. The places where desalination is necessary is usually around the equator and on islands which have access to a vast amount of water, but little of it is fresh. “As our solution is driven by renewable energy, the shortest payback time

and the biggest cost savings can be achieved at regions with high electricity prices,” said Sid. The BVI was chosen by EWM as the location for their market entry as the Virgin Islands specifically has some of the highest electricity prices globally. This year in 2015, the BVI also experienced a drastic decrease in total rainfall, and a drought warning was set in place by the Department of Disaster Management (DDM). To the visitor, it would seem as if no change in seasons exist in the British Virgin Islands; that the weather is always exactly the same – and yet in truth, there is such a difference in the last few months of every year. November brings cooler breezes; some quenching rain showers; and the return of all the beautiful, busy crewed charter yachts. As some residents of the northern hemisphere embrace—gasp—the prospect of snow and ice, charter yacht crews prepare in anticipation for all the wonderful guests with whom they will have the privilege of sharing these beautiful islands many call home. November also brings a beloved American holiday that has been adopted all over the world, including the British Virgin Islands – Thanksgiving. Many friends and families from near and far choose to spend this day on-board one of the BVI’s many crewed charter yachts. As often happens—especially when the crewed yacht chefs are involved—this special day has taken on the vibrant and exotic influence of the islands, present in the delectable aromas that fill the picturesque BVI anchorages on that fourth Thursday of November. No matter what is served, the day’s purpose is to gather family and friends in appreciation for all life’s blessings – and being surrounded by the blessed BVI’s tropical allure makes it just that much easier. If you’re looking for gourmet inspiration on this unique day (or any other, for that matter), here is an original Lolalita dessert that is guaranteed to please.

Pecan P ie Cheesecake with Salted Caramel Crust: 1 3/4 cups graham cracker crumbs 1/4 cup light brown sugar, packed 1/3 cup butter, melted Pecan Pie Layer: 1 cup granulated sugar 1/3 cup dark agave syrup 1/3 cup molasses 1/3 cup butter at room temperature 2 large eggs, lightly beaten 1 1/2 cups pecans, chopped medium 1 TSP vanilla extract

Cheesecake Layer:

3 8oz packages of cream cheese at room temperature 1 1/4 cup light brown sugar, packed 2 TBSP all-purpose flour 4 large eggs 2/3 cup heavy whipping cream 1 TSP vanilla extract Garnish: 1 cup sugar 6 TBSP salted butter, cut into small pieces 1/2 cup heavy cream 1 TSP salt 3/4 cup pecan halves


Preheat oven to 350ºF. Combine the graham cracker crumbs, sugar, and butter in a small mixing bowl. Line the bottom of a 9in springform pan with parchment paper, and press mixture into bottom, making sure it is level. Bake for 5 minutes and let cool. In a medium saucepan, bring sugar, agave syrup, molasses, butter, eggs, pecans and vanilla to a boil over medium-to-high heat, stirring constantly with a rubber or silicone spatula. Reduce heat and simmer, stirring constantly until thickened, about 10 minutes. Pour mixture over graham cracker crust and set aside.   Beat the cream cheese until there are no lumps. Add the brown sugar and flour, beating until fluffy. Add eggs, one at a time, then cream and vanilla. Pour cheesecake mixture over pecan filling. Place springform pan on a cookie sheet on the bottom rack of the oven and bake for 45 minutes. Reduce the temperature to 325ºF and bake for 30 minutes. Turn off oven and let the cheesecake rest in the oven for 1 hour. Run a knife around the edges to release the sides from the springform pan, but do not remove the cheesecake from the pan. Let it cool to room temperature, cover the top loosely with aluminium foil, and place in the refrigerator overnight. In a small saucepan, heat granulated sugar over medium heat, stirring constantly with a rubber or silicone spatula. Sugar will form into lumps and

eventually melt to a caramel-coloured liquid. Add butter one piece at a time, stirring constantly. Slowly drizzle in heavy cream, stirring constantly. Boil for 1 minute. Remove from heat and stir in salt. Allow to cool before using. When you’re ready to serve, slice cheesecake into 8 – 12 even pieces and drizzle plates with cooled caramel. Place cheesecake on plates and decorate with whole pecans. You’re welcome to add extra caramel – the more the merrier.

SEA In the old days, they relied on the location of the stars, their knowledge of wind and current, and if lucky, a box compass. There were other methods as well and I will share the limited knowledge that I possess with you now. Box compasses were a fairly reliable instrument in sailing, especially at night but they were a luxury few could afford. In the 1920’s in the village of East End for example, there were maybe four compasses and close to four times as many sloops in operation. The owner of a compass would lend it out to others, but only when he was not using it so they were not readily available; sometimes a trip down island had to be postponed until one could be had. The trip between here and St. Maarten is the longest distance between any of the Islands in the Antilles chain – 90 miles. It also is the only time you travel directly into the wind and almost straight against the current. All the other passages have the wind and current on some degree of a beam reach. Additionally, land is out of sight most of the time and even when St. Maarten comes into vision, its distance is very misleading. The trip is usually begun at the end of the day with an overnight passage in hopes of reaching land in the early morning or by noon of the next day. When you are on a starboard tack, the addition of the current pushing against you on an angle sends you away from where you’re going so that the longer you stay on that tack the farther away you are pushed. One must compensate by staying longer on a port tack, steering up towards the island of Saba and then falling off to St Maarten. In studying the maritime history of the Virgin Islands, one subject that has always fascinated me is how the mariners of the old days were able to navigate their sloops over vast distances of the Caribbean. For over 200 years, our sailors travelled all over the region and even down to Guyana on a regular basis without the aid of the electronic devices that we take for granted today. I have delivered both power and sail boats between the Virgin Islands, St. Maarten and Antigua and have used both chart calculations and an electronic chart plotter which is in common use today. No matter which method was used, we always had the benefit of GPS—Global Positioning Satellite—to insure that we knew our location.

This however is another of our modern day advantages since electric current did not reach the Caribbean until recent times. Unless there was moonlight to silhouette the islands in the distance, our ancient mariners had to rely on their knowledge of wind and current and time their tacks accordingly.

She applied what she learned in school to projects executed in the BVI including a Geisha photoshoot, and make-up done for the Tortola Dance Project’s ‘Thriller’ performance at Halloween. In addition to creative concepts, Julia learned how to correctly select products and apply make-up for all skin types, with an emphasis on darker skin to cater to BVI clientele. An artist sees a blank canvas, a ball of clay, or collection of materials and has a vision to take what’s there and transform it into a beautiful creation. With this definition of an artist in mind, we take another unconventional diversion in our Artists’ Corner feature this issue and review the notion of art from a different perspective.
