A recent survey by United States-based company OnePoll indicates that 70% of Americans expect to celebrate Thanksgiving differently this year.

That includes the number of people eating dinner together, and where they eat it. OnePoll reports that 30% of Americans plan to host only their immediate family this year – up from 18% doing so in 2019 – while food giant Butterball notes that one-third of U.S. families are considering serving dinner outdoors.

Americans are not ready to give up traditional foods, but that may require some pre-Thanksgiving planning to adjust the size of the meal, according to Kansas State University nutrition specialist Sandy Procter.

“When you think about the traditional dishes that mean so much when you get together, you can scale those up or down,” she said. “One of my classic recipes is the stuffing. I’m very careful not to stuff the turkey with it because of the food safety concerns, so I make it in a crock pot, which works really well, because then I have

more oven space.

“There are a variety of sizes of crock pots. I can certainly decrease the amount of ingredients but still keep a favorite food on the table.”

Procter noted that leftovers – which generally are preferred fare in the days following the holiday – won’t necessarily be eliminated if you cook less. “But instead we will leftover from a meal of four, instead of a meal for 16,” she said.

Another option, Procter said, is to cook usual quantities and make a careful plan to freeze meals ahead.

“What I like to do when I have leftovers is leave them in a variety of forms so I can pull them from the freezer,” Procter said. “I might have some slices or cubes (of turkey, for example) that can be used for soup, stew, pot pie or mixed dishes.”

Procter said she has developed another idea to help her own family get in the spirit of Thanksgiving.

“Instead of trying really hard to cut down the recipes in my head, I am considering purchasing the volume of canned and dried ingredients that I would normally

buy, keeping what I need for my small meal, then contributing the rest to a food pantry,” she said.

Nationally, statistics indicate that nearly 60% of U.S. food pantries are short on needed items right now. Procter noted data that indicates 8 billion meals will be needed during the upcoming holiday season.

Because of social distancing, people likely won’t be getting together in large groups, so many community meals may be cancelled – leaving it up to food pantries to provide food for needy families.

Procter encouraged consumers to contact the pantry in their community to learn about local needs. She also suggested buying healthy canned goods – such as fruit packed in juice or light syrup, or low-sodium vegetables – for the local pantry. Cash contributions can help pantries supply such perishable foods as produce and milk, she said.

“This may not be the same Thanksgiving dinner with people around your table that we all are used to,” Procter said, “but we can help someone else to have a better holiday experience.”

McDonald’s Enters Plant-Based Burger Market McDonald’s is entering the meatless burger battle. The fast-food giant says it’s developed a new plant-based offering called the McPlant.

Tests of the burger will happen in some markets around the world in 2021. It may not be McDonald’s only foray into meatless options, either. “McPlant Is crafted exclusively for McDonald’s, by McDonald’s,” says Ian Borden, International President. “In the future, McPlant could extend across a line of plant-based products, including burgers, chicken substitutes, and breakfast sandwiches.”

USA Today says McDonald’s is trailing many of its competitors in launching a plant-based burger in

America. Burger King launched the Impossible Whopper using a plant-based patty from food startup company Impossible Foods. Other chains like Carl’s Jr. and Del Taco have also added plant-based menu items. “There are other burgers out there, but the McPlant delivers our iconic taste in a sink-your-teethin kind of sandwich,” McDonald’s says in a blog post. “It’s made with a juicy, plantbased patty and served on a warm sesame seed bun with all the classic toppings.”

Borden says some markets will test the burger next year. The company didn’t not say whether the vegan-friendly burger will arrive in the U.S., nor give a potential timeline on the possibility.

Kansas Profile – Now That’s Rural: Tara Vance, Norton County Community Foundation

Bingo! That’s a fun game that many people love to play. Today we’ll meet a creative community foundation that used bingo and other projects to support its community during the pandemic.

Tara Vance is executive director of the Norton County Community Foundation. A Stockton native and Fort Hays State grad, she became director of the Norton Chamber of Commerce.

In 2012, she was asked to serve as part-time director of the community foundation as well.

The more she learned about the importance of local philanthropy, the more committed she became to the community foundation. “I’ve developed a passion for it,” she said.

Scott Sproul, director of the Northwest Kansas Economic Innovation Center Inc., was Norton County economic development director at

the time. “He was a great mentor to me,” Tara said.

“We saw that the private donor world would be essential (for our community) if tax dollars aren’t there someday.”

Today, Tara is the fulltime director of the Norton County Community Foundation which has grown to $2 million in assets. The Dane G. Hansen Foundation in Logan has been strong partner of Norton and other community foundations in northwest Kansas.

One major asset is the Heaton Building in downtown Norton. This historic, remodeled building is owned by the community foundation and houses 16 different tenants.

Another key foundation project is called Secure Sebelius Lake. This lake provides water recreation opportunities but was at risk from drawdown. The community foundation raised funds

to match the state’s spending to compensate irrigators for maintaining a certain water level in the lake. “This arrangement has been good for the community, good for the irrigators, and good for the state,” Tara said.

The Norton County Community Foundation annually offers various scholarships and grants for local projects.

Then the pandemic hit.

Shutdown orders occurred. Tara looked for a positive community activity and found a business in another county that was doing a bingo game. She decided to adapt the idea for Norton County. “One of our donors sent in $10,000 and said, ‘Do something good with it,’” Tara said.

With help from a graphic designer at Nex-Tech, the rural broadband company, they developed an online game called NorCoBingo to support Norton County

businesses. “Nex-Tech is an amazing community partner,” Tara said.

They designed a bingo card with various activities that could be done in the county.

These included a range of things from “Plant Flowers or Vegetables” and “Buy a Gift Card from a Business closed to the Public” to “Take a Selfie in Front of Your Favorite Building” and “Make Cards for Nursing Home Residents.”

Other options included “Drive Around Town and Wave at 3 People,” “Perform a Random Act of Kindness,” “Use an Online Service at Norton Public Library,” and “Send a Card or Note to an Essential Worker.”

Outdoor activities in the county were another option, such as “Go Fishing at Prairie Dog State Park” and “Go Explore Lenora Lake,” which is near the rural community of Lenora, population 250 people. Now, that’s

rural.

People were encouraged to fill out the bingo cards and turn them in, complete with pictures of them doing the activities. A daily drawing was held among those who submitted completed bingo cards. Three winners each day got gift certificates of $100 in chamber bucks. This project got people involved in doing good deeds as well as enjoying elements of the community.

In the end, more than 135 bingo submissions were received and more than $9,000 was spent at 26 businesses in Norton.

When Blue Cross Blue Shield of Kansas made a statewide request for examples of positive responses to the pandemic, the Norton County Community Foundation was awarded another $10,000.

Similar to Game and Parks’ annual vehicle park entry permit, the lifetime permit is a windshield sticker but of a unique design. Disabled veterans can get one free lifetime vehicle park entry permit. A park entry permit is required of each vehicle entering a Nebraska state park, state recreation area or state historical park.

2020 Farm Service Agency County Committee Elections Underway

The U.S. Department of Agriculture (USDA) has mailed ballots for the Farm Service Agency (FSA) county committee elections to eligible farmers and ranchers across the country. To be counted, ballots must be returned to the local FSA county office or postmarked by December 7.

“FSA has over 7,000 county committee members nationwide who serve their communities by providing input on our programs at the local level,” said FSA Administrator Richard Fordyce.

“We value their knowledge and judgment as decisions are made about the services we provide, including disaster and safety-net programs.”

Each committee has three to 11 elected members who serve threeyear terms of office, and at least one seat is up for

election each year. Newly elected committee members will take office January 1, 2021. County committee members help FSA make important decisions on its commodity support programs, conservation programs, indemnity and disaster programs, and emergency programs and eligibility.

Producers must participate or cooperate in an FSA program to be eligible to vote in the county committee election. A cooperating producer is someone who has provided information about their farming or ranching operation(s) but may not have applied or received FSA program benefits.

Also, producers who supervise and conduct the farming operations of an entire farm, but are not of legal voting age, may be eligible to vote.
