BEST CARROT CAKE My hubby loves carrot cake and, when I ask him what kind of cake he’d like for his birthday, that’s the one he always requests. The only difference this year was the decoration (as a nod to his radio background, I made little vinyl records and musical notes out of fondant icing to go on top).

The recipe I use is an old White Wings one I’ve had for years and years. It is ridiculously simple (the only laborious part is grating the carrot), and always results in a lovely, moist, crumbly cake. If you’re after an easy, delicious carrot cake recipe, this one ticks all the boxes. Just don’t be tempted to take it out of the oven too early – you don’t want a sunken centre.
CARROT AND WALNUT CAKE 1 cup canola oil 1 cup firmly packed brown sugar 3 eggs, lightly beaten 1½ cups self-raising flour 1 tsp bicarbonate of soda 1½ tsps ground cinnamon 2 cups firmly packed grated carrot (about four medium carrots) 1 cup chopped walnuts (I buy walnut crumbs, so the chopping’s already done) Preheat oven to 180 degrees Celsius. Grease and line 20cm cake pan. Combine oil, sugar and eggs in a bowl. Whisk well. Sift flour, bicarbonate of soda and cinnamon over the oil mixture. Stir gently. Add carrot and walnuts, mix well, spread mixture into cake pan and bake 45 to 50 minutes, or until a skewer inserted into the centre comes out clean. Cool for 10 minutes in pan before turning onto a wire rack. Ice with cream cheese frosting when completely cool (this you can also buy ready-made, if you’re really pressed for time.)
