Chocolate Creme De Menthe Cookies

3/4 cup butter

1 1/2 cups brown sugar

2 tablespoons water

2 cups chocolate chips

2 eggs

1/2 teaspoon salt

1 1/4 teaspoons baking soda

2 1/2 cups flour

Oreo Bon Bons

36 Oreo cookies, finely crushed

1 package cream cheese, softened 1 package almond bark, white or chocolate, melted

Mix crushed Oreo cookies and cream cheese in a large bowl until well-blended. Use your hands to shape the mixture into 1-inch balls. Place them on a tray and freeze until thoroughly chilled, about 10 minutes. Dip the Oreo balls in melted chocolate; place in a single layer on a pan with wax paper. Refrigerate for 1 hour or until firm. Store in a covered container in the refrigerator.

1 package Andes mints

Melt butter, brown sugar and water in a saucepan. Add chocolate chips. Stir until melted and remove from heat. Put in a bowl and let cool for 10 minutes in the refrigerator. Remove from the refrigerator and add eggs. Mix on high. Then, add salt, baking soda and flour. Blend together well and chill in the refrigearator for one hour. Cover cookie sheets with tin foil. Preheat the oven to 350 degrees and place the rack second from the bottom. Make cookies into balls and place them on a cookie sheet. Bake for 8-9 minutes. Take out and place half of an Andes mint on top of a cookie and place back in the oven for 45 seconds to melt the mint. Take cookies out. They will appear not done but let sit for a few minutes and spread melted mint around the top of the cookie like frosting. Yields about 4 dozen cookies.

10 Rolo candies unwrapped

Heat broiler. On a baking sheet, place half the crackers bottom-side down. Top with a Rolo candy and broil until warm and melty, 5 minutes. Top with remaining crackers and press down to create a sandwich.

36 Oreo cookies, finely crushed 1 package cream cheese, softened 1 package almond bark, white or chocolate, melted

Snickers-Stuffed Peanut Butter Cookies

36 Oreo cookies, finely crushed 1 3/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup sugar

1/2 cup brown sugar

1/2 cup butter

1/2 cup creamy peanut butter

2 tablespoons milk

1 teaspoon vanilla 1 egg

48 mini Snickers candies

Heat oven to 375 degrees. In a large bowl, combine flour, baking soda and salt. In a separate bowl, combine both sugars, butter, peanut butter, milk, vanilla and egg. Using hand beaters, mix wet ingredients until they are creamy. Add ingredients of the wet bowl into the bowl with the dry ingredients and stir until they are thoroughly mixed. Wrap a small spoonful of dough around each mini Snickers — just enough to cover the candy. Pour 1/2 cup of sugar into a bowl and roll each ball in sugar, coating all sides. Place each cookie dough-covered Snickers onto a cookie sheet. Bake at 375 degrees for 9-11 minutes, or until slightly browned. Remove from the oven and flatten with a spatula. Let cookies cool on the cookie sheet for a couple of minutes and then remove them to a cooling rack.
