Healthy eating doesn’t have to be difficult or require you to take favorite meals off your family’s menu. In fact, making smart choices when cooking at home can give you more control over the types of tasty, heart-healthy dishes you put on the table.

High cholesterol is one of the major controllable risk factors for heart disease and stroke, with about 38% of American adults diagnosed with high cholesterol, according to the American Heart Association. These cooking tips can help you prepare heart-healthy meals that could help improve cholesterol levels by reducing excess saturated fat and trans fat.

Cook Fresh Vegetables the Heart-Healthy Way

Roasting, steaming, grilling or baking can help bring out the natural flavors of vegetables. Adding herbs and spices can also help make veggies tastier, including combinations like basil with tomatoes, oregano with zucchini, dill with green beans or rosemary with peas and cauliflower.

Reduce Saturated Fat in Meat and Poultry

The amount of saturated fat in meats can vary widely, depending on the cut and how it’s prepared. Opt for poultry and fish over red meat and look for lean cuts of meat with minimal visible fat, which should be trimmed away before cooking. Also limit processed meats such as sausage, bologna, salami and hot dogs, which are often high in calories, saturated fat and sodium.

Use Liquid Vegetable Oils in Place of Solid Fats

Some fats are better for you than others. Liquid vegetable oils such as canola, safflower, sunflower, soybean and olive oil can often be used instead of solid

fats, such as butter, lard or shortening. If you must use margarine, try the soft or liquid kind.

Grilled Tequila-Lime

Chicken with Grilled Asparagus

Servings: 4

1/4 cup tequila or white vinegar

2 teaspoons lime zest

1/2 cup fresh lime juice

2 medium garlic cloves, minced

1 tablespoon chipotle pepper canned in adobo sauce, minced, plus 2 tablespoons adobo sauce

1 1/2 pounds boneless, skinless chicken breasts, fat discarded nonstick cooking spray

3 bunches asparagus spears, trimmed

1/4 teaspoon salt

1/2 teaspoon black pepper, divided

2 tablespoons canola oil or corn oil

In small bowl, stir tequila, lime zest, lime juice, garlic, chipotle pepper and adobo sauce. Pour into large resealable plastic bag. Add chicken and seal bag tightly; turn bag to coat. Refrigerate 2-12 hours.

Preheat grill to medium-high heat. Lightly spray grates with nonstick cooking spray.

In large dish, sprinkle asparagus with salt and 1/4 teaspoon pepper. Drizzle with oil. Turn asparagus over to coat.

Remove chicken from marinade. Discard marinade and wipe most of it off chicken. Sprinkle chicken with remaining pepper.

Grill 8-12 minutes, or until chicken is no longer pink in center. Transfer to plate and cover with aluminum foil.

Place asparagus on grill, facing opposite direction of grates. Grill 7 minutes, or until tender crisp.

Serve asparagus with chicken.

Frozen Yogurt Bark

1 1/2 cups 2% low-fat plain Greek yogurt

2 tablespoons honey

2 tablespoons chopped, unsalted almonds

1/2 cup chopped

“Burgers and fries! Get your burgers. Get your fries!”

You may have never worked at a ballpark before and shouted out the food that you were selling to the crowds in the bleachers, but when engaging with the imagination -- a key ingredient in child’s play -- it’s fun to pretend that you’ve had the experience. This is what kids love to do.

Pretending is just what this Burger and Fries caper is all about. These dessert treats are such a surprise that no one will believe their eyes. Once you’ve made these “burgers and fries,” keep track of the recipe in your online files, and enjoy it for a birthday party or other festive gatherings any time of year.

BURGER AND FRIES DESSERT

SURPRISE

Serves 10

10 clean, small tuna or pineapple cans, greased and with labels removed (Be sure there are no sharp edges on the cans.)

1 box standard yellow cake mix

1 standard brownie mix, baked to 1-inch thickness on a rimmed cookie sheet

2 tablespoons corn syrup

Red and yellow frosting

Sesame seeds

2 kiwis, peeled and sliced

Sugar cookie dough (homemade or a prepared mix from the refrigerated section of your grocery store)

Burgers: Prepare and spoon cake batter into cans, filling each can half full. Bake according to the cupcake directions on the box, adding a few minutes to the baking time. (Use extra batter to make cupcakes.)

When slightly cool, ease the cake out of the cans and cool completely. Slice open each “bun,” then brush the tops of the buns lightly with corn syrup, and sprinkle with sesame seeds.

Use one of the cans as a cookie cutter to cut round “burgers” out of the baked brownies. Set each cutout on the bottom half of the buns. Drizzle red and yellow frosting on the brownie to look like ketchup and mustard. Set kiwi slices alongside the condiments to resemble pickles.

French Fries: Make 1-inch accordion folds on a sheet of heavy aluminum foil and set on a cookie sheet with the folds slightly spread apart. Slice and mold cookie dough into 2-inch strips to resemble fries.

Set each strip in a groove on the foil. Bake according to the recipe directions, until golden. Cool slightly on the cooling rack, then remove from the foil while still warm for the best results. Serve the burgers with red frosting (“ketchup”) on a platter.

The prisoners were suffering from acute typhus, typhoid and tuberculosis due to a lack of running water. More than 30,000 others had died in the previous months, many from typhus, but even more from starvation.

THE OIG IN OUR CORNER You hate to learn of it, but per a Department of Veterans Affairs Office of Inspector General (OIG) report, a former veteran who worked at a VA hospital was found guilty of stealing money out of patient accounts. It came about when the sister of a deceased veteran checked her brother’s account and discovered the missing funds. An investigation showed that the thief was stealing from accounts where the veteran was unable to appear in person at the cashier window to withdraw money due to illness and tried to blame the missing funds on someone using fake identification. All he got for his crimes was six months in jail and six months with an ankle bracelet at home. An elderly veteran lost his foot due to deficient podiatry care. The whole sorry mess involved defective specialty diabetic shoes, blocked blood flow to the leg, a patient fall due to the shoes, lack of patient education, lack of communication among staff ... and ended with amputation of the patient’s foot. There was enough blame to go around, but nobody to throw in jail. The podiatrist didn’t adequately instruct on the proper fitting of the shoes. The fall wasn’t correctly reported because the safety officer was new. It could not be determined who did/ didn’t warn the patient about possible amputation. And so on. But not all OIG investigations are so serious. There was the VA employee auction of VA property, which was for the purpose of gathering funds for employee activities and parties. When purchasing agents placed orders for supplies, sometimes there were

DOG TO HEEL DEAR PAW’S CORNER: After my aunt passed away, I gladly agreed to take in her dog, “Hunter,” a rather squat, obese Beagle. He’s a happy old dog of about 9 years, but my aunt gave him little to no training other than housetraining. That makes walking him -- something the vet recommended I do twice a day, in addition to a diet -- a chore. Hunter will walk a few steps, then sit down and refuse to budge. When he does feel like walking, he either tugs the leash forward or lags behind. How can I correct this? -James T., Plano, Texas DEAR JAMES: Hunter is not used to the new lifestyle yet, and he’s reacting in a predictable way. He’s also out of shape and probably more stressed than you think. The first thing I prescribe is patience. The second thing I’d prescribe is persistence. You’ll want to gradually lengthen his walks. Each day, always at the same time, put Hunter on his leash and start the walk. As soon as Hunter begins to lag or tug forward, stop walking, adjust the distance so that he’s standing or sitting next to you, and start again, saying, “Heel” as you step forward. When he sits and won’t budge, encourage him to go a few more steps by giving him a very small treat. Then turn around and go home. On your next walk, repeat this encouragement, going just a little farther. See what I’m getting at? Make each walk just a tiny bit farther. As Hunter loses weight, learns to trust you and gains confidence on the leash, he will eventually pull you along. Time, patience and consistency will do the trick. When Do We Become Too Old to Climb Ladders?
ago I’d made my resolutions list for 2024, carefully picking options that I could surely accomplish this year. I chose things like adopting a kitten pal for my cat, selling my father’s coin collection, and hiring my handyman neighbor to paint the bathroom. Thus far it’s the bathroom painting that is causing the greatest annoyance and hesitation. Why, I keep wondering, can’t I do it myself? I’ve painted many, many rooms over the years and done a fine job. But, dare I climb a ladder again? I even went to the internet for support that would tell me it’s OK at my age to climb a ladder and apply paint to the walls. An Australian study cut right to the chase with statistics about how many over the age of 65 had died from injuries sustained after falling from a ladder, not to mention the list of possible ladder-related injuries that put many others in the hospital. A U.S. home-care website was aimed at the adult children who need to convince elderly parents to stay off ladders, and suggested citing statistics about deaths and injuries. Should that not work,

Al Pacino’s gone to Italy for two films. The first is “Modì,” a biographical drama about Italian artist Amedeo Modigliani, directed by Johnny Depp. The second is “In the Hand of Dante,” co-starring Oscar Isaac, Jason Momoa, Franco Nero, Gal Gadot, John Malkovich and Gerard Butler. Butler also has “Den of Thieves 2: Pantera” and the live-action “How to Train Your Dragon” in the works.

In 1959, when I was 13 years old, I hung around the off-Broadway Phoenix Theatre on New York City’s Lower East Side. I became friends with the star of their current show, a send-up of “The Princess and the Pea” called “Once Upon a Mattress,” featuring a then-unknown Carol Burnett.

During rehearsals, I met Mary Rodgers, the woman who created the music for the show, which ran for 470 performances. She was the daughter of Broadway legend Richard Rodgers of Rodgers and Hammerstein. The show was a runaway hit, moving to Broadway and making Carol a star. In 1966, Mary

wrote another show, this time with Stephen Sondheim, called “The Mad Show.” It ran for 871 performances and featured Linda Lavin (“Alice”), Jo Anne Worley (“Laugh-In”) and Paul Sand.

In 1976, Mary wrote the screenplay for the film “Freaky Friday,” which starred Jodie Foster, Barbara Harris, John Astin (Gomez Addams of “The Addams Family”) and Dick Van Patten (“Eight Is Enough”). It cost $5 million and grossed $36 million.

In 2003, it was remade with Jamie Lee Curtis and Lindsay Lohan, and it was an even bigger hit (grossing $160.8 million against its $26 million cost). For years, Curtis and Lohan have wanted to revisit “Freaky Friday,” and thanks to the Oscar that was bestowed to Curtis for Best Supporting Actress (for “Everything Everywhere All at Once”), they’re finally going to get their wish. Curtis and Lohan will reprise their roles from the 2003 film for “Freaky Friday 2,” due sometime in 2025 at the earliest.

It sounds like prepping for the recent Oscars and doing his talk show on ABC at the same time has driven Jimmy Kimmel to the point where he is now talking about giving up the talk-show grind. Of course, Kimmel, who has two more years on his contract with ABC, may be using this as a negotiation tactic. The way to nip this in the bud is for ABC to tell Kimmel that they plan to replace him with his longtime feud mate -- Matt Damon!

As Easter comes around, so does the inevitable surplus of hard-boiled eggs. But we’re about to transform those humble eggs into delectable delights: deviled eggs! These egg-cellent creations are not only perfect for post-Easter gatherings, but can be enjoyed all year round. Versatile, flavorful and oh-sosatisfying, deviled eggs are the ultimate crowdpleaser.

The Green Ring Dilemma. Ever wondered about that unsightly green ring around hard-boiled egg yolks? It’s not a culinary catastrophe, but merely a harmless reaction between sulfur and iron during cooking. To avoid this, follow our foolproof method for perfectly boiled eggs: Gently simmer them in water, cover, and let them rest before cooling in an ice bath.

Some Diva tips: Always boil extra eggs, because some won’t peel cooperatively, and a few extra yolks makes for abundantly filled deviled eggs. For the classic deviled egg experience, use good old yellow mustard. Also, leave perfectionism out of this. Remember, even the ugliest deviled egg tastes delicious! Absolutely worst-case scenario, chop them up and serve egg salad on croissants.

CLASSIC DEVILED EGGS

Yield: 24 deviled egg halves

Total Time: 1 hour

12 large eggs

1/4 cup mayonnaise

1 tablespoon yellow mustard

1 teaspoon white wine vinegar or rice vinegar

1/4 teaspoon table salt Paprika, for garnish (optional)

Lay the eggs flat in a pan and cover with cold water. Put the pan over medium heat and bring to a rolling boil. Once at a boil, immediately cover with a lid, remove from heat and let the eggs sit for 12 minutes. Submerge in very cold water until cooled.

Once the eggs are cool, gently tap each egg on a hard surface to crack the shell, then peel under cool running water. Pat the eggs dry with a paper towel.

Slice the eggs in half lengthwise and carefully remove the yolks. Place the yolks in a separate bowl and mash them with a fork until smooth. Add the mayonnaise, mustard, vinegar and salt to the mashed yolks. Mix until well combined and creamy. Spoon the yolk mixture back into the egg white halves, dividing evenly. Alternatively, spoon the yolk mixture into a baggie and cut the corner for easy squeezy egg filling.

If desired, sprinkle the deviled eggs with paprika for a classic touch. Refrigerate the deviled eggs for at least 30 minutes before serving to allow the flavors to meld together.

Serve chilled and enjoy these timeless appetizers at your next gathering! To ensure food safety, store any leftover deviled eggs in the refrigerator and consume within two days.
