Through December 16, the SPJST 100 Pennies Scholarship Drive had collected a total of $6,661.50 enough for thirteen additional SPJST scholarships. The drive continues through December 31.

I wish to comment on Bill Malina's article on ethnic identity which appeared in the December 1 issue of \Sta. As Mr. Malina perceptively points out, ethnicity is the driving force motivating many of the conflicts seen today throughout the world. It is indeed fortunate that the breakup of Czechoslovakia has not resulted in the violence which is occurring in Yugoslavia. The breakup of Czechoslovakia is a great tragedy and I sincerely hope that the future will bring rapproachment between Czechs, Moravidns, and Slovaks.

The relation between the populations of the former states of Czechoslovakia and Yugoslavia is closer than many people imagine. Before their southward migrations to the Balkans, which may have taken place in the 7th century, the Serbs and Croats inhabited parts of what is today Poland, Germany, and the Czech and Slovak Republics. The Sorbs of Lusatia in modern Germany (also called Wends) are related to the Serbs of Serbia; the ancestors of both peoples lived in Lusatia (modern Germany). The Croats inhabited a state called White Croatia, which included parts of Moravia, Silesia,

and northeastern Bohemia. White Croatia came under Moravian rule in the 9th century. It is believed by some scholars that the Slavn(k dynasty of Bohemia, of which St. Vojt8ch (died 997) is one of the most famous members, were White Croats.

Various sources indicate that probably in the 7th century at the invitation of the Byzantine emperor, some of the Serbs and Croats migrated southward. They settled on the territory which in the 20th century became Yugoslavia. Other of their kinsmen remained in what are today Poland, Germany, and the Czech and Slovak Republics. These Croats eventually merged with Czechs, Moravians, Silesians, and Slovaks, while the Sorbs of Germany have managed up to the present time to preserve their Slavic identity, language, and culture. All of this shows that the links between he West Sla ys and the South Slays date to much more recent times than many people imagine. This demonstrates the validity of the idea of Pan-Slavism, which stresses the kinship of all of the Slavic nations. For those interested in this history, I recommend Father Francis Dvornik's The Making of Central and Eastern Europe (London, .

1949). Father Dvorak, a native of Moravia and a harvard professor, was one of the foremost authorities on early Slavic history.

Although Serbs and Croats today speak the same language, for centuries they have been conscious of different

Sign of the Times Residents of Temple and the surrounding vicinity may have noticed the SPJST holiday greeting positioned atop the Adams Avenue viaduct in Temple. The billboard—a first for SPJST—went up on December 1 as part of an effort to build good will and increase name recognition for the Society. The billboard will be in place through December.

Our lodge met on December 5. Our president called the meeting to order at 1 p.m. Tammi Dobecka led members in reciting the Pledge of Allegiance.

The minutes of the previous meeting were read and approved. We had 14 members and one guest, Lydia Mae Davis.

We had a few moments of silence in memory of our deceased member, Mary Gerik.

The $10 door prize was won by George Straten; the $5 door prize was won by Walter Kri, an, who was not present. The door prizes that were furnished

by SPJST Lodge 6, Inc. were won by Georgie Skerik, Bobby Dobecka, Joyce Michell, Joe Perkins, Justin Gerik and Fred Malina.

We had one birthday celebrant in December, our guest, Lydia Mae Davis.

The members voted to contribute to the West Ambulance Association, the Jaws of Life, West Library, West Sokol, West Depot, McLennan Heritage Society, fire departments in Leroy, Gerald, Tours, Abbott, Ross, Penelope, Elm Mott, Chalk Bluff and to the SPJST Supreme Lodge Scholarship Fund. SPJST Lodge No. 6, Inc. also contributed $250 to West Ambulance and $250 to the West Fire Department.

We will have our next trustee meeting on January 7 at 7:30 p.m. and our next lodge meeting on January 9, 1994 at 1 p.m.

After the meeting adjourned, members enjoyed a delicious meal of turkey with all of the trimmings furnished by the lodge. Thanks goes to the members who helped in preparing the meal.

Lodge 15, Buckholts Reports on December Meeting

Sixty, players parncipaieu lift the tournament. Everyone was ready to play and enjoyed the day. Thanks to all participants and to Brother Dan Gaida for being the Tarok chairman. Thanks, also, to Brother Franklin Schlesinger for the use of his computer, his expertise and for furnishing the score sheets and table cards.

Dear Readers, Buckholts Lodge No. 15 met on Monday, December 13 at 6 p.m. with President Gladys Allison presiding.

The meeting was called to order, followed by the Pledge of Allegiance and a moment of silence for our deceased members. The minutes of the previous meeting were read and approved. The treasurer's report was also given and approved. All committee reports were given and approved.

On the sick list is Johnny Slavik and Jimmy Hauk.

It was voted to purchase a new butane bottle after the discovery of a butane leak.

We will be working on our Christmas baskets for the shut-ins on Monday, December 20.

Begirring in January, our meetings will be hid on the second Monday of each month. It the winter time, the meetings will start at 6 p.m.

The Cameron Dance Club will be

sponsoring a New Year's Eve Party and Dance on December 31. A drawing for door prizes will be held. Black eye peas and corn bread will be served after midnight. The cost will be $5 per person.

Tickets can be purchased at the door or in advance. For reservations, you can call 593-2321. Music will be by the "Country Showman" band.

24, Cyclone Reports on December Activities Lodge

Dear Members and Friends, It was nice to see all of the good folks who turned out for the Lodge 24, Cyclone Christmas Party at Flag Hall on December 12. Approximately 90 adults and children attended the party which included a social hour, memorial service and a turkey dinner—with dozens of trimmings. To those who were unable to make it, we missed you.

The Christmas program was coordinated by Youth Leader Shirley Ashcraft.

Featured were a candlelight memorial service in memory of our deceased members and a Christmas play performed by Youth Club members. Helping out with the memorial service was Rev. Eugene Kotrla of the Ocker Brethren Church.

The lodge extends its thanks to Brother Kotrla for his thoughtful message he delivered during the'service.

Following the memorial service, Lodge President Carol Chervenka and Lodge Reporter Brian Vanicek both delivered brief presentations. This was followed by a Christmas play and songs performed by members of the youth club.

Thanks to all of the young folks who performed so well in the play—and to Santa Claus, for making a special appearance.

Likewise, thanks to SPJST State Youth Director Joni Lange and her husband, Kenny, for attending the program and the party.

After the visit from Santa, members enjoyed a turkey dinner with all of the trimmings. Thanks to all of the members for bringing such a wide variety of vegetables, salads, and desserts to accompany the meal. Thanks, also, to all of the lodge members who prepared turkeys, dressing, and bread and to all the folks who either helped to set up or clean up the hall following the party.

Following clean-up, a brief lodge meeting was held. All officers were in attendance.

The main items on the agenda included making preparations for 1994 activities and for the New Year's Eve dance.

Music for the New Year's Eve Dance will be provided by Jed Durbin. Tickets will be $10 each. Reservations are encouraged and can be made now by calling Patsy Baker at 985-2457.

The Lodge Recognition and Incentive Program as it relates to Lodge 24 was also discussed. With 17 new members and eight qualifying fraternal events, Lodge 24 qualifies for the the Bronze Award which will be presented byi the Supreme Lodge next spring.

Lodge 87, Temple Reports on December Meeting and Party Dear Readers, Lodge 87, Temple its monthly meeting, Christmas party and 50-year pin presentation on December 8th. President Ladis Navratil called the meeting to order with Lad Zatopek leading the members in the Pledge of Allegiance. A motion was made and seconded to dispense with the ° business part of the meeting.

The Christmas Party followed and included the presentation of a 50-year pin to Lad Zatopek. Supreme Lodge President Howard Leshikar made the. presentation.

Lodge 88, Houston Birthday Club Reports on Activities On December 8, 1993, the Lodge 88 Birthday Club met in the dining room at the lodge.

President Lowrina Lindemann opened the , meeting at 11 a.m. with the roll call.

Our attendance was very good and the weather was likewise.

Secretary Rita Alexander read the minutes which were approved after a minor correction was made. Rita also read the correspondence from Horner Alexander and Johnny Kosut for the catered Christmas dinner on December 1, 1993.

Treasurer Lillie Spies gave the financial report for November Lillie acknowledged the monetary donations that we received from Laura Bell Warnasch—a $5 donation, which Laura Bell has almost made a habit of during the year. Also, Anna Hoffman donated $25. Anna has been sick for four months but is now able to attend our meetings again. We thank you ladies who have been so generous to our club.

On December 7, we went to Ryan's Steak house for a special treat. All of those who went enjoyed it very much.

Our Sunshine Lady, Mary Kosut, gave a brief report on the card that she mailed out to our sick members.

One of our dear ladies, Mrs. Josephine Pomilia, broke her leg a year ago and is unable to come to our meetings unless her son can bring her.

We are so glad that Mike Trefeld is improving and was able to come with Kathy to our lunches. The cakes that were donated for our monthly meeting were from: Pearl Hanka, Josephine Buri, Josephine Bishop, Alice Bily and Inez Jeanes.

88, Houston Czech Class Ends Twenty-Fourth Term Lodge

Students of the Czech class of Lodge 88 completed the twenty-fourth term of study on December 6, 1993. That was something to celebrate! It goes without saying that the food brought for this occasion clearly indicated the characteristics of the Czech culture. "They ate like it was going out of style," stated one member.

Ten registered students couldn't participate: Lorraine Rod was vacationing in Europe, Sydney Voda was visiting relatives in Virginia, five members of the Harvey and Mary ann Matusek family were saddened by the death of Harvey's mother, and Josephine, Fred and John Buri were in Temple. John is our SPJST State King for 1994.

The following dates have been set for our spring term of study: Feb. 7, 21, and 28; March 7, 21, and 28; April 4, 18, and 25; and May 2.

President Lindemann then announced that one of our honorary members, Mrs. Anna Svestka, age 95, died on December 1, 1993.

Her survivors include one daughter, Hilda Krpec, who cared for her at home.

She had grandsons, Charles and Tony Krpec, and one granddaughter, Marianne Simmons, six great-grandchildren and one great-great-grandson. The funeral service was held on December 4 at 11:30 a.m. from the Heights Funeral Home Chapel with a friend and President Jerry Ermis officiating.

Estelle Kelly was the only sister present who had a birthday. We missed Lillian Finn and Will Mae Ermis.

After Mary Kosut gave the table blessing, we all enjoyed the delicious dinner.

I do wish all of you who take the time to read my letter a very Merry Christmas and a Happy New Year.

6/VESTNIK—Wednesday, December 22, 1993 We did have several bags of fruit and candy for the ones who are in the nursing homes. I delivered these on December 13. Some of the people were not awake so I just left the packages beside them in bed.

It is always sad to write about the death of one of our members. William Koci died in Nashville, Tennessee at the age of 52. He graduated from North Side High School and from North Texas Lodge College in Denton, Texas. He is survived by his wife, Connie, of Tennessee; a daughter, Sasha, of Fort Worth; two sons, David and Matthew; and his mother, Flora Koci. May he have eternal rest.

Dear Members and Friends, Our meeting yesterday was called to order by our president, Brother Jerry Milan. He made welcome our guest, Kjell Rosenland, and led us in the Pledge of Allegiance.

The minutes and financial report were read by Secretary and Financial Secretary Sister Mary Renfro. The treasurer's report was given by Sister Anna Johnson.

All were approved as read.

Sister Mary Pavey reported on all cards sent.

Sister Renfro received information from the headquarters on the death of our member, Brother William Ryder. He was the husband of the late Flora Korteff Ryder and resided in Fort Worth before they moved to Sunnydale, california. We extend our sincere sympathy to the family. May he rest in peace.

Brother Milan reported on attending the Metro-Plex Lodges Christmas party that was enjoyed by all of us. Brother Sid Pokladnik installed all of the officers, which he does so well. Best wishes to all of the officers for a good 1994.

We welcome our new members, Austin Durham and Jennifer Witherspoon.

We will have a New Year's Eve dance and party on Friday, December 3-1st from 8:30 p.m. until 12:3-0 a.m. Country-western music will he provided by Bob Fisher and Lee Welch. 200, Eddy Reports on December Meeting Lodge

President Bob Miracle opened the regular business meeting on December 1, 1993 with the Pledge of Allegiance to the United States flag. The minutes of the previous meeting were read by Linda Roming and they were approved as read.

Linda then gave the treasurer's report.

Under the Financial Secretary's report, Earl Soudelier reported on two new insurance candidates The were nominated, seconded and welcomed into the lodge with a unanimous vote. They were Thomas Howard Mosely of Gatesville, Texas and Jeffery Don Odle of Eddy, Texas. "Welcome to Lodge 200." They bring our new member total for the year to 27. This, combined with the 11 activities should earn Lodge 200 the Gold Award from the Supreme Lodge through their incentive program.

Under old business, President Bob Miracle announced that the lodge won second and third place at the SPJST Volleyball Tournament in Temple. The lodge was presented with a $70 check for our efforts. The lodge set their goal at this time to win first at the next tournament.

Come out and join us next year. It was a lot of fun as you can see from the pictures.

Bob also expressed thanks from the Eddy retired veterans for our salute to them on Veterans' Day. Pictured is Bob Miracle presenting a Certificate of Appreciation to Ed Hudson, president of the Veterans Association. Also pictured are members of the association socializing with Gene McBride and having a good time.

Under new business, Bob Miracle presented $320 and Harvey LaFlamme presented $100 to the lodge for special activities they performed. What a great job. If we keep going like this, it won't be long before we build our new home.

FAC Earl Soudelier then announced that the lodge elected to have a small Christmas social after the meeting and that there would be a Valentine social on February 12, 1993 at the dance at The Grove Community Center. Earl reported that The Grove Center would set aside a group of tables for us. The band playing that night will be "Backfire," from Gatesville. We will be able to bring in our own snacks and have a short meeting before the dance. The lodge voted to pay the tickets for the members and spouses or girlfriends and boyfriends. Keep an eye on my next report for further details.

Sorry to hear that Vicki Kohn's mother, Mary Trojacek, is not feeling good.

Marie Fitz will visit her son, Frank, in California for the Christmas holidays.

Esther and Robert Cunningham will also be visiting over the Christmas holidays. They will be seeing their son and family, Dr. Michael and Elena Smalky and grandchildren Natasha, Alexandria and Michael Smalky of Natick, Massachusetts. While there, they will be celebrating Natasha's and Alexandria's birthdays. They will spend a week in Stowe, Vermont. The grandparents will be babysitting Michael, who is two-anda-half, while the rest go skiing.

It was good to hear that Lydia Tyrock and Lillian Moran were feeling better.

Czech National Cookbook

SPECIAL BOOK FEATURE_ (Editor's Note: The following recipes were published in book form in 1956 by Marie Jandacek of Chicago, Illinois. Although Sister Jandacek passed away in 1974, her family members have graciously consented their permission to allow the Vestnik to reprint several of the recipes in this holiday feature. Although the book has been out of print for some time, a copy is available through the SPJST Libraiy for lending purposes. As has been previously stated, readers are encouraged to submit their own personal favorite recipes for publication in future issues of the Vestnik.

A lthough cooking does not rate with fine arts, it is of greater

importance, because it is concerned directly with human health, the most important asset of every nation. Since the family is a nucleus of the nation, families where every member is properly fed become a mainstay of national well being, happiness and peaceful co-existence of its people.

It

is my firm belief, that where the members gather regularly around the family table to partake of a well-prepared repast, particularly in the evenings, on Sundays and feasts to pleasantly greet themselves at such "get-togethers," the family ties grow stronger, without suffering consequences of the fast sweep of our present technical progress. Homes become havens of peace.

To lighten the work of young homemakers, the present English Version of my Czech National Cookbook was complied and edited .

May then, this book of Czech recipes fill its destination and spread the glory of the "Czech kitchen" wherever English is spoken and read!

—Marie L. Jandacek In a book with hundreds of recipes, it isn't easy to know which ones might be of the most interest to our readers. The following recipes were selected on the basis of their seasonal appeal and diversity.

BAKERY

Filled Biscuits (Buchtiacy) lb. flour 1 2 heaping or 3 level tablespoons sugar I oz. yeast 1/2 teaspoon salt Lemon rind from 1/4 lemon 1/2 teaspoon vanilla 1 cup milk 3 oz. butter 1 egg yolk Filling Poppyseed Mashed cooked prunes Cottage cheese 3 oz. butter or lard for brushing tops of biscuits Sift 1 lb. flour and warm to room temperature. Add lemon rind, vanilla, 2 heaping tablespoons sugar, a scant ounce of yeast, lukewarm milk, 3 oz. lukewarm butter (melted), 1 egg yolk and work ingredients into flour. Place dough in a bowl, sprinkle flour on top and let set in a warm place and let dough rise. When dough rises, roll out on a floured bread hoard about 1/2" thick and cut into squares. Place cottage cheese, poppyseed, mashed prunes or . any other filling

in the center of the squares. Fold dough over filling to make biscuits. Place biscuits, side by side, in a well greased pan, brushing the sides of the biscuits with butter so they can be taken apart easily.

When all the biscuits are in the pan, brush top with melted butter. Set aside for a while, let biscuits rise and then place in oven until lightly browned. When cooled slightly, remove from pan and sprinkle with powdered sugar. To make these taste extra special, to I lb. flour, add 5 oz. butter, 5 heaping tablespoons sugar and also grate in 2 almonds.

Celestial Crusts (Boii Milosti) 2 cups flour 2 oz. butter 1/2 teaspoon salt 1

tablespoon sugar Grated rind from orange 2 egg yolks 1 tablespoon rum or other liquor 4 to 5 tablespoons cream 1/4 lb butter or other fat Mix butter into flour until butter and flour is like small peas, add salt and rind from an orange. Thin 2 egg yolks with cream, rum, and add 1 tablespoon sugar.

Add to flour and mix well. Set dough in refrigerator for 1/4 hour between two plates. Roll out dough and 1/8" thick and cut with knife into squares and fry squares on hot butter or lard until light brown. While still hot, sprinkle with vanilla sugar or cinnamon sugar.

Bohemian and Moravian "KolaCky" Tarts (Tgsto KoliCdove 4 1/2 cups flour 3 to 4 tablespoons sugar Vanilla Rind from 1/2 lemon A scant oz. of yeast 1/2 cup milk Pinch sugar 1/2 cup milk 3 1/2 oz. butter 3 egg yolks Egg or fat for brushing top of kolacky Cottage cheese Poppyseed Mashed prunes Measure flour into a bowl and add 3 heaping tablespoons sugar, vanilla and grated lemon rind. Add yeast, mixed with lukewarm milk and a little sugar (before adding the yeast mixture, allow it to set a short while). To the rest of mix, add 3 1/2 oz. butter, 2 egg yolks and add to flour. Mix all ingredients together well. Sprinkle with flour and let rise.

When dough rises, roll out about 1/2" and cut out "kolacky" with a glass or a circular cutter. With your fingers, push down the centers and fill with cottage cheese, poppyseed, or mashed prunes; then brush the edges with a beaten egg or melted butter and bake fast.

You can also cut the dough into squares, fill centers and pinch corners together. Put kolacky on a well-greased pan, let rise and bake fast. While still warm, sprinkle with powdered sugar.

Fillings for KolaCky" Cottage Cheese (Tvaroh) lb. dry cottage cheese oz. butter oz. sugar (1/2 cup) egg yolks Rind from 1/4 lemon Vanilla bitter almond tablespoon milk (if cheese is thick) egg whites, beaten stiff Cream cottage cheese with egg yolks, sugar, and butter. Add grated lemon rind, grated bitter almond, and vanilla. Decorate cottage cheese fillings with raisins.

Poppyseed oz. poppyseed (1/4 lb.) cups milk tablespoon farina to 3 tablespoons sugar Lemon rind Bitter almond Piece of grated chocolate, if desired or ginger bread, grated A little honey or preserves Cook poppyseed with 2 cups milk and add 1 tablespoon farina. The milk will boil out and the poppyseed will he thick. Add sugar or honey after you take the poppyseed off of the fire. Sweeten to suit your taste (2 to 3 heaping tablespoons sugar, honey, gingerbread, or chocolate).

Add lemon rind, 2 grated bitter almonds.

When poppyseed cools, put on kolacky and then sprinkle tops with chopped almonds or other nuts.

Large KoliC" Instead of making small "kolacky," you can make large ones. Roll out dough as thin as possible. Put the first layer of dough on a well-greased pan. On the dough, spread a layer of cottage cheese and then on the cheese, place another layer of dough and spread another filling on top. You can make up to four layers.

Brush the top layer with egg yolk or butter and then sprinkle with buttered crumbs.

Raised Poppyseed Roll 1 1/4 lb. flour 1 cup milk 1 oz. yeast Handful of sugar 5 tablespoons sugar 1 teaspoon salt Lemon rind Vanilla 1 egg 5 oz. butter

Wednesday, December 22, 1993—VESTNiK/9 FiHine, 1/2 lb. poppyseed cup milk 1 5 Oz. sugar oz. butter 1 1/3 teaspoon cinnamon Vanilla Piece of chocolate Piece of gingerbread Lemon rind Egg for brushing Nuts or almonds for sprinkling on top Sift flour and make a well in in it, adding milk, yeast and sugar. 'Let yeast dissolve and mix into flour, adding more sugar, salt, lemon rind, vanilla and egg.

Melt about 5 oz. butter and mix everything together until smooth. Then cover and allow to rise in a warm place.

Filling: Have poppyseed ground, or grind it yourself, and cook with milk.

When almost done, add about five ounces of sugar. When poppyseed cools slightly, add butter, vanilla, cinnamon, 1 bitter almond and a piece of grated chocolate.

If you have it handy, you can alSo add a piece of grated ginger bread. Instead of sugar, you can use honey. Mix all ingredients well. If desired, you can add some grated lemon rind and then let cool. Roll out raised dough about 1/2" thick and spread poppyseed filling on dough. Roll dough, set on a well-greased pan and let rise, brushing top with a beaten egg or melted butter. Sprinkle with chopped almonds or other nuts and hake in a hot oven until brown: When lukewarm, sprinkle with powdered sugar and serve when cool.

Snow Cream for Raised Poppyseed Roll (BflkovY Krem) 2 egg whites 2 tablespoons powdered sugar Vanilla Beat egg whites until very stiff and lightly mix in 2 tablespoons powdered sugar and spread on top of the above roll.

Sprinkle top with vanilla flavored powdered sugar and return to oven until top browns lightly. This roll can he decorated with fruit, berries, or raspberries.

Gingerbread lb. flour 1 2 cups sugar 1/4 teaspoon cinnamon, anise, and allspice pinch cordamon 1/2 lemon rind tablespoon rum 1 1/2 teaspoon baking powder and salt 1/2 cup milk 1 egg 1 1/4 cup warmed honey Handful of raisins, chopped almonds or other nuts and orange rind Powdered sugar Mix together 1 lb flour, 2 cups sugar, 1/4 teaspoon cinnamon, anise, allspice, pinch cordamon, rind from 1/2 lemon, 1 tablespoon rum, 1 teaspoon baking powder or 1/2 teaspoon baking soda and salt.

In 1/2 cup milk, mix 1 egg and pour into flour. Add 1 1/4 cup warmed honey.

Mix well. Add a handful of raisins, chopped almonds, or other nuts, and orange rind. Let dough set until morning in refrigerator. Roll out and hake. Icing: For every cup of powdered sugar, and several drops of lemon juice and mix until thick.

Raised Dumplings (Kynute Knedliky) 1 lb. flour 1 teaspoon sugar 1/2 oz. yeast 1/2 cup milk 1 tablespoon salt 1 whole egg 1 egg yolk Sift flour into a bowl and make a well in the center. Add about 1 teaspoon sugar, 1/2 oz. crumbled yeast, and 1/2 cup lukewarm milk. Let set until yeast bubbles up.

Then add I tablespoon salt, 1 whole egg and 1 egg yolk and mix well until dough is smooth. Sometimes it is necessary to add more milk. Let dough rise and then put on a well greased bread hoard and divide into dumplings about the size of large oranges.

Shape well and place in a pot of .boiling water. Figure 20 minutes cooking time for dumplings. Use a large pot and a lot of water. When dumplings have been boiling 10 minutes, turn over and boil 10 minutes on the other side. Remove dumplings and cut with a string. If dumplings are done, cut into slices. Always cut raised dumplings with a string.

Dimple Tarts (Dulkove KoWky) 5 oz. fresh butter 5 oz. melted butter 3 egg yolks 5 oz. sugar Rind from 1/2 lemon 1/3 cups fl our 3 Preserves Cream together fresh butter and melted butter and add 3 egg yolks, 1 at a time.

Then add 5 oz. sugar and grated lemon rind and mix well. Finally, add 3 1/2 cups flour and mix well and make small halls with the dough. Place on. a well-greased pan and in the center of each hall, push down with your finger. Bake until golden and when almost cool, fill centers with preserves. Sprinkle with sugar.

Egg Noodles For one cup flour, figure on one egg.

If you have egg yolks, use them and the noodles will he that much better.

Sift flour on bread hoard and make a well. Add as many eggs as you have flour. Mix well with a knife and then work well with hands. Do not add water.

Sometimes it is necessary to add an extra egg. Divide dough into several parts and roll out on a clean cloth and let dry before cutting into strips. In a large pot, bring salt water to a boil. Add noodles and cook 6 to 8 minutes, depending on thickness. Strain off water. Pour melted butter over top. Mix well so they do not stick together. You can serve with grated cottage cheese or ground poppyseed and sugar.

MEATS

Roast Beef (Hovelzi peCiene po znojemsku)

Stewed Venison 4

lb. deer meat, breast or shoulder Salt 1/4 teaspoon pepper 3 to 4 oz. butter 1 large onion 1 carrot 1 parsley root 1/2 small celery root 2 whole pieces juniper Pinch thyme 4 whole black peppers 1 1/2 oz. nut meats 1/2 cup grated rye bread 3/4 cup vinegar or more to suit your taste 2 cups red sour wine 1 tablespoon flour Salt meat, add half of the spices, let set 3 hours. In a pan, melt about 3 oz of butter and the same amount of bacon.

Add sliced vegetable roots, onion and the other half of the spices. Add 2 oz. nut meats and 2 oz. bread. Add meat cut into serving pieces and add 2 cups of red sour wine and add enough water so meat will he covered. Cover pot with lid and simmer 2 1/2 to 3 hours, or until tender.

Remove meat and to gravy add flour.

Cook, strain on meat and serve with dumplings.

Chicken Stuffed With Almonds 2 chickens 2 oz. butter 1/5 to 1/4 lb. white bread Salt 2 eggs 1 cup milk 2 oz. almonds 1 1/2 oz. raisins 1 tablespoons sugar 5 oz. butter If you like a sweet dressing in poultry, you will enjoy this meal. Remove giblets from chickens. Cream 2 tablespoons butter, 2 eggs (add them one at a time) and salt. Add white bread soaked and mashed in milk, 1 tablespoon sugar, raisins, chopped parsley, blanched almonds (sliver one half of the almonds and the other half can he ground or grated). Mix all ingredients well and fill chickens. Place in oven and baste frequently until brown. Cut chicken into quarters and serve with fried potatoes or mashed potatoes and canned fruit.

2 lb. rib roast 2 oz. bacon Salt 2 sour pickles 2 oz. butter 1 carrot 1 onion, chopped 1/2 parsley root Small piece celery root 3 whole black peppers 2 whole pieces allspice 1 hay leaf 1 slice bread 2 tablespoons tlour 1 sour pickle Wash meat and remove any membrane. Weave bacon through top layer of meat, and also sour pickle cut in strips.

Melt fat the size of an egg on a pan, brown onion, medium sized carrot, and a piece of celery. Add meat, sear on all sides and simmer until tender. For taste, about 3 whole black peppers, 2 whole pieces of allspice, and a bay leaf can be added. While meat is simmering, lay a piece of rye bread into gravy. When meat is tender, remove bread. Make gravy with 2 tablespoons flour mixed with water and cook. Strain over a finely chopped sour pickle. Serve with dumplings.

About the Author Marie L. Jandacek, author of the Czech National Cookbook was a folk artist and writer of short stories and regular columns in American Czechlanguage periodicals.

Sister Jandacek was born Marie Polak in Zelezna, near Beroun, in Czechoslovakia in 1913. She married Antonin Jandacek in 1932.

Following the Communist "putsch" in February 1948, Antonin, a proAmerican journalist, was forced to escape Czechoslovakia and he found exile in the Chicago area.

Marie and their three children were unable to leave with him and were delayed in the "displaced persons camps" in Germany. The family was finally reunited at Christmas in 1950. A fourth child was born to them in America and she grew up to be Vera A. Wilt, president of CSA Fraternal Life, a "sister fraternal" of the SPJST. Mrs. Jandacek died in April of 1974, but her cook book was reprinted in its fourth printing shortly after her death. It too is now out of print, but is still used extensively by many cooks throughout the United States.

Betty Schulz and Mary Gerken also brought cakes. Volunteers Mildred Novak and Melva Hastings served the cake, ice cream, punch and coffee to all.

The afternoon was enjoyed by everyone. On Sunday, November 28th, Richard Alamia came to sing.

County • Czech Heritage Society Reports on Christmas Meeting Wharton

Following a delicious covered dish dinner, President Marie Liska Matcek called the Christmas meeting of the Wharton County Czech Heritage Society to order. The meeting was held on December 7, 1993 at the First Christian Church Fellowship Hall in El Campo.

After the Pledge of Allegiance, the Czech National Anthem was sung by the 64 members and guests who attended.

Reverend and Mrs. Jim Pingleton were recognized, along with other special guests. There was a lighting of candles and a minute of silent prayer for Marie 1-abay.Armatta and other members who have passed on. Raymond Kozel, our member who resides at the Hillje Czech Catholic home was also remembered. • Secretary Annie Zelesek Hobizal read the minutes of the last meeting. Treasurer Jeraldine Socha gave the Financial Report and an update on the Bakeless Bake Sale.

Marie Matcek thanked officers for their hard work during the year and thanked members who attended and reported on the State Meeting. Daniel Marek and Ken Walls were recognized for their contribution to gathering and recording the history for the State Meeting. We are now up to 101 members. The winner of the Membership Contest was Marie Matcek, whose prize was free membership for 1994. Laverne Bacak thanked members for the books donated to the El Campo Library and commented on the importance of the scholarships that are presented to students.

Following the distribution of tons of door prizes, we were treated to an evening of Czech music, songs, and customs in a program presented by the East Bernard Czech Signers. A wonderful evening of fun and fellowship was enjoyed by all members, guests, and officers.

It is commonly accepted by linguists that the first Serbs and Croats were not of Slavic origin.

They were likely warriors of Indo-Iranian origin. This warrior caste ruled over more numerous agricultural Sla ys. With time, the whole population, foreign warriors as well as Slavic agriculturalists, became known by the name of the warrior classes. A similar situation occurred in Bulgaria. A useful reference is Zbigniew Golab's

case of the Rusyns (also called Ruthenians, Rusnaks, Carpatho-Rusyns, Capatho-Ukrainians) inhabiting eastern Slovakia and Carpathian Ruthenia, who refuse the official designation of Ukrainian which the communist governments applied to their language and culture. They now claim that they are a nation separate from the Ukrainians.

This past summer at an internal conference of Slavic scholars held in Bratislava, Moravian scholars demanded that their delegation be seated apart from the Czechs. During a special session of the conference devoted to the Moravian question, the Moravian scholars demanded the official recognition of the Moravian nationality and language. They object to the terms Czech Republic and "Cesko," which they say ignores Moravia's ancient traditions dating back to the Great Moravian Empire of the 9th century.

In Memoriam In Memory of Mary Gerik Mrs. Ludvik (Mary) Gerik, age 88, of West, passed away on Wednesday morning, December 1, 1993, in West Rest Haven.

Rosary was recited by Rev. Ed Karasek at 7 p.m., Friday at Kotch Funeral Home in West.

Mass of Christian Burial was celebrated at 10 a.m. on Saturday, December 4, at St. Mary's Catholic Church of the Assumption in West, with the Rev. Ed Karasek as celebrant. Burial followed in St. Mary's Cemetery, near West.

Mrs. Gerik was horn on June 21, 1905 in Tours and had lived in the West-Tours area all of her life. She was the daughter of Frank and Josephine Matus. She was a member of St. Mary's Catholic Church of the Assumption in West, SPJST Lodge No. 6 of Cottonwood and the St. Anne's Rosary Altar Society of West. She was a homemaker.

She married Ludvik Don Gerik on November 17, 1925 in West. He preceded her in death on October 30, 1987. She was also preceded in death by two-daughters, Mrs. John (Viola) Parma and Mrs. Johnnie A. (Christine) Soukup, who both died in 1988.

Mrs. Gerik is survived by two sons, Alfons A. Gerik of Ross and Lawrence D. Gerik of Springfield, Virginia; three daughters, Mrs. Robert (Ruth) Dudik of Hubbard, Mrs. Raymond (Mary) Marek of West and Mrs. Jack (Leona) Whiteley of Huntington, Virginia; 19 grandchildren; and 24 great-grandchildren.

Pallbearers were Ray Marek, Jr., Arthur Dudik, Ernest Soukup, Jack Whiteley, III, Gary Parma and Glenn Gerik.

Kotch Funeral Home in West was in charge of arrangements.

Expression of Sympathy We, the undersigned Resolution Committee of Lodge Karel Havlicek, No. 4, Hallettsville, Texas, on behalf of our entire membership, wish to express our sincere and deepest sympathy to the bereaved family of our departed lodge brother, DANIEL EMIL GRONES, age 56, of Victoria, who passed away on Friday, December 3, 1993. He was born on June 3, 1937, in Hallettsville, the son of Emil and Selma Galetka Grones of Hallettsville, and married Charle-ne Sevcik on September 29, 1962.

He was employed by Hi-Lo Auto Supply and had retired atter 35 years as station manager for the James Moody Post Office. He was a veteran and served on the Board of Elders at- the Brethren Church in Vsetin, where he was also a member.

Survivors include his wife, Charlene Sevcik Grones of Victoria; his parents, Emil and Selma Grones; his father-in-law and mother-in-law, Dana and Steve Gleinser of Victoria and another daughter,

Amy Grones of College Station; a son, Randall Grones of Victoria; two sisters, Marlyn Sevcik and Gayenell Chudej, both of Hallettsville; five brothers, Melvin Grones of Seguin, Allen Grones of Inez, Royce Grones of Indialantic, Florida, Leon Grones of . Portland and Anthony Grones of Victoria; and a granddaughter, Rachel Gleinser.

A prayer service was conducted Saturday evening, December 4 at Rosewood Funeral Chapel in Victoria.

Services were conducted on Sunday, December 5 at 2:30 p.m. at the Vsetin Brethren Church. The Revs. Henry Beseda and Joseph Polasek officiated.

Graveside services, with military honors, under the auspices of the VFW, were conducted at 10 a.m., Monday, December 6, at Memory Gardens Cemetery, Victoria.

Rosewood Funeral Chapel of Victoria was in charge of arrangements.

Pallbearers were Wayne Jacobs, Leon Muhistein, Robert Zbranek, James Johnston, Mark Hanson, and Bill Easley, Sr. Honorary pallbearers were Steve Gleinser, John Lamar, Bobby Schroeder, and Kelly Lockstedt-all postal employees and the hoard of elders of the Vsetin Brethren Church. Born August 2, 1921, Sister Pavlicek lived in the Freeport area since 1949.

Besides her husband, Emil J. Pavlicek, of Freeport, she is survived by two daughters, Barbara Mohler of Freeport and Denise Burch of Lake Jackson; one son, John Pavlicek of freeport; five grandchildren, DeDee Foshee, Amy Mohler, Elsie Burch, Matthew Burch, and Ashley Pavlicek; one great-grandchild, Aaron Foshee; three sisters, Marian Hobizal, Anne Goree, both of Houston and Claire Pavlicek of Moulton; and one brother, Frank Hobizal of El Campo.

A Rosary service was held on Sunday, at 7 p.m. at the Smith Funeral Home in Flatonia. Funeral services were held on Monday, November 29, 1993 at 10 a.m. at the Sacred Heart Catholic Church in Flatonia with Father Gabriel Maisen officiating. We, the Resolution Committee of Danbury Lodge 139, on behalf of our entire membership, wish to express our heartfelt sympathy to the family of FRANK J. FILIPP of Danbury. He passed away at the Angleton-Danbury Hospital on Monday, November 8, 1993 at the age of 89.

Born January 27, 1904 in Lavaca County, Brother Filipp was a dryland farmer in his early years. During the mid-forties, he worked for Dow Chemical in Freeport. Before her retired in 1971, he worked for the Garrett rice dryer and ranch for 25 years. He was a member of St. Anthony's Catholic Church in Danbury and was a member of SPJST since 1928.

Preceding him in death were his wife, Emilie Julia Pustejovsky Filipp; a daughter, Georgian Reeder; brothers, Ed, Bill, and George Filipp; and grandson, Billy Dixon.

Survivors include four sons and their wives, Eugene and Barbara Filipp, A.J. and Ester Filipp, Ben and Loretta Filipp, all of Danbury and Jim and Marilyn Filipp of Bastrop Bayou; three daughters and their husbands, Bill and Benita Dixon of Bastrop Bayou, Brady and Mary Stark of Halletsville, and Ella Marie Filipp of Danbury; son-in-law A.R. Reeder of Danbury; brothers Jim Filipp of Moulton, Allen Filipp of Beeville; sisters Marie Fojtik and Sophie Filipp of Moulton, Della Stary, Theresia Fawcett, and Agnes Culak, all of Yoakum; sisters-in-law Helen Filipp of Danbury and Della Filipp of Moulton; 23 grandchildren and 23 great-grandchildren.

A Rosary and wake service was held at 7 p.m. on Tuesday. The funeral Mass was celebrated at 1 p.m., November 10, 1993, at St. Anthony's Catholic Church in Danbury with Father William Oliver officiating. Brother Frank's great-grandson, Brice Fief, served as altar boy.

Interment was at St. Anthony's Catholic Cemetery in Danbury.

Serving as pallbearers were grandsons Darrell Dixon, Dale Filipp, Gene Filipp, Kevin Filipp, and Al Reeder; greatgrandsons Chad Patterson and Eric Patterson; and grandson-in-law Joe Peel.

Honorary pallbearers were Son Cooper, Fred Fief, Leo Fief, Jack Garrett, Vincent Hechler, Laddie Korenek, Albert Kuchar, Tommie Lostak, and Bill Stefka.

Some of his past accomplishments included serving as president and secretary of the Czech Culture Society, president and secretary for the Dallas Ennis Fraternal Council and president and treasurer of the Catholic Czech Club, K.J.T. No. 111 of Dallas.

He is survived by his wife, Bessie Vrazalik Reames; one daughter, Dorothy Ashmore of Dallas; two sons, James Reames and wife, Pat of Lively Texas and Robert Reames and wife, Denise, of Atlanta, Georgia; 12 grandchildren, and 16 great-grandchildren; one brother, Bill Reames of Corsicana; one half-sister and three half-brothers.

by Magician Dear Readers, The December 5, 1993 meeting of the Loge 47 Youth Club was called to order a 2:15 'p.m. by President James Kortis.

Lisa Greger led the Pledge of Allegiance and the club motto. The register was read. There were 29 members and four adults present. Guest introduced was Amber Pechal. The Minutes were read and approved. Melanie Koslovsky gave the treasurer's report.

Birthday celebrants for the month of December are Janet Baca, Jason Smith, E.J. Pechal, John Hoelscher and Melanie Koslovsky. Door prizes were won by Erin Skrabanek and Melanie Koslovsky.

Our social for December was our Christmas Party which was held at the hall on Friday, December 10. It was a lot of fun. We started out by enjoying pizza and fajitas for supper. We were then visited by a magician named Mr. Alan Lueck. He was super. Everyone really enjoyed this.

• After Mr. Lueck's performance, we exchanged gifts and visited. Youth Leader Judy Pechal reminded us about the Mother Lodge Christmas Party on December 12. The Youth Club performed four skits for the lodge plus the memorial service.

After our meeting, we worked on the Vestnik projects. The meeting was adjourned at 3:07 p.m. The next meeting will be on January 2, 1994 at i p.m.
