'Editor COMMENTS

The new year 1985 has arrived and, after its arrival, came the first real cold snap and, for many of us, snow; indeed, many places received more than had been expected! After a 45 car pile - up on Interstate 35 occurred, one DPS trooper had this to say: "Texans just don't know how to drive in snow and sleet." That feeling, on your editor's part, was what had tempted the writing of the editorial about driving and skidding, speeding, etc. in our Vestnik recently.

Remember, the human (partly animal) instinct, somehow, makes us feel "bully" and more safe surrounded by four walls of metal and tin, when, in fact, those four metal walls can become our enemy and cage or prison; if not coffin!

Thankfully, the highway death toll was less this New Year period.

Evidently the DPS warnings and pleas, plus the radio and TV media calling much attention to this fact by frequent spots on the air .

It is hoped by this writer, that all of our members and their families, relatives and loved friends had a healthy, happy and pleasant holiday season and came through it all and, especially, New Year's Eve. Now our goal and resolve should and, frankly, must be to go forward into 1985 and the future with a sincere desire to make the best of every endeavor and each day. Let us look at each day with confidence and a sincere desire to make the best of the day's 24 hours, forget about the bad parts of yesterday and get ready to greet each approaching day with a smile!

District spring meetings are not too far off and only four districts have thus far announced their meeting dates. We hope the other districts anticipate to submit their date and location as soon as possible so these dates can be posted in the Bulletin Board, and for members to reserve that particular date with their district to attend the meeting. ***

Happiness is definitely a state, without boundary lines or location. To endeavor to enumerate its avenues would be abysmal ignorance. To explore its enormities would be a greater display of the same. The greatest things ever performed by human act or mind, have failed to reduce even one degree of this magical quality. On the contrary, the most infinitesmal things have produced it in innumerable measure. No one can say what happiness is or is not That which brings happiness to one will bring misery to another, and vice - versa.

Therefore, the dark mystery of this defineless word. ***

Tax shelters information. Taxpayers claiming deductions for investments in tax shelters suspected of being abusive will find their refunds withheld until the Internal Revenue Service decides whether the shelter deductions are valid. The new program is an expansion of an existing system in which the IRS notifies taxpayers during the year that tax benefits of their shelters will not be allowed and that the taxpayers' returns will be audited if the benefits are claimed. ***

Many of our senior members and readers are on medicare. The approximate thirty million people covered by medicare are going to pay more of their health costs, beginning 1 January 1985. The hospital - insurance deductible -- the part that the patient must pay before medicare takes over -is rising from about $356 to $400.

Medicare pays for all remaining covered services during the first 60 days. The deductible for the 61st through the 90th day of hospitalization is going up from about $89 to $100 per day. The deductible for posthospital stays in a skilled - nursing home between the 21st and the 100th day is going up from about $44.50 to about $50 per day. Medicare pays for the first 20 days. These higher rates may mean increased premiums for those with supplementary insurance. We hope this information is of value to all of you.

Executives who use their business vehicles for personal use as an untaxed benefit may soon have to do some explaining to the IRS. The Tax Reform Act of 1984 has made it more difficult to deduct automobile expenses for business use It is no longer good enough merely to estimate the amount of personal vs. business use Instead, an accurate log must be kept of all business miles, plus an accounting of the number of days the car was used for business.

If you plan to use one of the new portable kerosene space heaters this winter, be sure to fuel it with the water - clear, high - quality kerosene indentified as ASTM I - k, warns the Insurance Information Institute. Do not use kerosene intended for other purposes. Do not use old fuel from last year; it will have degraded. Never mix fuels or use gasoline; that could cause an explosion.

Automatic transmission vs. manual.

Do you plan to buy a car? Be sure to consider this: To operate an auto with a manual transmission costs an average of about $200 less per year than it does for a car with an automatic transmission. That was the finding of a cost analysis of 1984 - model compact and subcompact cars by an out - of state consulting firm. Included were such variable costs as gasoline, oil, maintenance and tires, as well as fixed expenses such as licensing, depreciation, financing, taxes and insurance over a three - year, about 60,000 - mile trade - in cycle.,

Czech Classes In Houston Registration for the 1985 spring semester classes in Conversational Czech will take place between 5:30 p.m. and 8:30 p.m. on Tuesday, January 15 and Wednesday, January 16 at Memorial Senior High School, 935 Echo Lane, Houston, Texas 77024.

The beginners class, Czech I will be held on Tuesday evenings, starting January 29 and the advanced class, Czech Inter, will be held on Thursday evenings starting January 31. All class hours in the 12 week courses will be from 7 p.m. to 9 p.m. each evening.

Tuition for each course will be $35.00 plus $5.00 registration fee.

Lodge 18, Elgin Holds December Meeting Dear Members and Friends, President Morris Boutwell called (-,ur meeting to order at 8 p.m. December 18, 1984.

Curly Gustafson led us in the Pledge of Allegiance. Roll call of officers showed all present, except Secretary Doris Brian who had an excused absence. Bo Brian filled in for his beloved wife, Doris.

All officers' and chairmen's reports were given and favorably accepted.

Correspondence from Supreme Lodge President Howard Leshikar about the Child Abuse Program was read. Brother Dale Kessel will serve as our fraternal activity coordinator; he is a very good worker at Lodge 18, who is always willing to help.

Our Christmas Party was very well attended; everyone had a wonderful time and Lee Roy Matocha gave us some good music to dance to.

Past President Gilbert Kubicek installed the new officers for 1985; namely, President -- Morris Boutwell, Vice President -- Dale Kessel, Secretary -- Doris Brian, Treasurer -- Leslie Gustafson, Financial Secretary -Lambert Peterson and Youth Leader -Pat Young.

Thanks to all the members and friends who have supported us so faithfully for the past year, and to our members who have worked many hours during the year.

Ft. Bend Lodge 175 Annual Meeting Dear Members, It is time to make an annual report to the members on our preceding year.

We were fortunate that we did not lose any members through death, but several members were suspended for non - payment. We did have some members who cashed in their policies so through the addition, we have just about held our total membership.

During the annual meeting, the officers were elected to remain in their respective places.

We call this to the attention of President Leshikar that the members voted to contribute $100.00 to the Fort Bend County Child Abuse program for which we were warmly thanked by County Judge Jodie Stavinoha.

Sister Helen Bryson and Sister Ann Vyvial also made purchases of warm robes, slippers, toilet goods, razors and then delivered them to the needy rest home residents in Needvilie. This is an annual action that we make at Christmastime. We are well received by the rest home supervisors who help us to determine the need.

In closing it is indeed sad that there is so much apathy among our members because we can be a vital and supportive organization. May our SPJST return to oldtimes where there was a roomfull of members competing for committee appointments and officer elections at all meetings.

Dear Members, The Christmas meeting was called to order Friday evening, December 12, 1984 with President Vlasta Jez presiding.

Flag Bearer Jerry Valchar led the lodge in reciting the Pledge of Allegiance.

The members stood in silent tribute to deceased member, Sister Frances Mikeska.

Secretary Dorothy Chervenka introduced the following honored and special guests; Mayor Pro - Tern Hugh Shine, Millie Schiller, Wilma Machalek, Mary Reznicek, William and Darlene Neiser and family, Johnny and Irene Hluchan, Florence Reisner and children, Emil Reznicek and Lewis Jez, Jr. and family.

Jerry Valchar said Grace. A covered dish meal was served to members and guests.

The next meeting will be held Friday evening, January 11, 1985 beginning at 7 p .m .

May God's richest blessings be yours in the coming year and an of your days be beautiful for 1985.

Lodge 186, Caldwe Holds Christmas Party ar Members, Our SPJST Lodge 186 at Caldwell held its Christmas Party and election of officers on December 9, 1984. A good Christmas dinner was enjoyed by everyone attending.

Mrs. A. P. Luksa was in the hospital and was not able to attend, however, we are happy to report that she is in a healthy condition at this time.

Our election of officers was conducted at this time and our District I Director Bennie Trcalek installed the officers for 1985; namely, President -O. T. Wine, Vice President -- Thomas Cannon, Secretary -- Vicky Wine, Treasurer -- Dennis Gloyna, Financial Secretary -- Teresa Kuchera and Hall Manager -- Faye Gail.

We have gained a lot of new working members into our hall during the year

S.P.J.S.T. Rest Home No. II Corner Rose Hatchett is the new resident to join the group at the S.P.J.S.T. Rest Home No. II for the month of December.

Welcome back from Polly Ryan Hospital in Richmond are Hulda Richter and James Sample.

We regret the loss of Marie Anders.

Marie will be missed by our staff and other residents.

Congratulations to Elaine Smith and Debra Cavendar for getting their LVN License.

The Senior Citizen Social held at the Presbyterian Church was well attended and enjoyed by Tony Ondracek, Martha Wleczyk and Marie Bertram.

Monday, December 3, 1984 in the afternoon homemade ice - cream was enjoyed by all the residents.

Tuesday, December 4, 1984 in the morninh, the Aerobic Class came to entertain and brought refreshments.

Residents enjoyed both the Aerobics and the refreshments. In the afternoon at 6 p.m., the St. Michael's Altar Society came to sing Christmas carols and brought refreshments and served them to the residents. The evening was enjoyed by all.

Sunday afternoon, December 9, the Baptist Choir of Needville came to sing Christmas carols. Everyone enjoyed the singing.

Monday afternoon, December 10, the Fort Bend Humane Society brought cats for therapy for the residents.

Tuesday, morning, December 11, the Good Beginning Nursery of about twenty - four children came to sing and brought cookies for refreshments.

Everyone enjoyed the group.

Wednesday evening, December 12, the St. Michael's CCD entertained the residents with singing.

December 14, the Jaycees provided the residents dinner which consisted of turkey, dressing, cranberry sauce, English peas, rolls and apple pie. The residents' Christmas Party was held at 6:30 p.m. Sheria and Vance Snedecor provided the singing. The Jaycees provided Santa Claus and gave gifts to all the residents and helped pass out the other gifts under the tree.

Refreshments were served to all the residents and their families. Everyone reported a wonderful time.

December 15, at 2 p.m., the SPJST Lodge No. 88 of Houston brought gifts for the residents and sang English and Czech Christmas carols. Refreshments were then served and everyone had a fine time.

December 17, in the afternoon, the Hope Lutheran Church came and had services and a social afterward.

December 18, the FHA group and Mrs. Helen Ley came caroling and afterward the Cub Scout Troop No. 129 with thirty - five boys in the group

came caroling. Everyone enjoyed the singing.

The Staff Party was held December 21 at the home with the home providing the turkey, ham and dressing and everyone brought a covered dish Louis Vacek entertained the group with music and singing. Gifts were exchanged. Everyone had a fine time.

December 22, the Beta Alpha Delta Sorority came to entertain the residents with Santa Claus and his elfs handed out fruit.

Birthday celebrants of the rest home included Lucy Brod, Emma Tielke, Victor Bartosh, Cleo Schmerber, Olive Harper and Staff: Margie Hall, Mary Trevino, Tony Zatopek and Gladys Foston.

The Birthday Party was held Friday, December 28 which included singing "Happy Birthday" and listening to favorite music. The "A" Flower and Gift Shop provided corsages and boutonnieres and St. Michael's Altar Society provided the cakes. Punch and coffee were served with the refreshments. The afternoon was enjoyed by all.

Thanks to all the denominations in this area who gave services and communion; to the other volunteers who perform services in the home, especially to the volunteers who helped decorate the tree and home for Christmas.

Brother Dujka was born in Lubina, Czechoslovakia and came to the United States in 1907 with his parents.

Brother Dujka was a member of SPJST Lodge 84 in Dallas and a member of the Czech - Moravian Church in West.

Survivors include a son, Paul Dujka, Jr. of Dallas; a daughter, Paulette Dorsey of San Francisco, California; one granddaughter, Anne Skrabanek of Dallas; brothers, Joe Dujka and Milan Dujka, both of West, Texas and Rudy Dujka of Chicago, Illinois.

Services for Brother Dujka were held on December 5 with the Rev. Lawrence Junek officiating. He was laid to rest at the West Czech - Moravian Brethren Cemetery.

Brother Buresh was born on June 7, 1889 in Czechoslovakia. He had been a resident in. Galveston for many years, was well - known and respected by everyone who knew him. We all will miss him.

Before our lodge merged with Lodge 172, Brother Buresh was a member of the SPJST since 1929, he was a very active member and worked hard for the lodge until the time he could not get around.

He was a former employee of the Galveston Wharf Company, member of the Seafarers Union, member of the SPJST, and of St. Patrick's Catholic Church.

Funeral services were held at 2 p.m. on Saturday, December 29, 1984 at St. Mary's Cathedral Basilica in Galveston wih Msgr. C. J. Alleman officiating.

Burial was at Calvary Cemetery in Galveston under the direction of Malloy and Son Funeral Home.

Mrs. Poboril resided at 416 South 23rd Street, Temple, Texas. She was a member of the Brethren faith.

Sister Poboril was born in Burleson County near Caldwell, Texas and had lived in Temple most of her life. She married Joe Poboril in 1915 at Caldwell. He preceded her in death in 1969.

Services were held at Hewett Funeral Home in Temple on Friday, December 28, 1984 at 2 p.m. with Reverend Eugene Kotrla officiating. Burial was in the Seaton Cemetery.

Since Lubbock is the hometown of Governor and Mrs. Smith, they expect to attend and participate in the eventful ceremonies.

State Forester B. R. Miles of College Station, director of the Texas Forest Service, will be the featured speaker at the occasion, to be held from 10 to 11:30 a.m. and will be immediately followed by a reception.

Other dignitaries participating will include Dr. Pat D. Taylor of Lubbock who will be the MC, and also particpating will be the heads of the two other organizations which co sponsor the annual State Arbor Day event with the Texas Forest Service.

They are Gene Meyers of Huntsville, president of the Texas Forestry Association, and Jack E. Hillman of Houston, president of the Beautify Texas Council.

Meanwhile Arbor Day celebrations will be going on in cities all over Texas on this date, a different city is selected each year to host the one official State Arbor Day in Texas.

Arbor Day was first observed in Texas during 1889 in Temple. For 96 years Texans have celebrated the event, which was encouraged by a Temple Banker named W. Goodrich Jones. He was the founder of the Texas Forestry Association and has since become recognized as the "Father of Forestry of Texas."

The State Arbor Day observance will be held in Austin during the Texas Sesquicentennial year of 1986, and in San Antonio in 1987.

Governor Mark White, in proclaiming January 18, 1985, as Arbor Day in Texas, said that trees, a renewable natural resource, have always played an important role in the economic and cultural development of Texas. They provide raw material for the state's forest industry, a major source of jobs and tax dollars, and thousands of products essential to our everyday living. Trees are so important that we must all protect them from wildfire, destructive pests, and careless acts of man so that future generations may enjoy them, too.

Effective January 1, certain agricultural labor is no longer exempt from worker's compensation laws in Texas.

Worker's compensation addresses on-the-job injuries, and the corresponding insurance provides benefits to those injured or disabled while performing work-related

functions, explains Dr. Forrest Stegelin, agribusiness economist with the Texas Agricultural Extension Service, Texas A&M University System.

Recent Texas legislation brings agricultural labor under worker's compensation while providing exemptions for some employers under specific circumstances. Agricultural laborers are classified as either migrant workers, seasonal workers or farm and ranch laborers.

Small farmers and ranchers qualify for some exemptions. For each of the calendar years 1985, 1986 or 1987, the employer is exempt from subscribing to the insurance if the preceding year's gross annual payroll is less than $75,000. The employer is exempt in 1988, 1989 or 1990 if the preceding year's gross annual payroll is less than $50,000. For 1991 and thereafter. the payroll exemption threshold will be the same as for the seasonal worker provision although no exemption will be allowed if the farm or ranch employs three or more who are not migrant or seasonal workers.

A farm's gross annual payroll includes amounts paid directly to farm or ranch laborers, to seasonal and migrant workers, and to labor agents for their services. It does not include wages paid to the employer or his family, a partner or partner's family, or a shareholder or member of his family.

Migrant workers are not exempt under the Texas law, regardless of the number of workers employed or the gross annual payroll. Migrant workers are those persons employed in seasonal or temporary jobs who are required to be away from their permanent residence overnight. If migrant labor is provided by a labor agent, the agent is responsible for worker's comp insurance coverage for the employees.

If the agent does not subscribe, however, the employer with whom contracted is responsible, along with the labor agent, in any action to recover damages for injury or disability.

Seasonal workers employed on a truck farm, orchard or vineyard also are not exempt from worker's compensation. Seasonal workers are employees working in a seasonal or temporary position who are not required to be gone from their permanent residence overnight. If a seasonal worker is working for an employer or labor agent who also employs migrant workers and does the same work at the same time and place, the seasonal worker is then considered to be a migrant worker.

Employers of seasonal workers not on truck farms, orchards or vineyards are exempt in 1985 from subscribing for the insurance if their 1984 gross annual payroll is less than $25,000. For exemptions in 1985 and thereafter, the preceding year's payroll must be less than the prior year's required payroll threshold adjusted for inflation.

The cost of worker's compensation insurance is set by the State Insurance Board and is stated in dollars per $100 of gross payroll, notes Stegelin.

Depending on the type of employment, various rates are established through an experience factor system and rates are subject to change annually.

AG WORK HAS MANY HAZARDS Agricultural work is among the most hazardous of occupations.

Dr. Gary Nelson, safety engineer with the Texas Agricultural Extension Service, Texas A&M University System, says the agricultural environment is hazardous for a number of reasons.

First, unlike other industries which usually employ safety experts or assign part-time safety responsibility to a supervisor, farm managers must set up their own safe operating procedures without the advantage of corporate guidelines, resources or training in safety.

In addition, each farm or ranch has unique hazards associated with ground cover and landscape features such as hills, gullies, brush, trees, ponds, ditches and nearby roads.

Each farm or ranch also is different in the type and age of machinery and facilities used, Nelson points out.

Although some improvements have been made in most new agricultural equipment, no occupation has a higher exposure to the variety of machinery and their moving parts than does agriculture.

A fourth factor affecting agricultural injury rates is the labor force itself. A significant portion of the part-time farm labor force is supplied by the farm family, including wives and children. Often this labor force is relatively inexperienced in recognizing and coping with agricultural hazards.

General industry can exercise management control over a large group of workers, but the majority of farms and ranches has no employees outside the owner's family. No safety regulations apply to family-operated farms.

"In no other industry do wives and children get involved in the operation of complex mechanical equipment associated with severe injury potential as in farming and ranching."

Furthermore, hired farm labor is frequently migratory and relatively unskilled. Such brief periods of employment and language barriers can hamper successful long-term safety training.

Another factor related to farm and ranch safety is the variety of stresses associated with agriculture. Medical experts have contended that agriculture is the occupation with the highest level of general stress in the United States.

Extra long work hours, particularly at different seasons of the year, plus the responsibility that goes with managing a farm or ranch, can create severe stress.

Shouldering all the responsibility for planning and managing his business, operating and maintaining a wide variety of hazardous equipment, and usually providing most of the required labor while dealing with many stressful uncertainties can take a heavy toll on farmers and ranchers, says Nelson.

Uncertainties include weather conditions, disease and pest conditions and economic-conditions, particularly ever-fluctuating commodity prices and interest rates. of features "These unique agriculture produce an environment

which is loaded with opportunities for severe injury as well as unique stresses which tend to divert a farmer's or rancher's attention away from safety," Nelson says. "However, recognizing that agriculture is a high hazard industry, special attention must be given to safety education and accident prevention if injuries are to be reduced.

FARM PRODUCTION COSTS TO RISE Farmers will once again have to deal with rising production costs in 1985.

"Production cost rises will generally exceed the inflation rate next year," says Dr. Forrest Stegelin, economist with the Texas Agricultural Extension Service, The Texas A&M University System. "These increases in input costs will virtually offset any increase in market receipts."

Stegelin expects manufactured fertilizer prices for all forms of nitrogen, phosphates and potash to be up six percent by spring. However, there may be regional declines in prices due to a decline in the outlook for farm crop prices and a decline in the demand for farm goods.

The economist foresees a continued moderation in prices of ag chemicals for 1985. While the demand remains strong for ag chemicals, prices have declined due to the demise of patents as companies try to protect their market share from free market infringement.

Petroleum prices for fuels will be up about four percent by this time next year, notes the economist. Seasonal variations will depend on heating needs. A 3-4 percent growth in farm demand is expected, but farm usage is so minimal relative to total usage of fuels that farm prices will parallel wholesale or rack prices.

"Farmers and ranchers can expect rebates and sales incentive programs from the farm machinery industry which is bulging with large inventories of all items," Stegelin points out. "It's too bad the farmer is burdened with high real interest rates for operating loans."

The economist advises farmers to expect heavy price discounting for large four-wheel drive tractors and hefty price increases on some models of front-wheel drive assist tractors touting fuel efficiency and improved manageability in field conditions.

Prices also are expected to be up nearly 10 percent on small horsepower tractors, many of which will be imports.

Overall, prices for farm machinery will rise faster than for any other production input.

CITRUS PICTURE LOOKS GOOD OR CONSUMERS Despite last year's freeze that wiped out Texas table citrus, the 1984 citrus picture looks more favorable for consumers than what had been predicted earlier in the year, says a Texas A&M University Agricultural Extension Service food and nutrition specialist, Marilyn Hggard.

Because the 1984 California crop should yield about 28 percent more oranges this year, U.S.D.A. analysts say this should help keep prices from soaring this season.

According to the U.S.D.A., Florida juice supplies for this year also look good. Early concerns of a short crop because of 1983 frost damage and disease in the nurseries have been dispelled.

While juice prices hold stable, consumers may notice a slight difference in quality. Florida processors are augmenting supplies by importing concentrate from Brazil and blending it with their own.

Some producers believe the Brazilian concentrate is not up to Florida flavor and quality standards, but they claim the imports are needed to maintain reasonable orange juice prices.

Since orange juice is such a good source of Vitamin C, many consumers are reluctant to cut back unless prices become exorbitant, but one way to reduce without cutting back on juice is to consider packaging costs.

The most expensive form in which to buy orange juice is typically the convenient single-serving size asceptic boxes with straws or six-ounce cans.

Generally, frozen concentrate is least expensive, although single-strength juice sold in cartons can be less expensive when on special.

Prices may also vary within price category, with store brands usually costing less than the national brands, except those on special.

For people who like to squeeze their own fresh juice from Texas oranges, this is a disappointing year. The Texas ruby red grapefruit is also missed by many consumers who prefer it to the less sweet and juicy Florida or California white varieties.

Many consumers will be waiting for the return of our homegrown Texas citrus next year.

PECANS IN SHORT SUPPLY THIS YEAR TEXAS

Texas pecan crop short--- Pecans, those tasty morsels that are so much a part of a favorite baking season, are in short supply this year, at least in Texas.

The 1984 Texas pecan crop is only a fraction of what it was a year ago.

About a third of the crop has been harvested. The state's pecan crop was hard hit from several fronts. The first and foremost reason was the large 1983 crop. Pecans generally produce good crops on alternate years, so that accounts for much of the decline of

this year's crop.

Other factors that kept pecan production down in 1984 were the severe freeze last December which damaged some trees, the extensive drought this past summer, and a heavy infestation of pecan nut casebearers, the most serious pecan pest. Because of the short crop, pecan growers are getting a good pricer -SPJST-

Food packaging costs consumers.

After labor costs and farm costs, the third largest portion of our food dollar -- eight percent -- goes to packaging, says Texas A&M University AES food and nutrition specialist.

That includes not only the package on the shelf, but the shipping carton, other distribution materials and the packaging equipment, explains Mary K. Sweeten.

While the cost of packaging as part of our food dollar is small, some foods cost more to package than others.

According the the USDA, food packaging and container costs average nearly one - third of the cost of ingredients. But in about a fourth of the foods and beverages sold, packaging costs are greater than the cost of ingredients.

In general, the more processed or complicated a food product is, the higher the packaging costs.

For example, foods such as beer, soft drinks, cereals, baby food, frozen dinners and canned fruits and vegetables all have packaging costs greater than 100 percent of the cost of the ingredients.

On the low end of the scale, frozen seafood, flour products and coffee have packaging costs that are less than 15 percent of the cost of ingredients; and "basic" foods like poultry, cheese, butter, sugar and red meats have packaging costs of less than 10 percent of the value of the food.

New methods and material for processing and packaging food have developed to meet consumer demands growing out of changing family patterns and lifestyles, but consumers can expect to pay for these changes at the grocery checkout counter.

TALLIES SHOW TEXANS KNOWLEDGE OF NUTRITION QUIZ

Texans understand there is a relationship between exercise and weight control, but are misinformed on the body's use of food and need for

vitamin and mineral supplements.

These are the findings of a "Food and Fitness" quiz taken by Texans attending the state fair held during October.

Visitors to the Food and Fiber building could take the Texas A&M University Agricultural Extension Service's computerized quiz, says Dallas County Extension agent Jean Carlton. They were asked 10 true false questions relating to nutrition and physical activity and given informative answers after each response.

The scores from 632 quizzes were tallied. While people who took the quiz are not a representative sample of the state's population, their scores provide some indication of what Texans know about nutrition.

Although the average respondant answered 62 percent of the questions correctly, several questions stumped the majority.

Almost 70 percent answered incorrectly that athletes and other people who exercise regularly have special needs for extra protein.

Most Americans get the recommended daily allowance for protein, and don't need more simply because they exercise. That is a common misconception that extra protein builds muscle, when it's actually exercise that builds muscle tissue.

Slightly over 61 percent of those responding believe that high carbohydrate meals eaten three hours before exercise provide fuel for the activity. But most people don't need extra carbohydrates for exercise and may just have to work all the harder to burn the extra calories.

Since carbohydrates are the most quickly absorbed foods, the person who needs quick energy before exercise would be better off having a high energy snack closer to the exercise time.

Almost 50 percent of the test - takers thought that people who exercise need vitamin and mineral supplements even if they do eat right. This isn't true, because all necessary nutrients can be obtained from eating a balanced diet.

While these were the most missed items, the average test - taker answered 62 percent of the questions correctly.

The message of the fitness craze has evidently gotten through to most Texans, since 90 percent answered correctly that exercise should be a part of weight loss or weight control program. However, there is still a need for greater understanding of how exercise and weight control relate to each other for miximum fitness.

FISH FARMING CONFAB SLATED FOR JAN. 23-24 Fish farmers from throughout Texas, as well as those interested in raising shrimp and crawfish, are invited to a two-day conference at Texas A&M University, January 23-24.

Some 250 members of the Fish Farmers of Texas, plus other interested individuals, are expected to attend the conference at Texas A&M's Rudder Center, points out Dr. Ken Johnson, fish disease specialist with the Texas Agricultural Extension Service, The Texas A&M University System, which is conducting the activity.

The conference will feature 25 special workshops as well as a trade show and poster session. Workshops will deal with such topics as fish farming equipment, pond construction, fresh water shrimp, crabs, bass and crappie, computers in fish farming, water chemistry, crawfish, red fish, tilapia, forage fishes, plant control, marine shrimp, disease management, marketing pond fish, catfish, mud minnows and other marine fish, fish handling and evaluation of recreational fish populations.

These workshops are designed to meet the needs of beginning and advanced fish farmers, including those with only an initial interest in aquaculture.

The Fish Farmers of Texas will host a business meeting January 24 at 10 a.m.

TEXAS STOCKER CALF CONFERENCE WILL BE JAN. 10 "Livestock Finance" will be the theme of the 1985 Texas Stocker Calf Conference to be held January 10 in Marlin.

The second annual conference will be at the National Guard Armory in Marlin, with registration from 12:30 to 1:30 p.m.

Main features of the conference will be 25 educational booths sponsored by livestock allied industries plus 13 on various livestock mini-seminars related products and services, reminded Ronnie Leps, Falls County agent.

An evening program at 6 p.m. will feature Wayne C. Jordan, senior vicepresident and manager of the agricultural loan department of Texas American Bank in Fort Worth. Jordan has been with the bank since 1981.

Prior to that, he was with the Kansas City regional office of the First National Bank of Chicago and served briefly with Citibank of New York.

The conference is designed to meet the needs of the livestock calf operator who uses winter pasture as a means of producing beef, and all stocker cattle operators and those in related industries are invited to attend the 1985 conference to learn about the latest in products, services and financing.

The conference, being hosted by the Falls County Beef and Forage Committee is in support of the South

If tonight's dinner will be spectacular hut perhaps just a bit heavy, plan to serve something very smooth and simple for dessert. The home economists at kitchenAid recommend this Bavarian Cream, a recipe recently developed for their line of solid state mixers. They suggest you keep each serving small, chilled well in your prettiest long stemmed glasses and, if desired, topped with fresh raspberry or pineapply puree.

Bavarian Cream 1 pkg. unflavored 1/4 teaspoon salt gelatin 1 1/2 cups milk, scalded 1/3 cup water 1 1/2 teaspoons vanilla 6 egg yolks 1 1/2 cups heavy whipping 3/4 cup sugar cream Sprinkle gelatin over water to soften; set aside.

Place egg yolks in double boiler and stir constantly for 30 seconds over boiling water. Sprinkle in sugar and salt and continue stirring. Slowly blend in milk. Cook and stir mixture for several minutes, until thickened. Remove from heat.

Dissolve softened gelatin over hot water. Stir gelatin, along with vanilla, into egg mixture. Cool in refrigerator.

Add cream to mixing bowl and whip until almost stiff. Add cooled egg mixture and mix just to combine.

Pour into long stemmed glasses and refrigerate until set.

The committee voted that regardless of payment we were elected to represent the membership. In both meetings we discussed Publication Committee business and By-Laws regarding the Publication Committee.

We had a pre-convention Publication Committee Meeting in Temple, March 3, 1984 and June 17, 1984 at Corpus Christi.

During the last four years our committee acted on many letters that the editor felt might be questionable. We voted that sales department have the entire back page for their sales department. We voted that all officer reports be mailed to the editor before being published.

The Publication Committee voted that we use a 10 point type instead of 9 point type throughout the Vestnik. This is a larger type.

The Publication Committee asked that a survey be made before the convention to get an accurate count of the number of members who request a Vestnik. This was done by Financial Secretary Mikulas' office, Convention Vestnik issue was discussed and recommended that we leave it to the discretion of the editor.

The committee discussed and decided that political ads be accepted only from SPJST members and that the unrelated business from ads does not exceed $1,000.

The P.C. Committee considered a letter: I . Increase Vestnik to four (4) pages.

2. Heading in Vestnik to be smaller.

3. Revert Vestnik to Staple form.

4. Increase Vestnik to 32 pages.

5. Increase quality of paper. the committee voted that this was a «in% ention matter.

The committee voted to print headings in 18 point type instead of 12 point heading.

A letter from President Morris was read in which he regieted not being able to meet with the committee and he expressed that we have a publicatem that we can all be proud of. He conve yed his best wishes to all P.C. Committee members and a successful meeting.

The study found that Caesareans are more costly and riskier than natural childbirth. A Caesarean requires an additional three days in the hospital for both mother and infant.

At a daily hospital rate of about $250, this would add at least about $1,500 to the cost of the birth. The mortality rate for Caesarean delivery is two to four times higher than that for natural delivery. ***

ccen^pn Texas Department of Health Robert Bernstein, M.D., Commissioner The wintertime is a time for snow and ice-related activities for many, but even mildly cold weather can trigger in the elderly a potentially fatal drop in deep body temperature, known as hypothermia (hi-po-thermee-uh.

Because accidental hypothermia can happen indoors in mild temperatures of 60-65 degrees fahrenheit, it may be necessary to keep temperatures in places where the elderly live above 65 degrees.

"Those at greatest risk are the relatively small group of the elderly who cannot shiver, and thus cannot produce body heat when they need it," said Dr. Clift Price; Associate Commissioner for Personal Health Services.

Among the elderly, the most likely to develop accidental hypothermia are the chronically ill, the very old, the poor who cannot afford enough heat, and those who don't take normal precautions to keep warm.

Accidenal hypothermia, however, can occur in anyone who is exposed to severe cold without enough protection.

How can hypothermia be detected? Take the individual's temperature. If it is below 95 degrees or does not register on an oral thermometer, repeat using a rectal thermometer for a more accurate reading, he said. If the temperature still does not register or is below 95 degrees, get emergency help. The only sure way to detect hypothermia is to use a special low-reading thermometer available in most hospitals.

"If you must wait for emergency help to arrive, wrap the victim in warm blankets, and if the victim is conscious, give the individual small quantities of warm food and drink," Dr. Price said. "Rubbing the person's limbs can worsen the condition, and never give the victim anything alcoholic to drink."

The elderly probably account for nearly half of all victims of accidental hypothermia. They succumb more readily because the physical changes which often accompany aging reduce the body's ability to regulate its internal temperature and to sense the cold. Dr. Richard W. Besdine of the Harvard Medical School estimates that 25,000 people over the age of 65 die every year from hypothermia.

On A Stick For Girls And Boys

Cooking One way for a whole group of family and friends to get involved in outdoor cooking is cooking on a stick. Of course, it's important to remember some rules for safety.

According to Camp Fire, the national youth agency for girls and boys, toasting marshmallows is one of the easiest and most taken-forgranted outdoor cooking experiences, but it's also one of the most dangerous. The suddeness of a marshmallow catching on fire can cause a child to jerk it out of the fire.

The jerk can send the hot marshmallow hurtling into someone's hair or the stick into someone's face or eye.

So before you begin, make sure everyone understands the potential danger of a hot pointed stick.

The next step is choosing the proper stick for your recipe. A dowel from a lumberyard, a thin stick, a toasting fork or a coat hanger is good for food that can be pierced, such as hot dogs, marshmallows or kabobs. If you use coat hangers, remember to burn the paint off first. The paint might contain lead, which, if left on, could contaminate the food.

A fat stick, at least twice the size of a thumb, is best for foods that are wrapped around a stick, such as doughboys. The stick does not have to be green, but it should be strong and at least 18 inches long. If the stick is too long and awkward, that could be a hazard, too.

Stick cookery works best on coals, so everyone can be fairly close to the fire.

Good News For Children With Asthma New research into the detection and pharmaceutical treatment of childhood asthma has made it "largely feasible" to allow 99.9 percent of children with the often-devastating disease to lead closeto-normal lives, noted pediatric allergist Dr. Shirley Murphy says.

"The right combination of new and established drugs works with 99.9 percent of all asthmatics, so we have made great strides," explains Dr. Murphy, associate professor of pediatrics at the New Mexico School of Medicine and director of the Regional Pediatric Pulmonary Center in Albuquerque.

Asthma is the most common severe lung disease of childhood. Today there are an estimated 2 to 3 million youngsters under the age of 17 who must deal physically and emotionally with the illness.

"Asthma can be very difficult for a child whose activity is limited and who is p.erceived as different from other children," Dr. Murphy says. "The goal of physicians and family members is to make the lives of children with asthma as close to normal as possible, and we have come a long way in meeting this goal."

Convenient buttermilk baking mix, brown sugar, unsweetened chocolate and sweet cream butter are featured in these crisp cookies. A creamy peanut butter filling with plump raisins help make these chocolate sandwich cookies so special.

Pack them in the lunch box or have a plate ready for a quick after school snack. They are perfect with a tall glass of milk and a piece of fruit. These easy to prepare cookies can be a fun cooking protect for ,the kids too.

Chocolate-Peanut Butter Sandwich Cookies Cookie:

1 c, firmly packed brown sugar 1/2 c. LAND 0 LAKES® Sweet Cream Butter, softened 1 egg 1- oz, sq. unsweetened chocolate, melted 2 c. buttermilk baking mix Filling:

1 1/4 c. powdered sugar 1/3 c. peanut butter 1/3 c. LAND 0 LAKES® Sweet Cream Butter, softened 1/2 c. raisins Heat oven to 375°. In large mixer bowl combine brown sugar, 1/2 c. butter, egg and chocolate. Beat at med. speed, scraping bowl often, until light and fluffy (1 to 2 min.). Add buttermilk baking mix; beat at med. speed, scraping bowl often, until well mixed (1 to 2 min.).

Drop dough by rounded teaspoonfuls 2" apart onto cookie sheets. Bake for 8 to 12 min. or until set. Cool completely. In small mixer bowl combine all filling ingredients except raisins. Beat at med. speed, scraping bowl often, until light and fluffy (2 to 3 min.). Stir in raisins.

Put cookies together in pairs with 1 tbsp, filling for each sandwich. YIELD: 1 1/2 doz.
