In a year marked by hardship and loss, it’s important to recognize every single win that comes our way, big or small. For me, a recent “travel win” was finally getting away. (Okay, two-and-a-half hours away, but still, away.)

We packed our bags, grabbed the kids and headed east on a micro-escape to Prince Edward County on Lake Ontario, hunkering down in a serene, Scandi-style cabin at the newly opened Wander resort. We were gone only three days, but we returned home feeling refreshed, like we had had a proper holiday.

Wander is a win unto itself. Each cabin is equipped with indoor and outdoor fireplaces (s’mores kits are dropped off daily) and most fixtures and furnishings are designed by local makers, from the organic linens on the beds to the tumblers on the table (prompting some shopping via curbside pickup). In the mornings, we lingered over flaky pastries and fresh-fruit smoothies, watching swans drift by our floor-to-rafters windows. You’d never know this blissful retreat was almost cancelled by Covid.

Just how hard is it to open a hotel mid-pandemic?

“There were days when I wanted to stay in bed and pull the sheets over my head,” says founder Shannon Hunter. In addition to worrying about things like whether she had enough wood to build the cabin decks was the stress over how to launch in the current travel climate. “We knew it would be a safe getaway for people just by virtue of the way we had designed it,” she says, “but there were many late-night discussions as travel restrictions changed.”

The worst day was April 1, 2020, when Hunter’s cellphone rang while she was at the grocery store. It was her business partner: Their bank was no longer funding the hospitality sector – and it wasn’t an April Fool’s Day joke. Hunter went home, groceries forgotten. “We had gutted the resort that stood on the property before and we had nothing,” she says. “But we don’t give up easily.” Many, many Zoom pitches later, they finally found the funding they needed to get Wander built, and it opened in February. “We believe that what we’ve created is what people need right now,” Hunter says.

“And our biggest ‘win’ is every single person who has written us a beautiful note to say thank you.”

I, for one, am grateful, and this is also my chance to say thank you to everyone in the travel and hospitality sector who has struggled for a hard-fought win over the past year. As you will see in this issue, there are plenty to celebrate. 

Speaking of wins, Air Canada enRoute is celebrating four golds and two bronzes at the North American Travel Journalists Association awards (including gold for best Travel Magazine). What’s your biggest win of the year so far, travel- or otherwise?

En cette année marquée par les épreuves et les pertes, il importe de souligner chaque victoire, grande ou petite. Mon exploit personnel est d’avoir enfin fait une escapade. (À deux heures et demie de la maison, soit, mais escapade quand même.) Avec enfants et bagages, nous avons mis le cap à l’est pour une micro-­ escapade au tout nouveau complexe Wander, dans un paisible chalet de type scandinave du comté de Prince Edward, sur le lac Ontario. Ce voyage de seulement trois jours nous a détendus comme de vraies vacances.

Le Wander est une victoire en soi. Chaque chalet est doté de foyers intérieur et extérieur (ingrédients à s’mores livrés chaque jour) ; équipements et mobilier sont en majorité de fabrication locale, de la literie bio à la verrerie (on peut en acheter, avec collecte à l’auto). Le matin, nous savourions pâtisseries fines et frappés aux fruits frais en admirant, par les immenses baies vitrées, les cygnes qui barbotaient. Et dire que l’inauguration de ce havre de bonheur a failli être annulée en raison de la covid ! À quel point est-ce ardu d’ouvrir un hôtel en pleine pandémie ? « Certains matins, je n’avais envie que de rester sous mes couvertures », déclare la fondatrice, Shannon Hunter. En plus de s’inquiéter de savoir si elle aurait assez de bois pour construire les terrasses, elle a vécu le stress de se lancer en affaires en ces temps de voyages incertains. « Nous savions la conception du site sécuritaire pour nos clients, explique-t-elle, mais nous avons eu bien des discussions jusque dans la nuit à mesure que les restrictions de voyage changeaient. » La plus grande tuile pour la proprio a été l’appel qu’elle a reçu dans le stationnement de l’épicerie, le 1er avril 2020.

C’était son associé : leur banque se retirait des investissements hôteliers (et ce n’était pas un poisson d’avril). « Nous avions rasé le site de villégiature qui était là et nous n’avions plus rien, précise Mme Hunter. Mais nous ne sommes pas du genre à baisser les bras. » Après de très nombreux efforts sur Zoom, le montage financier pour la construction était complété et le Wander ouvrait ses portes en février. « Nous croyons avoir un concept correspondant à ce qui est recherché aujourd’hui et notre plus grande victoire, ce sont les adorables mots de remerciement de nos clients. » J’ai moi-même fort apprécié mon séjour et j’aimerais profiter de l’occasion pour saluer chaque victoire vaillamment remportée depuis un an dans les secteurs du voyage et de l’hébergement. Comme vous le constaterez au fil de nos pages, il y a de quoi célébrer. 

Taking Action on Climate Change Relever le défi climatique

More than most businesses, airlines must be mindful of the future. Whether assigning crews weeks in advance, scheduling and selling flights for the next year or acquiring aircraft to fly for decades, we are always planning ahead.

I am very proud that Air Canada has put this skill to work developing a new sustainability plan to meaningfully address global warming. Climate change is the greatest issue our planet faces, and we have responded by setting ourselves an ambitious goal for net-zero emissions by 2050 and a strategy to achieve it.

Already, Air Canada is an established climate leader in Canadian industry. Since 1990, we have improved our fuel efficiency by 43 percent, invested $12 billion in more environmentally friendly aircraft, participated in developing a world carbon-pricing mechanism for our industry, supported alternative-fuel and climate research and pioneered waste reduction and recycling programs – efforts that were recognized globally when Air Transport World named us Eco-Airline of the Year in 2018.

By declaring a bold target, we are incorporating climate considerations into our strategic decision-making. We intend to achieve our goal through a four-pillar approach based on: fleet modernization and operating efficiencies; innovation with new technologies, including electrification and other potential power sources such as hydrogen; the development of sustainable aviation fuels, to which we have committed $50 million; and carbon-offset and compensation strategies.

To ensure accountability, we have set interim goals for 2030 to achieve net reductions in greenhouse gases of 20 percent from flight operations and 30 percent from ground operations, using 2019 as a baseline. We will also disclose our progress through our regular annual corporate and sustainability reporting.

Given the urgency of the climate-change issue, our customers, investors, communities and employees insist that we operate sustainably. But mostly, we are acting because it is the right thing to do for present and future generations. I bring two pairs of heels – short boots, so I can dance, and an open-toe pair because it feels like a slipper. And then I pack two really extra, showstopping outfits.”

Eden Grinshpan The Toronto-based food personality, cookbook author and host of Top Chef Canada has eaten her way around the world – and can’t wait to go back for more.

Star culinaire, autrice d’un livre de recettes et animatrice de Top Chef Canada, la Torontoise Eden Grinshpan a fait le tour du monde et de ses cuisines, et elle compte repartir dès qu’elle pourra.

Eden Grinshpan doesn’t take herself too seriously. Her charming wisecracks add a dose of comic relief to the oft-tense Top Chef Canada competition (she’s been the host since 2017), and she’s just as unfiltered on social media, posting no-makeup selfies and shots of croissants balancing on her pregnant belly on Instagram. Last September, the Cordon Bleu-trained chef released her first cookbook, Eating Out Loud, inspired by her Israeli roots and the childhood trips she took to the country every summer. “It’s approachable, everyday food that makes you feel good but also packs a lot of flavour,” she says of her recipes, which include lamb shakshuka with lemony yogurt and salted halvah chocolate-chip cookies. We caught up with Grinshpan in Toronto, where she recently relocated from Brooklyn with her husband Ido and daughter Ayv, to chat about the best meals she’s eaten abroad, how she uses food as a sensory form of travel and where she’s most excited to head next.

enRoute: What’s been keeping you busy lately? — Qu’est-ce qui vous occupe ces temps-ci ?

Eden Grinshpan: I’m about to become a mother (round two), I’m renovating my new house and in between all that I’m constantly working on projects. The new season of Top Chef Canada is out now and I’m doing some recipe development. The fact that I get to host Top Chef Canada is still a pinch-me experience. It’s incredible to meet all these chefs who are at the top of their game and hear the stories behind the food they make. — Je serai bientôt maman (prise 2), je rénove notre nouvelle maison et, en outre, j’ai toujours une foule de projets en marche. EG: Absolutely! And in a lot of the places I’ve travelled, I’ve taken cooking classes. I took some in Thailand, and I learned how to make Tibetan momos in Dharamsala, India. What’s amazing about food is that it’s universal – you don’t need to speak the same language to be able to cook with someone from a different culture. After travelling to India for the first time in 2006 I completely fell in love, so much so that I ended up going back and spending seven months backpacking there. I started in Delhi and went all the way down to Kerala and ate everything from creamy masalas to dosas, idlis and uttapams. I spent time volunteering at an orphanage in Rishikesh and I remember shopping at the local market, where there was fresh turmeric and ginger, and

beans piled four feet high. It was so beautiful and bountiful, and it inspired me every time I went. — Certain ! J’ai même suivi des cours de cuisine dans bien des lieux que j’ai visités. J’en ai suivi en Thaïlande, et j’ai appris à préparer des momos tibétains à Dharamsala, en Inde. eR: If you had to pick one favourite food-related travel memory, what would it be? — Si vous deviez choisir un souvenir de voyage lié à la cuisine, ce serait quoi ?

EG: My husband and I went to Thailand for our honeymoon, and it was the first time he had ever been to Southeast Asia. When we got off the ferry in Koh Phangan we were starving, so we ordered from a roadside stand where the only dish they served was this gorgeous, aromatic green curry with noodles. After a few bites we both started pouring sweat and bursting into tears. It was the hottest curry I’ve ever had, but we were so hungry that we just kept eating it. The entire drive up to the hotel we were crying and sweating and laughing because it was so painful, but so good.

Durant tout le trajet jusqu’à l’hôtel, on pleurait, on transpirait et on riait, car c’était tellement piquant, mais tellement bon. eR: Eating Out Loud is filled with recipes based on your Israeli heritage. What’s your top Israeli food experience? — Eating Out Loud regorge de recettes en lien avec votre héritage israélien. Votre meilleure expérience culinaire en Israël, c’est quoi ?

EG: My favourite restaurant of all time is North Abraxas in Tel Aviv. Chef Eyal Shani, who also runs HaSalon in New York, and Miznon, has this ability to take regular ingredients and spin them into gold. My husband and I like to sit at the bar, where they have a wood-burning oven, and smell the hot focaccia that’s constantly coming out of it and drink a bottle of Israeli red wine. They serve sweet potatoes with the creamiest, most decadent sour cream and chunky sea salt. I’ll be eating a sweet potato thinking, “How does he make this taste so good?” If you go on the right night, every hour they serve chasers, which are little shots. The music will be loud, and they’ll take out a chaser for everyone at the bar.

Everyone cheers and starts dancing – it’s a party. — Mon resto préféré à vie, c’est le North Abraxas, à Tel-Aviv. Le chef Eyal Shani, qui dirige aussi le HaSalon, à New York, et la chaîne Miznon, a le don de transformer des ingrédients ordinaires en or. La musique sera forte, et ce sera la tournée de pousse-alcool pour tout le monde au bar. Chacun pousse des acclamations et se met à danser : c’est la fête. eR: Have you used food as a way to travel from home over the last year? — La cuisine vous a-t-elle fait voyager chez vous ?

EG: When Ido is missing Israel, his home, I will put together a spread with hummus, baba ghanouj, salatim, fresh pita and a pan full of shakshuka. We’ll put on some Israeli music, and it transports us there. — Quand Ido s’ennuie d’Israël, sa patrie, je prépare une petit assortiment de toutes sortes de mezzés (tels houmous, baba ganousch, salatim), avec pita frais et une platée de chakchouka. On met de la musique israélienne, et ça nous transporte là-bas. eR: Where’s the first place you’ll go once the world returns to “normal”? — Où irez-vous en premier quand on sera revenu à une certaine « normalité » ?

EG: Ido and I were supposed to go to Japan in April 2020, and we were devastated because it was the third time we’ve cancelled that trip – the first two times, life and work got in the way. So, Japan is top of our list. I’ve also been missing Mexico. After I give birth to my second child, I’m excited to just sit on the beach and have a margarita. — On était censés, Ido et moi, aller au Japon en avril 2020, et on était consternés parce que c’était la troisième fois qu’on annulait ce voyage ; les deux autres, la vie et le boulot nous avaient mis des bâtons dans les roues. At Pod Samsonem, a Jewish-Polish restaurant on a pedestrian thoroughfare just north of Warsaw’s Old Town, we take our seats at a picnic table under a red umbrella and order cold beer and cool beet borscht swirled with sour cream, shredded cucumber and fresh dill. “This soup has the genetic fingerprint of our grandmothers,” my brother David announces. It’s so good I could eat it forever.

Lunch continues with juicy fried mushrooms, a strolling musician playing tunes from Fiddler on the Roof (now there’s a man who knows his audience) and a plate of old-school gefilte fish: chopped pickled carp covered in aspic and served with horseradish sauce. While our meal is delightful in every possible way, not all is sitting well with us on this trip to Poland.

My brother and I had come to explore the Jewish Trail in Krakow, looking for links to our dad’s side of the family along the way. Both of his parents were born in Poland and came to Canada as babies.

And while we hadn’t been in the country very long, we’d seen enough to recognize

that the faces that met ours, as we ate foot-long zapiekanka sandwiches and sipped third-wave flat whites at Krakow’s cobblestone-lined cafés, did not reflect those of our ancestors. Still, ever the optimist, I felt we could turn this around.

So we hopped on a train headed for Warsaw, a few hours away (after getting off of the wrong train, headed for Siberia), hoping for a new perspective. In the city’s Jewish cemetery, tourists, nuns and boys

wearing prayer caps shuffled among the headstones that marked the graves of rabbis, writers and industrialists. Shafts of sunlight cut through the forest canopy, spotlighting weathered Hebrew inscriptions. Before World War II there were 3 million Jews in Poland, one of the largest Jewish populations in the world. Today, there are between 10,000 and 20,000.

Buoyed by the borscht at Pod Samsonem, I ask my brother if he feels a connection to the place where our grandparents were born. “None whatsoever,” David says without hesitation. “There’s a difference between being Polish and being a Polish Jew.” I agree, with one big caveat: We had basically just enjoyed two bowls of Boobie Ronnie’s famous beet borscht, even though she had lived in another country an ocean away. In Canada, Boobie had been surrounded by family and lived a life that was happy, full and free. Now that’s some borscht.

tourbillon de crème sure, concombre râpé et aneth frais. « Ce potage porte l’empreinte génétique de nos grands-mères », annonce mon frère David. C’est si bon que je pourrais en manger pour l’éternité.

Le dîner se poursuit avec de juteux champignons frits, un musicien ambulant jouant des airs d’Un violon sur le toit (en voilà un qui connaît son public) et un plat de poisson gefilte à l’ancienne (aspic de carpe hachée et pochée accompagné de sauce au raifort).

Si le repas est en tout point agréable, tout n’est pas parfait pour nous dans ce séjour en Pologne.

Mon frère et moi sommes venus explorer la Jewish Trail de Cracovie, et chercher en chemin des liens avec la famille de notre père, dont les parents sont tous deux nés en Pologne avant d’émigrer bébés au Canada.

Peu après notre arrivée au pays, nous en avions assez vu pour saisir que les visages que nous voyions, en savourant des zapiekankas de 30 cm et des flat whites dans les cafés de troisième vague des rues pavées de Cracovie, ne reflétaient pas ceux de nos ancêtres. Pourtant, l’optimiste que je suis se disait que tout n’était pas joué.

Et c’est pourquoi nous avons pris le train pour Varsovie, à quelques heures de distance (après être descendus du train pour la Sibérie, pris par erreur), dans l’espoir d’un nouveau regard. Dans le cimetière juif de la ville, touristes, religieuses et garçons portant la kippa circulaient lentement entre les pierres tombales marquant les sépultures de rabbins, d’écrivains et d’industriels. Des rais de soleil filtraient entre les arbres de la forêt et mettaient en lumière les inscriptions hébraïques usées par le temps. Avant la Seconde Guerre mondiale, la Pologne comptait trois millions de Juifs, une des plus fortes populations juives au monde. On en dénombre à présent de 10 000 à 20 000.

Revigorée par le bortch du Pod Samsonem, je demande à mon frère s’il sent un lien avec le lieu de naissance de nos grands-parents. « Pas le moindre, répond-il du tac au tac. Il y a une différence entre être polonais et être un Juif polonais. » Je suis du même avis, avec un gros bémol : nous venions à peu de chose près de savourer deux bols du fameux bortch de mamie Ronnie, en dépit du fait qu’elle vivait dans un autre pays, outre-mer. Au Canada, mamie a vécu entourée des siens et a mené une vie heureuse. Vraiment, c’est un bortch du tonnerre. 

We cobble together the remains of our lunch. “I’ve got an apple.” I turn to my husband. “How about you?” He pulls out a softly melting Toblerone bar.

After hiking for 10 hours from Grindelwald to Guttanen in the Swiss Alps

Contemplating our next move, I think about the mules that used to walk this very trail, a centuries-old trading route named after sbrinz, a hard cheese that can be grated, rolled or flaked and is similar in consistency to Italian Parmesan. Sbrinz was once a major Swiss export, carried over the impressive Grimsel and Gries passes to the markets of Domodossola in northern Italy.

The cheese was traded for wine, cornmeal, rice and spices, which were brought back using the same heavily travelled route.

What I wouldn’t give for some sbrinz and a glass of wine right now.

The completion of the Gotthard Tunnel in 1882 marked the end of the mule-driven trade, and today the trail is used by hikers keen to follow in the footsteps of history and appreciate the Alpine scenery. The Swiss PostBus offers an easy and scenic way to travel a version of the Sbrinz route, and when we spot one coming around a mountain turn, it saves the day – if not the whole trip. We hail a ride and go bumping along into Handegg, where a well-earned glass of Swiss gamay and wedge of cheese await us at the inn.

on this warm August day, we are down to our last bites of energy and the dregs of our water bottles. Our destination, the tiny village of Handegg, is still an hour’s walk away. It’s close to dinnertime and the sun is moving lower in the sky, creating shadow twins of our bodies that lean out over the Aare River valley.

In planning our hike along the Via Sbrinz route from central Switzerland to Val Formazza in Italy, I severely underestimated the distance we had to cover on this second day of a five-day trek that covers more than 70 kilometres through alpine valleys and high mountain passes. I fear we’ve exhausted our energy and enthusiasm and that we’ll struggle to recover to finish the hike, which I’d chosen to do in celebration of my 50th birthday. But perhaps that’s just the hunger talking.

Encore une heure avant d’atteindre notre destination, le hameau de Handegg. C’est bientôt l’heure du souper et le soleil descend, qui allonge les ombres jumelles de nos corps sur la vallée de l’Aar. Au moment de planifier notre randonnée sur la Via Sbrinz de la Suisse centrale jusqu’au val Formazza, en Italie, j’ai rudement sousestimé la distance à parcourir en cette seconde journée de notre trek de cinq jours, soit plus de 70 km par vallées alpines et hauts cols. Je crains que nous ayons épuisé notre énergie et notre enthousiasme et que nous peinerons à refaire le plein pour terminer le trek, que j’ai choisi de faire pour mes 50 ans.

Mais peut-être que c’est juste la faim qui parle.

Autrefois une des principales exportations de la Suisse, le sbrinz était acheminé par les imposants cols du Grimsel et de Gries aux marchés de Domodossola, en Italie du Nord. On le troquait contre du vin, de la farine de maïs, du riz et des épices, qu’on rapportait par le même chemin très fréquenté.

Là, je donnerais n’importe quoi pour du sbrinz et un verre de vin.

L’achèvement du tunnel ferroviaire du Saint-Gothard en 1882 a signifié la fin du commerce muletier, et de nos jours le sentier accueille des randonneurs désireux de marcher dans les traces de l’histoire et d’admirer les paysages alpins. Le CarPostal offre une façon facile et pittoresque de faire une version de la Via Sbrinz ; celui que nous voyons alors arriver au détour d’un chemin sauve la situation, sinon tout le voyage. Nous le hélons et poursuivons la route en brinquebalant jusqu’à Handegg, où un verre bien mérité de gamay suisse et un morceau de fromage nous attendent à l’auberge. 

Since most streets on Hydra aren’t named, I am guided by a few vague hints pulled from the Internet, including: “Locate the Four Corners grocery shop up on the hills.

I’m in Athens visiting friends when I learn that legendary Canadian poet and singer-songwriter Leonard Cohen once lived in Greece. As a fan, I decide I have to see exactly where for myself. Because the ferry schedule is literally Greek to me, I end up on a commercial cruise whose first stop is Hydra, the small island Cohen called home from 1960 to 1967, 60 kilometres south of Athens.

For Cohen, Hydra was a pre-fame incubator: a place where he could write poetry, spend time with his girlfriend and muse Marianne Ihlen and play his music live for the first time at kafenion O Katsikas (now called Roloi Café). Although locals say tourism has changed the island’s spirit, an intimate vibe remains even as the population has grown to 2,500.

By the time I spot the grocery, my ragged breathing is drowning out the cicadas singing on the hillside. Moments later I’m at his front door, knocker and all. This is where Cohen transformed into pop’s poet laureate and found a sense of belonging that some say he spent the rest of his life chasing. Somehow, just being on the island is giving me a deeper sense of his creative journey.

The house is still owned by Cohen’s family; I don’t knock. Instead, I close my eyes, breathe deeply and mark my visit by leaving a loonie on the doorstep.

Satisfied by my experience, I celebrate with a “Suzanne”-inspired orange juice and slowly walk back down the hill to the harbour.

Ne comprenant rien aux horaires de traversier, je me retrouve sur un navire de croisière faisant sa première escale à Hydra, la petite île où Cohen a habité de 1960 à 1967, à 60 km au sud d’Athènes.

Hydra a servi d’incubateur à Cohen avant la célébrité : il y a écrit de la poésie, y a fréquenté Marianne Ihlen, son amoureuse et sa muse, et s’y est produit pour la première fois comme musicien, au kafenío O Katsikas (aujourd’hui le Roloi Café). Les résidents ont beau dire que le tourisme a transformé l’âme de l’île, il y règne toujours une atmosphère intime même si la population atteint désormais 2500 habitants.

La croisière n’allouant qu’une visite de 90 minutes, mon compte à rebours s’enclenche dès la mise à quai. Je détale à la recherche de la maison que Cohen a achetée avec de l’argent hérité de sa grandmère, ce qui me voit grimper des escaliers poussiéreux, me faufiler entre des rangées de maisons à toit orange et zigzaguer entre les chats qui pullulent dans l’île, le soleil d’été me faisant couler la sueur dans le dos.

Comme peu de rues ont des noms sur Hydra, je me fie aux vagues indications glanées sur Internet, du genre : « Prenez à droite à l’épicerie Four Corners sur une hauteur. Il y a un heurtoir ouvragé en forme de main à la porte de la maison de Cohen. » Quand enfin je trouve l’épicerie, mes halètements enterrent le chant des cigales.

Peu après, je suis à l’entrée de sa maison, face au heurtoir. C’est là que Cohen est devenu le poète lauré de la pop et qu’il a ressenti un sentiment d’appartenance qu’il aurait ensuite cherché à recréer toute sa vie, diton. Le simple fait de mettre le pied sur l’île me permet, d’une certaine façon, d’approfondir son parcours créatif.

La famille de Cohen est toujours propriétaire de la maison, alors je ne cogne pas.

Au lieu, je ferme les yeux, je prends une grande respiration et je dépose un huard sur le pas de la porte pour marquer ma visite.

Heureuse de cette rencontre, je célèbre en buvant un jus d’orange inspiré de la chanson Suzanne et en redescendant mollo la colline jusqu’au port. 

young flamenco dancer stands motionless on a small wooden tablet, her black ruffled skirt billowing in the warm spring breeze. The accompanying guitarist and singer perch on the edges of their chairs, awaiting her signal, while the crowd of rapt tourists gathered in Seville’s Plaza de España looks on. A sprawling semi-circle surrounded by elaborately tiled buildings and balustrades, the plaza was built for the 1929 Ibero-American Exposition, a tribute to Spain’s cultural dominance. Suddenly, the stillness breaks as the dancer begins to stomp her feet in a rhythm that grows steadily faster and faster.

The guitarist, a blue-eyed man with a mop of dirtyblond hair, is Dennis Duffin, a Toronto astrophysicistturned-flamenco maestro. A Canadian dazzling audiences in the streets of the city where the art form was born might seem like an anomaly – but Duffin’s infiltration of the Sevillan flamenco scene is not that unusual. In fact, there was diversity in flamenco from the beginning. Two hundred years ago, the flamenco we know today blossomed from the musical traditions of the Roma, Spanish and North African populations present in southern Spain. The fiery blend of

passionate percussive dancing, lightning-fast guitar and mournful lyrics telling tales of the region’s disenfranchised communities quickly became Spain’s signature artistic expression, imported to Hollywood in the 1940s by superstar dancers like Carmen Amaya.

Flamenco continues to be a clichéd yet surprisingly accurate representation of the people of Andalusia – rambunctious, flamboyant, hot-blooded.

But today, the rhythms of flamenco don’t call to young Spaniards, and the flamenco academies that dot Seville’s centre are filled with foreign pupils – dancers and musicians who travel here from countries like Japan, Israel, France, Korea, Italy and Canada, to learn from the great masters. I count myself among them. I’m a Canadian of Polish descent and I’ve been dancing flamenco professionally for 15 years, calling Spain home for five of them. Although I’m now living in Toronto, I return to Seville every winter to train and to immerse myself in a culture that I know isn’t mine, but that, like me, lives and breathes flamenco.

My journey started in my hometown of Vancouver in the early 2000s. I was dining at a restaurant on Cambie Street when flamenco dancer Kasandra “La

I wanted to move like her, but more than that, I wanted to feel what it looked like she was feeling, everything from complete anguish to sheer joy. I started lessons a week later and within a year I was in Granada, Spain, where I spent six months taking classes in the city’s historic Sacromonte caves, ecstatic to have found something that made me feel truly alive.

to pick up his son from school. We have walked this path many times since first arriving in Seville nearly a decade ago. Dennis had just finished his PhD in astrophysics at McMaster University, and I was starting my career in journalism, as a magazine intern in Toronto.

But we loved flamenco more than anything, and connected at parties and shows in Toronto. And then, in September of 2012, we both decided to head across the ocean to devote our lives to this foreign art form.

At first, Dennis studied guitar at the Escuela de Arte Flamenco de la Fundación Cristina Heeren, a full-time flamenco school, and practiced eight hours a day. But it was at the juergas – a local term roughly meaning “flamenco parties” – that he got his most valuable education. As the revellers jammed, he realized flamenco is more than a memorized series of chords or verses or steps – it’s being able to feel the melody of every flamenco song ever sung, moving your body to it from the day you’re born and then every day after that. “It’s already in the people here,” says Dennis. I know what he means. In Vancouver, my teachers would tell me: “Studying flamenco isn’t enough – you have to live it.”

When I’m in Seville, I start every day with a class at Flamencos por el Mundo, a dance academy in the Macarena, a neighbourhood in the northeast corner of the historic old town. In Manuela Ríos’ class, 10 dancers repeat the same intricate footwork pattern.

“Otra vez!” (Again!) yells Ríos, as we finish our routine, panting, the small studio’s tall mirrors fogged from top to bottom. Ríos, who was born in Seville and learned from flamenco legends Paco de Lucía and Camarón de la Isla, teaches an hour-long class twice a day, Monday to Friday. After Ríos’ class, I run to one of the nearby academies for a second class, and then rehearse on my own for a couple of hours before heading home for a well-earned siesta. It’s a standard dancer’s schedule: There are around a dozen schools in the Macarena, and students scurry from one to another in long practice skirts trying to pack in as many classes as possible.

In the evenings, our education continues at performances at clubs, bars and venues, many of which line the Alameda de Hércules plaza in the old town.

At a Monday night juerga, about 20 flamencos sit in a wide circle of chairs, while a crowd grows around the perimeter. It’s led by La Chocolata, a local singer

C’est le quotidien d’une danseuse : il y a une douzaine d’écoles dans Macarena, et les étudiantes se précipitent de l’une à l’autre en longue jupe d’entraînement pour tâcher de suivre autant de cours que possible.

Le soir, notre apprentissage se poursuit lors de spectacles dans les boîtes, bars et salles, d’habitude en bordure de la Alameda de Hércules, dans le centre historique.

and dancer who encourages everyone to participate. We all clap along to the compás, or rhythm, as La Chocolata belts out verses of bulerías, a lively flamenco form made for parties and improvisation.

Today, flamenco companies like the Ballet Nacional de España perform tight choreographies accompanied by piano and violin. But the music we’re hearing tonight is the kind made for jamming in the streets – performed with the hands, the feet and the voice.

We dance one at a time as the crowd shouts encouragement – “Olé!” “Toma que toma!” “Eso es!” Doing the moves perfectly doesn’t matter here. What impresses the crowd is dancing in time to the music with character and confidence. A little girl stamps fiercely, and the circle claps faster to match her pace. A Japanese woman jumps in the ring, chest puffed up and chin held high. A short man with a shock of white hair is the champion of the evening, wiggling his hips as he exits the circle to great whooping cheers. I take my turn, too. It’s always a heart-pounding experience to enter into that chaos of human energy. I spin, clap, stomp my feet, as my hair clings to my face. I feel at once brave and foolish. Then I hear the shouts of “Olé!” and see the raised eyebrows – that this tall, blond foreigner knows a little something of their arte – and I feel something else: exhilaration.

Ce qui impressionne la foule, c’est qu’on danse au rythme de la musique, avec assurance et caractère. Une fillette martèle le sol avec intensité, et le cercle accélère ses palmas pour la suivre. Une Japonaise saute dans le cercle, poitrine gonflée et menton relevé. Le champion de la soirée est un petit homme à la tignasse blanche, qui sort du cercle en roulant des hanches sous les acclamations. J’y vais à mon tour. C’est toujours une expérience électrisante d’entrer dans ce chaos d’énergie humaine. Je pirouette, tape des mains, du pied, mes cheveux me collent au visage. Je me sens à la fois courageuse et ridicule. Puis j’entends les olé ! et je vois les sourcils levés, devant cette grande étrangère blonde qui sait quelque chose de leur art, et je ressens autre chose : une joie intense.

For many of us foreign dancers, American Cristina Hall is a trailblazer. I meet her on a patio on Calle Regina, a stretch where third-wave coffee shops and organic grocers are replacing the city’s old bodegas.

“When I arrived here it felt like home,” says Hall, who left San Francisco two decades ago, in her late teens, to pursue flamenco at a time when most people in the dance academies were still Spanish. Now, Hall performs her boundary-pushing work at Spain’s – and Europe’s – most prestigious festivals. Her choreographies bear little resemblance to the traditional: She’s not afraid to writhe on the ground, perform to Nina Simone or brandish a metal chain instead of a delicate fan. She belongs to a new wave of flamenco, composed of artists who have mastered the old rules and now feel free to break them. Young Andalusian Rocío Molina wears knee pads and cellophane and rolls across the stage in paint. Sevillan dancer Israel Galván dons a feria dress and stomps his feet on a shaky platform covered in loose change. Their flamenco is less a representation of place and culture and more a bullhorn through which to scream who they are to the world.

On my final night in Seville, I head out to see my friend Ebla Sadek, a 27-year-old Syrian-German singer, perform with her ensemble YaWely, featuring an American flamenco guitarist, a French percussionist and an Uruguayan oud player. The quartet fills the tiny stage at the cozy neighbourhood restaurant and bar that is packed with locals and a few foreigners-turned-residents like myself.

I jostle my way through the crowd, squeeze into a space at the front and sit cross-legged on the floor, gazing up at Ebla.

Her eyes are closed, and one arm is gently raised as she sings a siguiriyas, a slow and mournful song from east Andalusia. I recognize the melody, but the sounds are shaped differently. And then I realize, it’s not Spanish I’m hearing: It’s Arabic. It feels like flamenco – it is flamenco – but tonight, in this little Sevillan bar, flamenco’s melodies don’t tell of poverty in southern Spain, but of war in the Middle East.

And this mostly Spanish audience is enthralled. It is this blending of cultures, this fusing of stories that has always pushed flamenco forward, and the mix has never been so rich. 

Pour ma dernière soirée à Séville, je passe voir mon amie Ebla Sadek, une chanteuse syro-allemande de 27 ans, qui se produit avec son ensemble YaWely, composé d’un guitariste flamenco américain, d’une percussionniste française et d’un oudiste uruguayen. Le quatuor remplit la minuscule scène d’un douillet bar-resto de quartier, qui s’avère bondé de Sévillans et de quelques étrangers devenus résidents comme moi. Je me faufile dans la foule et me trouve une petite place près de la scène, où je m’assois au sol, les jambes croisées, les yeux levés sur Ebla.

Les yeux fermés, levant doucement le bras, elle chante une seguiriya, lente complainte de l’est de l’Andalousie.

Je reconnais la mélodie, mais les sons sont modulés différemment. Puis je réalise que ce n’est pas de l’espagnol que j’entends : c’est de l’arabe. Ça ressemble à du flamenco (et c’en est), mais ce soir, dans ce petit bar sévillan, les mélodies du flamenco ne parlent pas de la pauvreté du sud de l’Espagne, mais de la guerre au Moyen-Orient.

Et ce public majoritairement espagnol est captivé. C’est ce mélange de cultures, cette fusion d’histoires qui a toujours fait progresser le flamenco, et le mélange n’a jamais été aussi riche. 

The Winner Camp Dinner La potée idéale en camping It’s perfectly portable, has a fantastic shelf life, is densely nutritious, tastes like fireworks, feeds a crowd and is almost impossible to screw up. (It also happens to be vegan.) Seriously, what can campfire dal not do? Campfire Dal 1 cup Canadian red lentils 8 cups water 2 tbsp vegetable oil 1 tsp ground turmeric 1 tsp cumin seeds 1½ tsp garlic, minced 1 tsp ginger, minced 1 small onion, diced salt to taste 1½ tsp garam masala 1 Thai green chili pepper, thinly sliced 2 tomatoes, diced ½ cup fresh micro-greens or cilantro for garnish (optional) Wash lentils until water runs clear.

Fill a heavy-bottomed pot with cleaned lentils and water. Cook over medium heat, skimming any foam, and then add turmeric and a big pinch of salt. Cook until lentils are soft, 30–40 minutes, depending on how well you build a fire.

Meanwhile, in a medium-size pan, heat oil. Add cumin seeds and let sizzle for 10 seconds, then add garlic and ginger and cook until golden and smelling like heaven.

Add onion and sauté until translucent, three to four minutes. Then bring on the garam masala and chili, stir, and add tomatoes. Season with salt and simmer for 10 minutes, stirring occasionally. This mixture is now called tadka.

Add tadka to the pot of cooked lentils, now called dal. Stir together, bring to a boil and taste for seasoning. When you love it, it’s done. Garnish with fresh greens. Serve with chapati roti or rice. Serves four.

Instead, start small, stacking wood, ranging from small kindling the size of your finger to forearm-size, larger pieces. here is – quite literally – no bigger harbinger of spring than the appearance of icebergs looming off the coast of Newfoundland and Labrador in the North Atlantic. Like flocks of migratory birds, they start to arrive in May, their arduous two- to three-year journey from Greenland at an end. They do not come quietly. Get close enough, and you’ll hear the crackling and fizzing of 10,000 years-worth of glacial ice, melting reluctantly in the sun. There is only one way to describe it, says professional iceberg chaser Captain Barry Rogers. “It’s the sound of 1,000 cats hissing.”

Rogers – grizzled beard, piercing gaze, lots of laugh lines – has been within eavesdropping range of icebergs for 22 years as owner of Iceberg Quest Ocean Tours, based in St. John’s. But his fascination with these giant chips of glacier began when he was a boy, growing up in Twillingate, an island off the island. As a fifth-generation seafarer, his childhood was filled with tales of oceanic exploits and Arctic explorers, like Bob Bartlett from Brigus, N.L., who survived 12 shipwrecks. Rogers’ father and grandfather were both ship captains, and fireside conversations revolved around navigating fierce storms and mammoth bergs.

“The most joyous time was spring,” says Rogers, “when I’d go down on the headlands and watch for

M. Rogers, barbe grise, regard perçant, nombreuses rides rieuses, observe de près les icebergs depuis 22 ans qu’il est propriétaire d’Iceberg Quest Ocean Tours, à St. John’s. Mais sa fascination pour ces gigantesques fragments de glacier remonte à son enfance à Twillingate, une île au large de l’île. icebergs. In the evening, you’d see one drifting along what people now call Iceberg Alley, then you’d get up the next morning and it would be gone. But it always stayed with me, the beauty and magnitude of the ice.”

Rogers says he was destined to make his life on the water, sharing his enduring awe for these icy monoliths from the north with visitors from all over the world. The bergs are as big a draw as the thousands of humpback whales that also return each spring to feed on caplin and krill – spotting whales is often an added bonus when you’re out chasing icebergs.

Inevitably, there are questions about the Titanic.

From the helm of the Capo de Espera, Rogers goodnaturedly fields them all. The most oft-posed query, “How big was the iceberg that sank it?” makes him chuckle. “The people on board probably didn’t take much time to think about that. But an iceberg doesn’t have to be very big to cause a lot of trouble.” Large bits break off, causing the water to roil (“When an iceberg collapses, you’re looking at, say, 60 tonnes of ice tumbling down from around 100 feet in the air.”) and, of course, bits also break off from the bottom (“When something the size of a house bobs up 500 feet away from you without warning, that gives you a respect for how dangerous they can be.”).

Rogers is a fan of foggy days, when he’s the only one who knows there’s a berg off the bow until, suddenly, he stops the boat – and a massive mountain of ice is illuminated in the fog. “The reactions I’ve witnessed run from hysterical laughter to tears. There’s a mystery and a wonderment about these ancient pieces of ice, and every one of them is different.”

Inévitablement, les gens lui posent des questions sur le Titanic. À la barre du Capo de Espera, M. Rogers y répond de bonne grâce. Même la plus fréquente, « Quelle était la taille de l’iceberg qui l’a fait couler ? » le fait sourire. « Les passagers n’ont sans doute pas trop eu le temps d’y penser. Mais un iceberg n’a pas besoin d’être très gros pour causer beaucoup de tort. » De gros blocs se détachent, ce qui provoque des remous (« Quand un iceberg s’effondre, c’est 60 t de glace qui tombent d’une hauteur d’environ 30 m »), et des morceaux se détachent bien sûr aussi du fond (« Imaginez-vous un objet de la taille d’une maison qui jaillirait à 150 m d’un navire sans prévenir ; voilà qui vous donnera une idée du danger que ça peut représenter »).

M. Rogers préfère les jours de brouillard, lorsqu’il est le seul à savoir qu’il y a un iceberg droit devant jusqu’à ce que, soudainement, il arrête le bateau et qu’un énorme éclat de glace s’illumine dans le brouillard. « Les réactions dont j’ai été témoin vont du rire nerveux aux larmes.

78 SIZE MATTERS PETITS ET GROS Small icebergs are called “bergy bits” (the size of a small house) and “growlers” (about the size of a grand piano).

Stephen Bruneau, professeur associé à la faculté d’ingénierie et de sciences appliquées de l’Université Memorial de Terre-Neuve, ne s’inquiète pas de l’extinction des icebergs dans un proche avenir. « Il y a encore beaucoup de glace au Groenland, et beaucoup de neige qui s’y dépose. » Il ajoute qu’il est difficile de mesurer l’effet des changements climatiques sur le phénomène des icebergs au large de la côte est du Canada, par rapport à tant d’autres variables changeantes, notamment les courants océaniques et la direction des vents.

Comme M. Rogers, le Pr Bruneau a hérité de la fascination de son père pour les icebergs. Ce dernier, ingénieur en génie océanique, a participé au tout premier remorquage d’icebergs au monde, mis sur pied pour sécuriser l’exploration pétrolière et gazière en redirigeant leur trajectoire. There is also a niggling, climate-change-fuelled worry that we won’t be able to witness their incredible journeys forever. Iceberg-calving from glaciers in Greenland is increasing, depleting the Arctic’s ice sheet, while a new study from Australian researchers shows icebergs are melting faster than we thought.

Scientists are keeping a close watch.

Stephen Bruneau, an associate professor in the Faculty of Engineering and Applied Science at Memorial University of Newfoundland, isn’t worried about iceberg extinction in the immediate future.

“There is still a lot of ice in Greenland, and a lot of snow falling on it.” He adds that it’s hard to know exactly how climate change is altering the arrival of icebergs off Canada’s east coast when so many other variables affect how many appear from year to year, including ocean currents and wind direction.

Like Rogers, Bruneau inherited a fascination with icebergs from his father, a cold-ocean engineer who was on the world’s first iceberg-towing expedition, designed to make oil and gas exploration safer by redirecting troublesome bergs on less dangerous trajectories. Bruneau became an ice scientist himself, and the annual anticipation has yet to wear off. “The first iceberg of the year is always a thrill – even if you’ve

Melting icebergs leak nutrients into the ocean, causing phytoplankton blooms that eventually fall to the bottom, taking the carbon dioxide they absorbed from the surface with them and reducing the amount of CO2 in the atmosphere.

Bruneau cemented his fate as an iceberg expert when, frustrated by an inaccurate news story about them, he wrote a letter to the local newspaper, which lead to a pamphlet, which lead to a guidebook. He has a few favourite iceberg moments, most of all witnessing one calve or roll. “The cracking sounds like cannon fire and the movements appear to be in slow motion. By the time it's over, an iceberg can go from a medieval castle-like object to a blanket of rubble and brash, spreading out in all directions.”

To experience a berg’s final moments, you need to visit Newfoundland and Labrador, says Rogers. “We are one of the last accessible frontiers for viewing icebergs.” He sees himself as a steward of the ocean, like Bruneau, sharing a knowledge and appreciation for a phenomenon that, like so many things in nature, is something of a marvel. On board any of his five vessels, guests are invited to enjoy a tipple made from pure iceberg water, from gin to screech (“There’s no fit tour boat in Newfoundland that don’t have a bottle of screech on board.”), poured over bits of iceberg fished straight from the sea. “Where else in the world can you both see and taste something prehistoric, then walk away and talk about it afterward?” 

Last summer, the University of Toronto’s Creative Destruction Lab (CDL) convened a group of Canadian business leaders to look for ways to keep Canada’s workforce safe from Covid-19 while also restarting the economy. Ultimately, 12 captains of industry stepped away from the virtual conference table to put ideas into action, forming the CDL Rapid Screening Consortium.

“Through this series of meetings came the idea that there was a significant gap in testing,” says Janice Stein, founding director of the Munk School of Global Affairs and Public Policy, who is currently working with the CDL Rapid Screening Consortium. “This group came together to build the infrastructure for rapid screening – and Air Canada was one of the leaders.”

The pilot project centres on employees at Air Canada, Loblaw Companies Ltd., Rogers Communications Inc. and others, volunteering for twice-weekly non-invasive rapid antigen screening to detect whether they might have Covid-19 in order to help keep it out of the workplace. Dr. Jim Chung sat down with Stein to discuss how rapid screening could be the key to the future of workplace safety – and safer air travel.

Dr. Jim Chung holds a master’s degree in aviation medicine and trained as a flight surgeon in the Canadian Armed Forces. He practised as an emergency-medicine physician in Toronto prior to joining Air Canada as chief medical officer in 2009.

Dr Chung: What is the mission of the CDL Rapid Screening Consortium, and why is it so important? — Quelle est la mission du CDL Rapid Screening Consortium et pourquoi est-ellesi importante ?

Janice Stein: There are many workers across Canada who are considered essential, who are unable to work at home and who’ve been going to work throughout the pandemic. The goal is to make workplaces safer for these workers and their families while also contributing to the reopening of the Canadian economy. Over the coming months, as companies put their return-to-work policies in place, having laid the groundwork for rapid screening is going to make a difference in enabling that. — Il y a un grand nombre de travailleurs essentiels au Canada, qui ne peuvent faire de télétravail et qui vont au boulot depuis le début de la pandémie. Dr C: How is rapid screening different from the PCR test? — En quoi le dépistage rapide diffèret-il du test RCP ?

JS: The polymerase chain reaction or PCR test, which is the best diagnostic tool we have for Covid-19, is administered by nasopharyngeal swab, and it has to be delivered by a trained health professional. Results of PCR testing are getting much faster, but it still takes longer to get results back from the labs, and it’s a more expensive process. Rapid antigen screening – which is what the consortium does – can be done almost anywhere, doesn’t require the deep nasal swab and delivers results in just 15 minutes. It’s designed to keep employees safe in the workplace.

You screen twice a week and, if you get a positive screen, you’re sent over to public health for a confirmatory diagnostic test with PCR. — Le test par réaction en chaîne par polymérase (RCP), qui est la méthode de diagnostic de la covid-19 la plus fiable, se fait avec un écouvillon nasopharyngé et doit être administré par un professionnel de la santé dûment formé. Dr C: The federal government sent some 20 million rapid tests to provinces for public use, but the CDL Rapid Testing Consortium tests come from a different stream. JS: Those tests distributed to the provinces are for use in health-care facilities, including longterm care homes and hospitals. The federal government is aware, obviously, of how important workplace screening is, and so it created a second stream to distribute tests directly to businesses.

Dr C: What are the implications of rapid testing for travel? — Qu’impliquent les tests rapides pour les voyages ?

JS: We aren’t there yet, but you can imagine passengers being screened pre-boarding. We think nothing of being screened by security when we come to the airport, because we understand it’s for the safety of everybody. What we are talking about now is screening passengers in the same way to improve the safety of everyone who flies.

All those highway signs depicting a four-engine jet for an international airport are behind the times: Concerns over fuel efficiency and the logistics of accommodating these oversize aircraft mean that the Boeing 747 (a.k.a. Queen of the Skies) and the goliath double-decker Airbus A380 are no longer built. Today, no four-engine passenger jets are flown by North American carriers, but you will see overseas airlines flying them – for now. — Les panneaux d’autoroute illustrant un quadriréacteur pour indiquer qu’on approche d’un aéroport international sont caducs : pour des questions d’efficience énergétique et de logistique d’accueil des gros appareils, on a cessé la production du Boeing 747 et du très gros A380 d’Airbus à deux ponts. Aviation measurement is a hodgepodge of units. We use feet for altitude, except in China, North Korea and Mongolia (metres). Russia uses feet at high altitudes but metres lower down. Visibility is measured in feet and miles in North America, but metres and kilometres everywhere else. For speed, we use knots (nautical miles per hour), but at higher altitudes it is measured in relation to the speed of sound, or Mach number. Weight is in kilograms in Canada, pounds in the United States.

Fuel can be in litres, imperial gallons or U.S. gallons. For an Air Canada pilot who travels overseas, navigating this measurement soup is part of the job.

Maîtriser ces outils de mesure variés compte parmi les tâches des pilotes d’Air Canada naviguant outre-mer.

LES AVIONS S’ÉCHAUFFENT-ILS EN VOL ?

The speed of flight warms up the surface of all airliners. We have two readouts in the cockpit: Static Air Temperature (SAT) is the outside temperature, and Total Air Temperature (TAT) is the SAT plus temperature rise due to air compression and friction on the aircraft’s surface. In flight, the difference between SAT and TAT can be 40°C. For example, flying in cloud at -10°C is conducive to airframe icing, but with a TAT of +10°C ice will not form. Fun fact: SAT is displayed in the flight-maps feature on your seatback screen.

Whenever a two-engine airliner flies 60 minutes or more away from the nearest airport (usually over water), a plan-B alternate airport must be included in the flight plan. Extended-range Twin-engine Operations (ETOPS) have expanded beyond this limitation because of today’s jet engines’ high reliability. The extension can reach out to 180 minutes, and for my airplane, the Boeing 787 Dreamliner, it is certified up to 207 minutes (1,515 nautical miles). — Quand un bimoteur navigue à 60 minutes ou plus de l’aéroport le plus proche (souvent au-dessus d’une masse d’eau), un aérodrome de dégagement doit figurer au plan de vol. Les opérations de bimoteurs avec distance de vol prolongée (ETOPS) étendent maintenant cette limite grâce à la grande fiabilité des réacteurs modernes. Passenger activity at the world’s busiest airports is measured in two ways: total passengers carried and total aircraft movements (takeoffs and landings). I have flown into most of them. Hartsfield–Jackson Atlanta International always takes first prize in passengers (110 million in 2019) but lost its number-one status for movements to Chicago O’Hare in 2019 (919,704). Toronto Pearson is in the big leagues for movements with 453,113 that year.

As we look forward to emerging from an extended period of being at home, there is an unmistakable desire to travel and to have new experiences.

This restlessness is echoed in Fern, the hardscrabble wanderer played by Frances McDormand in Chloé Zhao’s masterful Nomadland. Though set in a pre-pandemic America, Fern’s journey is prompted by another deeply impactful event: the Great Recession. Director Zhao’s poetic lens and lyrical storytelling find intense beauty in the landscape and her actors (real nomads, except for McDormand and a scruffy David Strathairn), positioning her as the heir apparent to Terrence Malick. Despite the hardship that Fern and her fellow nomads encounter through their transient existence, they and their unquenchable thirst for discovery are a reminder of the profound enrichment that travel brings. 
