KAMOURASKA, OÙ VOUS AVEZ GRANDI ? On allait au quai de Rivière-Ouelle, à quatre heures du matin, je devais avoir six ans, et on descendait des cages pour pêcher du crabe des neiges. Parfois, on attrapait des anguilles que ma mère faisait frire dans une poêle en fonte dès notre retour à la maison. QUAND AVEZ-VOUS INCORPORÉ LE TERROIR QUÉBÉCOIS À VOTRE CUISINE ? À une époque, les grandes tables québécoises où je travaillais faisaient venir leurs produits d’ailleurs. Quand je suis parti travailler en France, j’ai vu la relation qui existait entre les chefs et
les producteurs. J’ai eu un déclic : nous avions chez nous tous les ingrédients dont nous avions besoin.
QUE PENSEZ-VOUS DE LA CULTURE CULINAIRE AU QUÉBEC EN CE MOMENT ? Depuis une vingtaine d’années, de jeunes chefs se réapproprient leur territoire en cuisinant local. Nous devons continuer de cultiver notre terroir, d’autant que nous ne manquons pas d’espace pour le faire.
