Thriving Thistle: Market, Wellness Center and Bistro opens in Apple River The Thriving Thistle Market has been on Hickory Street in Apple River for a while. It’s about to expand and alter its name. Very soon it will become the Thriving Thistle: Market, Wellness Center and Bistro. This expansion will offer a broader number of services and products to the community as well as becoming a destination for visitors and travelers. The expansion has been the dream of Dr. Elizabeth Stocks for several years. The dream will become a reality sometime around May1. Dr. Stocks, known as Dr. Liz, is a practicing Chiropractor. Stocks earned her undergraduate degree from Bradley University and her PHD from the Palmer College of Chiropractic. Stocks is married to Geoff and together they have two children. Now that both children have started school, Stocks decided to devote more time to her career and fulfill her desire to bring better health and healthy choices to her community. Stocks said, “Developing the wellness center will allow all of those involved to bring a holistic approach to our different disciplines. We think of it as a small community approach.” This small community approach encompasses the idea of treatment, counseling, exercise, diet and attitude as interdependent on one another. To accomplish this, the Thriving Thistle Wellness Center will have several different coaches available to provide their services to guests that have specialized issues. Those issues may range from physical stress or pain to the need for stress management or diet. Stocks said, “At this time, we have seven coaches who will be available to help people with their needs. Several others have contacted me and we’re looking for ways to make these professionals available to our clients. “In addition to chiropractic, our coaching staff will offer services
such as yoga for the improvement of both the body and the mind. Massage, stress management, healthy lifestyle, functional flow and for those of a more competitive nature, sports performance.” This idea of several different disciplines being offered to clients is at the root of Dr. Stocks over all philosophy which is known as Bio Energetic Synchronization Technique, referred to as BEST. Stocks said, “BEST addresses the gaps in the circuitry of body to brain communication. When there is a misalignment of the spine, that misalignment interferes with the body to brain communication. Yoga is a tool that allows a person to heal and communicate with their body. This allows the whole person to begin healing on all levels. The method heals body, mind and spirit. The person then begins to take yoga out and into the world in which they live.” Along with the physical and emotional health of a person, Dr. Stocks believes that we are what we eat. This is where the bistro as part of the wellness center comes into play. Stocks said, “We’ll be offering healthy foods to our clients. That means clean options: foods that have been grown in environmentally safe conditions, and organically raised products that are the ingredients of healthy dining. We plan to serve refreshing treats including protein powder smoothies made fresh with fun, all-natural flavorings.” The site of the Thriving Thistle Market, Wellness Center and Bistro rests on the path of what was once the Galena Stage Coach Trail. Stocks said, “I love Apple River. This is home and I don’t think there’s any part of Illinois that’s more beautiful. Myself and all those involved with the wellness center want to share these views with everyone. I want to offer people the opportunity to connect with the many organic
