Nancy Ingram, age 87, of Apple River, Illinois, passed away peacefully at Edenbrook in Platteville, Wisconsin on Friday, March 17, 2023.
Nancy was born on June 24, 1935, in Marseilles, Illinois to Charles and Clara (Brown) Fleming. She was a librarian in Columbia, Missouri at various schools, including Rock Bridge High School. Nancy moved to Apple River Illinois in 1981, after marrying Terrance Ingram in Columbia, Missouri at the Friends Meeting. She loved growing flowers with a green thumb and watching birds. Sarah Eikstadt (Rockford, IL) beloved daughter, sister, mother, and grandmother; Sarah Denise Eikstadt passed away peacefully on March 9, 2023, with her parents at her side, following a long, hardfought illness.
Sarah was born on Jan. 19, 1977, to Keith and Kathleen (Crowe) Eikstadt in Medina, Ohio. She attended school in Ohio, then moved to Rockford in 1995 to be near family. She graduated from Rockford Career College with an accounting degree in 2012.

It is with a heavy heart I am writing that on Feb. 25, 2023, Judy Novotny took her final breath in this life. Judy was born on Jan. 27, 1952, as the oldest of three children to Marvin and Lois Novotny, who greeted her at the gates of Heaven. Along with her parents, she will be able to see her younger sister, Carol Guthrie, again, the love of her life, Jack Carpenter, and her beloved daughter, Hillary.
She is survived by her loving daughter, Heather (Jay) Hermes; four grandchildren, Liam, Grace, Aiden, and Olivia; her brother Joey (Connie) Novotny; and nieces and nephews. Also, Ily, her faithful 4-legged companion, and her feathered friend, JJ.
Judy graduated from beauty school after high school. She then went on to become a full-time wife and mother, doing other jobs as means to help provide. She was a tremendous baker, making wedding cakes, themed cakes, catering events, and taking cookie orders. Judy always taught her daughters how to make all food from scratch. In her early years, she bartended, cleaned, and collected nightcrawlers to sell, to help make ends meet. As time went on, Judy worked as the Head of the Dietary Dept for a combination of 30 years, at the Good Samaritan Nursing Home in Prophetstown, IL, and Lee County Nursing Home in Dixon, IL. Judy loved the residents at the Nursing Home; making them laugh and feel loved was very important to her. She
frequently brought with her daughters to visit and deliver homemade creations such as cards, bread, or cookies, always wanting to teach her children to be a light. In her later years, she worked at the tanning bed, where she loved the customers and kept her skin sun kissed.
My mom loved being out in the sun; she could always be seen outside in the same terrycloth romper, working in her garden or yard to beautify it in any way she could. She planted a garden every year that always produced more than she needed, sharing her bounty with friends, families, and neighbors. Judy taught her girls that we never waste anything, showing her daughters how to preserve the food from the garden. She made sure that the life skills she was taught as a child were instilled into her own children.
Judy was such a hard worker, always going above and beyond. She had the best sense of humor, making every task fun and enjoyable. She was always joking around, making us laugh, and being silly with us, even when we were working. My mom was so kind, thoughtful, vivacious, and compassionate, to not only her fellow man – but also animals. There are countless times when she would put back an item or two from her grocery cart so that she could help out
the person ahead of us in line, who came up short and needed a little extra help. She was always making a meal for another family or stopping by with a tray of cookies, bread, or pies. She was generous and willing to lend a helping hand. She always told my sister and I, “Treat others how you want to be treated,” “Kill with kindness,” “Two wrongs don’t make a right,” and “Be a light to everyone, always.”
She lived out the final months of her life in JoDaviess County, overlooking the beautiful rolling hills, snow-covered trees, and the ever-peaceful pastures blanketed in the gentle white powder. She was blessed by the love of her family. Sitting upon her chair, she watched her son-in-law construct an additional living space for her. She watched her granddaughters bake and cook, filling the house with the most comforting aromas, while her grandsons told her stories and jokes to make her laugh. She sat there in her final resting place, with three Yorkshire Terriers warming her lap and her loving daughter holding her hand. She was not alone; she was loved and she will be missed dearly. If we can remember to “Always be a light,” then part of my mom’s spark will live on.

St. John’s Lutheran Church
St. John’s Lutheran Church, Pearl City, will celebrate the Fifth Sunday in Lent on March 26. A Worship Service with Holy Communion will begin at 9 a.m. with Pastor Michelle Knight presiding.

Richard “Rick” E. Vrstal, 83 of Lena passed away on Monday, March 13, 2023, at SSM Monroe Hospital. He was born Sept. 25, 1939, in Berwin, IL to Edward and Joan (Horna) Vrstal. He married Penelope Ford in 1959 and together they had Jeffrey, Martin, and Joseph their infant son who passed at birth. In his later years, Rick then went on the find the love of his life Sharon Wilson in 1990.
He liked to say he had worked for over 100 years between 30+ years of teaching, and 30+ years at JC Penny’s, 40+ years as a photographer. During his teaching career he taught at Warren from 19621966 until he took a job at Lena-Winslow Jr. High where he taught Social Studies and took pictures at different sporting events for the yearbook until his retirement in 1993. He enjoyed taking pictures for weddings, senior pictures, wildlife, and nature. At many of his family gatherings you

William Robert Brooks, age 90, of Stockton, IL passed away Friday, March 17, 2023, at the VA Hospital in Madison, WI. William was born on May 10, 1932, in Fort Dodge, IA to the late William and Abby (Collins) Brooks. William married Nancy Boekholder on Nov. 17, 1962, at St. Joseph’s Church in Freeport, IL. William was a graduate of Fort Dodge High School and St. Ambrose University.

He loved going to his children’s, grandchildren’s, great grandchildren’s, niece’s, nephew’s events. He enjoyed cooking, sharing his recipes and gardening. He loved the outdoors and went bow hunting and fishing along the Apple River. Throughout the years he traveled to many different places.

Highland Gallery announces a call for entries for Juried Art Exhibit
Highland Community College announces a call for entries for their 50 th annual District High School Juried Art Exhibit on view at the Highland Gallery from April 12 to May 2. Work is due Wednesday, March 29 from 9 a.m. to 6 p.m. in the west wing of the Ferguson Fine Arts Center, Highland Community College, 2998 West Pearl City Rd., Freeport, Ill.

Gov. JB Pritzker signed Senate Bill 208 into law last week, ensuring at least 40 hours of paid leave for Illinois workers. Effective Jan. 1, 2024, workers will begin to earn paid leave on their first day at a rate of one hour of leave for every 40 hours worked, up to 40 hours of paid leave for the year. Employees can begin using their paid leave either 90 days after their employment begins or 90 days after the act’s effective date.

Fifty-five percent of farm tractors in Illinois do not have a cab or ROPS. Only 1 in 5 victims will survive a tractor rollover accident. The leading cause of farm related deaths in Illinois is tractor rollover accidents. ROPS help protect farmers and family members from being crushed in the event of a tractor turnover or rollover.
Jo Daviess County Farm Bureau members who purchase a ROPS could receive a reimbursement of $250 towards the purchase of a ROPS (six rebates are available). To receive the $250, members need to bring in their paid invoice to the Farm Bureau office in Elizabeth. The measure passed in both chambers earlier this year during the 102nd General Assembly’s lame duck session.
Prior to the act’s effective date, Illinois workers have not been guaranteed paid time off for sick leave, childcare, medical appointments or any other reason.
“About 4 million workers … in Illinois do not have access to even a single sick day,” said state Sen. Kimberly Lightford, D-Westchester, who carried the bill in the Senate. The measure has been under negotiation since 2019
and has “changed hands” a number of times since its inception, Lightford said.
Lightford, who is the Senate’s majority leader, acknowledged former state Sen. Toi Hutchinson, who served from 2009 until 2019 and was an original carrier of the bill. “This is an issue that has been lingering around the General Assembly for far too long,” Lightford said. “I’m really glad it landed in my lap when it came over to the Senate.”
When SB 208 was debated on the floor in January, one key point of opposition was that it would burden small businesses by raising costs. “My major concern are the little guys. It’s the mom-and-pops that have 5, 10, maybe 13 employees, that
this has a significant impact on their budgets,” Rep. C.D. Davidsmeyer, R-Jacksonville, said on the House floor.
Pritzker pushed back against this sentiment at the bill signing ceremony.
“Just like bigger businesses, small businesses want their workers to be more productive, to be able to deal with their stresses, emergencies at home, so they can be better and more productive at work,” Pritzker said. “I want to encourage anybody who’s concerned about that to look at, and remind the workers who work for them, how important it is that we have a law like that that protects workers in the state of Illinois.”
The measure does not apply to employees subject to collectively bargained contracts, because time off would be subject to negotiations between the union and the employer. Ultimately, the measure received a few Republican votes in the House but passed the Senate with only Democratic support.

Many people make an orange fluff, but using apricot Jell-O gives a different fruit flavor. This salad would be perfect for Easter dinner.
1 C. apricot or peach yogurt
1 pkg. (3 oz.) apricot gelatin
1 carton Cool Whip, thawed

To give you a fish dish for Lent, this creamy casserole is full of wonderful seafood. The shrimp and scallops are great at Aldi’s in the frozen food department. They are reasonably priced there also. Enjoy this decadent casserole as a main entry for a special dinner,

Preheat the oven to 325. Cook rice according to package directs. In a large skillet, heat butter over medium-high heat. Add celery, onion, and carrot; cook and stir until crisp-tender. Add garlic, salt and pepper; cook 1 minute longer. Add to cooked rice. Stir in parsley and dill. Transfer to a greased 9 x 13 baking dish. In a large saucepan fill with 2/3 C. water; bring to a boil. Reduce to medium. Add shrimp; simmer, uncovered, 30 seconds. Add scallops; simmer just until shrimp turn pink and scallops are firm and opaque, 2 to 3 minutes longer. Drain, reserving 1 C. cooking liquid. Place seafood in a large bowl; stir in crab.

Northwestern Illinois Community Action Agency, as administrator of the Home Energy Assistance Program in Stephenson and Jo Daviess Counties, is pleased to announce that funds are available through the Department of Commerce and Economic Opportunity (DCEO) to assist income-eligible households with their natural gas, propane, and electric heating bills. The LIHEAP program began Sept. 1 for all income-eligible households. Applications will be taken on a first-come first-served basis through May 31, 2023, or until funding is exhausted. There will be no priority groups this program year. Households in need are encouraged to apply.
Due to funding limitations, there will be NO NEW enrollments in the PIPP program this year.
Applicants may apply for a Direct Vendor Payments (DVP) which provides a one-time benefit payment for income eligible homeowners and renters to gas or propane and electric vendors to help with home utility bills and for reconnection assistance. Households must be at or below 200% of the Federal Poverty Guidelines listed below to receive a benefit from LIHEAP.

In a small saucepan, melt butter over medium heat. Stir in flour until blended; gradually stir in cream and reserved cooking liquid. Bring to a boil; cook and stir until thickened and bubbly, about 2 minutes. Reduce heat. Stir in cream cheese, dill, and seasonings until smooth. Stir into seafood mixture. Pour over rice mixture. Toss bread crumbs with melted butter; sprinkle over top. Bake, uncovered, until golden brown, 50 to 55 minutes. Let stand 10 minutes before serving.
Reuben Sandwiches
If you have leftover corned beef, here is an easy sandwich to serve the “scraps” of the corned beef. Sullivan’s has a good pumpernickel rye bread, and the homemade Thousand Island dressing is a great addition.
1 C. mayonnaise
2/3 C. chili sauce
3 T. finely chopped pickles
12 slices pumpernickel bread
12 slices Swiss cheese
12 oz. sliced corned beef, warmed
1½ C. rinsed and welldrained sauerkraut
3 T. butter
In a medium bowl, stir together the mayo, chili sauce and pickles until evenly blended. Spread one side of each slice of bread with 1 T. dressing. Place 1 cheese slice on each of 6 bread slices. Dividing evenly, top each with corned beef, sauerkraut, and remaining cheese slices. Top with remaining bread slices, dressing side down.
In a large skillet, melt 1 T. butter over medium-low heat. Add 2 sandwiches; cook, flipping once until cheese melts and bread is lightly toasted, about 3 minutes per side. Repeat twice with remaining butter and sandwiches. Serve with remaining dressing on the side.
Cinnamon Raisin Quick Bread
You can use this bread as dessert bread with fruit or breakfast bread. It is moist because of the buttermilk. The next cake recipe uses buttermilk also, so you can buy and use it up for both recipes. It combines two great flavors and is easy to assemble (I think the “quick” is a little signal!)
4 C. flour
2 C. sugar, divided
2 t. baking soda
1 t. salt
2 eggs. Room temperature
2 C. buttermilk
½ C. canola oil
½ C. golden raisins
3 t. cinnamon
Preheat the oven to 350. In a large bowl, combine flour, 1½ C. sugar, soda, and salt. In a small bowl, whisk eggs, buttermilk, and oil. Stir into
dry ingredients just until moistened. Fold in raisins. In a small bowl, combine cinnamon and remaining sugar; set aside.
Spoon half of the batter into two greased 8 x 4-inch pans. Sprinkle with the reserved cinnamon and sugar; repeat layers. Cut through batter with a knife to swirl. Bake for 55 to 60 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes before removing from pans to wire racks.
Italian Cream Cheese Cake
This cake is beautiful on a cake stand. It is also very moist because of the buttermilk and the whipped egg whites. You can decorate it with pastel candies or jellybeans in time for a beautiful Easter dessert.
½ C. butter, softened
½ C. shortening
2 C. sugar
5 eggs, separated, room temperature
1 t. vanilla
2 C. flour
1 t. baking soda
1 C. buttermilk
1½ C. sweetened shredded coconut
1 C. shopped pecans
Frosting
11 oz. cream cheese, softened
¾ C. butter, softened
6 C. powdered sugar
1½ t. vanilla
¾ Chopped pecans
Preheat the oven to 350. Grease and flour three round cake pans. In a large bowl, cream butter, shortening and sugar until light and fluffy, 5 to 7 minutes. Beat in egg yolks and vanilla. Combine flour and baking soda; add to creamed mixture alternately with buttermilk. Beat until just combined. Stir in coconut and pecans.
In another bowl, beat egg whites with clean beaters until stiff but not dry. Fold in a fourth of the egg whites into the batter; then fold in remaining whites. Pour into prepared pans. Bake until a toothpick inserted in the center comes out clean, 20 to 25 minutes. Cool 10 minutes before removing from pans to wire racks to cool completely.
Frosting: beat cream cheese and butter until smooth. Beat in powdered sugar and vanilla until fluffy. Stir in pecans. Spread frosting between layers and over top and sides of cake. Store in refrigerator.
Final Thoughts
I hope you all had a chance to see the high school musical. It was a wonderful evening of memories for those of us who identified with the music in the 1980’s. They also had great references and quips that we “oldies” could relate to.
The singing and dancing were enthusiastic and fun to watch. They had a great pit orchestra and crew, and everyone had a good time. Thank you, Lena-Winslow Music Department, for a wonderful evening of “live” music.

Childhood GERD and Oral Health
Normally when your child eats or drinks, the lower esophageal sphincter, a ring of muscle located at the bottom of the esophagus, opens to let food in and then closes to keep food in the stomach. When this muscle does not function properly, acids in the stomach can flow back (reflux) into the esophagus. Sometimes, the stomach contents go all the way up the esophagus and your infant or child spits up or vomits. Other times, the stomach contents only travel partly up the esophagus, which can burn or make them choke. Sometimes this acidic fluid can pass into the airway, causing inflammation which can trigger asthma symptoms. Reflux can happen at any age, but it’s common in babies because their esophageal sphincter does not reach adult length and strength until age two.

Most babies with reflux will outgrow it, but if it becomes a long-term problem, it is called gastroesophageal reflux disease (GERD).
GERD is one example of the interconnection between oral health and overall health. While GERD is a disorder of the digestion system, it can have profoundly negative effects on your child’s oral health. As previously discussed, acids can destroy the protective enamel layer of the tooth. Primary teeth are more vulnerable to acids because they have a thinner layer of enamel than adult teeth. Since stomach acid
is much more caustic than the acids in the foods and beverages we eat and drink, erosion of the enamel takes place at an even greater rate. Enamel protects the sensitive inner structures of teeth.
Thin enamel can make teeth unusually sensitive to heat, cold, and bite pressure. While stomach acid can wear away tooth enamel anywhere in the mouth, most acid erosion usually develops on the inner tooth surfaces. Teeth that are weakened by erosion of the enamel are prone to cavities, cracks, and fractures. Regular dental exams are important to detect oral disease in all children. For children with undiagnosed GERD, regular exams also assist in the early detection of acid erosion and other oral indicators of chronic acid reflux.

symptoms: frequent belching (accompanied by complaints that it “burns”), nausea, vomiting, gagging, choking, laryngitis, wheezing, earaches, hiccups, and coughing at night or whenever they are lying down. They may also have a loss of interest in eating, or difficulty gaining weight. If your child is experiencing any of these symptoms, report these in his or her health history. When the findings of a dental exam suggest that your child may have GERD, your dentist will report this to your child’s pediatrician for further evaluation and possible referral to a gastroenterologist. The sooner your child receives a definitive diagnosis of GERD, the sooner preventative measures can be initiated to avoid further damage. Children with GERD need to eat smaller meals, eat slowly, avoid foods that trigger symptoms, add foods that help reduce symptoms, and avoid lying down for two hours after eating. Keep in mind that every child is
different, and your child may experience more intense acid reflux to some trigger foods than others. Sharing this information with your child’s gastroenterologist and/or registered dietician can help them to adjust your child’s diet so they can meet the nutritional requirements necessary to maintain both oral and overall health. Helping your child to understand how these actions and dietary changes can give him or her the power to help control their symptoms can go a long way as they begin to adjust to their new diet and regime.
Certain dental treatments, such as fluoride varnish applications, can help protect vulnerable tooth enamel against refluxed stomach acid. Your child will also benefit from sealants, which provide a physical barrier against these acids. Depending on the severity of the damage and how well the acid reflux is controlled, you will need to take your child to the dentist every six months or sooner as needed to mitigate damage. Update your child’s health
history at each dental visit to reflect any new medications, treatments, test results, procedures, or new diagnoses.
Between dental visits excellent daily oral care is crucial. Have your child rinse with fluoridated tap water after every meal or snack, then brush with fluoridated toothpaste a half hour after eating when their saliva has neutralized the acids. Have them floss before brushing in the morning and in the evening before going to bed. Make sure that they are using a soft-bristled toothbrush and are not overly aggressive when brushing. Some medications to treat GERD can reduce saliva, making your child even more vulnerable to decay. Teach your child to stay hydrated with fluoridated tap water. Since your child is already vulnerable to decay, it is essential that they avoid sugary and sticky foods that will accelerate tooth damage. Since many children’s medications contain substantial amounts of sugar, have your child rinse with tap water after each dose.
