The club looks for a community mem ber that has dedicated their time and energy to helping others and supporting the community. The Lena Li ons Club is honored to an nounce Richard Holmes as this year’s Grand Marshal. Holmes has spent many years serving both his com munity and family. It start ed years ago when, along with his wife Eleanor, they raised four girls on their family farm, teaching them the values and importance of hard work. After their farming days were done and they moved to town, Holmes joined the Lions Club and became involved in just about every project the club has created. He was chair man of the past car raffles and the 50/50 drawing. Be tween farming and retiring, he also worked for the Le na-Winslow school district for 12 years as a custodian and drove a school bus for 22 Whenyears. asked to comment on this recognition, Holmes commended the efforts of Pearl City fourth graders started their science unit learning about energy, electricity, and systems. They worked in groups to put together a simple electric system using energy from the sun to power a fan. Then, they used the sun’s energy again to cook s’mores in solar ovens they made in class. Lily Block, Rosa Duque, and Ryker Baker work together with their solar cell, alligator wires, and simple motor to convert sunlight energy into electrical energy.

Gov. JB Pritzker last week announced opportunities for organizations to apply for an additional $100 million in grants to fund gun violence prevention programs in mu nicipalities across Illinois. This funding, part of the Reimagine Public Safety Act (RPSA), will support non profit community-based or ganizations and local govern ments in 16 municipal areas outside of the City of Chicago as they work to prevent and interrupt gun violence in their communities.This$100million builds on $113 million in funding made available in May as well as $10 million in funding surged to Chicago and other areas of the state in advance of the summer.“This administration is de

Carol Fluegel Carol Fluegel went home to her husband and two of her children on Saturday, Sept. 3, 2022. Carol was born on July 7, 1932, to John H and Ber Dena (Daniels) Swalve in Forreston, IL. She grad uated from Forreston High School in 1950 and attended North Central College in Na perville.Carol worked in the ASCS office until her marriage to Eugene Fluegel on Jan. 2, 1954. Then she worked side by side with her husband farming in Shannon, Pearl City, and the final farm in Lena from 1967 until her re tirement.Carol was a constant vol unteer throughout her life to many organizations and al ways put her children first. I’m not sure how, exactly. I think perhaps “busy” serves different purposes for different people. It can alleviate loneliness; it might hide insecurity; it can give value to time spent working at a job, parenting kids or helping aging parents. Again, that is OK. Busy worked for me for many years.But right now, honestly, busy is too complicated for my life. I don’t have the time to be Andbusy.all I ask is for your understanding and nonjudgement. I don’t judge you for being busy; please don’t judge me for the opposite. I don’t have the drive to be busy right now. I don’t have it in my heart. I just want to be. Be calm. Be at peace. Be in the here and now. Be me. And you can be you, as busy as you wish.

Flash forward to the 2022 fair and I’ve now become a spectator in the stands, watch ing youth exhibitors show in the same arena I had when I was their age. I’m reminded of how special the experience is for those in the show ring and for the friends and fami lies cheering them on from the sidelines.I’malso reminded of the many ways agriculture brings people together.

Agriculture celebrations at state fair Ag Day at the Illinois State Fair is an annual event that brings together some of the best and brightest in the farm and food sectors. This year’s celebration took place on Aug. 16 and included events to help connect people living in suburban and urban areas to where their food comes from. From the Master Show manship Contest and other youth livestock shows, to fresh produce sold by the Illi nois Specialty Growers Asso ciation and pork chop or bris ket sandwiches offered in the commodity pavilion, agricul ture was literally around ev ery corner and on every table. In addition to fairgoer ac tivities, commodity group leaders also had the chance to work collaboratively on is sues that affect rural commu nities. I was proud to see so many farmers meeting with elected officials and represen tatives from universities and government entities to talk about programs that can ben efit Illinois agriculture.

I know a lot of busy people.They use calendars to remind them of their appointment and commitments. They pull out their phone to see if they have 15 minutes of free time anytime in the upcoming week, or maybe month. They talk about the business of busyness because it’s important stuff. It’s allencompassing, sometimes. Oftentimes because there is no escaping it. It’s the price of success, prestige, happiness, self-esteem and fulfillment in life; busy leads to all these and more. It’s all good. Or maybe not.Take it from someone who used to think she was one of the busiest of the busy—and damn proud of it, thank you very much. I know, because I’ve been there. I was there—for eons. A very, very, very busy person.Iused to color code my calendar with highlighter markers – one color for each kid and one for my husband and me. I think maybe even the dog and cat had their own highlighter colors, but I’m not sure. I was too busy to commit that to memory. Some days—most days— looked like a rainbow because of all the activities, meetings, commitments and veterinary appointments. And I’ll be honest: That calendar stood as a source of pride.Iwas drinking the Kool Aid without paying attention to calories, sugar content or artificial colors and ingredients. I was buying into that brand of cool without even glancing at the label.Ithought busy was cool. And it was, in a sense, but not in the way I thought at theMytime.brightly colored rainbow calendar pages were cool because they illustrated happenings in the lives of the people (and perhaps animals) I loved. They showed my priorities were defined by family. Love and family is cool. Busy, perhaps, may not be.My comfortable, busy, recently vacuumed carpet got yanked out from under me less than two years ago when a major life circumstance marched in and forcibly grabbed busy from my anxious grasp. I was left holding nothing, standing in nothingness and unable to move anywhere beyond that. In that moment, I discovered the opposite of busy. I discovered the nothingness of freedom. The value of unencumbered time. The beauty of a day without commitments.

On Aug. 26, 2022, at approximately 2:14 a.m., officers of the Freeport Police Department responded to a residence in the 200 Block of W Pleasant Street in reference to a subject struck by gunfire. During the investigation, officers learned that an unknown subject entered the residence and fired shots at the victim and two other individuals. The victim, aged 26 of Freeport, had non-life threatening injuries and was transported to the Freeport Memorial Hospital by private vehicle. This crime believed to be an isolated incident and gang-related. There is no threat to the public. The forgiveness options, ac cording to KHEAA, include: Public Service Loan Forgiveness Employees of a U.S. fed eral, state, local or tribal government or not-for-profit organization may qualify for loan forgiveness after making 120 months of qualifying pay ments. Temporary Expanded Public Service Loan Forgiveness. Through Oct. 31, borrow ers may receive credit for past periods of repayment that would otherwise not qualify for PSLF. Teacher loan forgiveness. To qualify, you must teach at least five full years in a low-income school in an eli gible district. Depending on your field, you may have up to $17,500 in student loans forgiven. Nursing loan forgiveness. You must be at least a regis tered nurse and agree to work full time for a minimum of two years in a critical short age facility. If you fulfill your agreement, 60 percent of your loan balance will be forgiven. Another 25 percent will be forgiven if you work a third year. We continued with the beautiful, perfect, last-ofsummer days. We got a show er when we needed it, and still managed to have some sun. Our days have begun to get shorter, but we still have had nice weather to do outside ac tivities. Other than our flood ing problems, our summer has been beautiful. I don’t know when I have seen such beautiful, lush, green vegeta tion in August. We live in a beautiful part of Illinois. Our gardens are still producing, so this week will continue to fea ture recipes that are seasonal. Have a happy cooking week!

CucumberWatermelonSalad

Watermelons are in season, and they are pretty darn good. Cucumbers are also very plen tiful this summer. Put them together for this great salad. I went to a women’s gathering last week and learned several interesting watermelon facts. Watermelon is both a vegeta ble and a fruit. It is a great fruit for fighting inflamma tion in the joints. It was first mentioned 5000 years ago in Egypt. Because it is 90% water, it was used in desert for hydration. It is a fruit that can use the flesh and the rind to eat. Now that you have all this useless info about water melons, enjoy this salad! ¼ C. extra-virgin olive oil 2 T. red wine vinegar ½ t. salt 3 C. cubed seedless water melon1C. medium cucumber, chopped1C.crumbled feta ½ C. red onion, thinly sliced½C. coarsely chopped mint Chopped mint for garnish Flaky sea salt for garnish In a small bowl, whisk to gether oil, vinegar, and salt. In a large serving bowl, com bine watermelon, cucumber, feta, red onion, and mint. Add dressing and toss to coat. Garnish with mint and flaky sea salt. Eggplant Gratin Eggplants are in abundance this year. I had someone ask for a different eggplant recipe. This one uses a lot of herbs. Remember eggplant has a lot of moisture in it. Follow the directions for getting rid of the excess water before attempt ing to put it in the oven. You can substitute 1 t. dried herb for 1 T. fresh if you don’t have the fresh herbs. 2 medium to large egg plants, sliced ½ in thick Salt for sprinkling 1 C. finely grated Parmesan cheese½C. sour cream 4 T. minced fresh chives, divided2T.chopped fresh basil, di vided4t. chopped fresh oregano, divided4t.fresh thyme leaves di vided2C. red sauce Line a rimmed baking sheet with a double layer of paper towels. Arrange eggplant slices in an even layer on pa per towels, sprinkle both sides with salt. Place a second lay er of paper towels on top of eggplant; place a heavy cut ting board or a stack of bak ing sheets on top of eggplant to press out excess water. Let stand for 30 minutes. Preheat the oven to 375. Spray a 1-quart baking dish with cooking spray. Line an other large, rimmed baking sheet with paper towels. Heat a large skillet over high heat. Add eggplant slices in batch es; cook until browned, about 2 minutes per side. Place on pan with dry paper towels; press with additional paper towels to remove excess mois ture.In a medium bowl, stir together ½ C. cheese, sour cream, 3 T. chive, 1 T. basil, 3 t. oregano, and 3 t. thyme. In a prepared baking dish, spread about ¼ C. marinara sauce. Top with a single layer of marinara sauce onto eggplant; spread a thin layer of sour cream mixture onto marina ra. Beginning with eggplant, repeat layers to use all the eggplant, marinara, and sour cream. Sprinkle with remain ing ½ C. cheese. Bake until hot and bubbly, about 25 min utes. Increase oven tempera ture to broil. Broil until top is golden brown, 3 to 5 minutes. Sprinkle with remaining 1 T. chives, remaining 1 T. basil, remaining 1 t. oregano, and re maining 1 t. thyme. Let stand 10 minutes before serving.

State Senator Brian Stew art and State Representative Andrew Chesney celebrated the reading achievements of 136 students on Aug.27 at a recognition ceremony for participants of their 2022 Summer Reading Club Pro gram at Lincoln-Douglas Debate Square in Freeport. “Reading can take us to many different places and opens doors for new ideas and activities,” Senator Stewart said. “We are very proud of these students for their commitment to read ing this summer, which also helps them better prepare for the upcoming school year. Building on state fair conversations

As a speaker on the panel, the main points I shared are areas of concern Illinois farm ers have expressed to me in the past. The first is the need to protect crop insurance as an essential risk-management tool in farmers’ toolboxes. Brush half the butter inside a half sheet pan; lay out bread in a single layer, overlapping slices to look like shingles. Make sure the entire sheet pan is covered. Press down on bread to flatten slightly. Top bread with mozzarella, then layer ham, spinach, salami, pepperoncini, and provolone on top. Shingle another lay er of bread on top, then brush with remaining 2 T. butter. Put a second sheet pan on top of bread and weigh it down with a heavy skillet. Trans fer to oven and bake until the sandwich is pressed and start ing to turn golden, about 10 minutes. Remove sheet pan and bake until tops are gold en, 20 minutes more. Cut into squares to serve.

Transfer the batter to the pans. Bake until a toothpick inserted in a cupcake comes out clean, 18 to 21 minutes. Cool in pans 10 minutes before removing to wire racks to cool com pletely.Frosting: in a large bowl, combine butter, powdered sugar, gelatin, soda and food coloring; beat until smooth. Frost cupcakes. Sprinkle with chocolate chips. Store in re frigerator.

Small yellow squash are just so darned cute. They take on whatever flavors you add to them. This recipe zips them up with crushed red pep per and red wine vinegar and makes a great side dish. 2 T. olive oil 3 cloves garlic, thinly sliced ½ to 1 t. crushed red pepper 2 lbs ½ inch sliced yel low squash (about 6 medium squash)2T.red wine vinegar 1 t. salt 2 T. chopped fresh parsley ¼ t. pepper In a large deep skillet, heat oil over medium-high heat. Add garlic and red pepper; cook, stirring constantly, for 30 seconds. Add squash; cook, stirring frequently, un til browned and just tender, about 12 minutes. Stir in vin egar and salt; cook for 1 min ute. Stir in parsley and pep per. Serve immediately.

In a bowl, stir together flour, both sugars, cinnamon, and salt. Cut but ter into flour mixture with a pastry cutter until mixture resembles coarse crumbs. Sprinkle topping evenly over peaches. Bake until peaches are bubbling, and topping is browned, about 45 minutes.
