There’s no place like Lena for Dorothy cheeses By John Day

During a presentation and tasting of Dorothy’s Cheese, Dominique Huth, President/CEO of Savencia USA spoke about the overall company philosophy. Huth said, “What is artisanal cheese? It is a high quality cheese made to the highest traditional standards. But how is that done in factory using very sophisticated equipment? “We do it by using the most modern techniques while retaining respect for the cheese, milk and the process. We use the best ingredients and although our plant is automated, we still work by hand with those

There’s a long history of cheese making in northwest Illinois. A local cheesemaker that has a recognizable name is Kolb – Lena. Dorothy (Renter) Demeter had been involved with Kolb – Lena, a family business, her entire life. Dorothy and her husband James Demeter grew the company from a small business to what it is today. The company is now owned by Savencia Fromage. Although the name has changed, making quality cheese continues. Savencia, a French company, is a world leader of quality cheese production. Their blue cheese has been ranked number one in both France and the U.K. Savencia has a reputation for its commitment to local users, while creating new products. Savencia has invested 12 million dollars in the Lena plant over the last three years. Modern and efficient sanitary control systems as well as computerized quality control monitoring are now being used. A considerable amount of high tech robotics and other equipment, much of it proprietary, now operates the production line. It has been 35 years since Jim and Dorothy Demeter cut a ribbon opening the plant on Route 20. This year a ribbon cutting ceremony ushers in a new era and a new cheese. A number of dignitaries gathered at Sovencia Fromage for the introduction, a tour of the facility and a ribbon cutting. The new product is Dorothy’s Cheese. Sebastien Lahembre, Product Manager said, “Dorothy’s Cheese is a symbol of respect and admiration for Dorothy Demeter. Dorothy was truly a professional. Come Back Cow is an artisan brie that has rustic fragrant notes. Keep Dreaming is a stronger, robust flavored, soft ripened brie. A tour of the facilities was given by Gilbert Bourgouin, Plant Manager and Leisa Hubb. Both Hubb and Bourgouin explained each step of the process as well as explaining the chemistry involved in making cheese during the tour.

your dreams. However, it’s just as important to remember our traditions and give back to others. “We looked at Dorothy’s amazing life. Her ancestors came to Illinois in 1828. The family started a cheese dairy in 1925 and she spent her life in farming and cheese making. When

she went to college she enrolled at Iowa State, becoming the first woman ever to enter the Dairy Industry Program. She came home to work in the family business and took it from small store to a major producer. “Comeback Cow is a reference to Dorothy as a young girl who would work late in the family cheese dairy, until dark, when the cows come home. Keep Dreaming refers to Dorothy’s dream of making the perfect soft ripened brie. The cheeses which carry Dorothy’s name are shaped like her favorite spring flowers found in the Apple River Canyon.” In keeping with Dorothy’s reminder to give back, Savencia has spoken with Iowa State University, and Nick Van Berkum, Assistant Director of Development, College of Agriculture said, “We’ve talked about things like class visits, internships and other kinds of opportunities. I think there are some great possibilities.” Addressing the group, Guillaume Lacroix, Consul General of France said, “I am pleased to see this company doing so well and the relationship it has established with the community of Lena. I’m Sure Lena and Savencia can look forward to working together even more in the future.” Dennis Bergman, Lena Village Board President said, “All of us would like to thank Consul Lacroix as well as Mr. Huth for coming to Lena today. And yes, we look forward to continuing our relationship Savencia.” Lehembre said, “The future holds great promise. This site has room for expansion and we have a great partner in Lena. Right now Dorothy’s Cheese is sold exclusively at Mariano’s Markets. We want to become a larger part of the community and that would include reopening the cheese shop here so Dorothy’s Cheese can come back.”
