Queen appears in Lena on New Year’s Day

After 48 weeks of drawings at The Iron Horse Tap in Lena, the Queen of Hearts was found in the Lena Sons of The American Legion Queen of Hearts Progressive Raffle. Brooke Olberding was the lucky name drawn and she chose number 41 on the board where the queen was found hiding. With a total pot of $54,680, by being present, Brooke won 70% of the pot or $38,279 with Federal and state taxes still to be withdrawn.

Brooke commented on her Facebook page, “A huge thank you to everyone who has been supporting The Iron Horse Tap and the Lena, Illinois, Sons of The American Legion Post 577 every week. Both do so much for the community!”

A new raffle with an initial pot of $5,500 will start with weekly drawings on Saturday, Jan. 15 at 5:30 p.m. at the Iron Horse Tap in downtown Lena and will continue weekly every Saturday at 5:30 p.m. until the next Queen of Hearts is found. Tickets are 6 for $5.00 and can be purchased at the Iron Horse Tap during regular business hours or at the Lena American Legion on Saturday mornings from 10 a.m. to 12 p.m.. REBECCA NIEMANN Rebecca A. Niemann, age 25, passed away at her home in Lena on Tuesday, Jan. 4. She was born on Mar. 5, 1996, to Jeff and Lynette (Browning) Niemann. Rebecca graduated from LenaWinslow High School in 2015 and then went on to continue her education at Highland Community College. She was employed at the Monroe Dollar Tree for 2 ½ years.

Rebecca enjoyed helping her grandmother and mother with yard work, gardening, and canning vegetables. She loved crafts and loved to give gifts; it could have been a homemade card, a picture, or a small gift. Becca was a quiet but kind, loving and generous person. She was a part of an at home fellowship group and she loved watching movies with her sister.

Rebecca is survived by her: parents; Jeff and Lynette Niemann of Lena, one brother; Brett (Holly) Niemann of

Monticello, WI. and one sister; Angela Niemann of Lena, Grandparents; Delmar (Joyce) Niemann of Stockton, IL, Carolyn Niemann of Warren, IL and Judith Browning of Lena, and numerous aunts, uncles and cousins. She is preceded in death by; her grandpa; Dale Browning, and cousin; Nikita Martin.

A funeral service will be held on Wednesday, Jan. 12, at 12 p.m. at the Leamon Funeral Home in Lena, IL. A visitation will be held from 9:30 a.m. until time of service. Officiating the service will be Bob Bender. Burial will take place at Elmwood Cemetery in Warren, IL. A memorial has been established in her memory.

RUTH LAWFER Ruth A. Lawfer, age 89, of Stockton, IL passed away Wednesday, Jan. 5, at home.

She was born in Morrison, IL on May 20, 1932 to the late Louis and Winnie (VanOosten) VenHuizen.

Ruth was a 1950 graduate of Stockton High School.

She was a member of Calvary United Methodist Church in Stockton. In her younger years she helped farm. She also worked as a produce manager for Sullivans Foods, she was the first manager at Casey’s, she was a waitress at the Blackhawk Run Golf Course in Stockton, and a cook for Shell Station in Stockton. Ruth was an avid Chicago Cubs fan. She enjoyed bowling, golfing, visiting the casino, and baking pies.

She is survived by her sons, Greg (Eileen) Lawfer, Jeff (Susan) Lawfer and Rick (Melissa) Lawfer; her daughter, Deb (Bob Eilders) Lawfer; her grandchildren, Chad

WESLEY WESSELS

Wesley Wessels, 92, of McConnell died Sunday Jan. 2, at the Lena Living Center.

He was born Dec. 1, 1929 in German Valley, IL to Wessel and Selma (Splinter) Wessels. The family moved to Idaho and his mother died when he was nine years old. His grandma Splinter brought the family back to the Winslow area to live with Walter and Emma Splinter.

On Jun. 6, 1951 he married Donna Lehman at Orangeville United Methodist Church. Together they were lifelong farmers, except for a two year pause after being drafted to serve in the Army. He loved the Lord, his family and farming with a quiet, gentle nature. He was very active in the McConnell Grace Free Methodist Church.

Surviving are his four children; Jim and Rhonda Wessels of McConnell, Barbara and Dan Lowe-Long of New London, WI, Kathy and Mark Diffenderfer of McConnell and Mark Wessels of Orangeville. Regenerative approach takes center stage for Illinois livestock farmer

Logan Karcher returned from Murray State University with a master’s degree and passion for regenerative agriculture.

Born and raised on a fourth-generation grain and livestock farm in Hamilton County, Karcher focuses on growing nutritious forage for his livestock to eat by restoring biological life to the soil and ecosystems surrounding it.

It’s this regenerative strategy that helps drive demand for Burnt Hill Cattle Co. LLC.’s meat products, which include beef, pork, chicken and lamb.

“This is what we need to be doing to save money and help our soils and help our earth,” he said.

To accomplish this, Karcher starts with the soil.

“Regenerative ag is the idea of using various types of livestock and forages,” he said. “Whether it’s farming corn, soybeans, wheat or grazable crops – like clover, Timothy Grass or Orchard Grass – using these all in a system benefits the ecosystem and biology in the soil creating better soil, which produces a better forage for the livestock to eat.”

Rotating his animals

throughout various pastures multiple times a day helps ensure a consistent application of manure which is vital to help the soil microbes thrive, he said.

“By not overgrazing in one area, you keep insects alive in the soil and they pull the manure down into the soil which keeps it from flowing into area rivers and creeks,” Karcher said.

This method also restores prairie plants that haven’t appeared in fields and pastures for 50 or 60 years, he said.

“There’s a natural seed bank in the soil and when you start healing that with proper management through animals or row cropping, then seeds will start to grow again. You’ll see more birds, insects, and forages that haven’t grown in 50 or 60 years start growing again.”

Karcher and his wife Jessa sell the pork, beef, chicken, and lamb products they produce on Burnt Hill Cattle farm to a local farm store in Hamilton County and through their Facebook page.

City of Freeport year in review In 2021, The Freeport Fire Department implemented its new Tactical Emergency Medical Services Program.

This tactical team was fully equipped and deployable by July. Since its creation, the team has seven fully trained medics and has had ten special deployments.

The Freeport Police Department implemented new programs to better serve its public. The first of which is the Social Services program which responds to crisis situations like mental health and domestic violence, as well as aims to build relationships with groups in our community.

The department also hosted two Drug Enforcement Administration (DEA) drug takeback events, netting over 800 lbs of prescription drugs.

Coordinating with community organizations, the FPD also assisted with a gun buyback program that took 48 guns off the streets of Freeport.

Illinois records pandemic high of more than 200,000 COVID cases in one week Hospitalizations, deaths spike as omicron variant spreads

The Illinois Department of Public Health said Jan. 7 that the state had recorded 201,428 new cases of COVID-19 over the previous week, a 57 percent increase over the previous week,

while the weekly number of deaths rose 15 percent, to 444 as the omicron variant of the virus continues to spread.

Those cases were confirmed out of more than 1.3 million laboratory tests performed over the previous week, which brought the pre-

liminary statewide case positivity rate to 15.2 percent.

Those case counts are the highest of any since the pandemic began, according to IDPH data, although the death rate is well below the pandemic peak of a year ago.

On Jan. 6 alone, the state re-

corded more than 44,000 new cases, the highest single-day case count since the pandemic began.

That brings the total number of cases since the pandemic began to just under 2.4 million, including 28,361 deaths.

The rising case rate in Illinois has prompted the General Assembly to cancel all of its scheduled session days this week, according to spokespeople for Senate President Don Harmon

and House Speaker Emanuel “Chris” Welch, although committees in both chambers will continue to meet remotely.

As of late Thursday night, Jan. 6, IDPH reported 7,096 COVID-19 patients were hospitalized, including 1,123 patients in intensive care units and 639 on ventilators.

Those cases account for 38 percent of all staffed ICU beds available and 11.5 percent of all staffed ventilators.

IDPH continues to advise

people that vaccines are the strongest defense against the virus. As of Thursday night, Jan. 6, more than 19.5 million vaccinations had been administered. Over the past week, 294,687 doses were administered, for an average of 42,098 per day.

Currently, 73 percent of the state’s total population has received at least one dose of vaccine, while 64 percent are fully vaccinated and 40 percent have received a booster shot.

Online marketplace opens door for farm-fresh food deliveries

By Kay Shipman A farmer supplier describes Market Wagon as DoorDash for farm products. The company’s CEO and co-founder explains his idea as an online farmers market that delivers to shoppers’ homes. From both farmers’ and consumers’ perspectives, Market Wagon fills pandemic-driven needs, supports the popularity of online shopping and offers one answer to supply chain problems.

Based in Indianapolis, Market Wagon offers consumers an online market of local farm products delivered to their homes and offers farmers an online wholesale market for and delivery service of their products. Currently in Illinois, Market Wagon distributes in three locations: the Chicago area, metro St. Louis and 16 central Illinois counties.

Central Illinois farm supplier Ropp Jersey Cheese of McLean County has sold products through Market Wagon for about a year. “It’s like another wholesale account for me,” dairyman Ken Ropp said.

“They handle all the deliveries and everything. Market Wagon is great to track all the business; everything is customized up to the minute. It (Market Wagon) enters a customer base that I might not otherwise.”

Ropp explained he delivers dairy products from his Normal farm to the company’s Bloomington-Normal hub. He knows of another farm source that delivers to two hubs.

Market Wagon’s CEO and

co-founder, Nick Carter, who grew up on an Indiana farm, explained local farm vendors bring their products to company fulfillment centers in their respective delivery area.

Asked what is important to the company, Carter said, “No. 1 is local (farm) transparency.

Shoppers know what they’re getting and who raised it. They can chat and ask questions with farmers on the (company online) platform.”

Shoppers order items a la carte and pay no subscription fee. “You can buy what you want, when you want it,” he noted. Customers are charged a flat delivery fee to homes located within the hub delivery area.

Market Wagon does not restrict farm vendors from using any specific production methods. “It’s not all organic or grass-fed,” Carter said. The company requires vendors to be inspected and legally licensed for their respective production, such as a Grade A dairy permit or a state egg license.

Ropp explained Market Wagon takes a percentage off the top of a vendor’s sale. In his dairyman view, Market Wagon featured a lot of seasonal fresh produce, and his sales declined when the produce sales decreased.

“Lately, we’ve seen the (sales) numbers tick back up.

That means to me more families [were] getting back together for the holidays,” Ropp said.

Court upholds state legislative redistricting plan

A three-judge federal court panel has upheld the legislative redistricting plan that state lawmakers approved during a special session last summer, thus leaving in place the new maps that will govern state legislative elections for the next 10 years.

In their 64-page opinion, released Dec. 30, the judges said the plaintiffs in the three separate lawsuits had failed to show that the redistricting plan violated federal law or the U.S. Constitution by diluting Latino voting power in Chicago and its surrounding suburbs or Black voting power in the Metro East region on the Illinois side of the St. Louis metropolitan area.

“In the end, we find that the boundaries for Illinois House and Senate districts set out in SB 927 neither violate neither the Voting Rights Act nor the Constitution,” the panel wrote.

“The record shows ample evidence of crossover voting to defeat any claim of racially polarized voting sufficient to deny Latino and Black voters of the opportunity to elect candidates of their choice in the challenged districts.”

Last year’s redistricting process was complicated and slowed by the COVID-19 pandemic and delayed release of data from the 2020 U.S. Census.

Lawmakers initially passed one set of maps during their regular spring session in May, even though the census data had not yet been released, in order to meet the Illinois Constitution’s June 30 deadline for lawmakers to pass a plan before handing over the process to a bipartisan commission.

Republican leaders in the General Assembly, as well as the Mexican American Legal Defense and Educational Fund, or MALDEF, quickly filed suit, arguing the maps violated the one-person, one-vote principle because the districts were not close to being equal in population.

The Census Bureau eventually released the detailed population data on Aug. 12, and lawmakers convened a special session later that month to adjust the maps. Those maps passed the General Assembly on Aug. 31 and Gov. JB Pritzker signed them into law Sept.

24.

MALDEF and the Republicans challenged those new maps as well, arguing that they actually reduced the number of Latino-majority districts in Chicago and the surrounding suburbs, even though Latinos were one of the fastest-growing demographic groups in Illinois

over the previous 10 years.

Separately, the East St. Louis Branch of the NAACP, along with other civil rights groups, challenged the way lawmakers had redrawn three House districts in the Metro East region, saying the new maps broke up the area’s Black voting population in order to protect two white Democratic incumbents, all to the disadvantage of the region’s only Black House member, Rep. LaToya Greenwood.

Democratic leaders who had approved the new maps argued that they were not drawn for the purpose of racial gerrymandering but, instead, to protect Democratic majorities. They also pointed to recent elections of Lt. Gov. Juliana Stratton and Secretary of State Jesse White, both of whom are Black, as well as Comptroller Susana Mendoza, who is Hispanic, and even former U.S. Sen. and former President Barack Obama to show that white majority voters will cross party lines to elect minorities.

Citing previous U.S. Supreme Court cases, the judges said that in order to prevail, plaintiffs had to prove three things—that a minority group is sufficiently large and geographically compact to constitute a majority in a single-member district; that the white minority group must be “politically cohesive;” and that the majority must vote sufficiently as a bloc to enable it usually to defeat the minority’s preferred candidate.

But the plaintiffs failed to make that case, the judges wrote, particularly with regard to the third factor because white Illinois voters do not necessarily vote as a racially-cohesive bloc.

They also ruled that partisan gerrymandering may be unfair, but is not illegal under federal law or the Constitution.

They noted that a 2016 effort to put a constitutional amendment on the ballot to establish an independent redistricting commission received popular support, but the initiative was struck down by the Illinois Supreme Court because it exceeded the scope of citizen initiative power.

“These are matters for the people of Illinois to continue debating,” the court wrote.

“Levers other than federal courts are available to them, whether they are state statutes, state constitutions, and even entreaties to Congress, if they wish to change the current process. … Our role as federal judges is limited and does not extend to complaints about excessive partisanship in the drawing of legislative districts.”

Church news Lady Panthers split first week of January St. John’s Lutheran

The Lena-Winslow girls basketball squad has experienced their fair share of streaks this season. From a fourgame winning streak early in the season, to a recent three-game losing streak to end 2021, the Panthers have been through it all this season.

After the recent losing streak the Panthers and Lena-Winslow Head Coach, Dennis Huttenlocher, were looking to bounce back in their Jan. 3 matchup with the Pecatonica Indians.

With an overall record of 10-5, the Indians were the early favorites over the 8-7 Panthers. It was a bounce back game for both teams, as the Indians came in riding their own three-game losing streak. With both teams hungry to get back in the win column, it was an exciting race to the end.

It was the Panthers who dominated the first quarter, however. A pair of three-pointers from Tianna Esser and Cierra Mapes allowed Le-Win to take an 11-4 lead into the second quarter.

It took a quarter for Pecatonica to settle in, however. The Indians posted eighteen points in the second quarter, swinging the momentum back in their favor as the Panthers trailed 22-19 at the half.

Le-Win managed to slim the lead in the third quarter by outscoring Pecatonica 11-9. Trailing the Indians 31-30 to start the fourth, things

were set up for an exciting finish in Pecatonica.

It was a team effort in the fourth.

Four Panthers combined for thirteen points, including a perfect four-for-four at the free throw line from Mapes. It was just enough for the Panthers to tie the game and force an overtime period to decide the winner.

Going into overtime, it appeared the Panthers had fully swung the momentum back in their favor.

Mollentine was the only Indian to score a basket in overtime, while Esser hit her second three of the night in the biggest moment for the Panthers.

Boosted by another four points from Grace Groezinger, The Panthers managed to head home with a 53-50 win over the Indians.

Le-Win was led by a pair of doubledoubles as Groezinger led the way with nineteen points and ten rebounds, while Mapes finished with 13 points and ten rebounds. Esser was a major factor on offense, finishing with 17 points and a pair of three-pointers.

A few days later, the Panthers were looking to keep their momentum rolling in a Jan. 6 home matchup against Dixon. Le-Win was the underdog once again as Dixon came in with an overall record of 17-3. Despite the difference in wins, the Panthers would give Dixon a run for their

money.

In fact, Le-Win held the advantage at the end of the first quarter. Thanks to four points from Kalli Humphrey and some solid free throw shooting by Esser, the Panthers took an 11-9 lead into the second quarter.

The Panther offense struggled to score in the second quarter, however.

While being held to just four points, Dixon put up six of their own, leaving things tied at 15 heading into halftime.

In the second half, Humphrey was the only Panther who could find success on offense. While Le-Win struggled to score, Dixon found their rhythm. The Panthers were outscored 25-18 in the second half. Humphrey scored 13 of those 18 total points on her own. Mapes and Esser were the only two other Panthers to score in the second half.

Dixon took advantage of some foul trouble as they hit ten free throws in the second half alone. That was enough for Dixon to sneak away with the 40-33 victory on the Panthers’ home court.

Humphrey led Le-Win with seventeen points, while Esser was next up with eight. Groezinger finished the game with six points and six rebounds.

After watching their record drop to 9-8, the Panthers will be back in action on Thursday, Jan. 13, in a home matchup against Pearl City.

The difference between adults and grown ups

Blowing out 18 candles on your birthday cake is a huge milestone. It happens in an instant. You are an adult! As such, you can vote and get married. You can serve in the military, get a tattoo, go to a casino, donate blood and get called for jury duty. You can even win the lottery (because you are finally old enough to buy a ticket).

Even though you can do all these things (and more) being 18 does not make you a grown-up.

I’ve witnessed this firsthand with some of my own kids. They are young adults and independent in so many ways but they are not yet grown-ups because being an adult and being a grown-up are two different things. One is immediate and automatic, the other is not.

A grown-up has the ability to discern a running toilet from anywhere in the house.

This is accompanied by the inability to ignore a running toilet from anywhere in the house—even and especially at 2 a.m. An adult flushes and doesn’t give it a second thought or listen.

When you are an adult, you eat when you are hungry, whatever time of the day (or night) that might be – even and especially at 2 a.m.

When you are a grown-up you anticipate other people’s

hunger more than your own.

When a grown-up sees a police car in the rearview mirror he experiences a sense of security. An adult breaks out in a sweat and hopes he wasn’t speeding—again.

Adults have been known to lie about their age by increasing it. Grown-ups have been known to lie about their age by decreasing it.

Adults pay the rent; grown-ups pay the mortgage.

Adults have jobs; grownups have careers. Adults stay up way past midnight; grown-ups attempt to stay up past midnight when they are waiting for their adults to return home. Adults wake up late on a Saturday morning; it’s the perfect time to catch up on sleep. Grown-ups see the weekend as a perfect time to catch up on yard work.

Grown-ups cut the cheddar on the cutting board. Adults cut the cheese wherever they can. Grown-ups secure the bread bag with the twist tie after making a sandwich.

Adults aren’t aware there is an actual purpose for a twist tie.

Adults put their dirty dishes in the sink. Grown-ups rinse their own dishes along with whatever other dishes adults have left in the sink, put them in the dishwasher, run the dishwasher and return two hours later to unload it.

When you are an adult, the best part of the holidays is getting presents. When you are a grown-up, the best part is giving them.

Adults do not consider it out of the ordinary to watch an entire season of “The Walking Dead” on Netflix in one day.

Grown-ups watch one episode each week. They are aware there is a way to buzz through commercials, but that seems like a lot of work.

Adults run to the grocery store to grab something for dinner – usually from the frozen foods section. Grown-

ups go to the store with a list and spend a considerable amount of time contemplating produce and whether organic really is worth the extra money.

Grown-ups keep an accurate budget of spending and income. Adults say, “Budge-what?”

Adulthood is awarded to you on your eighteenth birthday. Growing up is a process. For some of us, it is a never-ending one. I’ve always said, “Growing up is realizing there is no such thing.” If this is true, none of us will ever be completely done growing up.

I kind of like that thought.

From Lena’s Kitchen The not so skinny cook

The New Year’s celebrations are over, football games at the college level are finished, and we await the Super Bowl teams. We certainly finished a lot of things at the end of 2021.

And boy, did we get some winter snow and frigid temperatures. I stayed in and watched it snow while wrapped in my fleece blanket. I know a lot of other people did the same. This week’s recipes feature some appetizers for the big game, a great main dish, and two wonderful desserts.

Cheesy Spinach Twists

Soon we will be looking for some appetizers for the Super Bowl. These spinach twists will be cheesy and crunchy. I like the basil pesto in the refrigerated section of Italian food. I think it has the greatest flavor. ½ of one 10 oz. pkg. frozen chopped spinach, thawed and squeezed dry ¼ C creamy basil pesto sauce from jar or refrigerated dairy case 1 sheet of 17. 3 oz. pkg frozen puff pastry dough, thawed 2 T. grated Parmesan cheese Preheat oven to 375. Line two large baking sheets with parchment paper. In small

bowl, combine the chopped spinach and pesto sauce. Unfold dough; transfer to lightly floured surface. Spread floured surface with spinach mixture all the way to the edge. Sprinkle with Parmesan cheese. Using small spatula, lightly press mixture on dough; cut dough lengthwise into 12 strips; halve each piece crosswise. Working with one strip at a time, stretch each to 6 inches in length and twist. Place two inches apart on parchment on baking sheet.

Bake until crisp, about 15 minutes. Let cool on rack.

Seafood Stuffed Mushrooms

You can use these stuffed mushrooms for an appetizer or as part of a supper. The portabellas are as great as a hamburger, and the seafood adds just the right touch. If you would rather use the lobster bites instead of the shrimp, they are equally as good.

4 portabella mushroom caps 2 T. unsalted butter 1 C. chopped onions ½ C. chopped celery ½ C. chopped green pepper ½ C. chopped red pepper 3 garlic cloves, minced 2 t. Old Bay seasoning 1 t. salt ½ t. pepper ½ C. shredded mozzarella cheese ½ C. shredded Parmesan cheese, divided ½ C. Panko breadcrumbs 4 oz. imitation crab meat 4 oz. shrimp, minus tails and chopped 2 eggs, lightly beaten 2 T. lemon juice

2 t. Worcestershire sauce 2 T. chopped parsley Preheat the oven to 350.

Line a rimmed baking sheet with aluminum foil, spray with cooking spray. Using a dry paper towel, brush excess dirt from outside of mushrooms and place on baking sheet cap side up. In a large skillet, heat butter over medium heat. Add onion and celery and cook until translucent and soft, 10 to 12 minutes. Add green and red pepper and cook for 4 to 6 minutes. Add garlic, Old Bay seasoning, salt, and pepper, and cook just until fragrant, about 1 minute. Transfer onion mixture to a large bowl, and add mozzarella and ¼ C. Parmesan, ¼ C. breadcrumbs, chopped crab, shrimp, eggs, lemon juice and Worcestershire, stirring until well combined. Divide mixture among the mushroom caps and press down firmly. Mix the remaining breadcrumbs, Parmesan, and chives together in a small bowl. Sprinkle mixture on the mushroom caps. Bake in the oven until lightly browned, about 15 to 17 minutes.

Classic Coleslaw

Sometimes I get hungry for something old fashioned like my grandmother used to make.

That is what this coleslaw is. I love the vinegar-based cabbage because it goes with so many things. My granny used to say we had to have cabbage on New Year’s Eve or Day so that we had good luck for the coming year. Here’s a toast with cabbage for a lucky 2022. ¼ C. white vinegar 2 T. canola oil 1 t. sugar 1 t. salt ¼ t. celery seed

¼ t. pepper 8 C. thinly sliced green cabbage 1 C. shredded carrot ½ C. sliced red onion ½ C. chopped green onion In a large bowl, whisk together vinegar, oil, sugar, salt, celery seed, and pepper until well combined. Stir in cabbage, carrot, and all onions.

Let stand for 30 minutes before serving. Cover and refrigerate for 2 days.

Baked Spaghetti Pie

This creamy spaghetti pie is a great weeknight meal. You can make it ahead and have it ready for the next night’s supper. If you can’t find the Kalamata olives, you can substitute another gourmet large olive.

1 (16 oz.) pkg. spaghetti 4 eggs 3 C. grated Parmesan cheese 1½ C. heavy whipping cream 1/3 C. prepared pesto 1 t. salt ½ t. crushed red pepper 1 C. cubed mozzarella ½ C. sliced sun-dried tomatoes ½ C. Kalamata olives, chopped Preheat oven to 350. Spray a deep 10-inch ovenproof skillet with cooking spray. Cook spaghetti according to package directions. Drain and rinse with cold water. Drain well. In a very large bowl, whisk together eggs, Parmesan, cream, pesto, salt, and red pepper; stir in mozzarella, sun dried tomatoes and olives. Stir in spaghetti and pour into prepared skillet.

Bake until set, about 30 minutes. Turn oven to broil, and broil until golden brown about 5 minutes; let stand 10 minutes before eating.

Fudgy Peppermint Bark Brownies

I had this recipe for Christmas and ran out of room but thought it would be just as good for Valentine’s Day. Chocolate and Peppermint are always a good combination.

1½ C dark chocolate chips 1½ C. butter, room temperature 1 C. sugar 2 eggs 1¼ t. peppermint extract ½ C. flour ½ t. baking powder 2 C powdered sugar ½ t. vanilla ¼ C. heavy cream 2 candy canes, crushed Preheat oven to 350. Line an 8 inch square baking pan with enough foil to overhang sides by 2 inches; coat with cooking spray. In a heavy pan, combine 1 C. chocolate chips, ½ C. butter; melt over low heat the chips and butter; cook, stirring until melted.

Remove from heat.

Add sugar, eggs and 1 t. peppermint extract; stir until combined. Stir in flour and baking powder until blended.

Transfer to pan; bake until toothpick inserted in center comes out with moist crumbs clinging, 25 to 30 minutes.

Transfer to a rack, let cool.

On medium speed, beat remaining cup of butter until fluffy, beat 2 minutes. On low, beat in powdered sugar and vanilla; on medium-high beat until fluffy, about 2 minutes. Spread over brownies.

Chill until set, about 20 minutes.

In a microwave-safe bowl, melt remaining ½ C chocolate chips and heavy cream in 15 second intervals, stirring until smooth. Stir in remaining ¼ t. of peppermint extract; cool.

Spread over frosting; top with crushed candy canes. Chill until firm, 1 hour. Using foil, lift from pan; remove foil.

Cut into squares.

Hawaiian Bread

tea or coffee, put your feet up and imagine being on a hotel beach in Hawaii. Thanks, Barb, for my treat and the recipe.

2¼ C. flour 1½ t. baking soda 1¾ C. sugar 1 t. salt 1 can (8 oz.) crushed pineapple undrained ½ C. coconut 3 beaten eggs 1 C. oil 1 t. vanilla 2 smashed bananas 1 C. chopped nuts Preheat oven to 350. In a bowl, mix flour, baking soda, sugar, and salt. Add pineapple, coconut, eggs, oil and vanilla and fold in gently. Fold in smashed bananas and nuts.

Place in small baking bread pans sprayed with cooking spray. Pour bread in prepared pans. Bake 35 minutes plus more if needed. Test by putting toothpick into bread until it comes out clean. Place drained maraschino cherries in each pan (several). When bread is cut, the slice contains a cherry.

Final Thoughts It doesn’t seem that our weather is going to change any time soon, so I guess we learn to live with it. Several of my friends have had to replace batteries, and I guess that is a winter condition we all have to face when our car gets to a certain mileage. You just hope when it won’t start that you are at a place it is easy for the repairman to get to. Just a side note, thanks to all the snow plowers who helped get our roads and driveways cleared. We are lucky that ours are promptly taken care of. I know some streets in Rockford where it took three days to clean, so we are lucky to live in our little towns. As I said last week, we will be looking for some heartier cooking recipes, so if you have a good soup, bread, or pie recipe, send it our way.

Letter to the editor Jesse White: Let’s emulate Martin Luther King’s philosophy through our own lives

This Jan. 17, please join me in celebrating the life, influence and contributions of civil rights leader Dr. Martin Luther King Jr. This will mark the 37th year our country has honored Dr. King’s birthday as a federal holiday and I encourage everyone to take a moment to reflect upon how he impacted our society with his philosophy of embracing equality and rejecting bigotry

and segregation.

Dr. King served as one of my earliest mentors while I was a student at Alabama State College in Montgomery, Ala. in the early 1950s. I attended church in northern Montgomery where Dr. King served as the pastor. I had the privilege of listening and observing him firsthand.

In Alabama, I experienced many challenges and frustrations due to segregation. African Americans were not allowed to drink at certain water fountains. We were prohibited from sitting in certain seats on buses and banned from eating at many

restaurants.

Following the lead of Dr. King, Rosa Parks and other civil rights leaders, I participated in the Montgomery Bus Boycott that ultimately led to the desegregation of the public transit system. This peaceful protest taught me the importance of perseverance and working together toward a common goal.

To this day, I remain impacted by Dr. King’s teachings. His values and dignified behavior continue to inspire and resonate with me. I fondly remember Dr. King attending my college basketball games and
