Benefits for All Veterans!

The early 1980s were a tough time for Veterans when I started my military career in ROTC. We were just coming off the end of the Vietnam War and four years of the Carter Administration that saw tremendous cuts in the military. Morale was low as was public sentiment towards Veterans. Fortunately, that all changed during the Reagan Administration, and the events of 9/11 created a resurgence in the positive attitude and respect towards Veterans that continues today. I believe every American owes our Veterans a great deal of respect given their tremendous sacrifices and the sacrifices made by their families.

When an individual decides to join the military, they are committing their life to defend our rights under the Constitution and the amazing freedoms we have as Americans. You may have read this quote from Goodreads. com, “A Veteran is someone, who at one point in their life, wrote a blank check payable to the United States of America for an amount up to, and including, their life.” As of now, there are approximately 15.8 million Veter-

ans in the United States, representing 6.1% of the total population (Census. gov, October 2024). Fortunately, there are many benefits for all Veterans, provided by both the US Government as well as the civilian private market.

For example, when you buy a product or use a service, ask the company if they provide a discount to Veterans. You will be surprised at how many companies offer Veteran Discounts. Here is a great site that highlights many of the discounts available to Veterans, https://www.military.com/ discounts

The US Government through the Department of Veterans Affairs publishes a wonderful booklet that outlines the many programs and resources offered to Veterans called, “Federal Benefits for Veterans, Dependents, Survivors, and Caregivers.” You can access the booklet at https://department.va.gov/get-started/

I served during the Cold War in the 1980s and was fortunate to see firsthand what freedom truly means while

flying along the border between East and West Germany against the Soviet Union prior to the Wall being torn down. I transitioned out of the military and currently own an in-home care franchise in South Orange County California called Home Instead. Our mission is to allow our older clients to stay in their home, or age in place, for as long as they want to. There are numerous studies that demonstrate the benefits to your overall health and wellbeing when aging in your home.

Many of our clients are Veterans and they don’t know about the wonderful services they may qualify for using their Veteran benefits. While this care can be expensive, as a Veteran, you may qualify to have the in-home care covered by a professional caregiver at no charge to you. We have helped our Veteran clients save tens of thousands of dollars on in-home care. This also includes coverage for the spouse of a Veteran who may be taking care of the Veteran. The booklet mentioned above outlines some of these in-home care programs.

It can sometimes feel overwhelming trying to navigate these programs. We can help. We have experts on staff who can work with you to take advantage of these amazing benefits. Please explore these programs and take advantage of these benefits offered to our Veterans, many at no cost to you. We would be honored to help Veterans get the benefits they deserve. Please call our multi-lingual staff, 24/7, at 949-347-6767 for help or further information. You’ve earned it!

Staying Independent Longer: When Is the Right Time to Transition to Senior Living?

For many older adults, maintaining independence is a top priority. The idea of leaving home for a senior living community can feel overwhelming or unnecessary.

However, planning ahead and recognizing when extra support is needed can help ensure a higher quality of life and greater long-term independence.

So, how do you know when it’s the right time to transition? Here’s what to consider.

Maximizing Independence at Home

Many seniors successfully age in place for years by making small adjustments to their home and lifestyle. Some ways to extend independence include:

✅ Home Modifications – Installing grab bars, non-slip flooring, and better lighting can reduce fall risks.

✅ In-Home Support – Hiring caregivers or using meal delivery and transportation services can help manage daily needs.

✅ Staying Active and Engaged –Regular exercise and socialization help maintain physical and mental health.

Despite these efforts, there may come a time when staying at home becomes more challenging or even unsafe. That’s when considering a move to a senior living community can be a proactive step toward maintaining freedom and well-being.

Signs It May Be Time to Consider Senior Living

It’s not always easy to recognize when a transition is necessary. Some key indicators include:

Increased Safety Concerns – Frequent falls, forgetfulness with medications, or difficulty navigating the home can put seniors at risk.

Declining

Physical or Cognitive Health – Memory issues, difficulty managing daily tasks, or worsening chronic conditions may indicate a need for additional care.

Social Isolation – Loneliness can lead to depression, while senior living offers built-in opportunities for connection and engagement.

Caregiver Burnout – Family members providing care may feel overwhelmed, signaling that outside support is needed.

Ignoring these signs can lead to emergencies that force a rushed decision. Being proactive allows seniors and their families to choose a community on their terms, ensuring a smooth and comfortable transition.

Why Senior Living Can Extend Independence

Many seniors worry that moving into a community means losing their freedom. However, the reality is that senior living often enhances independence by providing:

✅ The Right Level of Support – Assistance with daily activities when needed, while still encouraging self-sufficiency.

✅ Maintenance-Free Living – No more worrying about home repairs, yard work, or household chores.

✅ Health and Wellness Programs

– Access to fitness classes, nutritious meals, and medical support to maintain well-being.

✅ Social Opportunities – Activities, events, and communal dining help prevent isolation and promote engagement.

Rather than waiting until a crisis occurs, exploring options early allows seniors to choose a living arrangement that supports their lifestyle and personal goals.

Making the Transition on Your Own Terms

If you’re an older adult considering the future, start the conversation now. Talk to a local Senior Living Advisor who can help you explore options, ensuring that when the time comes, you move to a place that feels like home—one that supports your independence, safety, and wellbeing. The earlier you plan, the more control you have over the process.

A Celebration of Centenarians at The Covington

An ECS Senior Living Community in Aliso Viejo

In April, The Covington came together to honor 11 extraordinary women; all of whom are centenarians. It was a heartfelt day sharing stories of life and longevity with a packed house of family, residents and team members to applaud their unique accomplishments.

The joyful afternoon celebration was filled with stories, music, laughter, and an abundance of cake.

Executive Director, Cash Benton said, “It’s such a special privilege to share in so many milestone birthdays. We are truly blessed to have this many friends among our amazing residents with the extraordinary longevity exemplified here today.”

Charlene Clark, a resident of The Covington, and host of the community’s annual Fabulous Follies was the Master of Ceremonies. Resident

Elaine Ockner played the piano, and as Charlene announced each honoree’s story, Elaine performed their favorite song.

Charlene opened the ceremony with a reflection. “First of all, let’s think for a moment about what the world was like in the 1920s when they were born,” she said. “It was the age of the roaring twenties. Prohibition was the noble experiment that was being foisted on the country. Women were finally allowed to vote with the passage of the 19th amendment. The discovery of penicillin was made. The

1930s was a decade many of them could now recall with memories of the deprivations of the Great Depression, the Dust Bowl, tales of Bonnie and Clyde… Almost all of them sent a husband off to war in the 1940s. They watched in amazement at a man landing on the moon.” Charlene then introduced each woman.

Marie Cauthen is 103. Born in Buffalo, New York in 1921. “She was a secretary to high-level military figures and traveled with them to many spots in the world,” Charlene recounted. “Marie is an independent soul whose determination has served her well.

Marie Cauthen

Peggy Thomas is 104 years young and has lived at The Covington for the past 20. In fact, her husband, Judge Thomas, was instrumental in establishing The Covington. Together they traveled the world after their three children were grown. She was born in Pasadena and was a preschool teacher in Los Angeles. Throughout her long life, her family has been paramount. Her Episcopalian faith was, and still is, deeply important to her. As we all know, she is fun-loving and kind, with an easy laugh. She spent many years in volunteer work and was a wicked bridge player in her day. Currently, she remains an active participant in crafts, bingo, group exercise and Sunday services. And still enjoys an occasional gin and tonic at the friendly Covington pub! Peggy loves to read and her suggestion for a long life is “Be happy.”

Marge Pettitt is 102 and has been a resident of The Covington for 9 years. She was born in Los Angeles, went to school at USC and was a Kindergar-

ten and First Grade teacher for 25 years. Marge still travels to San Diego and the Bay Area to visit her nieces. Charlene adds, “her advice for living a long life is to do what you enjoy doing.”

Mary Doi is 101. Before moving to The Covington in 2019, she was a long-time resident of Capistrano Beach and San Juan Capistrano; since the late 1950s. Mary has the unique experience of serving as a Postal Worker in Dana Point. She loves Japanese food and says her secret for a long life is to keep breathing. “Thank you for your wisdom, Mary,” Charlene said.

Gaby Seiffert is 101 years young and has spent 19 years at The Covington. She was born in Germany, and at 7 years old she arrived in New York. She has fond memories of traveling and hiking with her beloved latehusband, Karl. Gabby says she will always be young at heart and takes each day as a gift.

Polly Buckington is 101 years old and has lived at The Covington for 9 years. She was born in South Pasadena and graduated from UCLA. She worked as a teacher, as well as for the U.S. Air Force, and spent years organizing and coordinating volunteers. When she thinks about her longevity, “I hardly realize it myself,” she says. “I feel like I’ve experienced some earthshattering events.” For example, she was in high school during the attack on Pearl Harbor. She describes The Covington as “an oasis for me. I feel so well taken care of.” Polly’s philosophy is to "play the cards you are dealt and keep your sense of humor."

Jean Bellwood was born in 1923 in Orange, California. Her family soon moved to Iowa where she grew up. Following graduation, she relocated to Washington, DC where her husband was in college. He was drafted to serve in World War II, and Jean worked for the State Department, supporting office administration. “The work was very interesting,” she

says. Recalling those days she says, “every night we would have to black out our windows, because of the war.” When the war was over, Jean and her husband moved to Southern California, where their two daughters were born.

With her daughter Diane Stewart, Jean visited many senior communities in the area. “We walked in the front entrance. All the people were laughing and so happy, and I turned to my daughter and said, ‘this is where I want to be.’” Jean moved into The Covington in 2008. “I am so comfortable in my cottage. People are so friendly and it's a very wonderful place to live.”

Jean enjoyed the celebration of the centenarians. “To meet up with those who are even older than me. That’s something!” When Jean reflects on all that she has experienced in her 102 years, she says, “I can still see the good things in life.”

Edith Holm was born in Germany in1924. She is the youngest child with 2 older sisters and one brother. She came to the US as an infant with her family.

Edith and her husband Chuck, who passed in 1993, have six children: a son in Louisiana, a daughter in Florida, a son in Utah, a son in Wyoming and 2 daughters who live locally; one in Laguna Hills and the other in Lake Forest.

The Holms moved to CA from Northern Virginia, when Chuck worked for

the FDIC shortly before his retirement. After the kids were grown, Edith worked for Sears and continued until the Sears and Roebuck closed in the Laguna Hills Mall.

Edith is a talented seamstress, making doll clothes at Christmas and other handmade items. She has enjoyed sewing heart-shaped oven mitts as well as sewing Easter dresses and choir dresses for her daughters and granddaughters. She has a talent for painting beautiful pictures and when she moved into the Covington, she let her children and grandchildren each select a painting. She loves the arts and crafts classes at The Covington.

When she and her daughter, Jolene first visited The Covington, “It just felt right,” Edith says. “It has been the best place for Mom,” Jolene adds.

“The team at The Covington made the move-in so easy. By the time she arrived, they had everything set up for her. She has a credenza with her memorabilia, and they took pictures of it beforehand, so when she walked in, it was set up the way she always had it. I like that there is always someone available to help her.”

Jolene finds it remarkable how active her mother is, so much so that Jolene sometimes needs to schedule visits around her mother’s social calendar. “You can’t believe the feeling,” Jolene says, “knowing that your mom is well, happy and cared for.

Everything and everyone is so nice. They all know my mom well. It makes a difference.” When reflecting on her mother’s longevity, Jolene says, “No doubt, The Covington has contributed to her health and longevity.”

Edith prays and reads scripture daily. She is always expressing gratitude openly. She loves to spend time with family, especially grandchildren and great-grandchildren. Her family hold her as a true gem.

There were three additional women, not featured here, who were honored at the party - one of whom is 110 years young and doing amazing!

10 Ways Ketamine Therapy Is Changing Mental Health Treatment

As a medical doctor specializing in ketamine therapy for patients with treatment-resistant depression and anxiety, I’ve had the privilege of watching lives transform—often in ways that traditional psychiatric medications simply haven’t achieved. For decades, SSRIs, SNRIs, and other conventional drugs have been the mainstay of treatment, but they come with considerable limitations: delayed onset, daily dosing, sexual side effects, emotional blunting, and, for many, limited relief. Ketamine, on the other hand, represents a paradigm shift—targeting the underlying neurobiology in a fundamentally different way. Here are ten key ways ketamine therapy diverges from traditional medications:

1. Rapid Onset of Relief

Traditional antidepressants can take 4–6 weeks (or longer) to start working. Ketamine often delivers significant relief within hours to days—crucial for individuals in crisis, especially those with suicidal ideation.

2. Not a Daily Pill for Life

Ketamine therapy is not a lifelong, daily commitment. Most patients receive a short initial series (typically 6–8 infusions), followed by occasional boosters—weeks or months apart. For many, the goal is remission, not indefinite treatment.

3. Targets the Root Cause, Not Just Symptoms

Ketamine enhances neuroplasticity, allowing the brain to “rewire” itself. This means patients can address deep-seated patterns of thought and

trauma during psychotherapy, rather than simply masking symptoms.

4. Minimal Long-Term Side Effects

Common psychiatric meds often cause weight gain, sexual dysfunction, gastrointestinal distress, and emotional numbing. Ketamine’s side effects are transient and typically limited to the time of infusion: mild dizziness, dissociation, or nausea—resolving within hours.

5. Insurance Coverage

Is Expanding

While once considered “experimental,” ketamine is now FDA-approved in its esketamine (Spravato) form, and many insurers have begun covering both the medication and accompanying clinical services.

6. No Need to Taper Off Traditional Meds Immediately

Patients can undergo ketamine therapy without immediately stopping existing medications, which means there’s no abrupt withdrawal or destabilization of current treatment regimens.

7. Breaks the Cycle of Chronic Suffering

Traditional antidepressants often act as emotional “dampeners.” Ketamine opens a therapeutic window in which patients become more connected to their emotions, more engaged in therapy, and more capable of lasting healing.

Dr. Justin Yanuck, Board Certified Emergency Medicine Physician and Board Certified Pain Medicine Physician and Dr. Tanya Dall, Board Certified Emergency Medicine Physician

8. Effective for Both Depression and Anxiety

Most conventional medications are either geared toward depression or anxiety—not both. Ketamine has shown powerful efficacy in treating both, often simultaneously, even in patients who have failed multiple trials of standard medications.

9. Enhanced Psychotherapy Integration

Ketamine’s ability to boost neuroplasticity makes it an ideal companion to psychotherapy. Many clinics integrate psychotherapeutic support into ketamine sessions, which amplifies and stabilizes the benefits.

10. A Step Toward Cure, Not Management

The ultimate promise of ketamine is that it doesn’t aim to manage symptoms indefinitely, but rather to facilitate deep, enduring change—rebuilding the brain’s capacity to heal, reconnect, and function optimally.

For patients stuck in the revolving door of medication trials, ketamine offers more than hope—it offers a real possibility of lasting recovery. This isn’t just a new tool in the toolbox; it’s a new blueprint for how we think about mental health treatment.

How Can I Tell If I Have Skin Cancer?

There are three main types of skin cancer: basal cell carcinoma, squamous cell carcinoma, and melanoma. Because each has many different appearances, it is important to know the early warning signs.

Look especially for change of any kind. Do not ignore a suspicious spot simply because it does not hurt. Skin cancers may be painless, but dangerous all the same. If you notice one or more of the warning signs, see a board-certified dermatologist right away, preferably one who specializes in diseases of the skin.

ACTINIC KERATOSIS

An actinic keratosis (AK) is a crusty, scaly growth caused by damage from exposure to ultraviolet (UV) radiation. An AK is considered a precancer because if left alone, it could develop into a skin cancer. AKs are the product of a lifetime accumulation of UV damage and typically appear on areas most commonly exposed sun, such as the backs of the hands, forearms, face, neck, and scalp.

SQUAMOUS CELL CARCINOMA

Squamous cell carcinoma (SCC) is an uncontrolled growth of abnormal cells arising in the epidermis, the skin’s outermost layer. SCCs often look like scaly red patches, crusty bumps, warts, or elevated growths with a central depression. SCCs may appear suddenly and some forms are tender to touch. They can become disfiguring and sometimes deadly if allowed to grow. More than 1 million cases of SCC are diagnosed each year in the U.S., which translates to about 115 cases diagnosed every hour. Incidence has increased by 200 percent in the past three decades in the U.S., and more than 15,000 Americans die each year from this type of skin cancer.

BASAL CELL CARCINOMA

Basal cell carcinoma (BCC) is the most frequently occurring form of all cancers, with more than 4 million cases of diagnosed in the U.S. each year. BCCs may look like open sores, red patches, pink growths, shiny bumps, or scars. Any skin lesion that doesn’t heal, or bleeds with even gentle trauma, such as drying with a towel, is concerning for a BCC.

MELANOMA

Melanoma is a very dangerous form of skin cancer. Melanoma is caused mainly by intense, occasional UV exposure (frequently leading to sunburn), especially in those who are genetically predisposed to the disease. An estimated 178,560 cases of melanoma are diagnosed in the U.S. each year and is fatal for an estimated 9,320 of these patients. Fortunately, if melanoma is recognized and treated early, it is almost always curable.

WHAT PATIENTS NEED TO KNOW

1. Everyone needs to perform a self-skin exam once a month.

2. Melanoma can appear anywhere on the skin, including the palms/soles, under your nails, and places...for most, have never seen the light of day (genitalia). For this reason, it is important to look everywhere. Lock the bathroom door, get out a hand mirror, and check, it could save your life.

3. What to look for: ABCDEs, and an ugly duckling

A - Asymmetry: If I draw a line down the middle, do the sides match?

B - Border: Is there a nice crisp border, or does the mole melt into the surrounding skin?

C - Color: Moles should be one color, one shade of brown. Is there a variety of shades or additional colors, such as black, red, white, or blue?

D - Diameter: Any mole larger than 6mm, ie the head of a pencil eraser, has a higher risk of becoming melanoma.

E - Evolution: Has it changed?

F - The Ugly Duckling Sign: Most people have a “signature mole,” their own personal mole appearance and architecture. Is there a mole that seems different from all the others?

4. Everyone needs a full body skin exam by a board-certified dermatologist once a year, more frequently if you have a family history of skin cancer, a personal history of skin cancer, or live in an area with substantial sunshine.

ROBERT CRAY

Blues icon. Soul man. Rock and roller. Robert Cray is all these things–and more. The Georgia-born, Washington-raised musician first picked up a guitar after seeing The Beatles on TV then, having witnessed Jimi Hendrix perform in Seattle, determined that this destiny would also follow a similar path. And so he has: across the past half century Robert Cray’s developed into one of American music’s most singular artists. His career is defined by phenomenal success–millions of albums and countless concert tickets, five Grammy Awards, induction into the Blues Hall of Fame, recipient of the Americana Music Lifetime Achievement Award and designing two signature model Fender guitars–yet for Robert what’s always mattered most is the music.

Originally from Vietnam, Lieu moved to the United States with a dream: to build something of her own. After more than a decade in the beauty and grooming industry, she made that dream a reality. “I wanted to create a space where men could feel taken care of,” says Lieu. “It’s about more than just a haircut. It’s a place where you can relax, refresh and walk out feeling confident.”

Whether you’re getting ready for a big meeting or just need a little time to yourself, The Gentleman’s Cut offers an experience worth repeating.

ings are two signature experiences: The Monarch Cut – a premium haircut service that includes a scalp massage, hot towel treatment, and styling consultation – and The Premium Shave, a meticulous straight-razor experience with pre-shave oil, hot lather, steam towels, and a post-shave balm that leaves the skin smooth and refreshed. Grand Velas Riviera Nayarit

A Family-Friendly Daydream in Puerta Vallarta’s Banderas Bay

I fancy our family as well-traveled using any excuse to explore new environs or revisit favorite vacation destinations. My husband and I love traveling so much that we’ve made a conscious effort to impart in our children a similar desire to trek across the country or traipse around the globe.

In the years since our son was born, our excursions have been close to home with weekend stay-cations within easy driving distance or far flung voyages that involved a fair number of planes, trains and auto-

mobiles. We even embarked on an ambitious plan to visit all 50 states as a family by the time he graduates high school (a feat we finally crossed off the list in February).

For his 18th birthday, we asked our son for any desired destinations to which we might journey together (along with his 16-year-old sister) to celebrate the milestone. At the very top of his wish list? A return to Grand Velas Riviera Nayarit (GrandVelas. com) – an experience that stands out

in his memory as “the most amazing of our family trips.” Which is truly saying something when you consider that we last visited the incomparable, all-inclusive resort when he was only 11 years old.

After his suggestion, it wasn’t long before I began daydreaming of the lush gardens, infinity pools that seem to spill right into the azure horizon and all the amenity this premier property has to offer. There is literally every family-friendly activity – indoor

and out - that one could conjure under a splendidly sunny sky.

Nestled at the base of Mexico’s Sierra Madre Mountain range, Riviera Nayarit offers nearly 200 miles of sun-soaked beaches, bucolic fishing villages, nature preserves and colorful culture. Adored by both locals and visitors alike, the region offers much in the way of world-class cuisine, golfing, ocean activities and luxury resorts - the crown jewel of which our family believes to be the inimitable Grand Velas.

Tucked into the northern edge of Banderas Bay in Nuevo Vallarta with panoramic views of the Pacific, this luxury all-suite beach resort is ensconced in peaceful waterways, white sand beaches and the aforementioned infinity pools and boasts being a short 25-mile drive from the popular tourist destination of Puerto Vallarta.

ACCOMMODATIONS OF DISTINCTION

Each of its 267 well-appointed accommodations (think goose down comforters and Balinese furnishings) are amenity rich, extremely spacious and characterized by the colorful Mexican art of the Huichol people. Many of its suites connect - ideal for families with kids or even multi-generational family members vacationing together. With open concept suite plans, a 24-hour personal concierge to take

care of your every need, and a kids and teens club, all of your daytime and night owl tendencies can be easily indulged. Creating a sublime vacation experience is a breeze - from the bottle of artisanal mezcal in each room (for the grownups) to the daily resort programming which sets up snorkeling, kayaking, water aerobics, boogie boarding, ball sports, or scuba diving.

A FANTASYLAND FOR FOODIES

Executive Chef Guillame Morance and his team of culinary artists has creat ed global dishes and ca sual fare bolstered by the stunning surroundings at each of the resort’s sev en distinct and equally remarkable (including three AAA Four Diamond rated) restaurants.

Be it French, Mediterranean, or the perfect taste of local artisan cuisine inspired by the deep roots of Mexican heritage at Frida, guests savor chef-inspired, innovative flavors at every meal. Our son and I lean into seafood specialties and Asian fare when given a choice, so Sen Lin was among our favorite dining experiences “showcasing the ancestral culinary art of the East” with various traditional cuisines (we could live on the Hamachi sashimi, miso-glazed salmon and shrimp in coconut milk and Thai green sauce). Our daughter, on the other hand, loves everything Italian so Lucca’s bold Mediterranean specialties were a must.

With all that the Grand Velas has to offer in activities, amenities, services and fine dining, the delight of being there is ultimately of the atmosphere,

of matchless thespians dedicated to guest satisfaction (from the seamless check-in process upon arrival to 24hour in-suite room service) - or each member of the team truly enjoy being there. I believe it is the latter. At the risk of overusing the adjective in this article, guest service here is incomparable and the Grand Velas’ personal concierge service sets a new standard in hospitality excellence.

and that comes down to two things: beauty and people.

While hospitality professionals are by definition friendly folk, the staff at the Grand Velas are authentically warm and welcoming. So much so that either the resort has found hundreds

As to beauty, the Grand Velas Riviera Narayit is defined by a simply exquisite design with lovely spaces; starting with its majestic, tiered architecture opening out to stunning ocean views where the golden sand embraces turquoise waters, from the grand, fifth-floor open-air lobby to the gorgeously-appointed suites, there is a floor-to-ceiling sense of unrivaled beauty - inspired at every turn by tranquility and delight. Ultimately, that is how our family spent a few days away and what we’ll remember most – enjoying time together at what is arguably among the most resplendent of vacation destinations worldwide.

Olive Pit Grill

Fresh Mediterranean Flavors in the Heart of Huntington Beach

My husband, Tim, two teens and I have pretty varied culinary palates – my son and I fancy ourselves fledgling foodies and seafood aficionados with an emphasis on ethnic dishes, my daughter leans toward familiar vegetarian favorites and Tim is our family’s resident carnivore – all meat, all the time. If your tribe is anything like mine, you’ll happily embrace any eatery that offers an abundance of options for everyone. But finding one that also delivers on consistently delicious dishes in a fast casual concept that elevates the family-friendly dining experience? Look no further than Olive Pit Fresh Mediterranean Grill in Huntington Beach.

From its extensive menu of fresh, flavorful cuisine crafted from all-natural ingredients to the team of welcoming

create a restaurant that became a part of your life, somewhere you would be happy to eat daily.” For our family’s part, we’d have to say they nailed it.

For starters, the crispy asparagus spears with lemon-garlic aioli is completely addictive and the dolmades (grape leaves stuffed with turkey, rice, pine nuts, raisin and dill and topped with a sweet lemon sauce) and the yummy yellow lentil soup are my personal faves.

staff members, Olive Pit Grill delivers on all fronts. You will literally have your work cut out for you in deciding between the sheet number of mouthwatering options including a plethora of starters, salads, homemade dips, flatbread pizzas and wraps, kabob plates, customized entrées and an array of sweet treats for dessert.

Co-Owner/Chef Yianni Koufodontis’ passion for Mediterranean foods is clearly influenced by his own upbringing where “cooking is more than an art form, it’s a way of life.” Growing up in a culture “where eating is the focal point of all Greek family gatherings” inspired Yianni and his partner George Makridis to open the first Olive Pit location in Brea in 2008, followed by the equally popular Surf City location two years later. The pair “wanted to

Popular entrees range from a tender roasted half chicken, lamb chops, filet of sole, lamb sausage, grilled salmon, kabobs (shrimp, lamb, chicken or steak) paired with your choice of small bites (think oven roasted potatoes, stewed green beans, basmati rice) and a super fragrant, perfectly doughy pita for dipping.

If you’ve saved space for something sweet – the homemade baklava (phyllo dough, layered with almond, walnut, pistachio, cinnamon and drizzled with honey citrus syrup) with vanilla bean ice cream is an fan favorite. Our son, who considers himself somewhat of an expert on tiramasu, raved about Olive Pit’s rendition made with shredded phyllo, marscapone, espresso and chocolate.

Absolutely Fabulous

Years ago, a friend had a birthday and her family threw her a surprise party. This is a woman I've always had the hardest time shopping for - she leans toward unique, one-of-a-kind items and decor and her tastes are always a little eclectic and a lot of fun. I called a mutual friend for some ideas and she told me something I haven’t forgotten to this day: there are two types of presents. One that means something to the receiver because it reflects what they love. The other means something to them because it reflects what you love.

Surf City’s Most Unique Gifts & Décor Boutique

GO MAKEUP FREE WITH CONFIDENCE

“Love what you do and the money will follow.” This is the common mantra shared by scores of successful business owners I’ve interviewed over the course of my 20+ years publishing career. The idea obviously being that in pursuing your passion, you’ll pour your heart, soul, time and talent into your respective entrepreneurial endeavor – and the resulting work ethic and offering will invariably attract your desired clientele.

In chatting with Tiffany Tovar, it’s clear the owner of the Huntington Beachbased Elegant Esthetics has charted a similar path to success albeit via an unexpected route. Initially intending to pursue a career in lash extensions, Tiffany learned that becoming a licensed esthetician was a prerequisite. Once she started school, she quickly discovered that skin health and the transformative power of professional skincare was her true calling.

“During my training, I became deeply fascinated with facial treatments, customized skincare routines and the science behind healthy, radiant skin,” she says. “My dedication to the industry led me to complete a certification in oncology esthetics, allowing me to provide specialized care for individuals undergoing cancer treatment. My goal has always been to help people feel confident and bring

a sense of joy back into their lives through skincare.”

Since opening her salon in December 2023, Tiffany has earned a reputation for helping clients feel more confident in their natural beauty, achieving flawless, healthy skin so they can go makeup free if they desire.

Specializing in advanced skin revision therapy, Tiffany customizes every treatment to address the needs of individual skin concerns, whether it’s overcoming acne, combatting signs of aging, or attaining a complete skin rejuvenation.

“With the right approach, every skin challenge has a solution,” she says. “As the body’s largest organ, your skin deserves to be a top priority. By maintaining a dedicated morning and evening routine, along with consistent professional care, achieving healthful, youthful skin is within reach.”

As she continued expanding my knowledge, Tiffany discovered DMK Skin Revision at a Nanspro Convention - its approach to skin health “stood out from any other product line I had encountered.”

“DMK’s advanced formulations and treatments go beyond surface-level skincare, working at a deeper level to restore and optimize skin function,” she says. “I truly believe in their philosophy and incorporate it into my practice to help my clients achieve lasting results.”

Among the many clients to give Tiffany a 5-Star satisfaction rating, Samantha Miller adds that Tiffany “took her time with me to understand my skin

issues and worked on those areas … not to mention her massage skills are incredible! Her knowledge in skincare kept me confident she would work her MAGIC and she definitely did! The before and after was a dramatic change in my pores and inflammation … the two-hour drive from Calabasas was well worth it!”

Celebrating her 47th birthday this month, Tiffany’s own complexion serves as a testament to her dedication and skill.

“If you’ve discovered your passion, as I have with skincare, never stop believing in yourself,” she says. “Challenge yourself every day, continue learning, and remain dedicated to your growth. Success comes from persistence and continuous improvement. I am living proof that with hard work and determination, dreams do come true—so keep going and never give up.”

Where Tradition Meets Precision

Cefali & Cefali, APC

Trusted Accident Attorneys for the Most Serious Injuries

It’s a remarkable feeling when you can find someone to take your side. In relationships, sports: you name it. That one person who believes in you, makes you better, fights alongside you.

Michael Cefali matched with his person (his wife Courtney) long before law school - but their partnership extended through the long years studying for the bar and paid off in an even match that has stacked up in their favor many times over. Graduates of Chapman Law and California Western, respectively, they started the San Juan Capistrano-based Cefali & Cefali, APC in July of 2019 and have been fighting for the little guy ever since. From setting clients up with top-tier doctors and specialists, to negotiating stellar settlements, Cefali & Cefali, APC handles cases from start to finish with client health as their top priority.

Focusing on all aspects of personal injury, the Cefalis are what you might expect in such a ring: passionate, aggressive, and most importantly, honest - all traits that have contributed to the couple having recovered millions of dollars per year on behalf of their clients since opening their firm.

“The insurance companies would like you to think that they get to determine the value of your injuries, your suffering,” says Michael. “We’ll fight for every last penny because we know that you deserve it.” Clients appreciate the work that the Cefalis do. In fact, as of the date of this publication, you won’t find a single negative review of their firm anywhere on the internet.

Client Jamie shares, “I am so grateful for everything that Mike Cefali and his team did for me! Not only was he able to help me get what I was owed in my settlement and then some, but he was so responsive and kind and it was very apparent that he cared about me and my case! He and his team are so HONEST and FAIR and it was clear from start

to finish that he had my best interest in mind! Not only is he a good lawyer but he is a good person which made a world of difference for me. I could not have asked for a better experience with a personal injury attorney! I have already recommended him to all of my friends and I will continue to recommended him to anyone looking for a good lawyer! Thank you so much Cefali and Cefali!”

Another client Carrie echoes Jamie’s sentiment, “My husband and I were rear-ended on the freeway. We felt bad thinking of contacting a lawyer, but after several months of continuous pain and medical treatments, a friend recommended Michael Cefali. From the beginning, he lived up to his core values of integrity, loyalty, and vigorous advocacy. Michael is a dedicated, friendly, and competent attorney who seamlessly represented our interests and ensured the outcome was in our favor. He treated us not like a client, but like family; he was there any time we needed him. He was empathetic to our situation and worked tirelessly with all parties to represent us. We don’t trust many people, but we trust Michael and his team and would highly recommend him to anyone seeking a professional, effective, and focused attorney.”

With five staff members to back up the stellar work Michael and Courtney produce, the couple remain incredibly hands on, based on a culture of empathy, integrity and advocacy.

“We craft each case personally, build each one for trial, and remain accessible to clients,” says Michael. “Personal injury attorneys get a bad rap when really we’re the good guys. I like to think of our firm as a pirate ship. Nimble, clever, and tenacious in spite of being outspent by the adversary, we pry money from greedy insurance companies and give it to our very deserving clients.”

Giving back is the spirit of the firm, and community work creates a direct link between Michael, Courtney, and their circle in San Juan Capistrano. The couple and their team proudly supports a number of local charitable and community organizations including: The Boys and Girls Club of Capistrano Valley (Courtney is on the Board of Directors), The San Juan Capistrano Friends of the Library (Courtney is also a board member), CREER, the Pacific Marine Mammal Foundation, and Project Coyote. Michael is a member of the San Juan Capistrano Rotary Club and has been recognized as a Paul Harris Fellow.

The Cefali team’s ethics, constant communication (every client is given Michael’s personal cell phone for easy accessibility), commitment to their clients and involvement in the community keeps everyone growing stronger and healthier together. Remarkable isn’t it, that feeling when someone takes your side?

If you’ve ever marveled at the sun as it sinks from the sky, you’ll feel right at home at The Seville. With a California vibe and coastal view, it’s the perfect setting for the good life. Make every day and every moment, count. Don’t

Turning 65. It’s A Milestone for Sure…

Most commonly now you apply for Medicare on the Social Security website: www.ssa. gov (or you can call 800-772-1213 to make a phone appointment to apply over the phone).

This is only if you’re not taking Social Security earlier than your fully vested age. You’ll get your Medicare card automatically if you are already taking Social Security early (You can start at age 62). Your Medicare card will arrive about 3-4 months before the month of your birthday if this scenario pertains to you.

For those of you not taking Social Security early, you’ll want to start the Medicare Part A & B application process 3 months before your birthday month to make sure you’re good to go on the first day of the month that you turn 65 (unless you’re born on the 1st, then you get to go on Medicare one month early).

Once you apply for Medicare you will receive a letter in a few weeks from Social Security saying they’ve received your application and it was approved. Then a second letter arrives, and it gives you your Medicare number and that letter then tells you that you’ll be receiving your Medicare card in several weeks. This is a big milestone financially for most because of the cost of their

health insurance if they are paying for it privately (group insurance can be expensive too however). Most people (who am I kidding, everyone!) can hardly wait to start saving money (At age 64 rates are over $1000 a month for health insurance coverage. Once you get your “Original Medicare” card (paper; red, white and blue with a random alpha-numeric combination and a Part A and Part B effective date on it) you have choices to make.

Medicare alone is not enough, and that’s where I come in to help you understand your Medicare options. Medicare Advantage plans, Medicare Supplement (Medi-gap) plans and Medicare Drug plans are complex and the fact that you can have my knowledge (at no cost to you) to help you decide the right choice for you at this “decision dilemma” in your life will give you peace of mind. Much of my consultation time is going through the appropriate steps of someone just getting their Medicare active, understanding what IRMAA is, how form SSA-44 can help them not overpay for their Medicare Part B and Part D. This really has nothing to do with my profession because I’m an insurance broker, not a government employee. But understanding these initial steps seem to be the most daunting for most that I meet with and I am happy to help educate them.

Stephanie Frisch is the owner of Insurance 101 and is an independent insurance broker dedicated to helping others make “educated decisions” about their insurance choices when it comes to Medicare. For answers to your questions, or no-fee consultation, call 949-292-4958.

South Coast Shutter and Shades

Operating honestly and with integrity has served as the foundation for the continued success of the Laguna Niguel-based South Coast Shutter and Shades for over 32 years. Owners Tom and Donna Schuster launched their own company after realizing that “on our own we would be able to offer quality products in an honest environment to our customers, as well as servicing the products we sell.”

Specializing in custom shutters, blinds (mini, faux, wood, vertical), cellular shades, woven woods, plantation and security shutters and everything in between, Tom and Donna offer free in-home consultations for design as well as measuring, they always include free professional installation and prefer to bring all of the samples to each client’s home to go over the assorted styles and many color options to suit each home’s interior and its homeowner’s unique lifestyle.

“We listen to you and then incorporate your ideas with ours to design your custom shutters, blinds or shades,” says Tom. “Our portfolios and samples are very extensive, so you will be able to envision how your windows are going to look when complete."

Tom and Donna, credit their success to date to the quality of customer service they and their team give their customers, which in turn creates a wonderful repeat and referral business. “Although there may be providers of similar products, there is no one that can match our superior customer service – from showing up on time, making precise measurements and flawless installations - and with a professional ‘can do’ attitude,” says Donna.

Tom adds that “our pricing with unbeatable discounts, sales support and the fact that we offer our customers an in-house design team at no additional charge is the first step in setting us apart from our competition. I am proud to say that we have built a reputation in the business for having the highest quality, best beauty, fit and finish and value available. All of our products come with a lifetime warranty.”

A 5-Star Yelp rated company, South Coast Shutter and Shades boasts scores of glowing testimonials online, including Debora R of Laguna Niguel who writes "Donna and Tom are amazing! Great products, great prices, great service.I've used them twice for two different businesses and I could not be happier. Donna makes suggestions based on what I tell her

my needs are and she has been spot on with her recommendations. Installations by Tom are quick and easy. Highly recommended!"

Another reviewer, Doug W. of Mission Viejo posted that "From the first call, I knew I was dealing with a reputable, experienced, HONEST company. Donna and Tom are absolute PROS and obviously take pride in their work … Their price was very competitive. Also, what they quote is what you pay - keep that in mind when talking to the "other guys" whose price seems to go up and up. All appointments including install were FAST. The installation was flawless. I had a question later that evening about my motorized shades and they called me back IMMEDIATELY. My impression is that I could call them 5 or 10 years from now and they would just as helpful." SOUTH COAST SHUTTER

Healing Hearts EMERGENCY ANIMAL

HOSPITAL

In writing this editorial, I recalled a friend once asking me to explain the premise of a book called “All Creatures Great and Small.”

It’s about giving veterinary care to animals like you’d give pediatric care to children in your community - with grace, and love, and an incredible amount of passion. James Herriot’s example was set long ago

through the tales of extraordinary and ordinary circumstance, but the level of service, specialization, and care lives on in clinics like Healing Hearts Emergency Animal Hospital in Laguna Hills.

Since opening its doors last August, the team of compassionate professionals here have provided the highest level of emergency medicine to dogs, cats, avian patients and even most exotics. Dr. Berschauer, the CEO and founding veterinarian behind Healing Hearts, strives to put together the best option for treatment for each patient on an individual level.

“We do this by working with each pet owner to determine what the optimal plan looks like for the care of your beloved pet,” says Stephanie Yun, office

manager. “With a fully equipped ICU, advanced monitoring systems, oxygen cage, full in-house lab, we’re ready to handle almost any emergency.”

In the rare instance that your pet needs treatment outside of Healing Hearts’ capabilities, they’ll help you coordinate the transfer and care to an outside facility. “We’re not kind or compassionate within our four walls alone - the nature of community is that it exists beyond our front door and we’re willing to go to any lengths to ensure your pet’s needs are met, wherever they end up.”

Dr. Berschauer and his staff’s warmth and dedication to caring for our furry (and sometimes not so furry) family members truly sets them apart. Each came from a different medical field, but their love of animals brought them to where they are today. Ensuring that we can bring back the “oldschool feel” of veterinary medicine “where your animal is assessed and treated from head-to-toe with stateof-the-art equipment” comes first. For all creatures, great and small.

TURNING 65

Turning65 is a big milestone in a person’s life. For most, it’s also the time to apply for Medicare. Most commonly now you apply for Medicare Part A and/or Part B on the Social Security website.

I’m told by my clients that are new to Medicare that they feel fortunate to have me “hold their hand” and help them through the process. I will “hold your hand” too if you want my assistance as you face this dilemma of decisions. Much of my consultation time is going through the appropriate steps of someone just getting their Medicare active. This really has nothing to do with my profession because I’m an insurance broker, not a government employee. But this seems to be the most daunting step for most that I meet with.

You can enroll in Medicare online by going to SSA.gov. You’ll see the word, “Apply” and below that it will read, “Sign Up for Medicare”. From there you’ll click on the blue rectangle that reads, “apply online”. Then select, “start a new application”. Follow the prompts pertinent to you and you’ll be done in no time!

You’ll want to start this process 3 months before your birthday month to make sure you’re good to go on the first day of the month that you turn 65 (unless you’re born on the 1st, then you get to go on Medicare one month early). Medicare alone is not enough, and that’s where I come in to help you understand your Medicare options. Ask a SOMM

A good sommelier is a helper, a guide to finding the best wine for your food and experience. For this month’s installment, we again approached South County-based sommelier Micah Sampson to address a few frequently asked questions.

Q Should I pay attention to wine ratings? What do they mean?

A At the end of the day all wine ratings really are are opinions and scores from people who drink and know a lot about wine.

So if you need some help picking out a wine from a region you know nothing about, then sure, take a look at an online magazine and see what some of the ratings say. Generally, 88-90 points and higher mean the wine is going to be good. But once you get to the high 90’s you’re likely going to be paying a lot more for them, mainly because they have the high rating.

But I can let you in on a little secret, many amazing producers out there don’t even get their wines rated! The best way to find these is to look for wines with high ratings, remember the areas they come from, and then look for other producers in the same areas. You can often find killer wines for a fraction of the price when doing it this way. Another secret… this is exactly the way Somm’s Stash wines are made

Q How long do wines stay good after opening?

A This is an easy one, but still important. In general, wines will still be good for a day or two after you open them, but will start to degrade a bit from the moment you open them. Usually by day three you’ll notice the wines aren’t as good as they were when first opened, and by days four and beyond the wines just don’t taste right.

A little hint to get an extra day or two out of opened red wine is to seal the bottle with a cork or rubber stopper and store the half empty bottle in the fridge! The low temp in the fridge helps slow the degradation process. Just let the wine slowly warm up in a glass when you want one, cupping your hands around the glass will speed this up a bit.

Q What are sulfites and are they bad?

A We’ve all heard it… “Do you have any wines without sulfites? They give me headaches.” This is when the som-

melier mentally puts his or her palm to their face.

In the recent social-media-driven years, the word “sulfites” has become the new bad word in wine. But why? When did we become so focused on this one component in wine, treating it like a poison? It’s mentioned with an almost villainous undertone now, like some evil wizard is adding it to wine when no one is looking.

In reality, sulfites have been a known part of wine making for a thousand years. They are harmless to almost everyone and occur naturally in all wines. Yes… I said naturally in all wines.

Sulfites occur as part of the fermentation process, a natural byproduct of yeast metabolism during the conversion of sugar to alcohol. They are completely harmless to over 99% of all people.

In fact, the human body produces sulfites, a whole bunch of it, there’s already about 10 times more sulfites in you on a daily basis than a bottle of wine.

The thought of sulfites being a synthetic chemical added to wine is just a misguided fear. Winemakers might add additional small quantities near the end of fermentation to halt the process, but that’s the natural way to do it, like turning on the lights at the end of a dance party.

It’s also added during bottling as an antioxidant to help prevent spoilage. But, they only use what is needed to complete those stages, usually using amounts far within acceptable boundaries.

Sulfites do two things really well: they bond with oxygen molecules, keeping the wine from oxidizing into vinegar, and they push bacteria out of the wine to keep it from spoiling. Sulfites are like bouncers at the door of a bar, keeping the bad people out without ruining the party.

Meet Wilbur, a seven year old cutie waiting patiently for his forever family. He has a sweet personality and can be quite the cuddly little guy. He gets along with the other small dogs he has met, but sometimes finds small children overwhelming. Five year old Templeton is ready for the good life. Brought into the shelter as an injured stray, Templeton was understandably nervous in his new surroundings. Now that his physical wounds have healed, his personality is finally starting to shine through. He is a curious and affectionate kitty who loves playing with toy and long naps in the sun. Templeton would thrive as the only cat in a quiet home where he can finally take it easy.
