Preparation: Heat vegetable oil in a large skillet coated with cooking spray over a mediumhigh heat until hot. Add chopped onion and sauté for 5 minutes. After that, combine thyme and ¼ teaspoon salt; and sprinkle it over chicken. Add chicken to skillet and reduce the heat to medium-low. Then, add the remaining salt, preserves and raspberry balsamic vinegar and pepper. Stir it constantly until the preserves melt. Take a serving plate and put a chicken breast in it. Spoon the raspberry sauce over the chicken. Serve every plate with 1 chicken breast and 2 tablespoons of raspberry sauce.
