Dux De Lux has made a triumphant return to the city via new four-bar venue Dux Central on the old Twisted Hop site on Poplar Lane. Also returning to the city is the Stock Xchange, which has re-opened on Manchester Street, just around the corner from its former haunt, while down at the St Asaph Street intersection Tap N Grind café and Mish Mash bar are rocking a hip new share space. The Mediterranean Food Company is back in the game at their Tuam Street site and Darren Fabri’s Home has made a welcome addition to the Vic and Salisbury Street corner container Food Hub. Expect a name change, new look and a bodacious Central European menu as Vanilla Bean Café transitions to Café Prague. Also rocking the CE theme is new deli Café Berlin on Normans Road. Sushi hits the road with Mr Woo Sushi Christchurch West’s awesome sushi delivery service, and over in Riccarton New York Deli has opened its mothership. The team at Vbase have funked up the Botanic Gardens’ old tea kiosk with new venture Duck. Duck and XCHC Café has opened up in funky creative share space XCHC (where else?); meanwhile, whisky bar The Last Word has closed its doors. Local boho purveyors Halo & Hazard have a new store at Northlands, and at print, new St Asaph Street café Kadett had begun trading and Ferrymead speakeasy-style café/bar Estuary & Co was on the verge of opening.

HELLO HAPA Funky neat-things store HAPA, one of the many great things about CBD favourite haunt Re:START, has proved too in-demand for the central city collection of cool to contain; they’ve burst out into a new store at The Tannery (another appropriately swish joint for them to hang out in).

Rejoice, art lovers – no, seriously, rejoice – because after nearly five long years, the Christchurch Art Gallery has reopened after the (near) completion of its epic repairs, kicking off a summer of art. As a welcome back the gallery’s giving us all the art they can in a massive opening exhibition; there will even be pieces on display in the lifts! You’ll also be able to check out many of the 400 new pieces the gallery has acquired while it was closed. Other highlights on show will include Bill Culbert’s 2013 Venice Biennale highlight Bebop, and city recovery icon and community-uniting crowdfunding pleaser Chapman’s Homer by Michael Parekowhai (a.k.a. bull on a piano. THE ICONIC: ICE-CREAM CHARLIE There was almost a collective cheer from the city when the ‘Ice-Cream Charlie’ Vanilla Ices truck returned to the central city following an all-too-long absence after the quakes; little surprise, since as a collected urban population, we’ve been ravenously craving their secret recipe since 1907. Original proprietor and legendary local figure Sali Mahomet began selling ice creams in 1903, and perfected his homegrown formulations for vanilla ice and fruit syrups four years later; current owners and proprietors the Taylors (just the 4th set of owners in the history of the century-old business) are still banging out old Sali’s trusted and much-loved recipe today. It’s just not summer without getting a couple of these down you; look out for the iconic truck on sunny days at its regular spot on Armagh Street next to Victoria Square.

BEACH DAZE The sun is shining, the mercury is rising, and thoughts are turning coastwards – things have ‘beach day’ written all over them. But before you head out, there are some common courtesies you’ll want to observe if you don’t want to end up buried neck deep and facing an incoming tide. First of all, give people some space, and keep beach games away from crowds. You may be surprised at just how little your amazing catch counts for with the people who find your elbow in their bacon and egg pie. “I love the feeling of sand hitting my face!” has been said by no-one ever, so pay attention to the wind when shaking things out – and don’t clomp closely past sunbathers in your sand-flicking jandals, either. Another important thing to keep out of people’s faces: your PDA. Holding hands is fine; macking on your significant other – not so much. When it’s time to head home, you shouldn’t need a rubbish bin sign to remind you to be a tidy Kiwi. When in doubt: treat the beach like you’re in someone else’s backyard – not your own. And swim between the flags!

DON’T GIVE UP YOUR DAY JOB Cityscape’s editor Isaac Wilson gets his brew on with a day with the beer maestros at Three Boys Brewery. It’s 7am on a Wednesday and I’m up on the balls of my feet pouring a 25 kilo bag of malt into a mill high up in the roof space at Three Boys Brewery. It’s not quite the start I imagined, but I’m super stoked to be here rocking what is, for many (myself included), the holy grail of dream jobs – even after Eli advises we still have 13 bags of secret recipe malts to empty. It’s the second brew day of a 3,600 litre batch of Three Boys’ legendary IPA, which I’m calling ‘Isaac’s Personal Ale’ – hoping it’ll become a thing – as the crushed malt is mixed with hot water in the kettle below us, sprouting and releasing their sugars. While this is ‘mashing’, we get to work cleaning out the 1,800-litre tank the mix will be transferred to in the next phase where, upon boiling, five kinds of hops will be added at specific times during a 90 minute countdown – no surprises then that head brewer Ralph is a scientist as well as a beer guru. He informs me that cleaning is 80% of the job as I learn we’ll soon be shovelling the spent grains out of the kettle into a farmyard-bound trailer which is bartered for eggs and occasional cuts of pork. Later on it’s a hose forest as we pump the brew through a heat exchanger and into fermenter number 8, where it joins the previous day’s batch. While it’s not as tasting-based as I’d hoped, it’s still one of the more kick-ass jobs about and I can’t wait to crack into my first brew – in three to four weeks’ time. www.threeboysbrewery.co.nz

life hacks THE ultimate party playlist Your famous party-starting punch is on standby – but what about the music? A properly prepared party playlist can make the difference between an epic all-nighter for the ages and ruefully wondering what you’re going to do with 200 un-consumed jelly shots. Generally speaking, good party music is upbeat and doesn’t need its audience’s full attention. Depressing songs – no matter how popular – should be avoided unless you're trying to pull the pin. Top 40 and celebrity playlists on iTunes and Spotify are a good place to start, and pop hits and classics are going to go off after a few drinks. This isn’t the time for a ‘musical education’ either, hipster; lean towards songs most people will recognise. Timing is everything: wait for a few people to show up before kicking into it, and don’t start skipping songs 40 seconds in either – everyone hates that person (seriously)! And if you want to encourage dancing (and you do), set tracks to crossfade – it's called dead air for a reason, and a total party killer.

WEDDINGS With wedding season upon us, many will be kissing goodbye endless weekends as loved-up friends and family members tie the knot – surviving this expensive social mine field, however, is a whole other ball game.

You’ve been expecting it, and when the invitation arrives you’re quickly checking your planner to see if it conflicts with another wedding or any overseas travel plans. In the clear? Christchurch takes its coffee very seriously – in fact, we probably have one of the highest proportions of coffee-roasters-per-population on the planet. With that in mind, Cityscape stepped up its neverending pursuit of the perfect cup of coffee and caught up with the people behind the grinds who are blending and roasting the city’s favourite coffees. From the fine art of selecting and blending beans through to the importance of origin and the alchemy of precision roasting, Cityscape discovers what goes into Christchurch’s premium coffees. 18

“Anyone can roast coffee beans; the skill is getting up to 7 different single origins each individuallyroasted to perfection and masterfully blended to create a really great cup of coffee,” says Hummingbird Coffee’s general manager Nick Cowper. “I think it’s important to have a wide range of unique, special and, above all, memorable coffees. It could be a beautiful single origin, or a complex blend.” Having spent more than half his life in the coffee business (16 years), roasting is in the blood for Nick, who puts the family’s roastery success down to starting with a great product. “Everything starts with the product. We’ve been dealing with same growers for 14 – 15 years, heading over at harvest time to sort, cup and choose the best possible coffees we can.” This pursuit includes becoming the first company to import Fair Trade organic coffee beans into the country, and their recent certification in becoming 100 per cent organic. Despite being one of the city’s bigger operators (Oomph! is the number one selling fresh coffee in the country), the Cowper clan has resisted temptation to go larger, maintaining a boutique nature with 2 x 60-kilo roasters to retain control of the product. “Everything is done in small lots – it’s very hands on.” And like many roasters, they don’t stop at the bean trade, providing espresso

equipment, machinery and its servicing, along with barista training. Coffee roasting is also a family trade for Vivace Espresso director/ roaster Bernard Smith, whose parents set up the city’s first coffee roasters Browne and Heaton on Cashel Street in the 1940s. Founding Vivace in 1997 with a small roaster and café on Hereford Street, Bernard would barista during the days and roast beans at night – fast forward

18 years and Vivace coffee is being drunk around the country. Describing their roasting as “purist”, Bernard roasts origins individually and then creates recipes that are complementary. “Every bean is different and we roast each origin to its optimum. Coffee is an agricultural product. It’s a lot like wine, some years are better than others.” Their roasting technique comes down to temperature, time

and sound – “hearing those cracks”, says Bernard. That method is out for Dan Brown (el capitano) and Lewis Fitzgerald (head roaster) at Underground Coffee Company, though. Because they utilise Christchurch’s only fluidised hot air roasting machine – one of the noisiest (and most expensive) roasting routes – the 100-decibel racket the machine makes means Lewis wears ear muffs and is unable to hear the coffee beans cracking as drum roasters do. Instead he relies on precision timing and heat to achieve the perfect roast, with numerous trials, tastings and notes to ensure the coffee is at its peak. A qualified chef and avid homebrewer of spirits, Lewis uses these skills and extensive hands-on experimentation to draw out the subtle flavours. Air-roasting coffee, says Dan, is all about investing in bringing flavour and control, allowing for cleaner, sweeter flavours and giving subtle nuances a chance to come to the fore. “With air-roasted coffee you taste the coffee, not the roaster. It’s the air that roasts the coffee, not the surface of the roaster. So the coffee has a very clean taste that is intensely aromatic.” At Underground their beans are pre-blended and roasted together, and then aged/ degassed for 3 – 5 days. They offer twice weekly delivery – although it has a shelf life of 14 days, they prefer www.cityscape-christchurch.co.nz

their coffee to be used within a week to maintain integrity – as well as barista training and coffee machine maintenance. “It’s all about putting great coffee into people’s hands.” The desire to put great coffee into people’s hands saw Aaron Lee and Mike Turland of New City Coffee release their signature blend Blackbird following the earthquakes. The pair started roasting for the family’s Café Metro venues and Strawberry Fare restaurant to take more control of their product and deliver a consistent cup of coffee. They’re now serving up to 6,000 cups a week at these outlets from their copper, 10-kilo roaster next door to the Strawberry Fare Bake School behind The Tannery, along with selling take-home packaged coffee. A pre-blend of Columbian, Brazilian and Papua New Guinea Rainforest Alliance Arabica beans, Blackbird is a fruit-driven coffee with a natural sweetness. “One of our regular customers only drinks our coffee as it’s the only coffee he can drink without having to put sugar into it,” says Aaron, a trained chef. Roasted beans are degassed for 24 hours, then bagged on day 3, with the coffee consumed between days 5 and 6, says Aaron. Small batch roasting ensures greater control and consistency of the end product, while regular cupping, quality control and innovations are ongoing. “Experimentation and working out

the chemistry of creating the perfect coffee is the fun side of the coffee business,” says Aaron. For Bink Bowler, director at Black & White Coffee Cartel, roasting was a natural progression. “I would say I am more a ‘coffee specialist’. For the past 10 years I have been studying and playing with coffee, through tasting, brewing and research I naturally picked up how to roast.” Preferring a light roast (“roasting coffee dark is the 'old way'”), he lets the coffee speak for itself. “When you roast dark you just taste a roast profile, no matter how amazing the coffee is. When we roast golden brown, true coffee flavour comes out – smooth, sweet, yummy coffee,” says Bink. Included in the raw beans the team at Black & White source are the expensive and rare Nicaraguan honey process and some of the world’s highest-grown coffee off Mount Kilimanjaro in Tanzania. Whatever you order, a unique coffee experience and education is the aim, says Bink. “We pride ourselves on connecting coffee with people.” Supplying their growing chain of Yellow Rocket coffee and bagel outlets was what prompted husband and wife team Deb and Ian Riach of Coffee Worx to branch out into coffee roasting. “We bought an existing roastery in 2007 and rebranded it as Coffee Worx, a coffee roastery and supply company, but

we soon realised it was a standalone business and, after losing our whole Yellow Rocket chain in the earthquakes, it has become the full focus of our energy.” Using a Turkish roaster, the Riach’s roast 8 different blends (many of which are award-winning) alongside improving people’s knowledge and understanding of how to make quality espresso. “We spend a lot of time with our customers to help them get an appreciation of how to make their coffee offer a successful part of their business mix,” says Deb. “The secrets to great espresso are respect for the product you are using and a desire to perfect your understanding of the volatile nature of this incredible elixir!” Look out for a new espresso bar from Coffee Worx in Sockburn, in conjunction with celebrity chef Richard Till, who they’ll be sharing a building with. Keeping things on the smaller scale, micro coffee roasters David Pai and Andy Norman’s Coffee Embassy shares space inside Cafe Lumes, which, alongside sibling café Little

Merchants, serves their highly sought after brew. According to Andy, their coffee is selected based on what they want to drink using in-season beans that are “cupping amazing”. “Our philosophy is pretty simple: fresh and interesting is best, which means we change up our bean offerings based on the ever changing seasonal coffee harvests throughout the world,” he says. “Our aim is to bring people an exceptional coffee experience through sharing our experience of over 20 years

collectively in the coffee industry. We source, import, and roast coffee that is exciting to drink and share but, more importantly, is traded directly with traceability.” Fuelled by passion, addiction, caffeine and the pursuit of creating the perfect cup of coffee, Switch Espresso’s managing director Hamish Evans fed his love of coffee by sampling it around the globe before getting more directly involved. Starting with his New Brighton site 10 years ago, he has amassed a onestop coffee empire (bean roasting and supply, machinery and servicing, barista training and café layout and design) comprising 32 staff across 3 sites, including coffee kingpin Black Betty’s Café. His advice for this considering entering the market? “You have to be passionate about your product and love every element of it if you’re going to survive”. Passion, along with curiosity, led C4 Coffee husband and wife team Guy and Paula Griffith-Jones to start their own roastery 20 years ago. “We started a café and were getting our coffee down from Auckland and thought, ‘what if?’,” says Guy. During that time coffee has changed, and is ever evolving, he says. “Coffee used to be a block commodity; now people are out-sourcing for rare and interesting coffees that might not be available every year.” Coffee’s cup runneth over locally? Not likely! Christchurch is clearly a city that will take as much awesome coffee as it can get its hands on!

Canterbury Spring Lamb Rack with warm green bean Parmesan salad (Serves 4) Shopping list Rack of Canterbury spring lamb (4 chops) Salad 20-30 fresh green beans (trimmed & sliced) ¼ cup green peas 20-30 broad beans (shelled) ¼ cup Italian parsley ¼ cup Parmesan cheese

Dressing 200ml extra virgin olive oil 2tsp parsley 2 cloves roasted garlic 2 anchovy fillets 1tsp capers 1 lemon (fine zest and juice) Flaky sea salt and fresh ground black pepper

Making It Happen Sear the lamb rack in a hot frying pan and then roast in the oven for approximately 12 minutes at 200˚C. Cover loosely with foil and rest for 10 minutes before carving into individual chops. For the green bean salad, blanch green beans, peas and broad beans in boiling salted water for 20 – 30 seconds. Strain the beans and peas and place in a mixing bowl. For the dressing, blend all ingredients in a food processor (or finely hand chop), dress the beans and peas with the dressing, season with salt and pepper and finish with the parsley and parmesan.

Why A rich yet delicate protein and excellent source of Omega 3. How Place on tinfoil and sprinkle with a small amount of brown sugar, salt, pepper, squeeze of lemon juice and sweet chilli sauce. Wrap tightly to seal and cook for about 20mins on medium heat with BBQ lid down. Pro tip Get boneless salmon to avoid those pesky pin bones. Meaty sticky pork ribs No knife and fork required! Why A tasty moreish pork cut perfect for the whole family. How Marinate ribs overnight in a good smoky BBQ sauce. Cook in a slow cooker for 4 hours on high

Butterflied leg of lamb Perfect for feeding a larger group. Why What’s a Kiwi BBQ without NZ lamb? How Ask your butcher to bone out a leg of lamb in one piece. Rub with olive oil, garlic, rosemary, salt and pepper and marinate. Hot sear fat side down for 5mins, close lid and cook for 10–15mins each side on a low heat. Rest for 5mins. Pro tip Use an upturned roasting dish if your BBQ doesn’t have a lid. Moroccan boneless chicken Moroccan flavours are so hot right now. Why Easy and super delicious. How Ask your butcher to debone chicken in one piece. Glaze chicken in mix of cumin, cinnamon, lemon juice, honey, turmeric, cardamom, garlic, all spice and olive oil. In all my years working with people on an individual level or in a group, regardless of their age, sex or current health status, there is often one thing that unifies people’s health and wellness goals – energy and the desire for more. When you ask someone how they are, the most common response I tend to hear is “tired, so tired”. And hence our reliance on caffeine and refined sugars – or anything – that gives us more energy increases. If we think of our daily energy as a bank account, it’s easier to consider what ‘adds’ or ‘takes’ our energy. Energy supplies us with the power to function, grow, heal and regenerate ourselves daily. We are designed, however, to supplement this original endowment of energy with what we generate from eating, breathing, sleeping, working, playing, learning and relationships. Each day we make withdrawals and deposits; we invest or deplete. And when the balance of the scales tips in the direction of us using more than we put back in, we begin to live in the red, with the potential of falling further and further behind. To keep the currency analogy going, we are then forced to dip into our savings. When we continuously withdraw from our savings account, alarm bells can begin to sound, telling us that our survival is being challenged. These alarms present to us as symptoms in the body, often of the type that don’t initially lead us to stay home from work … so we soldier on and often do nothing about them. There are many reasons why our energy can be depleted which I explore in Exhausted to Energized; these can be biochemical, nutritional or emotional – and are normally a combination of all three. www.drlibby.com

Top 5 tips for more energy now 1 Work on closing what I call ‘open tabs’ – unresolved tasks and jobs. It’s as if we walk around each day with so many tabs open in our brains – like tabs sitting open on your computer or phone. It’s no wonder we feel drained or flattened. 2 Incorporate more resistance training or muscle building exercise. More muscle means more energy-producing mitochondria in our cells – resulting in a higher metabolic rate, which assists with body fat management as well as energy production. Naturally you gain better energy reserves as your glycogen (glucose stores) increases, as well. 3 Explore your immune system function; whether this is your susceptibility to viruses or infections, glandular fever or hay fever, anything that triggers your immune system into fighting these infections/ reactions can be fatiguing. 4 Be conscious of how your perceptions influence your mood and energy state. Write a list of what makes you feel alive and energised, and what saps your energy – your ‘energy vampires’. Actively work on doing more of the things that make you feel energised, while reducing your energy vampires. 5 Stop sitting on energy! Studies show that some adults spend an enormous 11 hours a day sitting on their bottoms. Those hours tend to be clocked up working at a desk job, commuting to and from work, watching television, or at the computer. Too much sitting isn’t good for health or energy. Move every hour!

Looking to lose fat, preserve muscle, and improve your cardiovascular health, but don’t have the time to spend hours in the gym each day? Then you need to tap into super High Intensity Interval Training (HIIT), says Heritage Health Club’s personal trainer Syaz Salim. Perfect for the time poor (we’re talking 15 – 30 minutes here), a HIIT programme combines intense intervals of high impact exercise with low to moderate exercise. Because the intensity is higher (and this is the key, you really need to go hard or go home here!) you get a much better cardio workout, increasing your aerobic and anaerobic endurance and burning more fat. It’s all about keeping your body on its (metaphorical) toes; when you do a cardio session at a consistent pace, your body goes into what is called ‘steady state’, adjusting itself to this speed so it can conserve energy – HIIT avoids this by confusing the body. Research shows that the benefits of HIIT include increasing your metabolic rate for up to 24-hours after exercise, improving insulin sensitivity in the muscles (which makes your body use the food you eat, rather than storing it as fat), elevating growth hormone and catecholamine levels (precursors to fat burning), and decreasing post-exercise appetite. 3 LISTEN Bays, Fat Freddy’s Drop Review by Garry Knight, Pennylane Records. Bays is Fat Freddy’s Drop’s fourth studio album and after several listens, I think their best! The Wellington 7-piece have delivered another soulful, dub, reggae sound with a techno influence. Highlights include ‘Slings and Arrows’ which features a fast drum sound with big horns and a catchy melody. ‘Razor’, the first single, clocks in at 8 minutes and has the familiar reggae/ dub sound with a heavy base and catchy techno undertow. ‘Makkan’ is a great ballad with a real pacifica flavour. The thing I love about Bays is that the CD sounds great, the vinyl sounds better and I can’t wait to hear it live! FFD are playing at Waipara Hills in early January – a must on the calendar – but until then buy BAYS and enjoy.

Something for Cate Trotting out his signature Oscar bait, Todd Haynes’ (Far from Heaven) February release Carol ticks all the boxes, with Hollywood royalty Cate Blanchett (Blue Jasmine) and Rooney Mara (The Girl with the Dragon Tattoo) adding weight to the screen adaptation of Patricia Highsmith’s early 50’s Sapphic romantic drama novel. It’s your untypical “bored shop girl (Mara) meets glamorous housewife trapped in a failing marriage (Blanchett)” tale of forbidden love that had Cannes buzzing with incessant Oscar speak. Sexy, sultry and gorgeously filmed (and let’s not forget those fab 50s wardrobes), Carol offers an intense, slow-building character study that will have you smiling through the (*spoiler alert*) tears – sounds like a recipe for Oscars all round then!

TO … Rosanna Arquette? Bona fide 80’s star Arquette got her start in TV and even had a song written about her (remember that Toto track?). Overshadowed by Madonna in Desperately Seeking Susan, her career never recovered and she fell into bit parts in cult flicks Pulp Fiction and Crash before, ironically, directing doco Searching for Debra Winger (about another 80s actress who fell off the radar), appearing in a slew of next-to-no-budget flicks and returning to TV.

Hokitika’s Wildfoods Festival is the Holy Grail for intrepid foodies the world over.

If you’ve not been to the Hokitika Wildfoods Festival yet, there’s a checkbox on your ‘Quintessentially Kiwi Experiences’ list that remains glaringly un-ticked. A favourite since its early days in 1990, the gourmet bush tucker festival offers a grand day under the Hoki sun that’s chocka with entertainment (in addition to watching strangers gargling horse semen!), celebrity cooking demos and, of course, an epic helping of both the delicious and seriously, poke-it-with-a-stickfirst, out-there grub. And yes, there are literally grubs (of the Huhu variety) on the menu. This year the gloves will come off in the TV cooking show smackdown
