What is a Blast Freezer?

Blast Freezer sometimes called Shock Freezer.

A freezer which has very large freezing capacity.

It can freeze product very quickly.

It contain large blowers, forcing chilled air over the food to cool it down and rapidly freezing them.

Trays on rack (smaller unit) Roll-in trolleys Pass through trolleys Conveyor belt or Tunnel Freezer.

Why is Blast Freezing better?

Every type of food contain water in the food cell.

During freezing water freezes forming ice crystals.

Slow freezing forms large ice crystals in the product.

When freezes, water expands and destroys the product cell structure.

When thawed, ice crystal melts and drains away, causing o Weight loss (less product for customer) o Texture change (food becomes soggy) o Flavor change (some flavor drained away)

Why is Blast Freezing better?

Blast Freezer offers o Rapid freezing, smaller ice crystals are formed o Minimize cell structure change. o Minimize weight loss & flavor change o Color, texture, flavor and nutrient are locked in the product. o Thawed meat and vegetable taste fresh as if it has never been frozen.

Why is Blast Freezing better?

• Inhibit Bacteria growth.

– Heat Sterilization kills bacteria.

– Not all bacteria are killed with cooking.

– Bacteria starts growing again, once food leaves the cooker. (rapidly freeze the food and store in freezer inhibit the growth and prolong shelf life) – Bacteria growth rate is a function of temperature and humidity – Varies from one strain to another.

– E. coli, (causing food poisoning) the growth rate accelerates as temperature approach 37 degree centigrade.

Blast Freezing process • Products coming out of cooker are quickly packaged • Transferred to blast freezer • They are rapidly freeze and transfer to a freezer unit for storage.

Note • Freezer units are designed for storage only.

• Product freezing should be done only by blast freezer.

Applications of Blast Freezer

• Blast freezing is used in the Frozen Food Industry.

– Prepared food : “Heat and serve” frozen food, T.V. dinner – Frozen food : vegetables, seafood, meat, fruits, etc for super market – Frozen bakery products and partially baked pastry

• Food are cooked, blast freeze, stored and reheat before serving.

– Airline catering where meals are prepared ahead of time and reheat before serving – Chain restaurant where food are partially or fully cooked and reheat before serving
