Pack The Perfect Picnic Forget pork pies, scotch eggs and sausage rolls - pack a delicious, but healthy hamper that won’t cost you a packet.

SARNIES They’re a picnic staple, but sandwiches

can get boring, especially if you already eat them most days. For variety, use different breads like wholegrain, rye or oatmeal, or opt for wholemeal pitta, rolls, ciabatta, wraps or multi-grain bagels. Try mixing more unusual ingredients with classic fillings too, such as grated cheese with carrot, houmous with peppers, banana with date or tuna mayo with kidney beans. Alter the flavour and cut calories by swapping butter or marg for tzatziki, salsa, guacamole, mustard, pickle or reduced-fat mayo.

~ Serves 6 ~ 150ml ready-made tomato sauce 1 large ready-made pizza base 1 small red onion, sliced 1 red pepper, sliced 100g mushrooms, sliced 1 tsp mixed herbs 150g pack mozzarella cheese, thinly sliced Spread the tomato sauce evenly over the pizza base. Top with the veggies, then sprinkle over the herbs and season with black pepper. Add the mozzarella and bake in a preheated hot oven for 10-15 minutes.

CHICKEN

Picnics often include chicken drumsticks or wings, but eating the skin adds calories and fat. Choosing skinless fillets lowers the fat, but they can lack flavour. Cut costs by marinating fresh chicken with a homemade or ready-made marinade such as teriyaki, BBQ, tikka or cajun. Check the salt and fat content of readymade marinades first and opt for those containing the least.

SWEET & SOUR Chicken

~ Serves 4 ~ 4 large wraps, 4 tbsp red pesto, 2 grilled, skinless chicken breasts, sliced & a large handful of rocket Spread each wrap with 1 tbsp of the pesto. Add the chicken and rocket. Wrap up and cut in half.

DIPS

Dips and chips are standard picnic food but are often loaded with calories and fat. Taramasalata and houmous have a healthy image, but can contain as many calories as Thousand Island, sour cream, cheese and garlic dips. The best options are guacamole, tzatziki and salsa (jars of salsa usually contain half the calories of fresh salsa). For more waistline savings, swap tortillas or crisps for wholemeal pitta and vegetable sticks.

TZATZIKI

~ Serves 4 ~ 1 cucumber, deseeded and grated 150g tub fat-free Greek yoghurt 1 garlic clove, crushed Juice and zest of 1/2 lemon Salt and pepper Place the cucumber in a sieve and squeeze out any excess fluid. Mix the cucumber with the remaining ingredients. Cover and chill.

SALAD

Lettuce often ends up limp and warm on picnics so save it for home. Instead, pack up cherry tomatoes and baby sweetcorn or make salads using ingredients that won’t go soggy. A Greek salad made from large chunks of cucumber, red onion and green pepper, cherry tomatoes, olives and feta should keep its taste and texture for hours. Or add chopped veg and chicken, ham or tuna to wholewheat pasta or brown rice for a more substantial picnic salad.
