LESSONS & LEFTOVERS

One can learn a lot from Thanksgiving. For example—cranberry sauce in a can is either beloved or controversial (there is no middle ground). Be forewarned. Cranberry sauce opinions are stronger than political debates—and no one ever changes sides. Stretchy pants are a sign of wisdom. On Thanksgiving, they aren’t an outfit choice—they’re a survival tool. Sweet potatoes, mashed potatoes, dressing, and mac-n-cheese have no maximum socially acceptable serving size on this day. We all agree. Finally, there’s no such thing as too many leftovers. Plus, leftovers somehow taste better at midnight. Standing in front of the fridge. In silence. In judgement of yourself.

Over the years, I’ve also unearthed a few lessons from hosting Thanksgivings at my home— rolls always disappear first (double the recipe or buy twice as many as you think). And, if you say, “We don’t need that much butter,” you are wrong. Always wrong. Get more butter. There will always be one dish that burns… and one dish no one touches… and one dish everyone fights over. Plus, every family has ‘The Dish’ that only one person knows how to make. And that person holds the family hostage with this power. Someone will try a new recipe. Everyone will pretend it’s delicious. The trash can will know the truth. There is always one relative who wants to “taste test” everything. Usually with the same spoon. Inevitably, someone will insist on taking a group photo. It will take 24 tries, and someone will blink in all 24 (you know who you are). Something will spill. Something will break. Someone will cry laughing. Breathe. It’s tradition.

More importantly, I’ve also realized that gratitude should be a practice, not a performance, and that the best conversations often happen long after the turkey-induced drowsiness sets in. Thanksgiving reminds me that perfection is overrated, laughter is medicine, and it’s less about the perfect table and more about the imperfect people I love gathered around it. Gratitude grows when shared, and the stories we tell after dinner matter far more than the dirty dishes in the sink. Most of all, I’ve learned that gratitude doesn’t need a holiday.

I have learned to slow down, to look around the table, and to appreciate the people who fill my life up so full that it’s worth living. Thanksgiving reminds me that generosity is contagious, kindness is powerful, connection is a blessing, and community is worth cultivating.

As you flip through this issue, I hope you find reasons to pause and give thanks for all the big and small things that make your life a little more beautiful. Oh, and one more thing… the person who swears, ‘I’m not hosting next year,’ is somehow always the first to volunteer—guilty as charged. And miraculously, no matter how stuffed we all are, there’s always room for dessert!

From Survival to Strength with PEMF Recovery Plus

By my sixth session, I noticed something remarkable — my range of motion had improved noticeably. I could turn my head more easily, look up without straining, and even move through my day with less tension. And, it wasn’t just physical improvement, my body felt calmer, more balanced, more at ease.

Another thing I loved immediately was the relaxation. During PEMF sessions, I fall sound asleep—deep, peaceful, restorative sleep. As a mom of four teens, that quiet hour feels like a luxury. It’s my time to completely decompress, to let go of stress, and

let my body heal. The rhythmic pulsing of the machine feels almost meditative, like it syncs with your heartbeat and helps reset your nervous system. Sometimes, everyone in the room seems to “breathe” in rhythm together—it’s a very soothing and communal experience unlike anything I have ever felt. Over time, I began to notice more subtle benefits also—less pain in my back, less tension in my shoulders, and an overall sense of well-being. I have heard from others that their eyesight improved or they feel more energized. It’s incredible to see how PEMF therapy can benefit different people in unique ways, yet consistently produce positive results.

Almost a decade ago, I lived through an experience that changed my perspective on health. I was diagnosed with stage four lung cancer—discovered by accident during pre-op testing for neck surgery. After surgery to remove the mass and a grueling round of chemotherapy, I began a targeted chemo pill designed for my genetic mutation. That medication saved my life. Today, I’m in remission, my scans are clear, and my oncologist calls me his ‘miracle patient.’ My perspective shifted from just surviving to thriving. I want to support my body in every way possible, inside and out. That’s why PEMF therapy means so much to me. It feels like another vital piece of my wellness puzzle, helping my body stay strong, energized, and balanced.

GRATITUDE BY GOD’S DESIGN What Scripture Teaches About Thanksgiving

AS A POSTURE OF THE HEART

From the beginning, gratitude was woven into the worship life of Israel. The Psalms, often referred to as the Bible’s hymnbook— overflow with instructions to give thanks. “Give thanks to the Lord, for He is good; His love endures forever” (Psalm 107:1) echoes throughout the Old Testament like a steady drumbeat. This isn’t situational thankfulness. It’s a declaration rooted in God’s unchanging character. Even when circumstances waver, His goodness remains steady, calling His people to respond with praise and gratitude.

GRATITUDE IN PRAISE AND

TESTIMONY

The Psalms also connect thanksgiving to testimony. “I will give thanks to the Lord with my whole heart; I will recount all of your wonderful deeds” (Psalm 9:1). Then, gratitude becomes a way of remembering God’s faithfulness, as well as telling future generations that He is still at work. In this sense, thanksgiving is not passive—it is active, intentional and deeply communal.

GRATITUDE AS A PATHWAY TO PEACE

The New Testament expands this idea, reminding believers that gratitude is a distinguishing mark of Christian living. Paul’s letters repeatedly emphasize thanksgiving as essential to spiritual maturity. He writes in 1 Thessalonians 5:16–18, “Rejoice always, pray continually, give thanks in all circumstances; for this is God’s will for you in Christ Jesus.” Notice that Paul doesn’t say to give thanks for all circumstances, but in them. Gratitude does not deny hardship— it transforms our perspective through faith. Paul’s words in Colossians 3 go further, tying thanksgiving directly to the peace of Christ: “Let the peace of Christ rule in your hearts… And be thankful” (Colossians 3:15). Gratitude, here, is both a response to God’s peace and a pathway into more of it. It softens the heart, quiets anxiety and turns our attention from what we lack to what God provides. Even in prayer, thanksgiving has a central place. One of Scripture’s most beloved passages urges believers to present their requests to God

“with thanksgiving,” promising that His peace will guard our hearts and mind (Philippians 4:6–7). Gratitude becomes the gateway to experiencing God’s presence, even in uncertainty.

GRATITUDE AS A LIFESTYLE, NOT A SEASON

Ultimately, the Bible presents thanksgiving not as a seasonal activity, but as a lifestyle. Gratitude can shape our worship (Psalm 100:4), strengthen our faith (Hebrews 12:28), and align our lives with the will of God (1 Thessalonians 5:18). It reminds us that every good gift comes from Him (James 1:17), and that a thankful heart is one of the clearest indicators of spiritual health. This Thanksgiving season—and in every other season—Scripture invites us to pause, remember and give thanks. Not because life is perfect, but because God is faithful. And in that, we find a reason for gratitude that never fades. Because when we choose gratitude, we choose to see God’s hand at work—and that simple act changes everything.

Fossey’s prose sparkles with humor and heart, transforming a tale about aging into something refreshingly alive and modern. Duffy’s wry internal commentary and reluctant tenderness make him one of the most endearing

narrators in recent fiction—equal parts grump and guardian angel.

While the setup has all the makings of a farce, the story quickly deepens into something profound. Through Duffy’s eyes, we see vulnerabilities of growing old and the quiet dignity that comes from refusing to give up. Josie’s struggles with addiction mirror Duffy’s own past, creating a generational bridge between two lost souls who find healing in each other’s company. The result is a narrative that’s laugh-out-loud funny and quietly devastating, reminding readers that even redemption can arrive when you least expect it. Fossey shines in her portrayal of the residents of Centennial—a lively cast of golden-agers with sass, scars and surprising depth. Their antics, fueled by Southern charm and irreverent wit, make the novel a celebration of community and resilience. Beneath the humor lies a tender commentary on aging in America.

Start your Thanksgiving morning on the right foot at the 6th Annual Run With The Turkeys Trot 5K and 10K on Thursday, November 27 at Keller Trails, located at 1000 Bear Creek Parkway. This festive community tradition welcomes runners, walkers, families, strollers and even leashed pups. The 10K kicks off at 8am, followed by the 5K at 8:15am, offering a fun and energetic start to the holiday. ANNUAL HATS FOR HEART LUNCHEON RAISING CARDIAC EMERGENCY AWARENESS

Galleria Dallas shines as one of DFW’s favorite family destinations, offering free entertainment plus creative programming and an indoor play space perfect for all ages. As the year winds down, the shopping center is rolling out a full lineup of Showtime Saturdays, PALS Showtime events and hands-on activities that keep kids learning, laughing and exploring. Every Saturday at 11:30am, Showtime Saturdays brings professional musicians, magicians and comedians to Level 3 near the Children’s Play Place. Families enjoy high-energy performances from crowd favorites including David Chicken (Nov. 22 and Dec. 27), Hot Toast Music Company (Nov. 29), The Ramazinis (Dec. 6), A Pair of Pirates (Dec. 13) and Sam the Magic Man (Dec. 20). Each 30-minute show is free and designed to spark imagination and smiles. The fun continues the first Thursday of each month with PALS Showtime at 10:30am. Each December, the quiet hum of excitement and laughter fills a small workshop somewhere in Southlake. Volunteers gather around piles of toys and wish lists, carefully packing each “Angel Bag” with love and purpose. Behind every tag is a child who might not otherwise receive a gift this season—and behind every bag is The Gifting Project Southlake, a grassroots mission turning community compassion into Christmas magic. This is the magic of thoughtful giving.

WHO: At the heart of Southlake’s holiday spirit is The Gifting Project, a volunteer-led nonprofit founded by local residents with a simple, but powerful mission to ensure every child feels the joy of receiving a holiday gift thoughtfully chosen just for them. Led by a dedicated board—Abby Waterstreet, Shelley Perdue, Lexie Callies, Robyn Daniels, Liz Carlton, Pam Price, and Michelle Thompson—The Gifting Project unites neighbors, businesses, churches and community groups to share the warmth of the season with families in need across North Texas.

WHAT: The Gifting Project collects, sorts and delivers hundreds of “Angel Holiday Bags” filled with carefully selected gifts for children in need. These aren’t just random presents tossed into trash bags—though the familiar black bags have become a beloved symbol of the organization’s mission. Every bag contains meaningful items chosen from a child’s personal wish list, ensuring they feel special. In 2024, the organization served nearly 700 children with gifts and food bags filled with delight. This year, they have set sights even higher—bringing holiday magic to over 1,100 children.

WHERE: The Gifting Project primarily serves families in Tarrant County, with additional outreach in Denton and Dallas Counties. Volunteers and donors come from throughout the Metroplex, with drop-off locations including the Southlake and Westlake Fire Stations. The organization’s temporary “Workshop” used during the first three weeks of December is where the magic happen—volunteers sort, pack and prepare gifts that will soon brighten Christmas mornings across the community.

WHEN: The season of giving kicks off each fall as The Gifting Project opens its annual call for sponsors, donors and volunteers. Important dates include November 1 when tickets went on sale for the Southlake Holiday Home Tour, the group’s signature fundraising event presented by Engel & Völkers. Then Sunday, December 7, when the highly anticipated Home Tour takes place from 12–5pm featuring four beautifully decorated Southlake homes. Proceeds benefit both The Gifting Project and Special Olympics Texas, helping two incredible causes share in the season’s generosity. Finally in early December, gift drop-offs ramp up as the Workshop fills with festive volunteers working together to make the holidays brighter for local children.

WHY: Behind every donation and every trash bag full of gifts lies a powerful belief that every child deserves to feel special during the holidays. The Gifting Project was founded on compassion and community connection, turning an ordinary act of giving into an extraordinary expression of love. For families struggling financially, the holidays can be especially tough. The Gifting Project steps in to fill that gap, ensuring that every child—regardless of circumstance—has a reason to smile on Christmas morning. The organization’s mantra, “It’s not trash—it’s our mission,” is a lighthearted reminder that what might look like a bag of ordinary items is actually a bundle of hope.

HOW: The Gifting Project operates entirely through the generosity of volunteers, donors and sponsors. There are many ways to get involved: ADOPT HOLIDAY ANGELS: Businesses, churches and families can “adopt” 10 or more children, shopping from their wish lists and delivering unwrapped gifts to a designated drop-off site. DONATE: A gift of $100 funds one complete Angel Holiday Bag. Monetary donations of any amount go directly toward purchasing gifts and supplies. Empowering Elves Everywhere

It started with a handful of wrapped gifts, a borrowed Santa hat, and a spark of kindness on Christmas Eve in 2004. As longtime USPS Operation Santa volunteer Hans Dohm made his way through Los Angeles delivering presents to families in need, his friend Patrick Reynolds tagged along with a camera and a curious heart. What he witnessed that night — children’s faces lighting up with pure wonder, a single mother crying with relief, laughter spilling into the cold night air — would change his life forever. That night became the beginning of Be An Elf, a small nonprofit with a big mission: to bring joy to underprivileged children on Christmas morning by supporting the USPS Operation Santa® program and inspiring others to give.

She mailed her letter to Santa asking only for a warm coat, new shoes and a toy. A volunteer found her note through the USPS Operation Santa program and made her simple wish come true. That’s the heart of Be An Elf — connecting everyday people with children and families who need a little magic at Christmas. Since 1912, Operation Santa has invited the public to read and adopt letters to Santa.

Be An Elf is a 501c3 nonprofit devoted to bringing joy to underprivileged children and families at Christmas. The organization supports the USPS Operation Santa program by recruiting volunteers to “adopt” letters written to Santa, purchasing and mailing gifts to those in need. Through public awareness, digital outreach, and community engagement, Be An Elf spreads the true spirit of giving — helping more families experience hope, kindness, and connection during the holidays. Donations and volunteer efforts allow the charity to reach more children each year by empowering elves everywhere, ensuring that every Christmas morning shines brighter for those who need it most.

A SPARK OF INSPIRATION

Reynolds, now fondly known as “Elf Patrick,” returned home from that Christmas Eve feeling moved—and motivated. At the time, few Americans knew about the century-old USPS® Operation Santa® program, which allows volunteers to “adopt” letters written by children and families in need. Those volunteers then send the gifts, clothing, and essentials directly through the postal system. “I was touched by the surprise and delight on those kids’ faces,” Reynolds said. “I

wanted more people to know about this program.” Within days, Reynolds launched a website to spread the word. It featured photos from that unforgettable night— real families, real joy. He called it “Make a Christmas Wish,” and then soon after, BeAnElf.org was born.

FROM A LOCAL DELIVERY

TO A NATIONAL MOVEMENT

In the early years, volunteers like Hans and Patrick could deliver gifts personally. But by 2008, the U.S. Postal Service began re-

moving children’s home addresses from their letters to protect privacy. In 2020, Operation Santa moved fully online, allowing volunteers anywhere in the country to read and adopt letters with just a few clicks. Today, Be An Elf serves as a powerful bridge between volunteers and the USPS Operation Santa program. The organization recruits and guides new “elves,” helping them navigate the adoption process and ensuring every gift finds its way to a deserving child. Even though volunteers can no longer hand-deliver

gifts, the magic remains unchanged. Every package sent with a barcode and a bow still carries the same message: You are loved. You are seen. You are not forgotten.

POWERED BY VOLUNTEERS & HEART

Be An Elf is an all-volunteer 501c3 nonprofit with no paid staff, driven purely by goodwill and community spirit. In 2010, it officially received tax-exempt status, paving the way for broader impact. Then came a turning point: Google awarded Be An Elf a $10,000-per-month in-kind advertising grant, helping the charity to reach thousands more potential volunteers each year. Soon, the media took notice. The Today Show featured the group in 2012, calling BeAnElf.org an invaluable online guide to USPS Operation Santa. Today, the organization continues to grow its outreach with the help of digital ad agencies like Cause Inspired, which helps maintain the Google grant. Reynolds and his team now hope to expand further—raising funds to invest in search optimization, social media outreach, and professional public relations to help even more children experience the wonder of Christmas.

LETTERS THAT BREAK & HEAL HEARTS

Each year, thousands of letters pour into the USPS Operation Santa program from children across America. Some ask Santa for dolls or bicycles; others ask for food, coats, or simply a sign that someone cares. One little girl wrote: “My family is not perfect. My mom needs money to pay bills. Our fridge and oven don’t work a little. She prays for me. My mom is sad. Please help.” Volunteers—many of whom find themselves feeling lonely or nostalgic during the holidays—say that adopting letters has given them renewed joy and purpose. Some bring their children along to read the letters, teaching them empathy and gratitude. Others organize community events, office teams, or neighborhood groups to adopt multiple letters at once. Lauren Psovsky of Brooklyn was one such volunteer. After discovering BeAnElf.org in 2009, she threw a Christmas party where each guest brought a gift for a child in need. The next year, her entire apartment building joined in. Together, they adopted letters, shopped, wrapped, and mailed gifts—turning giving into a joyful tradition.

THE DIGITAL NORTH POLE

Since 2020, USPS Operation Santa program has transformed into a nationwide

digital experience. Starting in November, letters from children are uploaded to USPSOperationSanta.com, where anyone can read and adopt them. Volunteers print out the letters and barcoded labels, shop for the gifts, and then mail their packages at participating postal branches. Every December, new letters appear daily— heartfelt wishes from children, parents and sometimes entire families. The program continues well into January, ensuring that even last-minute elves can make a difference. Through Be An Elf’s website, the volunteers can find detailed guides on how to participate, discover nearby postal branches and learn mailing deadlines. The site also offers a “Seeking Gifts?” section for struggling families, providing reassurance and practical tips on writing letters that stand out to potential volunteers.

I’ve made this same pie every year at Thanksgiving since I was a teenager! This is a twist on the classic Libby recipe. I start with my mama’s perfect pie crust (so buttery!) and I always top the pie with cinnamon whipped cream. The biggest difference is that I use cinnamon, freshly grated nutmeg and vanilla for flavoring instead of the classic ginger and cloves. The result is a super pumpkin-y pumpkin pie. I love how many times people have eaten it and said, “why is this pie so good?” See for yourself!

FILLING INGREDIENTS

3/4 cup granulated sugar

1 tsp cinnamon

1/4 tsp freshly grated nutmeg

1/2 tsp salt

2 large eggs

1 (15 oz) can pumpkin

1 tsp vanilla

1 (12 oz) can evaporated milk

(1) Make Best Ever Pie Crust recipe below and pop in the fridge to chill while you make pie filling.

(2) Mix together sugar, cinnamon, nutmeg and salt in a small bowl.

(3) In a large bowl, whisk eggs until slightly beaten. Add pumpkin, sugar mixture and vanilla. Mix well. Slowly add evaporated milk.

(4) Divide pie crust in half. Roll one half out on a floured surface and transfer to a 9″ pie plate, fitting it up the sides. Pour pumpkin mixture into the crust. Crimp the edges if desired.

(5) Bake at 425 for 15 minutes. Reduce heat to 350 degrees and bake for an additional 40 minutes or until toothpick inserted in center comes out clean. Cool for two hours. Refrigerate. Serve with cinnamon whipped cream (below).

MAMA ROSE TABLE’S BEST EVER PIE CRUST

(makes 2 pie crusts)

3 cups all-purpose flour

1 1/2 tsp salt

3/4 cup shortening

1/2 cup (1 stick) cold unsalted butter, cut into cubes

10 Tbsp ice water

(1) Whisk together flour and salt.

(2) Cut in butter and shortening with a pastry blender or two forks.

(3) Add ice water, one tablespoon at a time, mixing lightly with a fork after each addition.

(4) Gather dough into a ball and chill while you prepare filling. (If not using immediately, wrap in saran wrap and keep in the fridge.) Divide dough in half. Roll dough on a very lightly floured surface. Work quickly and don’t over handle the dough.

So when I came across The Steak Room in the “New to OpenTable” section, I found myself double-checking the address after reading its description: an intimate, reservation-only steakhouse that features curated wines and elevated sides—a speakeasy for the foodie set, if you will. And the best part? It’s right here in our own backyard.

The Steak Room in Keller feels like a secret handshake between true Texas ranching and an elegant steakhouse—a place that starts with a pasture in Sulphur Springs and finishes at the table. You know that his is not just any dinner from the moment your server describes some of the menu’s eclectic offerings. This is actually a thoughtfully crafted experience where dishes celebrate beef in surprising, refined ways and small luxuries that make an evening feel quite ceremonious.

Tucked away inside Outpost 36 BBQ, once inside The Steak Room you are transported to a luxurious destination that rivals anything in the big cities—Texas or beyond.

From the appetizers, I have two selections that are non-negotiable. The Wagyu Carpaccio is a lesson in less can absolutely be more. Paperthin slices of house-sourced beef— the same ranch-raised cattle that form the backbone of Outpost 36’s menu—arrive like silk, topped with a delicate scatter of microgreens, capers, pecorino and a dusting of cracked pepper that compliments, rather than overwhelms.

For a theatrical touch, order the Tallow Candle—a hand-poured tallow (aka beef fat) votive that, when lit, releases a warm and comforting aroma. It arrives alongside a selection of lightly toasted bread, perfect for dipping into the melted tallow, which blends with fresh herbs and salt as it drips onto the dish below. I admit I was hesitant to try it—my mind warned me that it might taste like beef. Instead, the flavor and presentation are strikingly similar to melted butter. The scent, sight and taste of these elements come together to make this first course truly unforgettable.

For the main course, steak ranging in cut from Filet Mignon to Wagyu Strip and even an option to walk over to the in-house Butcher Market and select what visually appeals to you are my obvious not-to-bemissed items, but if you have hit your beef quota after the first course, Grilled Pork Ribeye and Chilean Sea Bass won’t disappoint. For the adventurous set, Chicken Fried Filet reimagines a beloved Southern classic with steakhouse pedigree. Imagine a hand-cut filet that’s tender, marbled and treated with the respect reserved for prime cuts—breaded and fried until the crust is golden. Each bite delivers a contrast of satisfying crust crunch followed by the melt-in-your-mouth interior. Of course, it’s paired with a peppered cream gravy. This is comfort elevated: familiarity with a nod to culinary craft.

Finish with Bone Marrow Crème Brûlée, a dessert that carries the restaurant’s signature motif through to the last bite. The custard is silksmooth, the vanilla notes rich and warm and the sugar shell is torched to a satisfying snap. What sets it apart is the buttery depth that tallow imparts—not in a way that makes the dessert meaty, but in a way that deepens the custard’s body and makes every spoonful linger. It’s a clever ending—a classical technique married to an ingredient born on the ranch. The menu’s use of tallow from beginning to end nods to their nose-to-tail ethos, making ingredients typically relegated to the pantry into stars of the show. The Steak Room is rooted in farm-to-table provenance, playful with tradition and unapologetically Texan in spirit. It’s a meal that sparks curiosity and lingers in memory long after the candle fades.
