Jerk Chicken with a Fruit & Nut Couscous

Serves 4

Ingredients:

For the Couscous:

Method:

-- 8 Boneless Chicken Thighs

-- 2 tbsp Curry Powder

1. Add olive oil, zest and juice of two limes and chopped

-- 1 Tablespoon Tesco

Keeping it cool and easy for hot August days‌

This Middle Eastern-inspired salad is a take on the classic tabbouleh but it gets an upgrade with quinoa.

The tiny nutritional powerhouse is loaded with protein, making this dish both a delicious, summer main course and an accompaniment to barbecued meat or fish to enjoy alfresco.

Quinoa Tabbouleh Serves 4 as side

Prep: 20 mins / Cooking: 10 mins

Ingredients:

Method:

-- Drizzle of olive oil

1. [Optional] Heat a drizzle of olive

-- 400ml water

oil in a pan over medium-high heat,

-- 200g quinoa

and add the quinoa. Cook, stirring for

-- 50g pistachios (or any other nut)

about 1 minute to toast the quinoa.

-- 1 medium cucumber

2. Bring 400ml water to a boil in a

-- 4 ripe tomatoes

-- 4 spring onions

Add the quinoa and reduce heat to

-- 1 bunch of fresh mint

4. Finely chop the cucumber, tomatoes, spring onions, mint and parsley leaves.

Mix all ingredients in a large bowl.

Season with lemon zest and juice, olive oil, salt and pepper.

5. Once the quinoa has cooled, fluff it up with a fork, then transfer to the bowl.

Mix with all the other ingredients.
