We do love to have people over for a special meal during these merry days. Here is a trio of recipes, which is just in line for this time of year.

Appetiser: Falafel Balls Makes 20

Ingredients: For the falafel mixture: -- 200g cooked chickpeas -- 1 small onion, chopped -- 1 garlic clove, chopped -- 75g chickpea flour -- 1 tsp ras el hanout spice mix (or a pinch of ground cumin, coriander, -- pepper, ginger, cinnamon and nutmeg) -- Pinch of salt -- 3 tbsp. olive oil -- Some sesame seeds, for coating For the tahini sauce: -- 100g tahini -- 75ml lukewarm water -- 1 garlic clove, finely chopped -- Juice of 1 lemon -- Pinch of salt For garnish -- Some fresh parsley, chopped -- Some pomegranate arils

Method: 1. In a food processor, combine all ingredients except sesame seeds. Process until it forms a paste. Chill for at least 30 minutes. 2. Shape the falafel into balls. Roll each ball into sesame seeds. 3. Layer the falafel balls on a baking sheet lined with baking paper. 4. Bake in the oven at 200°C for 10 minutes. Remove from the oven to flip each one. Return to the oven for another 10 minutes, until the falafel balls are lightly browned. 5. Meanwhile, prepare the tahini sauce by combining all ingredients in a food processor or mixing by hand. 6. Serve the falafel balls. Pour over the tahini sauce and top with some chopped parsley and pomegranate arils.
