Manuel Chilli Con Carne Burritos Ingredients: For the Chilli con Carne -- 1 tbsp Olive oil

-- 1 x 500g jar Tesco Mild Chilli

Sauce 500g Beef Mince from the Smart Butcher Counter

-- 2 tbsp chopped fresh Coriander -- 1 tin Tesco Kidney Beans in Chilli Sauce

For the sour cream -- 150ml fresh cream -- Juice of ½ lemon

You will also need -- 1 ripe Avocado

-- Juice ½ Lemon

-- 1 packet x 10 Tesco Mini Wraps -- 1 jar Tesco Jalapeno Sauce

-- 2 tbsp grated Cheddar Cheese from the Smart Deli Counter

-- 2 Tomatoes, deseeded and finely diced

Method: Start this recipe by preparing

the Chilli. Heat the Olive oil in a pan, add in the beef mince and brown for 3 minutes.

Pour in the Tesco Mild Chilli Sauce and mix

together well. Turn down the heat, cover and cook for a further 15 minutes. Meanwhile,

make the sour cream by mixing together the fresh cream and lemon juice and place in

the fridge to chill. When the Chilli is cooked, remove off the heat and stir in the chopped

Coriander and Kidney Beans. To serve, heat the wraps for 20 seconds in a dry pan to

warm through. Peel and dice the Avocado

Roasted Pepper Dip with Basil Tortilla Chips Ingredients: -- 2 red Bell Peppers -- Olive Oil

-- Salt and Pepper

-- 1 packet x 10 Tesco Mini Wraps -- 2 heaped tbsp Tesco Chipotle Mayonnaise

Method: Start this recipe by placing the

red Bell Peppers whole onto a baking tray.

Season well with Salt and Pepper and drizzle

with a little Basil Infused Oil. Cook in the oven

Triple Decker Chicken Fajita Sandwich with Avocado Pesto Mayonnaise Ingredients:

Method: Start this recipe by cooking the Tesco Fajita mix. Place the contents into a

warmed pan and cook from frozen for 8-10 minutes. Meanwhile, prepare the Avocado

Pesto Mayonnaise. Peel and remove the stone from the ripe Avocado. Place into a bowl mix is cooked, remove off the heat and toast the sliced Ħobża tal-Malti. For each

sandwich, you will need 3 slices of toasted bread. Lay 1 piece of toasted bread onto a

board and spread with the Avocado Pesto Mayo. Spoon over the Fajita filling and cover

with another slice of bread. Spread with the mayonnaise then cover with Tomatoes and a

slice of Cheddar Cheese. Spread the last slice of bread with more Mayonnaise and place on top. Press down well, cut the sandwich in half diagonally and serve with the Tortilla Chips on the side.

Serves 4

Ingredients: -- 200g Tesco brown rice -- Iceberg lettuce

-- 2-3 tbsp Tesco Red Pepper Dressing

-- 1 red bell pepper, finely diced -- 1 avocado, peeled and diced

-- 1 tin Tesco kidney beans, rinsed and drained

-- 1 tin Sweet Corn, drained

-- 1 jar Tesco green jalapenos (Optional)

-- 2 spring onions, finely sliced -- Salt and pepper to taste -- 3 tbsp Walnut halves, coarsely chopped

Method: Start this recipe by placing the brown rice in a pan of boiling water and boil till

cooked through. Rinse under cold water, drain and cool completely. Meanwhile, prepare the Lettuce cups. Cut the base off the Iceberg Lettuce and separate the leaves into individual cups. Carefully rinse under running water and pat dry with paper kitchen towels. To prepare the filling, place the cooked brown rice into a large bowl and stir in all the remaining ingredients, including the Jalapenos if using. Season well with little Salt and Pepper. Next carefully spoon the rice filling into the Lettuce leaves using them as cups, sprinkle over the chopped Walnuts and serve immediately.
