Sweet Potato Fries...

Despite their sweet taste, sweet potatoes have only a few more calories than white potatoes. A three and a half ounce serving of baked sweet potato contains three times the recommended daily amount of beta carotene (half the RDA for vitamin C and just 100 calories). Baked Sweet Potato Fries: 1 sweet potato, washed and cut into strips / 2 tbsp olive oil / 2 tbsp dried herbs (parsley, rosemary, or thyme) / 1 tsp sea salt / ½ tsp black pepper. Preheat oven at 400°F. On a large baking sheet, toss with olive oil, dried herbs, salt, and pepper. Arrange in a single layer and make sure to flip the fries over two or three times to brown evenly. Bake for about 3540 min., or until golden brown, and crisp
